Background – Since n‐3 fatty acids, abundant in fatty fish, may improve health, we raised the question whether self‐reported intake frequency of fatty fish (FF) might be related to the percentage of n‐3 fatty acids in serum phospholipids (PL‐n‐3), and also to self‐rated health (H). Design – The study followed a cross‐sectional design. Methods – In the cross‐sectional Oslo Health Study, PL‐n‐3 were determined in 121 middle‐aged ethnic Norwegians and 102 immigrants from the Indian subcontinent and correlated with FF and H. Logistic regression was used to study the relationship between PL‐n‐3 and H (dichotomized, i.e. Poor vs. Good health). Results – FF correlated positively with PL20:5n‐3 (PL‐EPA, r = 0.467, p <0.001) and PL22:6n‐3 (PL‐DHA, r = 0.499, p <0.001), and negatively with PL20:4n‐6 (PL‐AA, r = –0.350, p = 0.001). H was positively associated with PL‐EPA (r = 0.321, p <0.001) and PL‐DHA (r = 0.275; p <0.001), but negatively with PL‐AA (r = –0.220, p = 0.001). The odds ratio for reporting Poor vs. Good health was significantly higher in subjects with low levels of PL‐EPA (OR = 1.49; 95% confidence interval = 1.17–1.89, p = 0.001), persisting after adjusting for sex, physical activity, ethnicity and length of education. Conclusion – The intake frequency of fatty fish is related to n‐3 fatty acids in the serum phospholipids, and to self‐rated health.  相似文献

The influence of the distribution of polyunsaturated fatty acids on the glycerol backbone of dietary triacylglycerols on the fatty acid profile of adipose tissue and muscle phospholipids was investigated in growing‐finishing pigs (48) and broiler chicken (84). The animals were fattened on barley/soybean meal diets supplemented with a blend of soybean oil and beef tallow, either in the ratio 3:1 w/w (high‐PUFA) or 1:3 w/w (low‐ PUFA). Part of the high‐ and low‐PUFA blends was chemically interesterified to randomly distribute all fatty acids over the three positions of the glycerol. Thus, two sets of diets of identical overall fatty acid composition, but differing in the distribution of fatty acids in the triacylglycerols, were fed. Growth performance and carcass composition were neither affected by fatty acid composition nor by randomisation of dietary fats in either animal species. Apparent digestibility of energy was slightly lower in pigs fed the low‐PUFA blends. Fatty acid profile of subcutaneous fat of pigs and broilers as well as of internal body fat (lamina subserosa) and muscle phospholipids of pigs varied according to the dietary fatty acid composition but was not affected by randomisation of dietary fats. These findings are explained in terms of the hydrolysis of TAG during transport of lipids from enterocytes to adipose tissue cells and the continuous lipolysis and re‐esterification of fatty acids that take place in adipose tissue cells.  相似文献

The content of free fatty acids (FFA) in vegetable oils represents an important quality factor in oil crops. The objective of the investigation was to develop a near‐infrared (NIR) calibration for estimating the FFA content in high‐oleic sunflower seeds. A sample set of different varieties from the harvest of 2004 as well as of 2005 from two locations in Germany was used; additionally seeds from 2003 were stored under unsuitable conditions to obtain samples utilised for calibration with an extended FFA range. A direct titration method for FFA determination was developed and adjusted to the official AOCS method. The modified method is sufficiently reliable, much faster than the AOCS method and therefore suitable for use in the calibration of NIR spectrometers. The developed NIR spectroscopy (NIRS) calibration was calculated with a modified partial least square algorithm, standard normal variate and detrend scatter correction and the 2nd derivative of the spectra of ground sunflower seeds. The standard error of prediction of the validated calibration was 0.20, and the multiple coefficient of determination (RSQval) reached 0.94. The obtained results demonstrated clearly the efficiency and how cost effective the NIRS method is for the estimation of FFA content in sunflower seeds.  相似文献

