The potential influence of dietary phytoestrogen exposure on human health during different life phases including early childhood is a matter of scientific debate. In order to improve the risk–benefit assessment of exposure to dietary phytoestrogen, reliable and age-stratified exposure data are desirable. For contributing to the database on phytoestrogen exposure, in the present study plant-derived foods from the Chinese market were analysed by LC-MS/MS for their contents of phytoestrogens, including daidzein, genistein, secoisolariciresinol, glycitein and coumestrol. The analytical data showed the presence of phytoestrogens in a concentration range of less than 0.1 to about 50 μg g?1. Dietary intake was assessed on the basis of average food intake data obtained from interviewing 1000 randomly selected people with the help of food frequency questionnaires. Based on the overall population sampled, the average total phytoestrogen intake was estimated at 232 μg kg?1 day?1. Genistein contributed to about 66%, secoisolariciresinol and glycitein to about 10% each, and daidzein to about 7% of the overall intake. Coumestrol was present only in trace amounts. Age-related exposure assessment indicated that pre-pubertal children (aged 0–14 years) were exposed at the highest level with an average total phytoestrogen intake of 621 μg kg?1 day?1. The substantially higher average exposure of children as compared with adults should trigger further research into the potential health effects of early life exposure to phytoestrogen.  相似文献

Diet is a relevant source of exposure to environmental pollutants. Dietary intake of polychlorinated dibenzo-p-dioxins (PCDDs), polychlorinated dibenzofurans (PCDFs), dioxin-like polychlorinated biphenyls (DL-PCBs) and polybrominated diphenyl ethers (PBDEs) by the Italian population was assessed through a duplicate diet study on prepared meals. Baby food composite representative of the diet of toddlers aged 9–12 months and school canteen servings from four towns in Italy representing the diet of children aged 4–9 years were collected on a 5-day basis. Similarly, 5-day lunches from an office canteen, 7-day lunches from a hotel-school, three fast food meals, and eight duplicate 1-day meals of individuals (one vegetarian) were selected to represent the diet of adults aged above 18 years. Servings from each diet were then pooled to form a composite and analysed. Dietary intake was estimated from the resulting contaminant levels in composites combined with age-related food consumption data from national survey. The mean upper bound (UB) intakes for cumulative PCDDs, PCDFs, and DL-PCBs were 0.67, 0.63–0.92, and 0.27–0.63 pg WHO2005-TE kg?1 body weight (bw) day?1 for toddlers, children and adults, respectively. BDE-47 (UB) ng kg?1 bw day?1 estimates were 2.75 in toddlers, 0.08–0.16 in children and 0.03–0.09 in adults. Similarly, for BDE-99 higher UB intakes (ng kg?1 bw day?1) resulted in toddlers (1.26), than those in children (0.06–0.08) and adults (0.03–0.10), respectively. The above estimates fall below the tolerable weekly intake (TWI) (14 WHO2005-TE kg?1 bw day?1) established by the European Union Scientific Committee on Food (SCF) for PCDD/Fs and DL-PCBs. The margin of exposure (MOE = 3) of toddlers to BDE-99 clearly indicates this age group as target for a risk-oriented approach. This study is proposed as a first cost-effective screening in PCDD, PCDF, DL-PCB and PBDE intake assessment, with a focus also on time trends.  相似文献

The objective of the study was to determine the mean polyphenol composition of different varieties of virgin olive oil (VOO) habitually consumed in the region of southern Spain and to estimate the dietary exposure to olive oil polyphenols in that population. There were statistically significant differences in total polyphenols among varieties, with the Picual variety containing the largest amount with a mean value of 591.8 mg kg–1. The main phenolic compounds found in the VOOs under study were tyrosol and hydroxytyrosol. The highest amounts of both substances were found in Picual olive oils with concentrations of 2.3–6.6 mg kg?1. The total intake of polyphenols from VOO ranged between 8.2 mg day–1 (SD = 4.14) for the under 19 year olds and 21.3 mg day–1 (SD = 3) for the over 50 year olds. Some polyphenols, including tyrosol and hydroxytyrosol, were consumed principally as olive oil. The intake of these compounds in the studied population was in the range of 88.5–237.4 μg day–1. This has particular importance as recent studies have demonstrated that hydroxytyrosol helps to improve plasma lipids levels and repair oxidative damage related to cardiovascular disease. There was a greater dietary consumption of polyphenols in olive oil among the participants who more closely followed the Mediterranean diet pattern. A higher consumption of olive oil and therefore a greater exposure to polyphenols was observed in females versus males and in participants of normal weight versus those who were overweight. The total intake of polyphenols from VOO significantly increased with higher age, reflecting the greater intake of this oil by older people, who also show a closer adherence to the Mediterranean diet. The over 50-year-old age group showed the greatest consumption of this olive oil and therefore of phenolic compounds, which are healthy protectors in the human diet that contribute to the acknowledged benefits of the Mediterranean diet.  相似文献

