Fatty acid esters of 3-monochloropropanediol (3-MCPD) and glycidol are processing contaminants found in a wide range of edible oils. While both 3 MCPD and glycidol have toxicological properties that at present has concerns for food safety, the published occurrence data are limited. Occurrence information is presented for the concentrations of 3-MCPD and glycidyl esters in 116 retail and/or industrial edible oils and fats using LC-MS/MS analysis of intact esters. The concentrations for bound 3-MCPD ranged from below the limit of quantitation (<LOQ) to 0.09 mg kg?1 (ppm) in 22 unrefined oils and from 0.005 to 7.2 mg kg?1 (ppm) in 94 refined oils. The concentrations for bound glycidol ranged from <LOQ to 0.03 mg kg?1 (ppm) in unrefined oil samples and from <LOQ to 10.5 mg kg?1 (ppm) in processed oil samples. The highest concentrations for both 3-MCPD and glycidol were seen in refined palm oil and palm olein samples. Palm olein samples also contained a higher percentage of 3-MCPD in mono-ester form than any other type of oil.  相似文献

The 3-monochloro-1,2-propandiol (3-MCPD) levels in soy sauces which contained hydrolysed vegetable protein were evaluated for the Bulgarian market. For analysis of 3-MCPD, a gas chromatography–mass spectrometry (GC-MS) method was applied with a linear range of 0.03–2.00 μg mL?1 and a limit of detection (LOD) of 2.3 μg kg?1 and a limit of quantification (LOQ) of 3.4 μg kg?1. At these levels, the standard deviation was 5.1%, with recoveries between 81% and 102%. The method was applied to the analysis of 21 samples of soy sauce from the Bulgarian market. Results ranged from 3.7 to 185.6 μg kg?1. Soy sauces produced from hydrolysed soy protein contained higher levels of 3-MCPD than naturally fermented sauces. In 38.4% of samples of Bulgarian origin, the 3-MCPD content was above the EU limit of 20 μg kg?1. In all analysed samples, 33.3% had a 3-MCPD content above the EU limit.  相似文献

The aim of this study was to determine the level of bound 3-monochloropropan-1,2-diol in foodstuffs commonly consumed in Hong Kong, China, by an enzymatic hydrolysis indirect method which proved to be free from interferences. A total of 290 samples were picked up randomly from the local market and analysed. About 73% of these samples were found to contain detectable amounts of bound 3-MCPD. Amongst the 73 food items, bound 3-MCPD was not detected in 13 food items, including extra virgin olive oil, beef ball/salami, beef flank, ham/Chinese ham, nuts, seeds, soy sauce, oyster sauce, butter, yoghurt, cream, cheese and milk. For those found to contain detectable bound 3-MCPD, the content ranged up to 2500 µg kg?1. The highest mean bound 3-MCPD content among the 14 food groups was in biscuits (440 [50–860] µg kg?1), followed by fats and oils (390 [n.d.–2500] µg kg?1), snacks (270 [9–1000] µg kg?1), and Chinese pastry (270 [n.d.–1200] µg kg?1). Among the samples, the highest bound 3-MCPD content was in a grape seed oil (2500 µg kg?1), followed by a walnut flaky pastry (1200 µg kg?1) and a grilled corn (1000 µg kg?1). Basically, the results of this study agreed well with other published results in peer-reviewed journals, except for cheese, cream, ham, nuts and seeds.  相似文献

A total of 290 individual food samples were collected in Hong Kong, China, for 3-monochloropropane-1,2-diol (3-MCPD) fatty acid esters analysis. Most samples were processed food and in ready-to-eat form. The results show that the levels of 3-MCPD fatty acid esters were high in biscuits, fats and oils, snacks and Chinese pastry with mean bound 3-MCPD levels of 440, 390, 270 and 270 μg kg?1, respectively. The dietary exposures to bound 3-MCPD of average and high adult consumers were estimated to be 0.20 and 0.53 μg kg bw?1 day?1, respectively. The primary toxicological concern of 3-MCPD fatty acid esters is its potential to release 3-MCPD in vivo during digestion in the gastrointestinal tract. 3-MCPD would affect the kidney, the central nervous system and the male reproductive system of rats. Assuming that 100% of the 3-MCPD was released from 3-MCPD fatty acid esters by hydrolysis in the digestive system, the dietary exposures to 3-MCPD for average and high adult consumers were only 10% and 26% of the provisional maximum tolerable daily intake (PMTDI) of 3-MCPD established by the Joint Food and Agriculture Organization/World Health Organization Expert Committee on Food Additives (JECFA) (2 μg kg bw?1 day?1), respectively. The results suggest that both average and high adult consumers are unlikely to experience major toxicological effects of 3-MCPD.  相似文献

