Eggs are a good source of high quality protein and knowing their quality (physical and chemical properties) during storage is of great importance. Thus, the aim of this research was to design a computer vision system to assess egg freshness during storage time. To this end, 210 intact eggs were collected and stored for 30 days under room conditions (25?±?2 °C and 20?±?3%). After imaging, every other day, some internal and external quality characteristics including yolk height, yolk and albumen pH, yolk and albumen density and Haugh unit (HU) were measured as destructive parameters and area index (D) egg weight as non-destructive parameters. Based on Pearson correlation coefficients, area index were significantly correlated with all destructive variables (p?<?0.05). In order to predict egg freshness, artificial neural network was trained by Levenberg–Marquardt, scaled conjugate gradient, Bayesian regulation, resilient and radial basis algorithms. The best result of artificial neural network for HU and albumen pH prediction was achieved by the Levenberg–Marquardt algorithm with the correlation coefficient of 0.93 and 0.87, respectively.  相似文献

A non-destructive ultrasound based method was used to develop a model for poultry egg freshness assessment. The proposed model can predict the Haugh unit, albumen thickness, air-cell height, and a number of other egg quality parameters by computing the ultrasound phase velocity within the egg material. For this purpose, the effect of the storage time on the ultrasound phase velocity within the poultry eggs together with the peak values of the transmitted ultrasound signals in the time and frequency domains were considered as indicators of egg freshness. Tests were conducted on eggs that were stored for five weeks in different storage conditions. The computed parameters were used to develop different models to predict the number of storage days for the egg samples. The results showed that the amplitude of the main peaks of the ultrasound signal in the time domain increased by the number of storage days. Moreover, there was a significant difference between the mean values of the phase velocities obtained at different times during the storage period. Comparing the results obtained for the eggs kept at the room temperature to those refrigerated showed that these variations were more significant for the eggs kept at room temperature.  相似文献

The objective of this research was to investigate the feasibility of visible transmission spectroscopy for the non‐destructive assessment of the freshness of an individual egg. A total of 600 intact white‐shelled eggs of the same flock (Lohmann, 40 weeks of age) were measured. To obtain a considerable variation in freshness, groups consisting of 60 eggs were stored (18 °C, 55% RH) for 0, 2, 4, 6, 8, 10, 12, 14, 16 and 18 days. The non‐destructive spectral measurements were compared with the two most widely used destructive freshness parameters, namely Haugh units and albumen pH. A partial least squares (PLS1) model was built in order to predict Haugh units and pH of the albumen based on the transmission spectra. The correlation coefficients between the predicted value and the measured value were 0.842 and 0.867 for Haugh unit and pH of the albumen, respectively. These results show that the light transmission spectrum of an egg provides quantitative information about egg freshness. Relevant information concerning egg freshness is restricted to the interval between 570 and 750 nm. Furthermore, the models obtained for both destructive parameters were strikingly similar, indicating that Haugh unit and pH have the same physico‐chemical background. Effect of Shell Eggs Storage on Ovomucin Extraction   总被引:1,自引:0,他引:1  
Ovomucin, one of the major egg white proteins, has wide potential applications in food, functional food and nutraceutical industries due to its unique physicochemical properties and bioactivities. A new two-step method was recently developed to prepare high purity ovomucin; in this study, effect of shell egg storage on ovomucin extraction was investigated. The composition of ovomucin extracts from egg white was determined by gel filtration chromatography. Both storage temperature and time could significantly (p < 0.05) affect the purity and yield of the ovomucin. After 9 weeks of storage at 4 °C, the content of the ovomucin in the extract decreased from 92.5% to 82.4%, and the yield of ovomucin decreased from 214 to 120 mg/100 g of egg albumen (egg white). After 5 weeks of storage at 22 °C, the content of ovomucin extract decreased from 92.5% to 73.0%, and the yield of ovomucin decreased from 214 to 112 mg/100 g of egg albumen. Increase in egg white pH during prolonged storage leading to degradation of ovomucin is very likely responsible for the decreased extractability of ovomucin.  相似文献

