Lead-based hunting ammunitions are still common in most countries. On impact such ammunition releases fragments which are widely distributed within the carcass. In Norway, wild game is an important meat source for segments of the population and 95% of hunters use lead-based bullets. In this paper, we have investigated the lead content of ground meat from moose (Alces alces) intended for human consumption in Norway, and have predicted human exposure through this source. Fifty-two samples from different batches of ground meat from moose killed with lead-based bullets were randomly collected. The lead content was measured by atomic absorption spectroscopy. The lead intake from exposure to moose meat over time, depending on the frequency of intake and portion size, was predicted using Monte Carlo simulation. In 81% of the batches, lead levels were above the limit of quantification of 0.03?mg?kg?1, ranging up to 110?mg?kg?1. The mean lead concentration was 5.6?mg?kg?1, i.e. 56 times the European Commission limit for lead in meat. For consumers eating a moderate meat serving (2?g?kg?1 bw), a single serving would give a lead intake of 11?µg?kg?1 bw on average, with maximum of 220?µg?kg?1 bw. Using Monte Carlo simulation, the median (and 97.5th percentile) predicted weekly intake of lead from moose meat was 12?µg?kg?1 bw (27?µg?kg?1 bw) for one serving per week and 25?µg?kg?1 bw (45?µg?kg?1 bw) for two servings per week. The results indicate that the intake of meat from big game shot with lead-based bullets imposes a significant contribution to the total human lead exposure. The provisional tolerable weekly intake set by the World Health Organization (WHO) of 25?µg?kg?1 bw is likely to be exceeded in people eating moose meat on a regular basis. The European Food Safety Authority (EFSA) has recently concluded that adverse effects may be present at even lower exposure doses. Hence, even occasional consumption of big game meat with lead levels as those found in the present study may imply an increased risk for adverse health effects. The presence of heavy metals in big game meat may pose a risk to human health. The main objective of this paper is to carry out a risk assessment study (using a probabilistic and point-estimate approach) of lead intake by consumption of red deer and wild boar meat in Southern Spain based on Spanish data collected in the period 2003-2006. In general, the concentration levels found for wild boar meat (mean?=?1291?μg?kg(-1)) were much higher than those observed in red deer meat (mean?=?326?μg?kg(-1)). The results from a point-estimate risk assessment showed that the estimated average intake of lead among different exposure scenarios varied from 0.1 to 6.5 and from 0.3 to 38?μg?kg(-1)?week(-1) for red deer and wild boar meat, respectively; and from 0.3 to 35?μg?kg(-1)?week(-1) for individuals consuming both red deer and wild boar meat, and that the estimated intake of lead by consumption of big game meat differed significantly between hunters and non-hunters, it being higher for hunters. Besides this, results from the probabilistic risk assessment study corroborated the fact that risk is greater in hunter populations, reaching a maximum in individuals consuming only wild boar and both types of meat, with 0.4% and 0.2% of the population above the provisional tolerable weekly intake (PTWI), respectively. Likewise, the hunter populations consuming wild boar and both types of big game meat (red deer and wild boar meat) were exposed to the maximum lead level (56?μg?kg(-1)?week(-1)), which corresponded approximately to 224% of the PTWI. Further data and studies will be needed to give a complete risk estimation in which it will be crucial to consider the contribution to the lead intake level of other foods in the diet of both population groups.  相似文献

Although the average cadmium intake in Finland is about 10 μg day-1, some risk groups can be identified. This study assessed cadmium intake from the consumption of moose meat, liver and kidneys by moose hunters. Consumption data from a postal questionnaire were combined with a representative database on moose cadmium concentrations. Cadmium intakes were calculated as point estimates for all respondents (n = 711), for those consuming moose meat, liver and/or kidneys, and for the highest decile of those. Probabilistic modelling using the Monte Carlo technique was used to simulate the distribution of dietary cadmium exposure. Of the respondents, 69% consumed moose liver and only 23% moose kidneys. The consumption of moose liver or kidneys significantly increased cadmium intake, whereas moose meat (median consumption 17 kg year-1 person-1) contributed only slightly (0.16 μg day-1 person-1) to the daily total cadmium intake. In the simulation, 10% of the moose hunters had an intake of > 8.76 μg day-1 (14.6% of PTWI for a 60-kg person) from moose. Point estimates provided only a partial understanding of the potential exposure. Simulated distributions of intake were more useful in characterizing exposure. The study revealed that heavy users of moose organs have a relatively narrow safety margin from the levels of cadmium probably causing adverse health effects.  相似文献