Iso‐oleic acid is a mixture of C18‐unsaturated branched‐chain fatty acid isomers with a methyl group on various positions of the alkyl chain, which is the product of the skeletal isomerization reaction of oleic acid and is the intermediate used to make isostearic acid (C18‐saturated branched‐chain fatty acid isomers). Methyl iso‐oleate, a mixture of C18‐unsaturated branched‐chain fatty acid methyl ester isomers, is obtained via acid catalyzed esterification of iso‐oleic acid with methanol. The branched‐chain materials are liquid at room temperature and their “oiliness” property makes them an attractive candidate for the lubricant industry. In this paper, we report characterization of these branched‐chain materials using comprehensive two‐dimensional GC with time‐of‐flight mass spectrometry (GC × GC/TOF‐MS) and their physical and lubricity properties using tribology measurements.  相似文献

High‐intensity pulsed electric fields (HIPEF) is an emerging non‐thermal food preservation technology which has the potential to pasteurize pumpable liquid foods. Its application is being studied to evaluate it as potential alternative or complementary process to thermal pasteurization. Orange juice‐milk beverage with added bioactive components is a ready‐to‐drink beverage developed as an alternative to traditional soft drinks. In the present work, two HIPEF treatments (35 and 40 kV/cm) and six different treatment times (from 40 to 180 µs) were evaluated to assess their effect on the fatty acid profile of an orange juice‐milk beverage fortified with n‐3 fatty acids and oleic acid. The effect of HIPEF treatment on various physicochemical properties of the beverages: pH, °Brix, hydroxymethylfurfural or peroxide index was also determined. After HIPEF treatment, non‐significant changes in the contents of saturated fatty acids, monounsaturated fatty acids or polyunsaturated fatty acids were observed. Neither peroxides nor intolerable levels of furfurals were detected. Only a small reduction in fat content (p <0.05) was found. In conclusion, HIPEF can be proposed as an alternative preservation technology due to these minimal changes which are negligible from the nutritional point of view.  相似文献

Branched‐chain (bc) saturated fatty acids (SFA) have potential as oleochemical intermediates since they have better oxidative stability than linear unsaturated fatty acids (UFA) and have better low‐temperature properties than linear SFA. Previous studies in converting UFA to bc‐FA using clay catalysts have resulted in only modest yields and conversions. Recent reports, however, have suggested that certain zeolites can be effective catalysts for converting UFA to bc‐FA in higher yields and conversions. In this work, we examined the scope and potential of the zeolite‐catalyzed synthesis of bc‐FA starting from readily available monounsaturated linear FA. Our results show that common UFA such as oleic acid can be converted to bc‐isomers using modified Ferrierite zeolite catalysts with high conversions (98%) and high selectivity (85%) and that the zeolite catalysts are reusable for at least three cycles. The positions of branching (methyl) on the FA chain were determined from the GC‐MS spectra of the picolinyl esters of the bc‐FA.  相似文献

BACKGROUND : Propionic acid is widely used in chemical and allied industries and can be produced by biocultivation in a clean and environmentally friendly route. Recovery of the acid from the dilute stream from the bioreactor is an economic problem. Reactive extraction is a promising method of recovering the acid but suffers from toxicity problems of the solvent employed. There is thus a need for a non‐toxic solvent or a combination of less toxic extractants in a non‐toxic diluent that can recover acid efficiently. RESULTS: The effect of different extractants (tri‐n‐butylphosphate (TBP), tri‐n‐octylamine (TOA) and Aliquat 336) and their mixed binary solutions in sunflower oil diluent was studied to find the best extractant‐sunflower oil combination. Equilibrium complexation constant, KE, values of 4.02, 3.13 and 1.87 m3 kmol?1 were obtained for propionic acid extraction using Aliquat 336, TOA and TBP, respectively, in sunflower oil. The effect of different modifiers (1‐decanol, methylisobutyl ketone, butyl acetate and dodecanol) on the extraction was also studied and it was found that modifiers enhance extraction, with 1‐decanol found to be the best. CONCLUSION: The problem of toxicity in reactive extraction can be reduced by using a non‐toxic diluent (sunflower oil) or a modifier in a non‐toxic solvent, with the extractant. The fatty acid compositions of flowering tops of Hypericum perforatum L. and Hypericum retusum Aucher (Guttiferae) were analyzed by gas chromatography and gas chromatography‐mass spectrometry. The major components were C16:0 (24.87%), C18:3 n‐3 (21.94%), 3‐OH‐C18:0 (18.46%) and 3‐OH‐C14:0 (14.22%) for H. perforatumL. and 3‐OH‐C14:0 (28.29%), C18:0 (16.47%) and C16:0 (14.17%) for H. retusum Aucher. Besides widespread plant fatty acids, 3‐hydroxy fatty acids, namely 3‐hydroxytetradecanoic acid (3‐OH‐C14:0) and 3‐hydroxyoctadecanoic acid (3‐OH‐C18:0) were also obtained.  相似文献