BACKGROUND: The objective of this study was to evaluate the effects of low storage temperatures on shell egg quality. RESULTS: Approximately 2100 shell eggs were collected and stored at ? 1.1, 0.6, 2.2, 3.9, 5.6 and 7.2 °C for up to 4 weeks. Eighteen eggs at each storage temperature were evaluated after 0, 2, 7, 14, 21 and 28 days of storage. Haugh units (HU), yolk index (YI), albumen pH (pHA), yolk pH (pHY) and angel food cake density (CD) were measured. Shell egg quality tended to be preserved better at below 2.2 °C, as high HU and YI values relative to eggs stored at 7.2 °C were determined on day 28. However, storage at ? 1.1 °C tended to cause the opposite effect, especially highly declined HU values over time. Significantly different HU values of shell eggs were measured after 14 days of storage, with eggs stored at 0.6 and 2.2 °C having the highest HU values, 80.42 and 77.97 respectively. CONCLUSION: A lower temperature limit for shell egg storage could be established between 0.6 and 2.2 °C, as both temperatures showed the highest HU values, 77.88 and 77.60 respectively, after 28 days of storage. ABSTRACT: The freshness as storage time in ice of cod ( Gadus morhua ) and salmon ( Salmo salar ) was estimated by visible/near infrared (VIS/NIR) spectroscopy. The correlation between spectral data and storage time was modeled by multivariate statistics. For cod, the best-fit model was found by using the visible wavelength range, giving correlation of prediction of 0.97 with an error value of 1.04 d. For salmon, the best-fit model was made with data from the NIR range giving correlation of prediction of 0.98 and an error value of 1.20 d. Hence, VIS/NIR spectroscopy proved useful for the evaluation of fish freshness.  相似文献

In this preliminary study, the intrinsic fluorescence of thick and thin egg albumens was evaluated as a possible rapid method for the monitoring of egg freshness. The fluorescence emission spectra of tryptophan residues (excitation: 290 nm; emission: 305–430 nm) of proteins and fluorescent Maillard reaction products (excitation: 360; emission: 380–580 nm) were recorded directly on thick and thin albumen samples within 2–3, 4, 5, 9, 10, 12, 16, 18, 23, 25 and 29 days of storage. Principal component analysis (PCA) and factorial discriminant analysis (FDA) were applied to the spectra data sets. Considering tryptophan fluorescence spectra recorded on thick egg albumen, correct classification was observed for 62.8 and 54.3% for the calibration and the validation sets, respectively. Better classification was obtained from thin egg albumen since 67.3 and 69.1% of samples were correctly classified. Considering fluorescent Maillard reaction products, the similarity map determined by the principal components (PCs) 1 and 2 showed a discrimination of eggs as a function of their storage time on both thick and thin albumens. The percentage of samples correctly classified into four groups by the FDA was 97.4 and 91.4% for the calibration and validation thick albumen samples, respectively. It was concluded that fluorescent Maillard reaction products could be considered as fingerprints that may allow the discrimination between fresh and aged eggs.  相似文献

壳蛋新鲜度是衡量壳蛋品质的关键要素,本文梳理壳蛋新鲜度的评价方法、影响因素以及延缓壳蛋新鲜度指标劣变的方法,并对未来壳蛋新鲜度的研究方向进行展望。无损检测和有损检测法相结合能客观、动态、实时评价壳蛋新鲜度。蛋鸡年龄、饲料配方、贮运和环境条件等对壳蛋新鲜度影响较大,选用年轻蛋鸡、全营养饲料配方、低温贮藏、减少贮运过程中机械损伤可较好地维系壳蛋新鲜度特性。杀菌、包装、涂膜法可延缓壳蛋新鲜度指标的劣变,部分/全部采用绿色、高效、节能型非热杀菌方式,活性、可生物降解型智慧包装/涂膜技术,可有效抑制壳蛋微生物繁殖引起的腐败变质,延缓壳蛋新鲜度指标的劣变。未来壳蛋新鲜度的研究可以围绕无损检测技术、饲料配方、模拟实际生产、贮运销售环节,优化非热杀菌-包装涂膜技术等开展,以期为实现壳蛋品质提升与蛋品产业升级提供更多思路。  相似文献