对市场中210个饼干样品进行苯甲酸及其钠盐含量用HPLC方法进行测定,并对检测数据采用膳食暴露评估方法,评估城市居民的膳食风险。结果显示,婴儿(6~12个月)膳食暴露量为12.25~31.62μg/kg bw·d,其97.5/99百分位值的膳食暴露量为73.99~195.62μg/kg bw·d,建议婴儿(6~12个月)少量食用或食用不含苯甲酸的婴儿饼干。对于1~3岁的幼儿其膳食暴露量为10.25~13.25μg/kg bw·d,在97.5/99百分位值的膳食暴露量为105.24~139.10μg/kg bw·d,食用此类食品的风险是可以接受的。对于3岁以上人群食用此类食品的风险比1~3岁幼儿更小,风险程度更低。另外,饼干中威化和酥性类饼干中苯甲酸的残留水平相对于其他类饼干含量略高,而发酵和韧性类的饼干中苯甲酸的含量相稍低;同时显示江苏产的产品质量相对较好。  相似文献

In view of the frequent occurrence of mycotoxins in cereals, a study was initiated to assess the exposure of the Hungarian adult population. Consumption data for 1360 individuals, based on a 3-day questionnaire, indicated that white bread accounted for the major intake of cereal-based products. Various cereal products were analysed for 16 mycotoxins by a LC/MS/MS multi-toxin method with LOD of 16 μg kg?1 and LOQ of 50 μg kg?1. Deoxynivalenol (DON) was most frequently detected, but no acetyl-deoxynivalenol was present in detectable concentrations. Consumer exposure was calculated with standard Monte Carlo probabilistic modelling and point estimates, taking into account bread consumption and DON contamination in independently taken wheat flour and wheat grain samples. Over 55% of cases the DON intake were below 15% of the provisional maximum tolerable daily intake (PMTDI) of 1 μg/(kg bw)/day. However, in 5-15% of cases, the intake from bread consumption alone exceeded the PMTDI. Wheat grain data led to the higher percentage. Intakes estimated from both data sets were at or below the acute reference dose (ARfD) of 8 μg/(kg bw)/day in 99.94-99.97% of cases.  相似文献

A deterministic exposure assessment using the Nusser method that adjusts for within-subject variation and for nuisance effects among Finnish children and adults was carried out. The food consumption data covered 2038 adults (25-74 years old) and 1514 children of 1, 3 and 6 years of age, with the data on foods' acrylamide content obtained from published Finnish studies. We found that acrylamide exposure was highest among the 3-year-old children (median = 1.01 μg kg(-1) bw day(-1), 97.5th percentile = 1.95 μg kg(-1) bw day(-1)) and lowest among 65-74-year-old women (median = 0.31 μg kg(-1) bw day(-1), 97.5th percentile = 0.69 μg kg(-1) bw day(-1)). Among adults, the most important source of acrylamide exposure was coffee, followed by casseroles rich in starch, then rye bread. Among children, the most important sources were casseroles rich in starch and then biscuits and, finally, chips and other fried potatoes. Replacing lightly roasted coffee with dark-roasted, swapping sweet wheat buns for biscuits, and decreasing the acrylamide content of starch-based casseroles and rye bread by 50% would result in a 50% decrease in acrylamide exposure in adults. Among children, substituting boiled potatoes for chips and other friend potatoes and replacing biscuits with sweet wheat buns while lowering the acrylamide content of starch-based casseroles by 50% would lead to acrylamide exposure that is only half of the original exposure. In conclusions, dietary modifications could have a large impact in decreasing acrylamide exposure.  相似文献

