Total lipid content and fatty acid composition were determined for wild and cultivated gilthead seabream and sea bass. Fatty acid analyses were carried out by gas chromatography‐ mass spectrometry. Respective total lipid content of flesh in cultivated gilthead seabream and sea bass were 1.7‐5.0‐times those of wild samples. Palmitic acid (C16:0) and oleic acid (C18:1n‐9) were the major fatty acids respectively among the saturated fatty acids and monounsaturated fatty acids of each fish species. It is noteworthy that both linoleic acid (C18:2n‐6) and arachidonic acid (C20:4n‐6) were predominant in total n‐6 polyunsaturated fatty acids in the respective cultivated and wild types. Eicosapentaenoic acid (C20:5n‐3) and docosahexaenoic acid (C22:6n‐3) amounts were significantly higher in flesh of cultivated fish than in wild fish.  相似文献

It has been demonstrated that the amount and type of dietary fat are factors involved in the risk of arteriosclerosis and coronary or cerebral artery disease through lipid metabolism. In this study, we investigated the effects of phospholipids (PLs) containing n‐3PUFAs on lipid metabolism in rats. PLs containing n‐3PUFAs were prepared from squid (Todarodes pacificus) mantle muscle. Groups of male Wistar rats were fed AIN93G diet containing soybean oil (SO, 7%), fish oil (1.2%) + SO (5.8%), soybean PLs (1.8%) + SO (5.2%), or PLs containing n‐3PUFAs (1.8%) + SO (5.2%). The following indicators were assayed as indexes of lipid metabolism: TAG and cholesterol in serum and liver, fecal cholesterol, bile‐acid excretion, and liver mRNA expression levels of genes encoding proteins involved in cholesterol homeostasis. Serum and liver TAG contents decreased significantly in the group fed PLs containing n‐3PUFAs as compared to other groups, accompanied by a significant decline in the expression level of sterol regulatory element binding protein‐1c. The decrease in cholesterol content in the group fed PLs containing n‐3PUFAs was due to the increase in fecal cholesterol excretion and the increase of mRNA expression levels of ATP‐binding cassette (ABC) G5 and ABCG8 in liver. Practical applications : PLs containing n‐3PUFAs decreased serum and liver TAG contents compared with that induced by soybean PLs. Further, PLs containing n‐3PUFAs can induce a reduction in serum and liver cholesterol concentrations as well as the triglyceride‐reducing effect of conventional n‐3PUFAs containing TAG. In other words, dietary n‐3PUFAs contained in PLs can prevent life‐style diseases such as hyperlipidemia, arteriosclerosis and coronary, or cerebral artery disease more effectively than TAG containing n‐3PUFAs. Therefore, it is expected that the risk of lifestyle diseases would be decreased if PL containing n‐3PUFAs can be supplied routinely. In this study, PLs containing n‐3PUFAs were prepared from squid mantle muscle. On an industrial scale, such PLs can be produced from various unused resources and waste materials of fisheries. We conclude that highly functional foods could be developed based on the findings of this study, and would be available for health promotion worldwide.  相似文献

The objective of this research was to study the metabolism of individual trans fatty acids (FAs) that can be found in ruminant fat or partially hydrogenated vegetable oils (PHVO) and determine their effects on FA composition and lipogenic gene expression in adipocytes. Differentiated 3T3‐L1 adipocytes were treated with 200 µM of either trans‐9‐18:1, trans‐11‐18:1, trans‐13‐18:1, cis‐9‐18:1 or BSA vehicle control for 120 h. Trans‐9‐18:1 increased total cell FA content (µmole/well) compared to other FA treatments, which was mainly related to the accumulation of trans‐9‐18:1 in the cells. Adipocytes were able to desaturate a significant proportion of absorbed trans‐11‐18:1 and trans‐13‐18:1 (~20 and 30 % respectively) to cis‐9,trans‐11‐18:2 and cis‐9,trans‐13‐18:2, whereas trans‐9‐18:1 was mostly incorporated intact resulting in a greater lipophilic index (i.e. decreased mean FA fluidity) of adipocytes. Trans‐9‐18:1 up‐regulated (P < 0.05) the expression of lipogenic genes including acetyl‐CoA carboxylase (1.65 fold), FA synthase (1.45 fold), FA elongase‐5 (1.52 fold) and stearoyl‐CoA desaturase‐1 (1.49 fold), compared to the control, whereas trans‐11‐18:1 and trans‐13‐18:1 did not affect the expression of these genes compared to control. Our results suggest that the metabolism and lipogenic properties of trans‐11‐18:1 and trans‐13‐18:1, typically the most abundant trans FA in beef from cattle fed forage‐based diets, are similar and are different from those of trans‐9‐18:1, the predominant trans FA in PHVO.  相似文献