The objective of this research was to investigate and compare the effect of different treatments including gaseous ozone (6-ppm/4-min), ultrasound (450 W/4 min) and coating of shellac, lysozyme–chitosan (L-C) on fresh eggs internal quality during storage for six weeks at ambient temperature. The internal quality attributes such as weight loss (WL), albumen viscosity, Haugh unit (HU), yolk index, total soluble solids, albumen and yolk's pH were monitored. Control groups had the worst HU (50.04), WL (8.35%), albumen pH (9.27) and viscosity (7.72 mPa·s) values after storage. The best interior qualities were obtained by shellac coating [HU (72.37), WL (1.37) and viscosity (30.10 mPa·s)] and sonication (albumen pH: 8.22). Thus, the shellac-coated eggs maintained all the internal quality parameters at the highest values, while the ozone and ultrasound only helped to keep the internal quality and enhance the shelf life of eggs.  相似文献

Near-infrared (NIR) transflectance and Fourier transform-infrared (FT-IR) attenuated total reflectance spectra of intact chicken breast muscle packed under aerobic conditions and stored at 4° for 14 days were collected and investigated for their potential use in rapid non-destructive detection of spoilage. Multiplicative scatter correction-transformed NIR and standard normal variate-transformed FT-IR spectra were analysed using principal component analysis (PCA), partial least-squares discriminant analysis (PLS2-DA) and outer product analysis (OPA). PCA and PLS2-DA regression failed to completely discriminate between days 0 and 4 samples (total viable count (TVC) days 0 and 4 = 5.23 and 6.75 log10 cfu g−1) which had bacterial loads smaller than the accepted levels (8 log10 cfu g−1) of sensory spoilage detection but classified correctly days 8 and 14 samples (TVC days 8 and 14 = 9.61 and 10.37 log10 cfu g−1). OPA performed on both NIR and FT-IR datasets revealed several correlations that highlight the effect of proteolysis in influencing the spectra. These correlations indicate that increase in free amino acids and peptides could be the main factor in the discrimination of intact chicken breast muscle. This investigation suggests that NIR and FT-IR spectroscopy can become useful, rapid, non-destructive tools for spoilage detection.  相似文献

In this study, the potential application of near-infrared (NIR) Fourier-transform (FT)-Raman spectroscopy to monitor starch retrogradation in stored bread crumb was investigated. Semolina-based bread was made and cut into slices, which were stored under controlled conditions in sealed plastic bags. The aging of the bread crumb was monitored by both NIR FT-Raman spectroscopy and a texture analysis over a period of 20 days. Two-dimensional correlation analysis in the spectral range of 390–975 cm−1 revealed characteristic differences among the spectra collected over time for bands that peaked at 480, 765, and 850 cm−1. The band at 480 cm−1 is studied here in detail. During the storage, the peak frequency of this band shifted towards lower wavenumbers, and its full width at half height decreased. Both of these parameters are highly correlated (R 2 = 0.921 and R 2 = 0.949, respectively) to crumb hardness measured by the texture analyzer.  相似文献

The aim of this study was to evaluate the usefulness of visible (VIS), near-infrared reflectance (NIR) and mid-infrared (MIR) spectroscopy combined with pattern recognition methods as tools to differentiate grape juice samples from commercial Australian Chardonnay (n = 121) and Riesling (n = 91) varieties. Principal component analysis (PCA), partial least squares discriminant analysis and linear discriminant analysis (LDA) were applied to classified grape juice samples according to variety based on both NIR and MIR spectra using full cross-validation (leave-one-out) as a validation method. Overall, LDA models correctly classify 86% and 80% of the grape juice samples according to variety using MIR and VIS-NIR, respectively. The results from this study demonstrated that spectral differences exist between the juice samples from different varietal origins and confirmed that the infrared (IR) spectrum contains information able to discriminate among samples. Furthermore, analysis and interpretation of the eigenvectors from the PCA models developed verified that the IR spectrum of the grape juice has enough information to allow the prediction of the variety. These results also suggested that IR spectroscopy coupled with pattern recognition methods holds the necessary information for a successful classification of juice samples of different varieties.  相似文献