目的评价苯醚甲环唑和吡唑醚菌酯在西瓜中的长期慢性和短期急性膳食摄入风险。方法于2018年进行1年10地规范残留试验,建立检测西瓜中苯醚甲环唑和吡唑醚菌酯残留的分析方法。样品经乙腈提取,加NaCl盐析,经无水MgSO4除水和PSA净化,用超高效液相色谱串联质谱法(ultra performance liquid chromatography tandem mass spectrometry, UPLC-MS/MS)分析,采用多反应离子监测模式(MRM)检测,正离子(ESI+)化,基质匹配外标法定量。结果目标物在一定质量浓度范围内具有良好的线性关系(r≥0.9991)。西瓜在0.01、0.05、0.5 mg/kg添加水平下,苯醚甲环唑平均回收率为92%~103%,相对标准偏差为0.9%~8.9%之间;吡唑醚菌酯的平均回收率为92%~95%, RSDs为1.7%~10.3%,定量限为0.01 mg/kg。膳食评估的结果:一般人群苯醚甲环唑的国家估算每日摄入量(the national estimated daily intake, NEID)为8.57μg/kg·bw/d,占日允许摄入量的85.7%;一般人群吡唑醚菌酯的NEID为18.72μg/kg·bw/d,占日允许摄入量的62.4%。短期急性膳食风险评苯醚甲环唑短期膳食摄入量(the national estimated short-term daily intake, NESTI)为2.98~4.26μg/kg·bw/d,占急性参考剂量(the acute reference dose, ARfD)的0.99%~1.42%,吡唑醚菌酯NESTI为6.23~8.90μg/kg·bw/d,占ARfD的12.46%~17.8%。我国规定的水果中苯醚甲环唑和吡唑醚菌酯最高MRL分别为2 mg/kg和4 mg/kg,该值对我国各类人群在水果中苯醚甲环唑暴露保护水平为1.44~11.24倍;吡唑醚菌酯暴露保护水平为2.16~16.86倍。结论苯醚甲环唑和吡唑醚菌酯长期慢性和短期急性膳食摄入风险较低,现有水果MRL对各类人群的暴露量在可接受的范围之内。  相似文献

The aim of this first study was to determine the dietary exposure of antimony, lead, mercury in foodstuffs consumed by secondary school students in Hong Kong. Around 100 composite food items were purchased and then cooked prior to analysis. Antimony was measured by hydrogen generation (HG)/inductively coupled plasma-mass spectrometry (ICP-MS), while lead was determined by ICP-MS. Total mercury was measured by cold vapour atomic absorption spectrometry. The detection limits for antimony, lead and total mercury were 1, 0.6 and 3 microg kg(-1), respectively. The dietary intake of antimony, lead and total mercury for an average secondary student were estimated to be 0.252, 1.98 and 0.92 microg (kg bw)(-1) week(-1), respectively. The dietary intake of antimony, lead and total mercury for high-consumer secondary student were estimated to be 0.567, 5.09 and 2.33 microg (kg bw)(-1) week(-1), respectively. The main contribution to antimony, lead and mercury were milk, vegetables and seafood, respectively. The Tolerable Daily Intake (TDI) of antimony, as recommended by WHO, is 6 microg (kg bw)(-1) week(-1), while the Provisional Tolerable Weekly Intakes (PTWI) of lead and mercury, as recommended by JECFA, are 25 and 5 microg (kg bw)(-1) week(-1), respectively. The estimated exposure values for secondary school students were compared to these safety reference values. For the relevant population, this study confirms the low probability of health risks from these metals via food consumption.  相似文献

