广东人在美食上的追求好像与四川人有些不同。比如做丸子，广东人力求弹牙，而四川人则需要柔嫩。不过无论是弹牙还是柔嫩。起决定作用的都还是这丸子水份含量高低。一般来说。厨师多使用“上浆”的方法来保存原料内部的水份，即在丝、丁、片等细小的荤料表面包裹一层由淀粉和鸡蛋等调成的糊，以保护原料内部水份不流失。在正常情况下，一份250克的肉丝，需要10克料酒、5克精盐、1个鸡蛋和20克左右的淀粉上浆。才能有效地保持原料中的水份。     

英国《独立报》将于3月26日出版最后一份印刷版报纸

正2月12日,英国ESI媒体集团宣布,旗下的《独立报》将于3月26日出版最后一份印刷版报纸,之后将全力转型为数字媒体。创刊于1986年的《独立报》是英国最具影响力的全国性日报之一,鼎盛时期每日发行量为40万份,但最近这个数字已经萎缩至约4万多份,成为英国读者最少的全国性报纸。但与此同时,截至2015年12月,《独立报》网络版用户数量达到了7000万,已经实现盈利。

“Officially A Vegan Now”: On Meat and Renaissance Masculinity in Pro Football

In 2012 Arian Foster, a running back for the Houston Texans of the National Football League (NFL), announced via Twitter that he is “officially a vegan now” (Foster, July 6, 2012). Foster's announcement precipitated a torrent of attention by many who worriedly debated the impact that his new diet may have on his on-field performance. In this article, we unravel the threads that have woven together a picture of who Foster is and what his decision to go vegan means. We argue that a close look at the media response reveals deeply held beliefs about masculinity, race, class, and place and the ways in which food serves in the constitution of subjectivity in the context of pro-football in Texas. We conduct a contextual discourse analysis of the popular and sports media coverage of Foster's diet using an intersectional framework to elaborate how normative masculinity is further nuanced by the meanings attributed to race, place, sexuality, sport, aggression, violence, health, and productivity.

Sire and sire-feeding regimen interaction effects on lactation, growth, and carcass traits in dairy cattle

Data from the University of Illinois dairy herd were used to estimate heritabilities of lactation yield, growth rate, and carcass traits and genetic correlations among them and to evaluate the importance of sire and of interaction of sire with feeding regimen for these traits. Heritabilities for lactation, growth, and carcass traits were small or moderate. Genetic correlations of lactation with carcass traits were moderate negative or large positive. Genetic correlations of estimated average daily gain with lactation and carcass traits could not be estimated. Variance for interaction of sire with feeding was large relative to sire variance for estimated average daily gain. Similarly, variance for interaction of sire with feeding regimen was large for back fat thickness, chilled carcass weight, dressing percentage, maturity score, and yield grade. Interaction of sire with feeding should be considered in genetic studies or in sire evaluation for some carcass traits and average daily gain.     

Cow milk does not affect adiposity in growing piglets as a model for children

The effect of milk consumption on childhood obesity is unclear and a direct demonstration of an association is needed. In the present study, we used piglets as a model for prepubertal children to determine the effect of milk on adipose tissue. Two studies were conducted: study 1 with 5-wk-old male piglets (n = 8) and study 2 with 8- to 9-wk-old male piglets (n = 12). The piglets were fed a normal growing diet and randomly assigned to receive daily either 750 mL of whole cow milk or an isocaloric maltodextrin solution (control). For approximately 12 wk, body weight, feed intake, and subcutaneous back fat thickness were determined ultrasonographically and recorded. At euthanasia, back and neck fat thicknesses were measured and samples of back fat were collected for adipose histology. In study 1, but not study 2, piglets receiving milk grew more and ate more compared with control. In study 1, both back fat and neck fat thickness were greater in the milk-fed piglets and they had a higher frequency of small adipocytes and a lower frequency of intermediate and large adipocytes compared with controls. In study 2, control pigs had a significantly greater frequency of intermediate adipocytes but the milk-fed piglets tended to have a higher frequency of the largest adipocytes. In conclusion, milk has no apparent causal or consistent effect on adipose tissue in growing piglets.     

A pilot study of smoking and associated behaviors of low-income expectant fathers.

Pregnancy is considered a teachable moment for helping women who smoke to quit, yet few studies have examined smoking behavior of expectant fathers. The present study considers the possibility that pregnancy is a teachable moment for expectant fathers as well and describes smoking and associated behaviors of men during their partner's pregnancy. Participants were 138 low-income men living with their pregnant partners. Using telephone interviews, we found 63% of the men had smoked at least 100 cigarettes in their lifetime. Current smoking was reported by 49.3% of expectant fathers (39.1% daily smoking; 10.2% some days). Expectant fathers' current smoking was associated with having a lower level of education (p<.0001), pregnant partner being a current smoker (p=.0002), higher quantity of alcohol consumption per day of drinking (p=.0003), and absence of smoking prohibitions inside the home (p<.0001). In the past year, 70.1% of the current smokers tried to quit. We found high rates of smoking in low-income expectant fathers, and an expectant father's smoking during his partner's pregnancy was associated with his pregnant partner continuing to smoke. A majority of expectant fathers identified as current smokers tried to quit in the past year or indicated an intention to quit in the near future. Intervention during pregnancy that targets pregnant women and expectant fathers who smoke could lead to more households without tobacco use and thus have positive implications for paternal, maternal, and family health. Further clinical and research attention is needed to address the smoking behaviors of both expectant fathers and their pregnant partners.     

日粮中添加植物油对牛肉颜色及脂肪酸的影响

为了验证日粮中添加植物油对货架期间牛肉品质的影响。选择健康无病的延边黄牛(公牛)16头,随机分成4组,每组4头,对照组饲喂基础日粮,试验组在基础日粮的基础上分别添加4%、5%、6%(以精料为基础)的植物油,饲喂期为88天。屠宰后,选择背最长肌肉-20℃冷冻3个月,4℃条件下解冻12h后,分别在0、2、4、6天进行肉质分析。结果表明:试验组肉的色泽均好于对照组;随日粮植物油水平的增加,饱和脂肪酸含量呈下降趋势,与对照组存在显著性的差异(P<0.05),但试验组间差异不显著(P>0.05);不饱和脂肪酸含量呈上升趋势,其中5%、6%植物油组与对照组差异显著(P<0.05),试验结果表明,最佳改善肉质、延长货架期的植物油添加量为5%。