A series of twelve breast milk samples were analysed by gas chromatography-mass spectrometry (GC/MS) operated in selected ion monitoring mode for 3-chloropropane-1,2-diol (3-MCPD). Whilst none of the samples contained 3-MCPD above the limit of detection of 3 μg kg?1 milk, all contained high amounts of 3-MCPD esterified with higher fatty acids. The levels of 3-MCPD released by hydrolysis of these esters (bound 3-MCPD) ranged from the limit of detection (300 μg kg?1, expressed on a fat basis) to 2195 μg kg?1; with a mean level of bound 3-MCPD of 1014 μg kg?1, which corresponded to 35.5 μg kg?1 milk. The presence of bound 3-MCPD was confirmed using orthogonal gas chromatography coupled with high-speed time-of-flight mass spectrometry analysis for four randomly selected breast milk samples. Six breast milks collected from one of the nursing mothers 14–76 days after childbirth contained bound 3-MCPD within the range of 328–2078 μg kg?1 fat (mean 930 μg kg?1 fat). The calculated bound 3-MCPD content of these samples was within the range of 6 and 19 μg kg?1 milk (mean of 12 μg kg?1 milk). The major types of 3-MCPD esters were the symmetric diesters with lauric, palmitic, and oleic acids, and asymmetric diesters with palmitic acid/oleic acid among which 3-chloro-1,2-propanediol 1,2-dioleate prevailed.  相似文献

An efficient analytical method was developed and validated using a modified QuEChERS method and LC-MS/MS for the detection and quantification of neonicotinoid insecticide residues in rice whole grain and rice straw. The samples were extracted using acetonitrile and cleaned up by dispersive solid-phase extraction. Validation based on five fortification levels showed good recoveries of neonicotinoids ranging from 75% to 116 % and 60% to 105 % for rice whole grain and straw, respectively. The precision ranged between 3% and 17 %, and 2% and 10 % for grain and straw, respectively. The limit of detection was from 0.007 to 0.0084 mg kg?1 and 0.005 to 0.15 mg kg?1 and the limit of quantification was in the range of 0.024–0.028 mg kg?1 and 0.016–0.051 mg kg?1 for rice whole grain and rice straw, respectively. Monitoring of farm gate samples indicated that, out of 24 samples, 1 rice whole grain sample was contaminated with thiamethoxam residues (0.07 mg kg?1).  相似文献

Seven biogenic amines were determined in 35 commercially produced Yulu samples from three provinces of China by pre-column derivatisation with dansyl chloride (Dns-Cl) and high-performance liquid chromatography with fluorescence detection (HPLC-FLD). Putrescine, cadaverine, histamine and tyramine were the major biogenic amines (more than 100 mg kg?1), while tryptamine, spermidine and spermine were regarded as minor biogenic amines (less than 25 mg kg?1). Twenty samples contained more than 50 mg kg?1 histamine (the limit for histamine in seafood products as suggested by the Food and Drug Administration). Twenty-one samples contained more than 100 mg kg?1 tyramine and 10 contained more than 1000 mg kg?1 total biogenic amines. This study provided data on biogenic amine levels in Chinese fermented fish sauce. The results suggested that biogenic amine content should be monitored in commercially produced Yulu.  相似文献

An improved method for the analysis of propylene glycol (PG) in foods using a gas chromatography-flame ionisation detector (GC-FID), with confirmation by GC-MS, was validated by measuring several analytical parameters. The PG concentrations in 1073 products available in Korean markets were determined. PG was detected in 74.1% of the samples, in a concentration range from the limit of detection (n.d., 0.39 μg ml?1) to 12,819.9 mg kg?1. The Korea National Health and Nutrition Examination Survey (KNHANES) 2011–2013 reported the mean intake levels of PG from all sources by the general population and consumers were 26.3 mg day?1 (0.52 mg kg?1 day?1) and 34.3 mg day?1 (0.67 mg kg?1 day?1), respectively. The 95th percentile intake levels of the general population and consumers were 123.6 mg day?1 (2.39 mg kg?1 day?1) and 146.3 mg day?1 (2.86 mg kg?1 day?1), respectively. In all groups of the general population, breads were the main contributors to the total PG intake. These reports provide a current perspective on the daily intake of PG in the Korean population.  相似文献