In this study, we analyzed the concentrations of mercury and dioxins in tuna with various fat contents (akami; the leaner meat, Chutoro; the belly area of the tuna along the side of the fish between the akami and the otoro. Otoro; the fattiest portion of the tuna) in wild and farmed bluefin tuna and farmed southern bluefin tuna. In the three kinds of tuna, average dioxins concentrations in Akami, chutoro and otoro were 1.7, 4.7 and 9.6 pg TEQ/g, respectively. The dioxins concentration in all three regions of tuna was in direct proportion to the fat content. In the farmed bluefin tuna, the dioxins concentration was almost the same as that of the wild tuna, but differed from that of the farmed southern bluefin tuna. Average total mercury concentration based on wet weight in akami was 0.42 μg/g, being higher than the values of 0.36 μg/g of chutoro and 0.31 μg/g of otoro, and in inverse proportion to the fat content. In all three regions, the total mercury concentration of the wild bluefin tuna was equal to that of the farmed tuna. The total mercury concentration in the latter was two to three times higher than that of the farmed southern bluefin tuna. If the Japanese intake is one fin of tuna (80 g) a day, the daily intake levels of dioxins and methyl mercury can be estimated as 0.48-37 pg TEQ/kg bw and 0.21-0.90 μg/kg bw, respectively.  相似文献

A total of 77 traditionally smoked meat samples produced in Latvia, Lithuania, and Estonia were tested for the occurrence of four EU regulated polycyclic aromatic hydrocarbons (PAHs). Levels of PAHs exceeding the EU maximum levels for benzo[a]pyrene and for the sum of four PAHs (PAH4) were detected in 46% and 48% of the samples originating from Latvia. The detected BaP levels in smoked meats ranged from 0.05 to 166 μg kg?1, while the PAH4 content ranged from 0.42 to 628 μg kg?1. The mean dietary exposure to PAHs was estimated at the levels of 5.4 ng BaP/kg bw/day and 36 ng PAH4/kg bw/day. The margin of exposure (MOE) approach was utilised to assess the risks to Latvian consumers due to PAHs and the obtained MOEs were in a range of 7205–24,434, thus indicating a potential concern for consumer health for specific population groups.  相似文献

Perchlorate is a naturally occurring inorganic anion used as a component of solid rocket fuel, explosives, and pyrotechnics. Sufficiently high perchlorate intakes can modify thyroid function by competitively inhibiting iodide uptake in adults; however, little is known about perchlorate exposure and health effects in infants. Food intake models predict that infants have higher perchlorate exposure doses than adults. For this reason, we measured perchlorate and related anions (nitrate, thiocyanate, and iodide) in 206 urine samples from 92 infants ages 1-377 days and calculated perchlorate intake dose for this sample of infants. The median estimated exposure dose for this sample of infants was 0.160 μg/kg/day. Of the 205 individual dose estimates, 9% exceeded the reference dose of 0.7 μg/kg/day; 6% of infants providing multiple samples had multiple perchlorate dose estimates above the reference dose. Estimated exposure dose differed by feeding method: breast-fed infants had a higher perchlorate exposure dose (geometric mean 0.220 μg/kg/day) than infants consuming cow milk-based formula (geometric mean 0.103 μg/kg/day, p < 0.0001) or soy-based formula (geometric mean 0.027 μg/kg/day, p < 0.0001), consistent with dose estimates based on dietary intake data. The ability of perchlorate to block adequate iodide uptake by the thyroid may have been reduced by the iodine-sufficient status of the infants studied (median urinary iodide 125 μg/L). Further research is needed to see whether these perchlorate intake doses lead to any health effects.  相似文献

Polychlorinated dibenzo-p-dioxin and dibenzofurans (PCDD/Fs) and dioxin-like and non-dioxin-like (indicator) polychlorinated biphenyls (PCBs) were monitored in various foodstuffs of animal origin and edible oil samples obtained from two different cities in Turkey both rural and industrial. Total dioxin+dioxin-like PCBs and indicator PCB concentrations of pooled samples ranged 0.20–4.19 pg World Health Organization-Toxic Equivalency (WHO-TEQ)(1998)/g fat and 57.2–1710 pg/g fat, respectively. The dominant congeners were 2,3,4,7,8-PeCDF, 1,2,3,7,8-PeCDD, 2,3,7,8-TCDD and PCB126. Dietary intake of dioxin+dioxin-like PCBs and indicator PCBs from fish, dairy products, edible oil, egg and meat was 0.509 pg WHO-TEQ1998/kg bw (body weight)/day and 839 pg/kg bw/day in Afyon and 0.588 pg WHO-TEQ1998/ kg bw/day and 1070 pg/kg bw/day in Kocaeli, respectively. The major contributors to total exposure were dairy products and fish. Despite the unexplained high contamination level in an individual egg sample from Kocaeli, average concentration levels in Turkey, even in industrialized regions, were low compared to reported concentrations in Western Europe. Exposure levels were well below the tolerable daily intake (TDI) of 2 pg WHO-TEQ1998/kg body weight.  相似文献