Feeding ewes a diet high in n‐6 in late gestation can affect fatty acid concentrations in the newborn lamb. The effect of feeding ewes a high n‐6 diet prior to conception and in early gestation on lamb n‐6 and n‐3 status has not previously been examined. The aim of the current study was to determine whether the concentration of n‐6 was higher and n‐3 was lower in lamb red blood cells (RBC) and plasma when Merino dams were fed a diet high in n‐6 either pre‐conception only or both pre‐conception and in early gestation. Dams were fed a diet low (silage) or high (oats/CSM) in n‐6 for either 6 weeks pre‐mating only or 6 weeks pre‐mating and 17 days post‐mating. The fatty acid status of lamb RBC and plasma was determined following birth and compared with dam fatty acids around parturition. The concentration of lamb RBC and plasma n‐3 was lower (p < 0.05) when dams received the high n‐6 compared with low‐n‐6 diet around mating, independent of the length of time of feeding. The concentration of n‐3 in lamb plasma was also higher when lambs were assessed as being likely rather than unlikely to have suckled prior to blood collection. Lamb RBC and plasma n‐3 fatty acids were lower when dams were fed the high compared with the low n‐6 diet for only a short time around mating. Transfer of fatty acids via the placenta and milk may account for the differences.  相似文献

Significant amounts of polyunsaturated fatty acids (PUFA) with a chain length of 26 carbon atoms were detected in lipids of five deep water species of Ophiuroidea besides common fatty acids with chain lengths between 14 and 24. By means of hydrogenation, GC–MS of the methyl esters, and 4,4‐dimethyloxazoline (DMOX) derivatives of these C26 acids were characterized as 5,8,11,14,17,20,23‐hexacosaheptaenoic [26:7(n‐3)]; 8,11,14,17,20,23‐hexacosahexaenoic [26:6(n‐3)]; 5,8,11,14,17,20‐ hexacosahexaenoic [26:6(n‐6)]; and 11,14,17,20,23‐hexacosapentaenoic [26:5(n‐3)]. Concentrations of these acids varied from 0.3 to 4.5 mol% of the total FA. In all the samples investigated, the main component of C26PUFA was hexacosaheptaenoic acid 26:7(n‐3). These C26PUFA are localized mainly in polar lipids. The presence of the possible biosynthesis precursors suggests that the C26PUFA are produced by the brittle stars, and are not accumulated from food sources. This finding can also explain the presence of small amounts of the 26:7(n‐3) acid detected earlier in flesh lipids of the roughscale sole Clidoderma asperrimum, which feeds on deep water brittle stars. We suggest a possible scheme of the biosynthesis of C26 PUFA.  相似文献

The effects of rainbow trout cold storage on the quality of offal left after fish processing to fillets with skin were determined. The intact farmed rainbow trout were kept at 2 °C in ice for 0, 4, 7, and 14 days of storage. The offal was, immediately after processing, frozen at ?20 °C and analysed after a month‐long frozen storage; fillets (non‐frozen) were analysed as well. Non‐protein nitrogen, volatile bases, trimethylamine, lipid oxidation (peroxide value, anisidine value, UV‐VIS spectra, and fluorescence) and fatty acid composition were determined. The offal consists in 15% of protein and in about 20% of chloroform/methanol‐extractable lipids, with n‐3 polyunsaturated fatty acids (n‐3 PUFA) accounting for 20.37 ± 1.25% of the fatty acids. The fish storage duration was found to exert a significant (p = 0.05) effect on the changes in lipids and nitrogen compounds. No losses of long‐chain n‐3 PUFA in the offal were detected during the 2 wk of storage in ice plus 1 month at ?20 °C. The rainbow trout offal is a valuable – rich and stable – source of n‐3 PUFA.  相似文献