The present study assessed the role of dietary unsaturated fatty acids in maternal dyslipidemia‐induced DNA methylation and histone acetylation in placenta and fetal liver and accumulation of lipids in the fetal liver. Weanling female Wistar rats were fed control and experimental diets for 2 months, mated, and continued on their diets during pregnancy. At gestation days of 18–20, rats were euthanized to isolate placenta and fetal liver. DNA methylation, DNA methyl transferase‐1 (DNMT1) activity, acetylation of histones (H2A and H2B), and histone acyl transferase (HAT) activity were evaluated in placenta and fetal liver. Fetal liver lipid accumulation and activation of peroxisome proliferator‐activated receptor‐α (PPAR‐α) were assessed. Maternal dyslipidemia caused significant epigenetic changes in placenta and fetal liver. In the placenta, (1) global DNA methylation increased by 37% and DNMT1 activity by 86%, (2) acetylated H2A and H2B levels decreased by 46% and 24% respectively, and (3) HAT activity decreased by 39%. In fetal liver, (1) global DNA methylation increased by 52% and DNMT1 activity by 78%, (2) acetylated H2A and H2B levels decreased by 28% and 26% respectively, and (3) HAT activity decreased by 37%. Maternal dyslipidemia caused a 4.75‐fold increase in fetal liver triacylglycerol accumulation with a 78% decrease in DNA‐binding ability of PPAR‐α. Incorporation of dietary unsaturated fatty acids in the maternal high‐fat diet significantly (p < 0.05) modulated dyslipidemia‐induced effects in placenta and fetal liver. Eicosapentaenoic acid (EPA, 20:5n‐3) + docosahexaenoic acid (DHA, 22:6n‐3) exhibited a profound effect followed by alpha‐linolenic acid (ALA, 18:3n‐3) than linoleic acid (LNA, 18:2n‐6) in modulating the epigenetic parameters in placenta and fetal liver.  相似文献

This review summarises and evaluates current knowledge of α‐linolenic acid (αLNA) metabolism in adult humans. The principal biological role of αLNA appears to be as a precursor for the synthesis of longer‐chain n‐3 polyunsaturated fatty acids (PUFA). Stable isotope tracer studies indicate that conversion of αLNA to eicosapentaenoic acid (EPA) occurs but is limited in men and that further transformation to docosahexaenoic acid (DHA) is very low. A lower proportion of αLNA is used for β‐oxidation in women compared with men, while the fractional conversion to the longer‐chain n‐3 PUFA is greater, possibly due to the regulatory effects of oestrogen. Increasing αLNA intake for a period of weeks results in an increase in the proportion of EPA in plasma lipids, circulating cells and breast milk, but there is no increase in DHA, which may even decline in some pools at high αLNA intakes. Overall, αLNA appears to be a limited source of longer‐chain n‐3 PUFA in man, and so adequate intakes of preformed long‐chain n‐3 PUFA, in particular DHA, may be important for maintaining optimal tissue function. The capacity to up‐regulate αLNA transformation in women may be important for meeting the demands of the foetus and neonate for DHA.  相似文献

Seed oils from Acer species are a potential source of the nutraceutical fatty acids, nervonic acid (cis‐15‐tetracosenoic acid, NA), and γ‐linolenic acid (cis‐6,9,12‐octadecatrienoic acid, GLA). To further characterize the genus, seed fatty acid content and composition were determined for 20 species of Acer. Fatty acid content ranged from 8.2% for Acer macrophyllum to over 36% for A. mono and A. negundo. The presence of very‐long‐chain fatty acids (VLCFA), with chain length of 20‐carbons or greater, and GLA were characteristic features of the seed oils. In all species, erucic acid (cis‐13‐docosenoic acid, EA) was the predominant VLCFA with the highest level of NA being only 8.6% in A. olivianum. Regioselective lipase digestion demonstrated that VLCFA are largely absent from the sn‐2 position of seed triacylglycerol, whereas GLA is primarily located at this position. Five Acer species contained low levels (<2%) of cis‐12‐octadecenoic acid and cis‐14‐eicosenoic acid, uncommon n‐6 fatty acids not previously reported from Acer.  相似文献