A pressurized liquid extraction (PLE) method was developed for melamine analysis in pet foods. The PLE method which utilized an accelerated solvent extraction (ASE®) system was also compared with sonication and polytron extraction methods. The parameters for the optimized PLE method were temperature (75?°C for wet pet food, 125?°C for dry pet food), pressure (1,500 psi), static time (10 min), flush volume (40%), purge time (1 min), and number of cycles (1). Recoveries obtained by PLE method were significantly higher (P?≤?0.05) than those of sonication and polytron methods for dry pet food samples. For the analysis of adulterated pet foods, PLE resulted in the highest melamine content followed by sonication and polytron. Using PLE, samples fortified with melamine at 2.5 and 100 mg kg?1 resulted in recoveries ranging from 55% to 90% for wet samples and from 90% to 116% for dry samples. Low recovery rate from wet samples at low spike level (2.5 mg kg?1) may have been caused by co-aggregation of polysaccharide and protein with melamine due to low pH during solid-phase extraction cleanup. Limit of detection and limit of quantification values were 0.5 (mg kg?1) and 1.0 (mg kg?1) for dry samples. Overall, PLE had the best extraction efficiency compared to sonication and polytron, proving PLE to be a useful tool for melamine analysis of pet foods.  相似文献

A sensitive and rapid analytical method based on QuEChERS (quick, easy, cheap, effective, rugged and safe) sample preparation and LC-MS/MS detection was developed for the analysis of halosulfuron-methyl residues in wheat. The recoveries of halosulfuron-methyl in both the wheat plant and grain ranged from 87% to 119% and from 75% to 97%, respectively, with relative standard deviations (RSDs) of 3–9%. The limit of quantification (LOQ) was 0.005 mg kg?1 for wheat plant and 0.001 mg kg?1 for wheat grain. The half-life of halosulfuron-methyl in the wheat plant was 0.9–9.5 days. The terminal residue levels of halosulfuron-methyl in wheat grain were below 0.01 mg kg?1 at harvest.  相似文献

In this study, an ultra-high-performance liquid chromatography method was developed to detection the levels of 5-hydroxymethyl-2-furfural (HMF) in 227 selected food products obtained from the Chinese markets. The performance of the analysis method was evaluated by some quality parameters such as limit of detection (LOD), limit of quantification (LOQ), linearity, recovery, and run-to-run (n?=?6) and day-to-day (n?=?18) precisions. The LOD and the LOQ of the method in different food matrices ranged from 0.15 to 0.50 and from 0.35 to 1.20 mg kg?1, respectively. The results from this study showed that HMF was mostly detected in all samples selected. HMF contents in different samples varied greatly according to the raw materials and processing conditions. The highest level of HMF was found in preserved fruits and ground coffee, with average levels of 409.6 and 409.9 mg kg?1, respectively. Preliminary estimates of HMF exposure from foods in the Chinese population was estimated to be 0.12 mg kg?1 body weight day?1, which is relatively low compared with the result reported by JECFA and European Food Safety Authority.  相似文献

Persistence of fluopicolide and propamocarb in tomato was studied following three applications of a combination formulation of Infinito 68.75 SC (fluopicolide 6.25 %?+?propamocarb 62.5 %) at 1500 and 3000 mL ha?1 by 7 days interval, starting the spray at fruit development stage. QuEChERS method included extraction of sample with ethyl acetate and cleanup of dispersive solid-phase extraction was used for the determination of fluopicolide and propamocarb residues on tomato and soil. Residues of fluopicolide and propamocarb in tomato were estimated by gas–liquid chromatography and gas chromatograph–mass spectrometry, respectively. Half-lives for fluopicolide were found to be 2.58 and 2.31 days, whereas for propamocarb these values were observed to be 1.49 and 2.08 days at single and double the application rates, respectively. Residues of fluopicolide dissipated below its limit of quantification (LOQ) of 0.01 mg kg?1 after 7 and 10 days at single and double the application dosage, respectively. Similarly, residues of propamocarb took 5 and 7 days to reach LOQ of 0.10 mg kg?1, at single and double dosages, respectively. Soil samples collected after 15 days of the last application did not show the presence of fluopicolide and propamocarb at their detection limit of 0.01 and 0.10 mg kg?1, respectively. The initial deposit of residues of propamocarb and fluopicolide for both the dosages were below the prescribed codex maximum residue limit values of 2 and 1 mg kg?1, respectively. Therefore, a 1-day waiting period was suggested to reduce human health risks before consumption of tomato fruits.  相似文献