Edible coating may enhance the boundary layer resistance resulting in enhanced shelf life of fruits. Plums (Prunus salicina Lindl. cv. ‘Sapphire’) were treated with coating material based on carbohydrate (Versasheen) with sorbitol as plasticizer and stored at 20 °C and 85% RH. The influence of coating on the gas transmission rates was estimated using a carrier of 100% cellulose paper. Coating treatment reduced the transmission rate of CO2, O2, and H2O. Changes in fruit weight, fruit flesh firmness, color parameters (L*, a*, and hue angle), soluble solids content, pH, titratable acidity, ethylene, CO2, malondialdehyde (MDA), and VIS/NIR fruit reflectance spectrum were recorded in 2-day interval. Edible coating was effective in delaying the increase of pH and the loss of firmness, titratable acidity, L*, hue angle, and MDA. The incorporation of sorbitol showed beneficial effects on decreasing the weight loss, CO2, and ethylene exchange. In the room temperature storage period, not only fruit ripening was measurable in the VIS (350–750 nm) and NIR (750–1,400 nm) wavelength ranges due to the decrease in the fruit chlorophyll absorption but also water loss, respectively. After 5-day room temperature storage the chlorophyll absorption peak in the spectra was already beyond the detection limit in all treatments, while after 3-day storage, the coating effect on the spectral intensities was feasible to separate control from coated plums.  相似文献

目的 分析鸡蛋新鲜度指标与贮藏天数的相关性, 确定新鲜度指标数值显著变化的时间, 建立新鲜度与贮藏时间相关性模型。方法 2 d为一个时间点, 设立12个实验组, 每组5枚鸡蛋, 按照标准中鸡蛋新鲜度评定指标重复3次测定鸡蛋相对密度、气室高度、哈夫单位、蛋黄指数、pH值、失重率。根据Pearson相关系数评价贮藏天数与鸡蛋新鲜度各指标之间的相关程度, Duncan法评价贮藏天数与鸡蛋新鲜度各指标之间的差异显著程度。结果 鸡蛋新鲜度各指标与贮藏天数之间显著相关(P<0.05), 各新鲜度指标数值出现显著变化的时间各不相同, 各天数之间的鸡蛋失重量、失重率差异显著(P<0.05)。结论 本研究所建立的鸡蛋新鲜度与贮藏时间的相关性模型, 可作为鸡蛋新鲜度评价模型。  相似文献

Visible (VIS)/near-infrared (NIR) spectroscopy was used to investigate spectroscopic changes occurring during storage of Atlantic salmon fillets with and without bacterial growth. A storage experiment was conducted for 11 d postmortem. Bacterial growth was inhibited by soaking a group of salmon fillets in 3 mM NaN3 prior to storage, while a control group retained its normal bacterial growth. Spectra were obtained by directly applying the spectroscopic probe onto the loin part of each fillet stored under conditions accelerating degradation. Principal component analysis (PCA) was used to monitor and compare spectroscopic development of the 2 groups and the results showed that VIS/NIR spectral changes occurred in the control as well as the treated group of samples within a single day after filleting. After 2 d of storage, stored samples were distinguishable from those fresh in both groups and it was only after the microbial spoilage became pronounced (8 to 9 log colony forming unit [CFU]/g) that the spectra of the spoiled control samples could be differentiated from spectra of the treated samples with no bacterial growth. Microbial growth is therefore not the only explanation for the spectral variations prior to microbial spoilage. Nonmicrobial, autolytic changes including possible changes in the physical properties are also contributing. Our results show that VIS/NIR spectroscopy can detect autolytic changes occurring in salmon muscle during the early stage of storage, independent of microbial growth. PRACTICAL APPLICATION: Important spectroscopic changes occur even when microbial growth is not apparent. This indicates that VIS/NIR spectroscopy may be used to determine the degree of freshness before microbial spoilage becomes relevant.  相似文献