Total lipid content and fatty acid composition were determined for wild and cultivated gilthead seabream and sea bass. Fatty acid analyses were carried out by gas chromatography‐ mass spectrometry. Respective total lipid content of flesh in cultivated gilthead seabream and sea bass were 1.7‐5.0‐times those of wild samples. Palmitic acid (C16:0) and oleic acid (C18:1n‐9) were the major fatty acids respectively among the saturated fatty acids and monounsaturated fatty acids of each fish species. It is noteworthy that both linoleic acid (C18:2n‐6) and arachidonic acid (C20:4n‐6) were predominant in total n‐6 polyunsaturated fatty acids in the respective cultivated and wild types. Eicosapentaenoic acid (C20:5n‐3) and docosahexaenoic acid (C22:6n‐3) amounts were significantly higher in flesh of cultivated fish than in wild fish.  相似文献

The common unsaturated fatty acids present in many vegetable oils (oleic, linoleic and linolenic acids) can be quantitated by 1H‐nuclear magnetic resonance spectroscopy (1H‐NMR). A key feature is that the signals of the terminal methyl group of linolenic acid are shifted downfield from the corresponding signals in the other fatty acids, permitting their separate integration and quantitation of linolenic acid. Then, using the integration values of the signals of the allylic and bis‐allylic protons, oleic and linoleic acids can be quantitated. The procedure was verified for mixtures of triacylglycerols (vegetable oils) and methyl esters of oleic, linoleic and linolenic acids as well as palmitic and stearic acids. Generally, the NMR (400 MHz) results were in good agreement with gas chromatographic (GC) analyses. As the present 1H‐NMR‐based procedure can be applied to neat vegetable oils, the preparation of derivatives for GC would be unnecessary. The present method is extended to quantitating saturated (palmitic and stearic) acids, although in this case the results deviate more strongly from actual values and GC analyses. Alternatives to the iodine value (allylic position equivalents and bis‐allylic position equivalents) can be derived directly from the integration values of the allylic and bis‐allylic protons.  相似文献

Fat content and fatty acid composition were determined in 35 fish species caught in Icelandic waters from November 1987 to March 1988. These were not only commonly edible species, but also underutilized and less common species, in which the fatty acid composition have not been reported before. The variation int he fat content and the fatty acid composition was found to be large between and within species. The fat content and n-3 fatty acid content varies sevenfold and twentyfold, respectively. An inverse relationship was obtained between the n-3 fatty acids content and the total fat content of the fish species studied. We believe that the data reported here on 35 fish species can be useful for nutritionists and food scientists, to aid them in dietary formulation, nutrient labelling, processing and product developments, as well as for the consumers.  相似文献

The lipid and fatty acid compositions in the various organs (muscle, liver, other viscera) and stomach contents of three common herbivorous fish species in Japan, Siganus fuscescens, Calotomus japonicus and Kyphosus bigibbus, were examined to explore the stable 20:4n-6 (arachidonic acid, ARA) sources. Triacylglycerol (TAG), phosphatidylethanolamine (PtdEtn), and phosphatidylcholine (PtdCho) were the dominant lipid classes, while the major FA contents were 16:0, 18:1n-9, 16:1n-7, 14:0, 18:0, 18:1n-7, and some PUFA, including ARA, 20:5n-3 (eicosapentaenoic acid, EPA), 22:5n-3 (docosapentaenoic acid, DPA), and 22:6n-3 (docosahexaenoic acid, DHA). The amounts of these fatty acids were varied among species and their lipid classes. Phospholipids contained higher levels of PUFA than TAG. However, ARA in both phospholipids and TAG was markedly present in the muscle and viscera of all specimens, particularly in C. japonicus and K. bigibbus. Moreover, their ARA levels were higher than the levels of DHA and EPA. The observed high ARA level is unusual in marine fish and might be characteristic of herbivorous fish. Furthermore, ARA was the dominant PUFA in the stomach contents of the three species, suggesting that the high ARA level originated from their food sources. The above indicates that these three herbivorous fishes are ARA-rich marine foods and have potential utilization as stable ARA resources.  相似文献