Dietary exposure of the Valencian region population to lead, cadmium, inorganic arsenic (iAs), chromium, copper, tin and methylmercury (meHg) was assessed in a total diet study carried out in the region of Valencia in 2010–11. A total of 8100 food samples were collected and analysed. Occurrence data were combined with consumption data to estimate dietary exposure in adults (> 15 years of age) and young children (6–15 years of age). The estimated intake was calculated by a probabilistic approach. Average intake levels (optimistic scenario) for lead, iAs, chromium and tin were 0.21, 0.08, 1.79 and 1.87 µg kg?1 bw day?1 respectively; for Cd and meHg average intake levels were 0.77 and 0.54 µg kg1 bw week?1, respectively, and for Cu, 1.60 mg day?1. In terms of risk characterisation, the results showed that 2.84% of the adult population may exceed the BMDL10 (benchmark dose lower confidence limit) established for Pb, which is linked to renal effects; whereas 28.01% of the young children population may exceed the BMDL01 related to neurodevelopment effects. In addition, 8.47% of the adult population and 12.32% of young children exceeded the meHg tolerable weekly intake (TWI).  相似文献

An improved method for the analysis of propylene glycol (PG) in foods using a gas chromatography-flame ionisation detector (GC-FID), with confirmation by GC-MS, was validated by measuring several analytical parameters. The PG concentrations in 1073 products available in Korean markets were determined. PG was detected in 74.1% of the samples, in a concentration range from the limit of detection (n.d., 0.39 μg ml?1) to 12,819.9 mg kg?1. The Korea National Health and Nutrition Examination Survey (KNHANES) 2011–2013 reported the mean intake levels of PG from all sources by the general population and consumers were 26.3 mg day?1 (0.52 mg kg?1 day?1) and 34.3 mg day?1 (0.67 mg kg?1 day?1), respectively. The 95th percentile intake levels of the general population and consumers were 123.6 mg day?1 (2.39 mg kg?1 day?1) and 146.3 mg day?1 (2.86 mg kg?1 day?1), respectively. In all groups of the general population, breads were the main contributors to the total PG intake. These reports provide a current perspective on the daily intake of PG in the Korean population.  相似文献

An improved method for the analysis of caffeine in foods by HPLC was validated by measuring several analytical parameters. The caffeine contents of 1202 products available from Korean markets were analysed. A consumption study was conducted by using data from the Korea National Health and Nutrition Examination Survey (KNHANES), 2010–12, to estimate the caffeine intakes of the Korean population. The mean intakes of caffeine from all sources in the general population and consumers were 67.8 and 102.6 mg day?1 for all age groups, respectively. The 95th percentile intakes of the general population and consumers were 250.7 and 313.7 mg day?1, respectively. In those aged 30–49 years, the caffeine intakes of the general population and consumers were highest at 25.5% (101.8 mg kg?1 day?1) and 36.6% (0.9 mg kg?1 day?1), respectively, compared with the maximum recommended daily intake (400 mg day?1) for adults. In the general population, the main contributors to the total caffeine intake were carbonated beverage for the younger age groups and coffee for the adults. These data provide a current perspective on caffeine intake in the Korean population.  相似文献

