基于盐酸介质中,碘酸根在溴化钾的催化下对甲基红有较好的氧化褪色作用,且褪色前后的吸光度的差值与碘的浓度成正比,建立了紫外分光光度法测定痕量碘及微量碘的新方法。最大吸收波长为518nm,表观摩尔吸光系数为6.5×104L·mol-·1cm-1,线性范围为0~50μg/25mL,该方法用于碘盐及海带中碘的测定,获得满意结果。  相似文献

建立了碘酸根-荧光黄-表面活性剂体系下测定食盐中碘的方法。采用增敏光度法研究在醋酸介质中,表面活性剂存在下,溴化钾催化KIO3氧化荧光黄的褪色反应。结果表明:最大吸收波长为438.5 nm,KIO3质量浓度在0.40~3.00 μg/mL范围内遵守朗伯-比尔定律,ΔA与KIO3质量浓度之间呈线性关系;438.5 nm波长条件下该反应的相关系数为0.999 0,表观摩尔吸光系数为4.31×104 L/(mol·cm)。用于测定食盐中微量的碘,相对标准偏差为0.83%~1.47%,回收率为98.1%~98.4%,此方法准确度较高,操作简便、快捷,是测定加碘食盐中碘含量较好的方法之一。  相似文献

The aim was to use wheat dietary fibre and soy protein isolate as carriers of KI and KIO3 for fortification of processed meat with iodine. Products from minced pork were prepared with addition of iodised wheat fibre and soy isolate, and iodised table salt for comparison and the effects of thermal processing and storage on changes in iodine content were determined. It was shown that both alternative carriers limited the iodine changes in meat products compared with iodised table salt. However, wheat fibre was more effective in limiting iodine losses during thermal processing and soy protein during storage of the products. The greatest effect of the carriers was found in meat products fortified with the less stable KI.  相似文献

试验旨在建立一种离子液体双水相萃取-高效液相色谱法检测饮料中8种合成着色剂(新红、靛蓝、胭脂红、日落黄、诱惑红、亮蓝、酸性红和赤藓红)的方法。考察了萃取剂的种类及体积、盐的种类及添加量、样品pH、萃取时间、离心时间对萃取效率的影响。在优化条件下,各物质在30~1200μg/L浓度范围内线性关系良好,相关系数均大于0.999,方法检出限为2.4~6.0μg/L。在加标量50,250和500μg/L水平下,样品加标平均回收率为86.5%~99.0%,相对标准偏差为0.3%~3.8%(n=6)。该法操作简单、迅速、环保且具有较高的萃取效率。  相似文献

Extensive programs of iodine supplementation by iodated salt have been implemented in Africa during the last decade. The present work evaluated their effectiveness in Benin, Burkina Faso, Mali, and Togo. A van equipped with a sonographic device visited 39 sites in the four countries. The prevalence of goiter was evaluated on the basis of the determination of thyroid volume by ultrasonography in 4,011 randomly selected 6- to 12-year-old schoolchildren of both sexes in the 39 sites. The concentration of urinary iodine was measured in 1,545 of these children. The iodine content of table salt collected at home by the children was measured by test kits in 3,202 salt samples, 415 of which were also analyzed by titration. Based on the results obtained by the kits, 83.7% to 97.9% of the salt samples contained iodine. However, the test kits had a low sensitivity and specificity in comparison with titration. The median urinary iodine was within an acceptable range (100-300 14 g/L) in the four countries, but almost one-third of the values were still below normal. The prevalence of goiter was normal (< 5%) in Benin and Togo, and it was 22.4% and 13.4%, respectively, in Burkina Faso and Mali. These results indicate marked improvement of the status of iodine nutrition in comparison with the situation reported only a few years ago in the same countries, but quality control of the iodine content of salt and monitoring of the iodine status of the populations need to be improved.  相似文献

目的探讨富硒低钠加碘盐中碘含量的测定方法。方法通过不同的实验条件,优化国标GB/T13025.7-2012《制盐工业通用试验方法碘的测定》中氧化还原滴定法中的试剂用量,检测出富硒低钠加碘盐中的碘含量。结果改变碘化钾溶液量、淀粉溶液量、磷酸-草酸溶液量均无法测定富硒低钠盐中的碘含量;只有当次氯酸钠溶液用量≥5mL时,加入碘化钾溶液,才可以使富硒低钠加碘盐溶液显色,然后通过实验确定次氯酸钠的最佳用量,再滴定测定碘含量。结论富硒低钠加碘盐中含有还原性物质,测定其碘含量需加大次氯酸钠溶液的用量。  相似文献

我国缺碘区域广泛 ,并大面积流行碘缺乏症。在食盐中加碘是防治碘缺乏症的有效措施 ,为此 ,世界各国先后都将在食盐中加碘列为法规。在我国 ,虽然在民用盐中成功地应用了加碘盐 ,然而对于加工食品 ,特别是腌制食品仍然未应用加碘盐。我国腌制食品种类多 ,生产量大 ,其用盐量占有很大比例。为了在我国全面推广加碘盐 ,彻底防治碘缺乏症 ,有助于碘盐法规在我国的实施 ,为此我们进行了碘盐在食品工业中应用的研究。本研究结果表明 ,加碘盐适合于食品工业使用 ,对腌制食品不会产生任何不良影响。  相似文献

The aim was to assess the effect of iodine salts (KI or KIO(3)) on lipid oxidation as well as changes in the availability of lysine and methionine and protein digestibility in frozen-stored processed meats. Three types of iodine salt carriers were used: table salt, wheat fiber and soy protein isolate. The results showed no catalytic effect of iodine salts on lipid oxidation in stored processed meats. The application of a protein isolate and wheat fiber resulted in the inhibition of lipid oxidation in meatballs. During storage of meat products the contents of available lysine and methionine as well as protein digestibility were decreased. The utilization of wheat fiber as an iodine salt carrier had a significant effect on the reduction of lysine losses. No protective properties were found for the wheat fiber or soy protein isolate towards methionine.  相似文献
