Mushroom Response to Postharvest Hyperbaric Storage

Vessels suitable for storing mushrooms [Agaricus bisporus (Lange) Singe] at absolute pressures to 35 atm were constructed from 43 liter (1A) gas cylinders and plumbed for conducting static or continuous-flow experiments. Neither pressurization nor gradual depressurization over 6 hr injured mushrooms. Pressure did not affect respiration, but significantly reduced moisture loss during storage. Mushrooms depleted O₂ to very low levels and showed high tolerance to CO₂. Pressure was used to safely increase CO partial pressure (p) 35-fold. At 0.035p, CO reduced mushroom browning but not respiration. A completely autonomous storage system with CO₂ removal and automatic O₂, replenishment was developed.

从植物伤害信号种类、传递模型、烟草响应机械伤害的生理变化及对钾和烟碱含量的调控措施等方面进行了综述,认为打顶能激活某些伤害信号因子,导致烟株代谢平衡失调,从而引起烟叶化学成分的变化,并为进一步研究烟叶中钾和烟碱的问题提出了建议.

Response of Vibrio parahaemolyticus to ethanol shock

In this study, the growth and survival of Vibrio parahaemolyticus in the presence of 0.0-8.0% ethanol was first examined. V. parahaemolyticus was then exposed to a sub-lethal dose of 5.0% ethanol for 30 and 60 min (ethanol shock). Morphological changes and alterations in cell leakage, thermal tolerance at 47 degrees C, and susceptibility to 8% ethanol and low temperature (4 and -18 degrees C) of V. parahaemolyticus caused by ethanol shock were investigated. In addition, recoveries of the ethanol-shocked cells of V. parahaemolyticus on thiosulfate-citrate-bile salts-sucrose agar (TCBS) and TSA-3.0% NaCl were also compared. The findings revealed that the presence of ethanol in TSB-3.0% NaCl at 6.0-8.0% and 5.0% or less, exerted bactericidal and partial growth inhibition effect, respectively, on V. parahaemolyticus. Recovery of ethanol-shocked cells of V. parahaemolyticus was significantly (P<0.05) less on TCBS than on TSA-3.0% NaCl. A significantly (P<0.05) marked increase of protein and nucleic acid material in the supernatant of cell suspension was found after cells of V. parahaemolyticus were exposed to ethanol shock. Extensive cell disruption, wrinkling and cell-wall pitting, indicative of cell-surface damage were also noted on the ethanol-shocked cells. Ethanol-shocked cells of V. parahaemolyticus exhibited a similar yet higher susceptibility at 4 and -18 degrees C compared with the control cells. Moreover, there was a marked increase in the thermal tolerance and resistance to 8.0% ethanol with cells of V. parahaemolyticus after ethanol shock. Finally, the duration of ethanol shock testing did not affect the extent of increased thermal tolerance. While cells of V. parahaemolyticus subjected to ethanol shock for 60 min showed an increase in their resistance to 8.0% ethanol, they also showed an increase in susceptibility at -18 degrees C, than those ethanol shocked for 30 min.     

Response of Striated Muscle to Electrical Stimulation

SUMMARY— The response of striated muscle to electrical stimulation was studied in 30 Duroc pigs at two weights; and in 14 Poland China, 11 Yorkshire and 8 Yorkshire-Duroc crossbred pigs of market weight. The Duroc pigs in the heavyweight group were more responsive to electrical stimulation, had a slower rate of post-mortem pH decline and higher color-morphology ratings than the light weight group of Durocs.
The sex of the animal had only a slight effect on the response of the muscle to electrical stimulation. Muscles with a slow rate of glycolysis were significantly more responsive to electrical stimulation than those with an intermediate rate of glycolysis.
The initial lactic acid concentration, unless present in excessive quantities, appeared to have little influence on the responsiveness of the muscle to electrical stimulation. Lactic acid increased significantly, accompanied by a lowering of pH, during the electrical stimulation of the muscle.
Stimulation of the spinal cord caused a significantly lower color-morphology rating and pH in the Poland China and Yorkshire, but not in the Duroc animals. Electrical stimulation in animals other than Poland China did not produce pale, soft, exudative (PSE) musculature.
The electrical stimulatory response of red and white muscle was not significantly (P > .05) different; however, the data indicate that white muscle and PSE muscle do not respond in a similar manner to electrical stimulation.

Response of adult rats to lysine supplementation

The response of adult rats to wheat flour protein fortified by addition of lysine was studied by utilizing the relative protein value (RPV) compared to non-fortified wheat flour. Lactalbumin was used as a standard protein. Fortification of wheat flour by 0.3% lysine resulted in better growth of rats when fed at 6% protein level. However, no significant difference was observed in the growth of rats fed non-fortified or fortified wheat flour at 4% or 2% protein level. The relative nutritive value (RNV) of supplemented wheat flour protein is higher than that of the non-supplemented when change in body weight or change in body water are used as response parameters. When the dietary protein is provided at maintenance or below maintenance levels, lysine is not limiting. Therefore, supplementation of wheat flour protein with lysine did not result in any better growth response. When protein is provided at levels above maintenance requirements lysine is limiting and better growth was achieved by lysine supplementation to wheat flour protein.

Taster Response to Salt in Minced Fish

Cooked fish minces, alone and with four added levels of salt, were tasted at the same sessions as five solutions of similar salt concentration. Saltiness was measured by the tasters using the method of magnitude estimation. The magnitude estimation exponent for salt in cooked fish mince was 1.05 whereas that for the solution was significantly higher at 1.51.