Perchlorate is a thyroid hormone-disrupting compound and is reported to occur widely in the environment. Little is known on human exposure to perchlorate in Kuwait. In this study, 218 water samples, 618 commonly consumed foodstuffs and 532 urine samples collected from Kuwait were analysed to assess the exposure of the Kuwaiti population to perchlorate. For the estimation of daily intake of perchlorate, food consumption rates were obtained from the National Nutrition Survey in the State of Kuwait (NNSSK). The results showed that leafy vegetables accounted for a major share of perchlorate exposure among the Kuwaiti population at 0.062 µg kg1 bw day1 (36.2%), followed by fruits at 0.026 µg kg1 bw day1 (15.3%) and non-leafy vegetables at 0.017 µg kg1 bw day1 (10.1%). The urinary perchlorate geometric mean (GM) concentrations ranged from 8.51 to 17.1 µg l1 for the five age groups, which were higher than those reported in other countries. The estimated urinary perchlorate exposure for the Kuwaiti general population was 0.42 µg kg1 bw day1, which was higher than that reported for the United States. The dietary intake of perchlorate for the Kuwaiti population ranged from 0.14 to 0.67 µg kg1 bw day1 for the five age groups, with a mean total daily intake of 0.17 µg kg1 bw day1 for the general population. The highest estimated dietary mean daily intake of perchlorate (0.67 µg kg1 bw day1) was found for children at 3–5 years. The estimated dietary perchlorate exposure in Kuwait is higher than the recommended mean reference dose (RfD) but lower than that of provisional maximum tolerable daily intake (PMTDI) set by the Joint FAO/WHO Expert Committee on Food Additives (JECFA).  相似文献

The paper’s main purpose is to estimate the dietary exposure to lead for the inhabitants of Jiangsu province, China. Lead concentration data were obtained from the national food contamination monitoring programme during 2007–10. Food samples (n = 2077) were collected from 23 food categories in Jiangsu province. Consumption data were derived from Chinese national nutrition and health survey in 2002, which included 3938 inhabitants from 1451 households in Jiangsu province. Concentration data were combined with consumption data to estimate the dietary intake for the inhabitants of 2–6, 7–17 and 18–80 years, respectively. The β-binomial–normal (BBN) model was used to estimate the long-term intake for the population in Jiangsu province. The distribution of individual margin of exposure (IMoE) was introduced to assess the health effect. Uncertainty of IMoE was quantified by Monte Carlo and bootstrap methods. The mean levels of dietary exposure to lead were estimated at 3.019 µg kg?1 bw day?1 for children aged 2–6 years, 2.104 µg kg?1 bw day?1 for teenagers aged 7–17 years, and 1.601 µg kg?1 bw day?1 for adults aged 18–80 years. The mean intakes for the urban and rural populations were 1.494 and 1.822 µg kg?1 bw day?1, respectively. From the 25th to 99.9th percentiles, IMoE was 0.125–2.057 for 2–6 years and 0.473–7.998 for 18–80 years, respectively. The distribution of IMoE could indicate a public health concern on lead for the Chinese population in Jiangsu. Control measures should be taken to reduce lead exposure in Jiangsu province.  相似文献

Total diet samples collected from seven regions throughout Japan in 2016 were analysed for polychlorinated dibenzo-p-dioxins, polychlorinated dibenzofurans and dioxin-like polychlorinated biphenyls (DL-PCBs), known collectively as dioxins. This led to estimates of the latest dietary intake of these contaminants for the general Japanese population (≥1 year old). The average daily intake of dioxins for a person weighing 50 kg, calculated at non-detected congener concentrations assumed to be equal to zero, was estimated to be 0.54 pg TEQ (toxic equivalents) kg?1 body weight (bw) day?1. This value is well below the tolerable daily intake of 4 pg TEQ kg?1 bw day?1 for dioxins in Japan. The average intake was highest from fish and shellfish, followed by meat and eggs. The TEQ contribution of the fish and shellfish group to the total dietary TEQs was significant (89%). The DL-PCBs accounted for about 67% of the dioxin intake. The latest dioxin intake level was compared with previous estimates from total diet study results obtained annually since 1998 to determine the time trends in the dietary intake of dioxins in Japan. Overall, the average dioxin intake appeared to be decreasing gradually during the period of study. The previous average intakes of dioxins ranged from 0.58 to 1.9 pg TEQ kg?1 bw day?1. The latest average intake was the lowest since 1998 and was about one-third of the average intake in 1998. This decreasing trend in the dietary intake of dioxins was mainly influenced by the decreased dioxin intakes from two food groups, fish and shellfish, and meat and eggs.  相似文献