Poppy seed-containing foods are popular dishes in Hungary and some other Central European countries. The alkaloids of poppy are used in the production of medicines. Poppy seeds used as food may also contain considerable amounts of alkaloids, which raises the question of food safety. Morphine, codeine, thebaine and noscapine concentrations of poppy seed samples from the period 2001-2010 and consumption data from two Hungarian surveys, carried out in 2003 and 2009, were evaluated. Exposure calculations were made for morphine intake by both point estimate and probabilistic methods, and the uncertainty of the calculated values was estimated. The point estimate for the acute consumer exposure, calculated using the 97.5th percentiles of morphine concentration and of poppy seed consumption and taking into account the reduction of morphine content by processing, was 78.64?μg (kg?bw)?1?day?1 for adults, and 116.90?μg (kg?bw)?1?day?1 for children. Based on probabilistic estimations, the 97.5th and 99th percentile exposures ranged between 18.3-25.4 and 25.6-47.4?μg (kg?bw)?1?day?1 for adults, and between 32.9 and 66.4?μg (kg?bw)?1?day?1 for children, respectively. As a no observed effect level (NOEL) had not been established, the significance of exposure could not be assessed.  相似文献

Approximately 3000 food samples from the Slovenian market and 2500 drinking (tap) water samples in the period 2011 ? 2016 were evaluated for the presence of toxic elements lead (Pb) and cadmium (Cd) and the overall chronic dietary exposure was assessed for each element. The highest mean concentrations were found for Pb in products for special nutritional use – dietary supplements (0.383 mg/kg) and for Cd in fish and seafood (0.117 mg/kg). The consumption data were obtained from the national study of the household budget and from the European Food Safety Authority (EFSA) summary statistics. Chronic dietary exposure was estimated deterministically. The average Pb and Cd intakes from food and drinking (tap) water ranged for children from 0.90 to 1.021 µg/kg bw/day and 4.65 to 5.65 µg/kg bw/week, respectively, and for adults, including adolescents, from 0.40 to 0.53 µg/kg bw/day and 1.98 to 2.82 µg/kg bw/week, respectively. The high consumption of cereal-based foods and vegetables contributed most to overall Pb and Cd intake in the majority of the age groups. The exposure to Pb was generally lower and that to Cd was higher compared to the average EU values. The most exposed were children, as the health-based guidance values were exceeded for both elements, which indicates a health concern. An important contribution to Cd exposure can be attributed to grains and potatoes grown in Slovenia, where the soil contains more Cd than that in other EU countries. Further efforts to reduce Pb and Cd intake are required to minimize potential health risks.  相似文献

The aim of this study was to assess the dietary intake of nitrate and nitrite in Belgium. The nitrate content of processed vegetables, cheeses and meat products was analysed. These data were completed by data from non-targeted official control and from the literature. In addition, the nitrite content of meat products was measured. Concentration data for nitrate and nitrite were linked to food consumption data of the Belgian Food Consumption Survey. This study included 3245 respondents, aged 15 years and older. Food intakes were estimated by a repeated 24-h recall using EPIC-SOFT. Only respondents with two completed 24-h recalls (n=3083) were included in the analysis. For the intake assessment, average concentration data and individual consumption data were combined. Usual intake of nitrate/nitrite was calculated using the Nusser method. The mean usual daily intake of nitrate was 1.38 mg kg(-1) bodyweight (bw) day(-1) and the usual daily intake at the 97.5 percentile was 2.76 mg kg(-1) bw day(-1). Exposure of the Belgian population to nitrate at a mean intake corresponded to 38% of the ADI (while 76% at the 97.5 percentile). For the average consumer, half of the intake was derived from vegetables (especially lettuce) and 20% from water and water-based drinks. The average daily intake of nitrate and nitrite from cheese and meat products was low (0.2% and 6% of the ADI at average intake, respectively). Scenario analyses with a higher consumption of vegetables or a higher nitrate concentration in tap water showed a significant higher intake of nitrate. Whether this is beneficial or harmful must be further assessed.  相似文献