A high-performance liquid chromatography method was applied for the determination of the levels of benzoate and sorbate in 400 food samples, including pickled cucumbers, canned tomato pastes, sour cherry jams, soft drinks, fruit juices and dairy products (UF-Feta cheeses, Lighvan cheeses, lactic cheeses, yogurts and doogh). The results showed that 270 (67.5%) of all samples contained benzoate ranging from 11.9 to 288.5 mg kg?1 in lactic cheese and fruit juice, respectively. The levels of sorbate in 98 (24.5%) of the samples were 20.1 to 284.3 mg kg?1 in doogh and fruit juice, respectively. Moreover, benzoate was detected in all dairy products ranging from 11.9 mg kg?1 in lactic cheese to 91.2 mg kg?1 in UF-Feta cheese. A low concentration of benzoate could originate naturally, due to specific biochemical mechanisms during cheese, yogurt and doogh maturation. In conclusion, a minimum level for benzoate in dairy products should be defined in the legislation.  相似文献

This paper reports the evaluation of the Quick, Easy, Cheap, Effective, Rugged and Safe (QuEChERS) method for the determination of polycyclic aromatic hydrocarbons (PAHs) in food of animal origin with GC–MS detection. Although in the available literature, there is a lot of information about sample preparation method for PAHs determination in food samples, but the QuEChERS method application for PAHs determination in food of animal origin has not been reported as yet. The results showed that the best recovery ratios 72.4–110.8 % with relative standard deviation lower than 10 % for all determined compounds were received for the method with ethyl acetate as an extraction solvent, primary–secondary amine and C18 sorbents and evaporation to dryness and dissolving the residues in the hexane. The limit of quantification ranged from 0.0003 to 0.0030 mg kg?1 for pyrene and benzo[a]anthracene, respectively. This method was also used for the determination of PAHs in 15 samples of pork ham. In 8 of 15 samples selected, PAHs were identified. It was observed that in 6 cooked ham and one smoked and cooked samples, any PAHs were found. In other samples, which were smoked and roasted, some low concentration of PAHs was detected. In one sample benzo[a]pyrene (0.0015 mg kg?1), in one sample benzo[b]fluoranthene (0.0015 mg kg?1) and in one sample chrysene (0.0024 mg kg?1) were detected. A number of other less harmful PAHs were also determined. There were no exceedances of maximum levels (according to Commission Regulation (EU) No 835/2011) for determined PAHs in any of the analysed samples.  相似文献

Acrylamide, a colourless and odourless crystalline solid, formed via the Maillard reaction in food, has been reported with harmful properties for humans, such as toxicity and carcinogenicity. Three hundred and four processed food samples from 17 product types, collected in Hanoi, Vietnam, were analyzed by LC-MS/MS to measure the acrylamide concentration. The limit of detection (LOD) and the limit of quantification (LOQ) of acrylamide were 1 µg Kg?1 and 3 µg Kg?1, respectively. Effectively, the highest acrylamide content is usually found in processed food, which is one of the primary reasons of increased acrylamide content in food. All French fried samples contained acrylamide above 500 µg kg?1. Acrylamide concentration in non-fried noodle, vermicelli, rice noodle, ph?, dried vegetable, and rice cracker is lower than in potato chips, fried potatoes, fried cake, and fried noodles. The results could be helpful to estimate exposure and risk assessment of acrylamide in Vietnam.  相似文献

Heavy metals (As, Cd, Co, Cr, Cu, Mn, Ni, Pb and Zn) in various vegetables (cabbage, green onion, lettuce, parsley, rocket, spinach, carrot, onion, potato and cauliflower) from the market in Jordan were measured using inductively coupled plasma-mass spectrometry. As, Cd, Co, Cr, Cu, Mn, Ni, Pb and Zn ranged from 0.009–0.275 mg kg?1 wet weight, 0.004–0.060 mg kg?1, 0.003–0.401 mg kg?1, 0.105–3.51 mg kg?1, 0.15–1.15 mg kg?1, 0.93–14.39 mg kg?1, 0.044–0.702 mg kg?1, 0.072–0.289 mg kg?1 and 2.23–6.65 mg kg?1, respectively. Parsley, followed by spinach, contained the highest concentration of heavy metals. Onion contained high levels of toxic heavy metals. The content of Cu in parsley and spinach and Pb in onion exceeded the Codex limits. However, the daily intake of heavy metals from the tested vegetables was lower than the maximum limits for allowable intake.  相似文献