Dietary exposures to eight metallic contaminants, aluminium (Al), antimony (Sb), cadmium (Cd), lead (Pb), methylmercury (MeHg), nickel (Ni), tin (Sn) and vanadium (V), of the Hong Kong adult population were estimated using the total diet study (TDS) approach. The estimated mean exposures of Al (0.60 mg kg–1 bw week–1), Sb (0.016–0.039 µg kg–1 bw day–1), Cd (8.3 µg kg–1 bw month–1), Pb (0.21 µg kg–1 bw day–1), MeHg (0.74 µg kg–1 bw week–1), Ni (3.1 µg kg–1 bw day–1), Sn (0.029–0.031 mg kg–1 bw week–1) and V (0.13 µg kg–1 bw day–1) were well below the relevant health-based guidance values (HBGVs) where available. However, dietary exposures to MeHg of women aged 20–49 years (child-bearing age) accounted for 150% of the provisional tolerable weekly intake (PTWI) and to Al and Cd of some high consumers were found exceeding or approaching the HBGVs. The major food contributors of MeHg were fish and seafood (90%), of Al were non-alcoholic beverages including tea (33%), and of Cd were vegetables (36%). MeHg exposure during pregnancy was a public health concern in Hong Kong due to potential health risks to the foetus. Results suggest that there is a need to continue monitoring the exposures to metallic contaminants, especially Al, Cd and MeHg, of the Hong Kong population.  相似文献

The aim of the study was to assess the dietary intake of caramel colours and their by-products 4-methylimidazole (4-MEI) and 2-acetyl-4-tetrahydroxybutylimidazole (THI) for the Chinese population. Based on the typical and maximum reported use levels of caramel colours in 15 food categories, the dietary intakes of combined and single-class caramel colours of Classes I, III and IV were estimated with the food consumption data from the China National Nutrient and Health Survey. Using the mean values of 4-MEI and THI contents in Class III and Class IV Caramel colour samples, the exposures to 4-MEI and THI from dietary caramel colours were derived. The results showed that the combined and individual average dietary caramel colour intakes for the Chinese population of different age groups were estimated to be 232–60.3 mg kg?1 bw day?1 for combined caramels, 5.9–29.2 mg kg?1 bw day?1 for Class I, 7.7–29.6 mg kg?1 bw day?1 for Class III, 21.2–54.3 mg kg?1 bw day?1 for Class IV, which were far below the group acceptable daily intake (ADI) and respective ADIs. The combined intake of 4-MEI from Class III and IV caramel colours was estimated to be 3.8–5.2 μg kg?1 bw day?1 on average, and 12.9–27.1 μg kg?1 bw day?1 at 95th-97.5th percentile for the general population. The anticipated exposure to THI from Class III caramel colours was estimated to be 0.1–0.3 μg kg?1 bw day?1 on average and 0.5–1.7 μg kg?1 bw day?1 at 95th–97.5th percentile for the general population. The dietary caramel colours intakes and the exposures to 4-MEI and THI from dietary caramel colour for the Chinese population were considered to be of low health concern based on the present toxicological data. Soy sauce, vinegar and compound seasonings were found to be the main contributors to the dietary intake of caramel colours.  相似文献

This study estimated the theoretical maximum daily intake (TMDI) of Sunset Yellow (SY) synthetic food dye by the Brazilian population through food consumption data from the Household Budget Survey (HBS) of the Brazilian Institute of Geography and Statistics (IBGE, 2008/09). The study covered the population in urban and rural areas in the five regions of the country, and from different age groups, in order to verify if it were possible to exceed the acceptable daily intake (ADI) of SY, which is 4.0 mg kg–1 body weight. This was assessed by cross-checking food products containing this dye from the largest supermarket chains in Brazil with data from the HBS-IBGE 2008/09. These data showed that the average consumption of SY per capita did not exceed the ADI in any of the aforementioned population groups. However, when considering food consumption in urban and rural areas (279 and 260 mg of SY day–1), in the five regions of the country (260–338 mg of SY day–1), and for adolescents (332 mg SY day–1), it is noted that part of the population could be exceeding the recommended ADI, which may pose health risks. Although it is unlikely that individuals will exceed the SY ADI, this may occur in some cases, especially for younger people.  相似文献

The human health implications of exposure to environmental pollutants and food components (e.g. phytoestrogens) that mimic the female hormone 17β‐estradiol (xenoestrogens) are a subject of significant debate. In this study, we use published data on human dietary phytoestrogen intake and sperm concentrations in the USA and China to assess effects on sperm concentration as a marker of male reproductive health. Comparison of the phytoestrogen intake and sperm concentration trends shows that in the USA phytoestrogen intake has increased from 0.8 mg day?1 in 1993 to 13.7 mg day?1 in 2005 and sperm concentration is trending down (not statistically significant), whereas in China phytoestrogen intake has decreased from 64.7 mg day?1 in 1991 to 15.6 mg day?1 in 2008, and the sperm concentration has increased from 55 × 106 mL?1 in 1999 to 74 × 106 mL?1 in 2008. We present this as evidence that phytoestrogen intake via food might, at least in part, be responsible for sperm concentration trends.  相似文献