The purpose of this study was to assess the efficacy of rosemary and oregano extracts in avoiding oxidative changes in beef burgers, and to evaluate the fatty acid profile of these products after electron beam exposition. Extracts, individually or in combination, were added to beef burgers and compared to synthetic antioxidants commonly used in food (butylated hydroxytoluene, butylated hydroxyanisole). The ground beef were submitted to electron beam irradiation at doses of 0, 3.5 and 7 kGy, and stored for 90 days. At regular time intervals, lipid oxidation and fatty acid composition were evaluated through measurement of thiobarbituric acid‐reactive substances (TBARS) and gas chromatography, respectively. The results indicate that, although the irradiation process triggers an increase in the lipid oxidation ratio expressed by TBARS values, great changes in the fatty acid profiles were not observed; instead, they continued to present characteristics very similar to that of non‐irradiated beef. Thus, as irradiation doses of up to 7 kGy for frozen meat can make foods safe from foodborne pathogens, natural antioxidants derived from spices are able to reduce and avoid lipid changes that may cause a deterioration of the sensory quality of these foods, and these natural extracts offer a good choice for replacing synthetic additives.  相似文献

Recent EU legislation (EC/2065/2001) requires that fish products, of wild and farmed origin, must provide consumer information that describes geographical origin and production method. The aim of the present study was to establish methods that could reliably differentiate between wild and farmed European gilthead sea bream (Sparus aurata). The methods that were chosen were based on chemical and stable isotopic analysis of the readily accessible lipid fraction. This study examined fatty acid profiles by capillary gas chromatography and the isotopic composition of fish oil (δ13C, δ18O), phospholipid choline nitrogen (δ15N) and compound specific analysis of fatty acids (δ13C) by isotope ratio mass spectroscopy as parameters that could reliably discriminate samples of wild and farmed sea bream. The sample set comprised of 15 farmed and 15 wild gilthead sea bream (Sparus aurata), obtained from Greece and Spain, respectively. Discrimination was achieved using fatty acid compositions, with linoleic acid (18:2n-6), arachidonic acid (20:4n-6), stearic acid (18:0), vaccenic acid (18:1n-7) and docosapentaenoic acid (22:5n-3) providing the highest contributions for discrimination. Principle components analysis of the data set highlighted good discrimination between wild and farmed fish. Factor 1 and 2 accounted for >70% of the variation in the data. The variables contributing to this discrimination were: the fatty acids 14:0, 16:0, 18:0, 18:1n-9, 18:1n-7, 22:1n-11, 18:2n-6 and 22:5n-3; δ13C of the fatty acids 16:0, 18:0, 16:1n-7, 18:1n-9, 20:5n-3 and 22:6n-3; Bulk oil fraction δ13C; glycerol/choline fraction bulk δ13C; δ15N; % N; % lipid.  相似文献

Phospholipids (PL) containing n‐3 polyunsaturated fatty acids (PUFA) have beneficial effects of maintaining and promoting health compared with triacylglycerols (TAG) containing n‐3 PUFA or general PL. This study evaluated the effects of dietary PL containing n‐3 PUFA and elucidated the effects of the glycerophosphate structure and n‐3 PUFA on fatty acid (FA) metabolism in rats. Rats were fed a basal diet containing soybean oil alone, TAG containing n‐3 PUFA (1.8 %), soybean PL (2.7 %), PL containing n‐3 PUFA (2.7 %), or TAG containing n‐3 PUFA (1.8 %) + soybean PL (2.7 %). The present n‐3 PUFA‐supplemented diets had similar FA compositions, and the PL diets had similar PL compositions. TAG containing n‐3 PUFA reduced serum TAG contents, but did not affect serum cholesterol contents compared with soybean oil alone. PL diets containing n‐3 PUFA and the combination of TAG containing n‐3 PUFA and soybean PL resulted in decreased serum and liver TAG contents compared with the diet containing soybean oil alone, reflecting enhanced liver FA β‐oxidation. The results of this study show that TAG containing n‐3 PUFA with added soybean PL affects serum and liver TAG and cholesterol contents to a similar degree as PL containing n‐3 PUFA. TAG containing n‐3 PUFA and soybean PL are widely used as functional food ingredients and pharmaceutical constituents and are inexpensive compared with PL containing n‐3 PUFA. Therefore, the combination of TAG containing n‐3 PUFA and soybean PL has potential as a useful and inexpensive component of functional foods.  相似文献

