研究了苦瓜对亚硝酸盐的清除作用,通过单因素和正交实验考察了苦瓜浸提液用量、pH和反应时间对清除率的影响,并比较了新鲜苦瓜与热处理苦瓜清除亚硝酸盐的效果,确定清除亚硝酸盐的最佳条件为:浸提液用量10 mL,pH 4.0,反应时间20 min,在此条件下,清除率达到最大68.56%;通过对比得到新鲜苦瓜的清除效果比热处理苦瓜提高4%~10%.将研究结果用于腌制食品中亚硝酸盐的清除,作用效果显著. 相似文献

苦瓜茶因其营养丰富,且具清热解毒、清心明目的功效为广大群众所喜爱,直接冲制的苦瓜茶汤却因味道苦涩,并有令人生厌的异味而影响了人们饮用的积极性。为此,通过实验确定了苦瓜茶饮料的最佳配方:苦瓜茶原汁4.5%,乙基麦芽酚10mg/L,蛋白糖0.07%,甜蜜素0.05%,柠檬酸1.1g/L,味精6mg/L,维生素C0.03%,苯甲酸钠0.015%。采用该配方生产的清凉型苦瓜保健碳酸饮料具有香气浓郁、怡人,风味独特,酸甜爽口等特点。 相似文献

运用响应面法优化表面活性剂协同微波提取苦瓜黄酮工艺。选取了表面活性剂种类、表面活性剂浓度(g/L)、乙醇体积分数(%)、液料比(m L/g)等对黄酮提取具有显著影响的因素进行实验。通过单因素实验获得各个因素的最佳水平,进而运用Box-Behnken设计法建立中心组合实验。确定了苦瓜黄酮提取的最优条件为十二烷基硫酸钠(SDS)浓度0.20g/L、乙醇体积分数为82.9%、液料比为40.9∶1,该条件下黄酮提取率预测值为0.567%。验证实验结果表明,响应面法优选的苦瓜黄酮提取工艺是合理可行的。 相似文献

用蒸煮和挤压膨化2种熟化方式制备小米粉,采用顶空固相微萃取法(HS-SPME)提取挥发性成分并与气相色谱-质谱(GC-MS)联用,分析了2种熟化方式制备的小米粉制品中挥发性成分。结果显示,蒸煮小米粉制品中主要有33种挥发性成分,膨化小米粉制品中主要有20种挥发性成分,其中含有15种相同挥发性成分。蒸煮小米粉制品和膨化小米粉制品都产生了较多的醛类化合物,是熟化小米粉制品中的主要挥发性风味物质,膨化小米粉制品中的不良风味的醛类化合物较少;蒸煮小米粉制品中检测到了较多的酮类化合物,而膨化小米粉制品中检测到较多的杂环类化合物。蒸煮小米粉制品中的挥发性风味物质的种类和含量要高于膨化小米粉制品。 相似文献

The effects of different types of product information on consumer product evaluation were examined in real life settings. Cod fillets were presented to 1440 consumers drawn from the Dutch TasteNet consumer panel for assessment in their own households. The product was presented accompanied by product information included in the package labelling. A control product, labelled simply as cod, was included. Consumers reported their evaluation of the product for overall and analytic sensory attributes. It was found that information about product type, price, freshness and the advantages of fish farming could influence product evaluation. Cod labelled as wild, highly priced or recently caught was judged more favourably than the unlabelled product. Information on the advantages of farming had a negative effect on product evaluation that interacted with price so as to minimise the positive effect of the latter. Interaction of the information provided with product perception in a realistic situation demonstrated that farmed fish was associated with less favourable product characteristics. 相似文献

Egg yolk solids defatted with hexane were incorporated into frozen and spray-dried scrambled egg products. Part of the egg oil removed was replaced with nonfat oil replacers. Both products were evaluated by sensory panels. The frozen product was compared with frozen whole egg and a nonyolk, commercial frozen product. The spray-dried product was compared with a nonyolk, commercial dried product. In the frozen products, the whole egg was preferred over both the defatted frozen product and nonyolk, commercial frozen product, with the defatted and nonyolk products being equally acceptable. In the dried products, the spray-dried scrambled eggs were preferred over the nonyolk, commercial dried product. The products formulated from defatted yolk solids contained 84% less lipid and 79% less cholesterol than products made from fresh whole eggs. 相似文献