Sulphites are widely used as a preservative and antioxidant additive in food. The aim of this study was to assess dietary sulphite intake in adults aged 35–65 years and in children aged 4–18 years living in the Basque Country, northern Spain. We determined sulphite concentrations in 909 samples covering 16 food types. The maximum permitted levels were exceeded in 17% of samples. Making recommended assumptions for non-quantifiable results, estimates of mean lower and upper bounds were calculated for sulphite concentrations in each food type. These sulphite data were combined with consumption data derived from 8417 adults from the European Prospective Investigation in Cancer and Nutrition cohort in Gipuzkoa, recruited in 1992–1995 using a diet history method, and 1055 children from the Basque Country Nutrition Children Survey, conducted in 2004–2005 using two 24-h recall questionnaires to assess diet. The results were compared with the acceptable daily intake (ADI) proposed by the Joint Expert Committee on Food Additives (JECFA). The mean dietary exposure to sulphites was 0.08 mg kg?1 bw day?1, only 11% of the ADI in the overall group of children (4–18 years old), but the acceptable intake was exceeded by 4% of 4–6 year olds. For the adults (35–65 years old), the mean dietary exposure was 0.31 mg kg?1 bw day?1, 45% of the ADI, but the acceptable intake was exceeded in 14.6% of cases. The major contributing foods were minced meat and other meat products for children and wine for adults.  相似文献

Short-chain chlorinated paraffins (SCCPs) have drawn increasing interest worldwide since they were included in the list of controlled persistent organic pollutants in Annex A of the Stockholm Convention in 2017, and the potential health risk they pose to humans must be evaluated. In this study, 86 human milk samples were collected from 55 healthy Chinese mothers living in the Shijiazhuang region of Northern China in 2014–2015. Advanced online gel permeation chromatography–gas-chromatography-coupled mass spectrometry with negative-ion chemical ionisation was used to quantify the SCCPs in the samples. The estimated mean level of SCCPs was 2.51 μg g?1 lipid weight (range 0.21–16.12). The SCCP concentration correlated positively with the mother’s bodyweight at the end of pregnancy (P < 0.05). The mean SCCP intake by infants via breast milk was 13.0 μg kg?1 day?1 at 1 month, 7.1 μg kg?1 day?1 at 3 months, and 2.5 μg kg?1 day?1 at 6 months after birth. This study provides initial data on the levels of SCCPs in human milk in a chlorinated-paraffin-manufacturing area in China, and indicates a high health risk for infants.  相似文献

Dietary exposure of the Valencia Region population to polychlorinated dibenzo-p-dioxins (PCDDs), polychlorinated dibenzofurans (PCDFs) and PCBs was assessed in the Region of Valencia in 2010–2011. A total of 7700 food samples were collected. Occurrence data were combined with consumption data to estimate dietary exposure in adults (>15 years of age) and young people (6–15 years of age). The estimated intake was calculated by a probabilistic approach. Average intake levels (upper-bound scenario) were 1.58 and 2.76 pg toxic equivalent (TEQ) kg?1 body weight (bw) day?1 for adults and young people, respectively. These average intakes are within range of the tolerable daily intake of 1–4 pg WHO-TEQ kg?1 bw day?1 recommended by WHO, and slightly above the tolerable weekly intake (TWI) of 14 pg TEQ kg?1 bw week?1 and the Provisional tolerable monthly intake of 70 pg TEQ kg?1 bw month?1 set by the Scientific Committee on Food and the Joint FAO/WHO Expert Committee on Food, respectively. These results show that the contamination levels in food and therefore the exposure of the general population to PCDD/Fs and PCBs have declined in this region and therefore show the efficiency of the European risk-management measures. In terms of risk characterisation, the results showed that, under the upper-bound scenario, 22% of the adult and 58% of the young people population could exceed the TWI.  相似文献