This paper reports levels of 3-monochloropropan-1,2-diol (3-MCPD) and 1,3-dichloro-2-propanol (1,3-DCP) in a wide range of food items and estimates their dietary exposure for secondary school students in Hong Kong. Dietary exposure to chloropropanols was estimated using local food consumption data obtained from secondary school students in 2000 and the concentrations of 3-MCPD and 1,3-DCP in food samples taken from the local market. The dietary exposure to 3-MCPD for an average secondary school student consumer was estimated to be 0.063–0.150 µg kg?1 body weight (bw) day?1, whilst that for the high consumer was 0.152–0.300 µg kg?1 bw day?1. Both estimates fell below the provisional maximum tolerable daily intake of 2 µg kg?1 bw established by the Joint Expert Committee on Food Additives (JECFA) and amounted to less than 20% of this safety reference value. The dietary exposure to 1,3-DCP for an average secondary school student consumer was estimated to be 0.003–0.019 µg kg?1 bw day?1, whilst that for the high consumer was 0.009–0.040 µg kg?1 bw day?1. The resulting margins of exposures were of low concern for human health. It could be concluded that both the average and high secondary school student consumers were unlikely to experience major toxicological effects of 3-MCPD and 1,3-DCP.  相似文献

A total of 635 raw milk samples from 45 dairy farms, from three regions of São Paulo state – Brazil, were evaluated during 15 months for aflatoxin M1 (AFM1). AFM1 was determined by high performance liquid chromatograph with fluorescence detection. AFM1 was detected (>0.003 µg kg?1) in 72.9%, 56.3% and 27.5% of the samples from Bauru, Araçatuba and Vale do Paraíba regions, respectively. The mean AFM1 contamination considering all the samples was 0.021 µg kg?1. Furthermore, the concentration of AFM1 was quite different among Bauru (0.038 µg kg?1), Araçatuba (0.017 µg kg?1) and Vale do Paraíba (<0.01 µg kg?1) regions. Only three samples (0.5%) had higher contamination than the tolerated limit in Brazil (0.50 µg kg?1) and 64 samples (10.1%) had a higher contamination than the maximum limit as set by the European Union (0.050 µg kg?1). The estimated AFM1 daily intake was 0.358 and 0.120 ng kg?1 body weight per day for children and adults, respectively.  相似文献

The goal of this research was to evaluate the application of Quick, Easy, Cheap, Effective, Rugged, and Safe (QuEChERS) method for the determination of organochlorine, organophosphate, and carbamate pesticides in fatty animal matrices such as liver of chicken obtained from National Research Institute of Animal Production in Balice (Poland). Pesticides extraction effectiveness was evaluated at two different spiking levels (0.010 and 0.020 mg kg?1) and efficiency of the dispersive solid-phase extraction (d-SPE) clean-up step was evaluated by comparison adding different d-SPE sorbent combinations (PSA?+?GCB, PSA?+?C18, PSA?+?SAX, and PSA?+?NH2). The analysis of pesticide residues was performed by gas chromatography ion trap mass spectrometry (GC/IT-MS). The linear relation was observed from 0 to 400 ng mL?1 and the determination coefficient R 2?>?0.997 in all instances for all target analytes. Better recoveries were obtained in samples at 0.020 mg kg?1 spiking level. The recoveries were in the range 70–120 %, with relative standard deviation (RSD) values lower than 15 % at 0.020 mg kg?1 spiking level for most pesticides. Similar recovery ratios were obtained with the four different combinations of sorbents tested in the clean-up step, with better precision when the (PSA?+?SAX) combination was tested. Limits of detection (LODs) ranged from 0.001 to 0.005 mg kg?1 and limits of quantification (LOQs) ranged from 0.003 to 0.015 mg kg?1. The proposed method was successfully applied analyzing pesticide residues in real chicken liver samples; detectable pesticide residues were observed, but in all of the cases, the contamination level was lower than the default maximum residue levels (MRLs) set by European Union (EU), Regulation (EC) N 396/2005.  相似文献

The natural co-occurrence of aflatoxins (AFs), ochratoxin A (OTA) and citrinin (CIT) in melon seed samples obtained from retailers and households in Ireland and the United Kingdom (UK) was evaluated. AFs and OTA were determined by HPLC with fluorescence detection while CIT was analysed by HPLC-MS/MS. AFB1 was detected in all (100%) samples (mean = 9.7 μg kg?1; range = 0.2–66.5 μg kg?1). Mean total AFs was 12.0 μg kg?1 (range = 0.3–82 μg kg?1). Commercially retailed samples showed a significantly higher AFB1 contamination (p < 0.05) than the household samples. OTA occurred in 3 (13.6%) samples, while 4 (18.2%) were contaminated with CIT at very low levels. In this study, 68% of the melon seed samples were contaminated above the 2 μg kg?1 EU limit for AFB1 in oilseeds. These results highlight the need for the development of strategies to reduce AF contamination in “egusi” for human consumption.  相似文献