This research aimed to explore the relationship between internal attributes (pH and soluble solids content) of tea beverages and diffuse reflectance spectra. Three multivariate calibrations including least squares support vector machine regression (LSSVR), partial least squares (PLS), and radial basis function (RBF) neural network were adopted for development of internal attributes determination models. Ten kinds of tea beverages including green tea and black tea were selected for visible and near infrared reflectance (Vis/NIR) spectroscopy measurement from 325 to 1,075 nm. As regard the kernel function, least squares–support vector machine regression models were built with both linear and RBF kernel functions. Grid research and tenfold cross-validation procedures were adopted for optimization of LSSVR parameters. The generalization ability of LSSVR models were evaluated by adjusting the number of samples in the training set and testing set, and sensitive wavelengths that were closely correlated with the internal attributes were explored by analyzing the regression coefficients from linear LSSVR model. Excellent LSSVR models were built with r = 0.998, standard error of prediction (SEP) = 0.111, for pH and r = 0.997, SEP = 0.256, for soluble solids content, and it can be found that the LSSVR models outperformed the PLS and RBF neural network models with higher accuracy and lower error. Six individual sensitive wavelengths for pH were obtained, and the corresponding pH determination model was developed with r = 0.994, SEP = 0.173, based on these six wavelengths. The soluble solids content determination model was also developed with r = 0.977, SEP = 0.173, based on seven individual sensitive wavelengths. The above results proved that Vis/NIR spectroscopy could be used to measure the pH and soluble solids content in tea beverages nondestructively, and LSSVR was an effective arithmetic for multivariate calibration regression and sensitive wavelengths selection.  相似文献

The interior quality of eggs, shell impact strength, and consumer perception of eggs coated with chitosan containing an organic acid (acetic, lactic and propionic) were evaluated. Uncoated eggs had the highest albumen pH and lowest albumen viscosity. The viscosity of eggs coated with chitosan and lactic or propionic acids were the highest. Chitosan coating also improved shell strength with chitosan + lactic acid being the best coating in this regard. The colour of shell and yolk as measured by lightness (L*), a*, b*, chroma and hue of coated and uncoated eggs were not significantly different but the difference was detected in the colour of albumen, which is an effective indication of freshness and egg quality. Based on sensory evaluation, consumers could not differentiate coated eggs from uncoated eggs; thus the general acceptability of the coated eggs was the same as uncoated eggs. This study shows a great potential of using chitosan and lactic acid mixture as a coating material for egg coating to extend the shelf life. It has no effect on consumer acceptability of the product. Determining the shelf life has become a factor of major importance in the development of foods designed to meet consumer demands in terms of quality and safety. The goal of the present study was to investigate the shelf life of vacuum-packed dried tomatoes, stored at both room and refrigeration temperature (4 °C) for a period of 180 days. The following determinations were performed during the storage period studied: microbiological analysis, instrumental color, lycopene, and ascorbic acid. Sorption isotherms were determined at both temperatures (room temperature and 4 °C). The microbiological quality of vacuum-packed dried tomatoes remained unchanged during 180 days for the refrigerated samples and 90 days for the samples stored at room temperature. The rate constant (k) of lycopene degradation of the refrigerated samples and the samples stored at room temperature was 3.209 × 10−5 and 12.994 × 10−5/day, respectively. The rate constant (k) of ascorbic acid degradation was 3.339 × 10−4/day for cold storage and 76.655 × 10−4/day for storage at room temperature. The tomatoes stored at room temperature were subjected to analysis over 90 days of storage, period after which both the appearance and sensory characteristics of the product fell below the levels of consumer acceptability. As for the tomatoes stored at refrigeration temperature, the original sensory characteristics were maintained throughout the entire storage period of 180 days.  相似文献