The purpose of this study was to develop a method to quantify 4(5)-methylimidazole (4-MEI), a suspected carcinogen, in carbonated beverages by simple sample dilution and isotope-dilution reverse-phase LC-MS/MS. Isotope dilution using hexa-deuterated methylimidazole (d6-4-MEI) was used to quantify native 4-MEI and to assess matrix effects quantitatively. The accuracy of the method was assessed by intentionally fortifying a negative control sample at three doses: low, medium and high (replicates of n = 5 each) with a known amount of 4-MEI. The respective absolute error in each case was 18.7 ± 0.7%, 14.6 ± 2.8% and 21.1 ± 9.7%. Within-day (intra-) and day-to-day (inter-) repeatability, determined as the relative standard deviation by fortifying a negative control sample (n = 5), were 9.5% and 15.4%, respectively. Average ion suppression of d6-4-MEI in beer was 63.9 ± 3.2%, while no suppression or enhancement was seen in non-alcoholic samples. The instrument and method limit of detection were calculated as 0.6 and 5.8 ng ml–1, respectively. 4(5)-Methylimidazole was quantified in a variety of store-bought consumer beverages and it was found that in many of the samples tested consuming a single can of beer would result in intake levels of 4-MEI that exceed the no significant risk guideline of 29 µg day–1. Conversely, 4-MEI in the samples was orders of magnitude smaller than the European Food Safety Authority acceptable daily intake threshold value of 100 mg kg–1 bw day–1.  相似文献

A total of 126 food samples, categorised into three groups (seafood and seafood products, meat and meat products, as well as milk and dairy products) from Malaysia were analysed for polychlorinated dibenzo-p-dioxins (PCDDs) and polychlorinated dibenzofurans (PCDFs). The concentration of PCDD/Fs that ranged from 0.16 to 0.25 pg WHO05-TEQ g?1 fw was found in these samples. According to the food consumption data from the Global Environment Monitoring System (GEMS) of the World Health Organization (WHO), the dietary exposures to PCDD/F from seafood and seafood products, meat and meat products, as well as milk and dairy products for the general population in Malaysia were 0.064, 0.183 and 0.736 pg WHO05-TEQ kg?1 bw day?1, respectively. However, the exposure was higher in seafood and seafood products (0.415 pg WHO05-TEQ kg?1 bw day?1) and meat and meat products (0.317 pg WHO05-TEQ kg?1 bw day?1) when the data were estimated using the Malaysian food consumption statistics. The lower exposure was observed in dairy products with an estimation of 0.365 pg WHO05-TEQ kg?1 bw day?1. Overall, these dietary exposure estimates were much lower than the tolerable daily intake (TDI) as recommended by WHO. Thus, it is suggested that the dietary exposure to PCDD/F does not represent a risk for human health in Malaysia.  相似文献

Nitrite intake from the consumption of cured meat and tap water was estimated for Finnish children of 1, 3 and 6 years as well as Finnish adults of 25–74 years. Nitrite content in the foods was measured by capillary electrophoresis, and was then used together with individual food consumption data from the FINDIET 2007 and DIPP studies in a stochastic exposure assessment by a Monte Carlo Risk Assessment (MCRA) program. Nitrite intake from additive sources and tap water was assessed, and more than every 10th child between the ages 3 and 6 years was estimated to have a nitrite intake exceeding the acceptable daily intake (ADI) of nitrite. The high exposure levels were caused by frequent consumption of large portions of sausages, up to 350 g day–1 or 750 g in 3 days, among the children. Median nitrite intake from cured meat was 0.016, 0.040, 0.033 and 0.005 mg kg–1 body weight day–1 for children of 1, 3 and 6 years and adults, respectively. Bayesian estimation was employed to determine safe consumption levels of sausages and cold cuts for children, and these results gave rise to new national food consumption advice.  相似文献

A survey of 11 mycotoxins in 348 wheat flour samples marketed in Hebei province of China were analysed by liquid chromatography-tandem mass spectrometry, was carried out. The selected mycotoxins consisted of four aflatoxins (AFs: AFB1, AFB2, AFG1 and AFG2) and seven Fusarium toxins, i.e. deoxynivalenol (DON), nivalenol, 3-acetyldeoxynivalenol and 15-acetyldeoxynivalenol, zearalenone, Fusarenon-X and deoxynivalenol-3-glucoside. Results indicated that most of the wheat samples analysed were contaminated with mycotoxins. Wheat was most susceptible to DON (91.4% contamination), with a mean level of 240 μg kg?1. On average the probable daily intake (PDI, expressed as µg kg?1 body weight day?1) of mycotoxins was within the provisional maximum tolerable daily intake (PMTDI, 2.0 µg kg?1 of body weight day?1) as set by the Joint FAO/WHO Expert Committee on Food Additives. Nevertheless, exposure assessment revealed that the maximum PDI of mycotoxins was 4.06 µg kg?1 body weight day?1, which was twice the PMTDI value. Thus, consistent monitoring is recommended, as to keep the contamination level under control.  相似文献