Graphite-furnace atomic absorption spectrometric analysis of raisins imported in 1993-95 from different countries into Canada showed that raisins from Turkey had unusually high lead levels. The Turkish raisins ( n =18) contained a mean (range) of 0.93 (0.056- 3.1)mg kg -1 lead, whereas five samples from Australia, South Africa, Iran, Mexico and Chile contained a mean of 0.0085 (0.005-0.010)mg kg -1 . Acid-washing studies showed that most of the lead in the Turkish raisins was on the surface of the fruit. The impact of eating the raisins on the dietary intake of lead was estimated for Canadians of different ages and sexes. For example, eating raisins from Turkey would increase the dietary intake of lead by 1-4-year-old children from 0.97 to ~2.2 μg kg -1 body weightday -1 . The source of the lead was traced to use of a copper fungicide contaminated with high lead levels. Currently, lead levels in raisins imported from Turkey are low and approach levels in raisins from other countries. Uncontaminated raisins contain ~0.01mg lead kg -1 , and a maximum tolerance for lead in raisins of 0.1mg kg -1 is achievable irrespective of the type of raisin or country of origin. Therefore, consideration should be given to proposing this level as a maximum tolerance for lead in raisins.  相似文献

One of the main routes of exposure to inorganic arsenic (i‐As) in humans is food, especially rice and rice‐based products. There are certain groups of consumers that could be highly exposed to i‐As. Maximum levels of i‐As have been issued for infants and young children by the European Union, but perhaps other groups are also at risk. Sportspeople could be one of those groups, due to their specific nutritional requirements, especially its high consumption of cereals, such as rice. Because of the well‐known relationship between rice and i‐As, the intake of i‐As by sportspeople deserved especial attention and was estimated in Spain. This study demonstrated that rice‐based products reached a maximum i‐As content of 178 μg/kg, with a mean for all studied products of 56 μg/kg; the maximum contents were found in rice cakes (149 μg/kg) and brown rice (111 μg/kg). The estimated daily intake of i‐As were 0.16 and 0.18 μg/kg bw (body weight)/d, in sportsmen and sportswomen, respectively. These values were below the BMDL01, 0.3 to 8.0 μg/kg bw/d; thus, it can be concluded that the sportspeople group is not at a significant risk regarding the intake of i‐As. However, further studies are needed to evaluate their whole diet and not only rice‐based products. Finally, it is important to claim that companies producing rice products include as much information as possible about the rice used in their products, including rice percentage and geographical origin.  相似文献

Deterministic and probabilistic estimates of the chronic exposure to lead (Pb) for the inhabitants in Jiangsu Province, China, were performed. Pb contamination data were obtained from the national food contamination monitoring programme during 2001-2006 and 2600 samples from 38 commodities in Jiangsu were included. Food consumption data were from the national diet and nutrition survey conducted in 2002, including 3879 subjects aged 2-80 years and 185 children aged 2-6 years in Jiangsu. Contributions from 38 commodities were included in the calculations. Using the provisional tolerable weekly intakes (PTWI) divided into daily intakes (PTWI(d)) of 3.57 microg kg(-1) bw day(-1) in the risk assessment, exposures calculated by the deterministic approach for children and the general population were 77% and 43% of the PTWI(d), respectively, which were nearly similar to the mean intake calculation in the probabilistic approach. The percentage of people whose exposure level exceeded the PTWI(d) for children, the general population, urban population and rural population were 16%, 0.4%, 0.1%, and 0.5%, respectively. The 50th, 95th and 99th percentiles of Pb exposure for children were 2.6, 4.4 and 5.5 microg kg(-1) bw day(-1), respectively. Rice followed by wheat flour and bean products contributed most to the total Pb intake for both children and the general population. This study indicated that the Pb dietary exposure in Jiangsu Province, especially for children, would be a public health concern.  相似文献
