Cadmium is a very toxic contaminant with food being the major source of exposure for the general public. The second German food consumption survey (Nationale Verzehrsstudie II – NVS II) with about 20 000 participants (15 371 for dietary history interviews used for this study) allowed for an updated exposure assessment for the German population. Based on these comprehensive data, information on the consumption of 545 individual food items by the German population was generated. Cadmium concentrations in food were compiled from the German food monitoring programme, European countries’ authority programmes and the published literature, covering the years from 1993 to 2008, and were multiplied with consumption data to obtain estimates of cadmium intake from food. Consumption-weighted mean cadmium concentrations per main food group were highest for cereals, followed by oily seeds & fruits, and vegetables. Due to both high consumption and considerable occurrence of cadmium, cereals and vegetables contributed most to the intake of the general public, followed by the main groups beverages, fruits & nuts, and dairy products (including milk). Cadmium intake from food was estimated to be 1.46 and 2.35 µg kg–1 bw week–1 for average and high-end consumers, respectively. This corresponds to 58% for average and 95% for high-end consumers, respectively, of a reference value derived from a recent health risk evaluation performed by EFSA, using the benchmark approach. Uncertainties in these estimates pertain to the influence of values below the limit of quantification and some foods not considered due to lacking occurrence data. In conclusion, the estimated cadmium intake of the German population from food is still close to health-based reference values. Further efforts to reduce cadmium intake are required.  相似文献

Polychlorinated dibenzo-p-dioxin and -furan (PCDD/F) and dioxin-like polychlorinated biphenyl (dl-PCB) exposure from food were estimated using new food consumption data from the recent German food consumption survey (Nationale Verzehrsstudie II – NVS II). Based on these comprehensive data, information on the consumption of 545 individual food items by the German population was derived. Concentrations of dioxin-like compounds in food were compiled from the German Food Monitoring Programme (GFMP), the German Dioxin Database, other German authority programmes, European countries’ authority programmes and the published literature covering the years 2000–2010. By multiplication with consumption data, estimates of intake from food were determined. The main food groups contributing most to the intake of the general public are dairy products (including milk), meat and fish (including seafood), followed – due to high consumption – by the main group vegetables. The combined intake of PCDD/F and dl-PCB (as toxic equivalents – TEQ) from food was estimated to be 2.11/1.53 pg kg–1 bw and day and 3.56/2.85 pg kg–1 bw and day (upper/lower bound) for average and high-end consumers, respectively. The estimated intake of average consumers is close to a reference value derived by the Scientific Committee on Food in 2001. Uncertainties in these estimates pertain to the influence of values below the limit of quantification (upper/lower bound ratio) and some foods not considered due to the lack of contamination data.  相似文献

The paper’s main purpose is to estimate the dietary exposure to lead for the inhabitants of Jiangsu province, China. Lead concentration data were obtained from the national food contamination monitoring programme during 2007–10. Food samples (n = 2077) were collected from 23 food categories in Jiangsu province. Consumption data were derived from Chinese national nutrition and health survey in 2002, which included 3938 inhabitants from 1451 households in Jiangsu province. Concentration data were combined with consumption data to estimate the dietary intake for the inhabitants of 2–6, 7–17 and 18–80 years, respectively. The β-binomial–normal (BBN) model was used to estimate the long-term intake for the population in Jiangsu province. The distribution of individual margin of exposure (IMoE) was introduced to assess the health effect. Uncertainty of IMoE was quantified by Monte Carlo and bootstrap methods. The mean levels of dietary exposure to lead were estimated at 3.019 µg kg?1 bw day?1 for children aged 2–6 years, 2.104 µg kg?1 bw day?1 for teenagers aged 7–17 years, and 1.601 µg kg?1 bw day?1 for adults aged 18–80 years. The mean intakes for the urban and rural populations were 1.494 and 1.822 µg kg?1 bw day?1, respectively. From the 25th to 99.9th percentiles, IMoE was 0.125–2.057 for 2–6 years and 0.473–7.998 for 18–80 years, respectively. The distribution of IMoE could indicate a public health concern on lead for the Chinese population in Jiangsu. Control measures should be taken to reduce lead exposure in Jiangsu province.  相似文献

A dietary survey was conducted over three consecutive days by using 24-hour dietary recall in the Pearl River Delta of South China to investigate the dietary consumption status. A total of 1702 food samples, 22 food groups, were collected, and aluminium concentrations of foods were determined by using ICP-MS. Weekly dietary exposure to aluminium of the average urban residents of South China was estimated to be 1.5 mg kg?1 body weight, which amounted to 76% of the provisional tolerable weekly intake. Wheat-made products (53.5%) contributed most to the dietary exposure, followed by vegetables (12.2%). The high-level consumers’ weekly exposure to aluminium was 11.1 mg kg?1 body weight, which amounted to 407% of the provisional tolerable weekly intake. The results indicated that the general urban residents in South China might be safe from aluminium exposure, but the high-level consumers might be at some risk of aluminium exposure. The foods contributing to aluminium exposure were processed food with aluminium-containing food additives. It is necessary to take effective measures to control the overuse of aluminium-containing food additives.  相似文献