The chemical oxidative polymerization of pyrrole (Py) by ceric ammonium nitrate (CAN) in the presence of polyitaconic acid and its copolymers (Polymer) containing 75 and 50 mole% N‐isopropylacrylamide were investigated. The effects of copolymer composition and addition order of the components on the reaction mechanism were studied by following the absorption spectra of the soluble reaction products between 200 and 1100 nm. As to the UV‐visible, FTIR and conductivity results of soluble products obtained from Polymer‐CAN‐Py system, it was assumed that the pyrrole polymerization by chemical oxidation was inhibited in the presence of the water‐soluble polyelectrolyte because an important part of ceric ammonium nitrate was consumed to produce radicals on the chains. On the other hand, the role of the copolymers in the case of Py‐CAN was mainly to prevent precipitation of polypyrrole. Consequently, the reaction prepared according to the first order of addition of the reactants favour the formation of oligomeric pyrrole, while the second order of addition yields solution of colloidal polypyrrole interacting with polyelectrolytes. © 1999 Society of Chemical Industry  相似文献

This study aimed to develop pork products of acceptable organoleptic quality enriched with long‐chain n‐3 polyunsaturated fatty acids (LC n‐3 PUFA). Female pigs were fed a finisher diet containing 15% PorcOmega? tuna fishmeal or a commercial diet. Pigs and rations were weighed weekly. The feed conversion ratio was significantly lower in pigs fed fishmeal than in controls (2.61 ± 0.01 versus 2.96 ± 0.06, p <0.05). After 6 weeks, the pigs were butchered and the fatty acid contents of selected pork products were analyzed by gas chromatography. Shelf life was tested by thiobarbituric acid‐reactive substances (TBARS), initially and after 5 days of cold storage, and sensory qualities were evaluated after cooking. LC n‐3 PUFA contents of pork products from pigs fed fishmeal were higher than in controls (steak 300%, stir‐fry 250%, diced 520%, mince 480%, sausage 360%; p <0.05 in all cases). There were no differences between n‐3‐enriched and regular pork in either TBARS content of stored raw products or sensory characteristics after cooking. Incorporating fishmeal in the finisher diet resulted in greater feed efficiency and production of nutritionally enhanced pork products with organoleptic profiles and stability comparable to those of regular pork.  相似文献

