为获得性能优良的大麦面包复合改良剂,以满足生产营养与品质兼优大麦面包(含大麦粉55%)的需要。选用6种改良剂,以面包综合评分为依据,采用部分因子和中心组合设计等试验获得优化的复合改良剂,并利用C-Cell图像分析仪和物性仪分析和确证复合改良剂对大麦面包品质的改善效果。结果表明,优化的复合改良剂组成及添加量为:β-葡聚糖酶0.064 9%、谷朊粉7.526 9%、α-淀粉酶0.008 9%、TG0.090 0%、蔗糖酯0.300 0%、Vc 0.012 5%;使用优化复合改良剂的大麦面包与优化前相比,其面包片周长与内部气孔数量均增加,孔洞面积减小,比容提高了45%;同时,新鲜大麦面包及其在贮藏期内质构特性明显改善,硬度减小、弹性增加、咀嚼性提升。优化的复合改良剂适用于高含量大麦粉面包的生产。  相似文献

用添加葡萄糖氧化酶复合改良剂的小麦粉进行馒头、面条及面包的烘焙实验。通过评价面制品的蒸煮或烘焙品质, 研究复合改良剂对食用品质和加工性能的影响。实验的结论验证了文献[8]中葡萄糖氧化酶复合改良剂对面团流变学特性的影响,进而验证了品质较低的面粉经葡萄糖氧化酶复合改良剂改良后,可显著改善其烘焙品质,适宜制作馒头、面条及面包。本文旨在为安全、天然、健康的葡萄糖氧化酶复合改良剂的推广使用提供必要的理论指导。  相似文献

以面包的比容、硬度和弹性为指标,以面包专用粉为原料,分别采用正交设计试验和响应面设计试验优化复配型面包改良剂的配方.实验结果表明复配型面包改良剂的最适配比:复配胶添加量0.28 g/100 g面粉,复配酶添加量41.33 mg/kg面粉,抗坏血酸添加量42.96 mg/kg面粉,预测的面包比容达到7.23.面包中复配型改良剂的最适添加量为0.21 g/100 g面粉,添加复配型改良剂面包的老化速率明显下降,且抗老化的效果好于市售改良剂.  相似文献

在面包的生产加工过程中,改良剂的使用是最有效的提升面团加工特性的方法之一。该文以开发一种适用于改良面包品质的复合改良剂为目标,分别对卵磷脂、阿拉伯胶及α-淀粉酶进行单因素试验,并利用响应面法研究由以上3种添加剂复合形成的改良剂对面包品质的影响。单因素试验表明:卵磷脂、阿拉伯胶、α-淀粉酶的最适添加量分别为0.45%、1%、8 mg/kg;响应面优化试验表明:最适复合改良剂的配方为阿拉伯胶添加量1.01%,卵磷脂添加量0.44%,α-淀粉酶添加量7.96 mg/kg。最适改良剂的应用使面团的产气量从对照的603 m L/100 g增加至1 641 mL/100 g,面包的比容由2.64 mL/g增加至3.70 mL/g,面包的感官品质评分由72分提高至88分。  相似文献

目的:改善双孢菇面包品质,探究其合适的改良剂配方。方法:以谷朊粉、蔗糖脂肪酸酯和纤维素酶为改良剂,采用Box-Behnken中心组合法优化双孢菇面包复合改良剂配比。结果:添加3.35%谷朊粉、0.15%蔗糖脂肪酸酯和0.16%纤维素酶,可有效提高双孢菇面包的综合评分。扫描电镜检测结果表明,改良双孢菇面包能在面筋基质中形成均匀连续的网状结构。结论:经改良后的双孢菇面包硬度降低,比容和感官评分均有所增加。  相似文献

将各种面包改良剂复合,以适当的比例添加到面筋含量适中、筋力较弱的国产小麦粉中,研究混合小麦粉的粉质特性及烘焙特性,并找出改良剂复合的最佳比例。结果表明:将强筋剂、活性面筋、乳化剂、酶活性大豆粉及α-淀粉酶等多种成发一定比例添加到小麦粉中并科学混合均质,要比单一使用发挥更好的改良效果。改良后的小麦粉各项指标均可达到面包志用为的质量。  相似文献

针对无麸质大米面包制作时存在的成型难,品质差等问题,研究了沙蒿胶、单甘酯、羟丙基淀粉、乳清蛋白等改良剂对无麸质大米面包品质的影响,并在单因素实验的基础上,以面包的比容为响应值,选用响应面分析法优化其复合改良剂的配方。结果显示,沙蒿胶、单甘脂、羟丙基淀粉、乳清蛋白对无麸质大米面包的质构、比容及感官均有改善作用。最终确定无麸质大米面包复合改良剂的最佳配方为:沙蒿胶0.4%、单甘酯1.5%、羟丙基淀粉3.2%、乳清蛋白8.7%。在此配方下,无麸质大米面包的感官评分为88,比容为3.54,硬度为4.675 N,弹性为86.710 mm。  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

An internet website (http://cpf.jrc.it/smt/) has been produced as a means of dissemination of methods of analysis and supporting spectroscopic information on monomers and additives used for food contact materials (principally packaging). The site which is aimed primarily at assisting food control laboratories in the European Union contains analytical information on monomers, starting substances and additives used in the manufacture of plastics materials. A searchable index is provided giving PM and CAS numbers for each of 255 substances. For each substance a data sheet gives regulatory information, chemical structures, physico-chemical information and background information on the use of the substance in particular plastics, and the food packaging applications. For monomers and starting substances (155 compounds) the infra-red and mass spectra are provided, and for additives (100 compounds); additionally proton NMR are available for about 50% of the entries. Where analytical methods have been developed for determining these substances as residual amounts in plastics or as trace amounts in food simulants these methods are also on the website. All information is provided in portable document file (PDF) format which means that high quality copies can be readily printed, using freely available Adobe Acrobat Reader software. The website will in future be maintained and up-dated by the European Commission's Joint Research Centre (JRC) as new substances are authorized for use by the European Commission (DG-ENTR formerly DGIII). Where analytical laboratories (food control or other) require reference substances these can be obtained free-ofcharge from a reference collection housed at the JRC and maintained in conjunction with this website compendium.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