The objective of this study was to determine the effect of diets with a different n‐6/n‐3 PUFAs ratio (7.31, 4.43, and 0.99), resulting from the addition of different dietary oils: soybean, rapeseed, and linseed (diets S, R, and L, respectively), on the fatty acid (FA) profile, oxidative status, and sensory properties of turkey breast meat. After 15 wk of feeding, breast meat yield and chemical properties of the meat were similar in all groups. Raw breast meat of R turkeys had a significantly higher content of all‐trans‐retinol and α‐tocopherol, compared with S and L. The physicochemical properties of breast meat, including pH, color, drip loss, and cooking loss, did not differ significantly. Cooked meat samples differed significantly with respect to the concentrations of oleic acid, linoleic acid (S and R>L), and linolenic acid (S and R<L). Compared with S and R, breast meat of L turkeys was characterized by higher concentrations of total PUFAs (35.1 vs. 30.1 and 29.3%), a significantly lower n‐6/n‐3 PUFAs ratio (1.51 vs. 5.43 and 5.07%) and a higher thiobarbituric acid reactive substances content (TBARS; 31.9 vs. 26.4 and 26.7 nmol/g). After 4 months of deep‐freeze storage the n‐6/n‐3 PUFAs ratio did not deteriorate. It may be concluded that replacing soybean oil with linseed oil, but not with rapeseed oil, increased the proportion of PUFAs in the total FAs pool and improved the n‐6/n‐3 PUFAs ratio, yet it also adversely affected the sensory properties and oxidative stability of meat. Both raw and stored breast meat from L turkeys was susceptible to oxidative changes, as manifested by the significantly higher TBARS concentrations (17.07 and 81.06) compared with those of the S group (10.91 and 53.00 nmol/g, respectively). Practical applications: Studies investigating the possibility of increasing the health benefits of poultry meat have been performed mostly on broilers, while the problem remains poorly researched in turkeys. Our findings show that linseed oil, in contrast to rapeseed oil, is a good source of PUFAs, in particular n‐3 PUFAs, that can be effectively transferred from feed to carcass lipids. However, desirable changes in the fatty acid profile are accompanied by increased susceptibility to lipid oxidation and deterioration of the sensory properties of meat. Thus, the linseed oil content of turkey diets should be reduced, or diets supplemented with linseed oil should be fed for shorter periods of time to alleviate the negative effects of linseed oil on the sensory attributes and oxidative status of meat.  相似文献

The effects of supplementing diets with n‐3 alpha‐linolenic acid (ALA) and docosahexaenoic acid (DHA) on plasma metabolites, carcass yield, muscle n‐3 fatty acids and liver messenger RNA (mRNA) in lambs were investigated. Lambs (n = 120) were stratified to 12 groups based on body weight (35 ± 3.1 kg), and within groups randomly allocated to four dietary treatments: basal diet (BAS), BAS with 10.7 % flaxseed supplement (Flax), BAS with 1.8 % algae supplement (DHA), BAS with Flax and DHA (FlaxDHA). Lambs were fed for 56 days. Blood samples were collected on day 0 and day 56, and plasma analysed for insulin and lipids. Lambs were slaughtered, and carcass traits measured. At 30 min and 24 h, liver and muscle samples, respectively, were collected for determination of mRNA (FADS1, FADS2, CPT1A, ACOX1) and fatty acid composition. Lambs fed Flax had higher plasma triacylglycerol, body weight, body fat and carcass yield compared with the BAS group (P < 0.001). DHA supplementation increased carcass yield and muscle DHA while lowering plasma insulin compared with the BAS diet (P < 0.01). Flax treatment increased (P < 0.001) muscle ALA concentration, while DHA treatment increased (P < 0.001) muscle DHA concentration. Liver mRNA FADS2 was higher and CPT1A lower in the DHA group (P < 0.05). The FlaxDHA diet had additive effects, including higher FADS1 and ACOX1 mRNA than for the Flax or DHA diet. In summary, supplementation with ALA or DHA modulated plasma metabolites, muscle DHA, body fat and liver gene expression differently.  相似文献

Water formed during hydrotreating of oxygen-containing feeds has been found to affect the performance of sulphided catalysts in different ways. The effect of water on the activity of sulphided NiMo/γ-Al2O3 and CoMo/γ-Al2O3 catalysts in hydrodeoxygenation (HDO) of aliphatic esters was investigated in a tubular reactor by varying the amount of water in the feed. In additional experiments, H2S was added to the feed, alone and simultaneously with water.

Under the same conditions, the NiMo catalyst exhibited a higher activity than the CoMo catalyst. The ester conversions decreased with increase in the amount of added water. When H2S and water were added simultaneously, the conversion increased to the same level as without water addition on the NiMo catalyst and reached a higher value on the CoMo catalyst. The conversions were highest, however, when only H2S was added. Unfortunately, the conversions decreased with time under all conditions. On both catalysts, the total yield of the C7 and C6 hydrocarbons decreased with the amount of added water, while the concentrations of the oxygen-containing intermediates increased. The presence of H2S improved the total hydrocarbon yield and shifted the main products towards the C6 hydrocarbons. Thus, the addition of H2S effectively compensated the inhibition by water.  相似文献