The core-food (CF) approach, first adopted in the United States in the 1980s, has been widely used by many countries to assess the exposure to dietary hazards at a population level. However, the reliability of exposure estimates (C × CR) depends critically on sampling methods designed for the detected chemical concentrations (C) of each CF to match with the corresponding consumption rate (CR) estimated from the surveyed intake data. In order to reduce the uncertainty of food matching, this study presents a sampling design scheme, namely the subsample method, for the 2016 Taiwan total diet study (TDS) on veterinary drugs. We first combined the four sets of national dietary recall data that covered the entire age strata (1–65+ years), and aggregated them into 307 CFs by their similarity in nutritional values, manufacturing and cooking methods. The 40 CFs pertinent to veterinary drug residues were selected for this study, and 16 subsamples for each CF were designed by weighing their quantities in CR, product brands, manufacturing, processing and cooking methods. The calculated food matching rates of each CF from this study were 84.3–97.3%, which were higher than those obtained from many previous studies using the representative food (RF) method (53.1–57.8%). The subsample method not only considers the variety of food processing and cooking methods, but also it provides better food matching and reduces the uncertainty of exposure assessment.  相似文献

ABSTRACT

A tiered intake assessment approach, ranging from the conservative default and refined budget method to refined dietary exposure assessments using national food consumption surveys is presented and applied to derive maximum potential global colour intake estimates. The US and UK markets served as representative for the world and the EU, respectively, to determine the maximum potential exposure ceilings for eleven colours in various sub-populations, including brand-loyal consumers. Industry-reported global use levels were assigned as the maximum level. Conservative intake assessments for food colours used in non-alcoholic beverages were estimated for the general population 2 + y, toddlers, children 3–9 y, adolescents 10–17 y, adults 18–64 y, elderly 65–74 y, very elderly 75 + y based on assumed uses in high intake markets. Refined dietary exposures were estimated using either the 2-day food consumption data from the 2013–2016 US National Health and Nutrition Examination Survey or the 4-day food consumption data from the 2008–2016 U.K. National Diet and Nutrition Survey Rolling Programme. In the most refined market-share adjusted assessment, brand-specific market volume data were used to place appropriate weight on corresponding beverage type uses. Strong concordance between the refined budget method and the brand-loyal deterministic approach was shown, in which the latter assumes that the maximum use level of the colour is present in 100% of non-alcoholic beverages. This study shows that safety of colours – both synthetic and natural – in beverages at proposed use levels can be supported for any geography, with all intake estimates falling below the acceptable daily intake in refined assessments. Importantly, this study demonstrates that the refined budget method is a valid first-tier screening assessment to prioritise food colours that may benefit from more refined intake assessments when warranted.  相似文献

The extent of industrial trans fatty acids (TFA) in the food supply is unknown in Malaysia, whilst TFA disclosure on food labels is not mandatory by Malaysian food standards. Supermarket foods such as dairy products, fats and oils, meat products, snack foods, soups, and confectionery are commonly cited to be major contributors of TFA in the diet. A consumer survey (n = 622) was used to develop a food listing of these ‘high risk’ foods. TFA content of high-risk foods were analysed by gas chromatography. Food samples (n = 158) were analysed and their total TFA content were compared with Malaysian Food Standards. A wide variation in TFA content within food categories was indicated. Of the foods containing TFA, many food labels did not cite TFA content or the use of partially hydrogenated vegetable oils (PHVO) as an ingredient. Hypothesised estimates of TFA intake from these supermarket foods in a sample day’s menu providing 2000 kcal projected a minimum intake of 0.5 g and a maximum intake of 5.2 g TFA. This study found there was no voluntary disclosure of TFA content on food labels or identifying PHVO as an ingredient. It appears that health education targeting consumers to minimise TFA consumption is required supported by mandatory PHVO disclosure on the food label.  相似文献

Diet is a relevant source of exposure to environmental pollutants. Dietary intake of polychlorinated dibenzo-p-dioxins (PCDDs), polychlorinated dibenzofurans (PCDFs), dioxin-like polychlorinated biphenyls (DL-PCBs) and polybrominated diphenyl ethers (PBDEs) by the Italian population was assessed through a duplicate diet study on prepared meals. Baby food composite representative of the diet of toddlers aged 9–12 months and school canteen servings from four towns in Italy representing the diet of children aged 4–9 years were collected on a 5-day basis. Similarly, 5-day lunches from an office canteen, 7-day lunches from a hotel-school, three fast food meals, and eight duplicate 1-day meals of individuals (one vegetarian) were selected to represent the diet of adults aged above 18 years. Servings from each diet were then pooled to form a composite and analysed. Dietary intake was estimated from the resulting contaminant levels in composites combined with age-related food consumption data from national survey. The mean upper bound (UB) intakes for cumulative PCDDs, PCDFs, and DL-PCBs were 0.67, 0.63–0.92, and 0.27–0.63 pg WHO2005-TE kg?1 body weight (bw) day?1 for toddlers, children and adults, respectively. BDE-47 (UB) ng kg?1 bw day?1 estimates were 2.75 in toddlers, 0.08–0.16 in children and 0.03–0.09 in adults. Similarly, for BDE-99 higher UB intakes (ng kg?1 bw day?1) resulted in toddlers (1.26), than those in children (0.06–0.08) and adults (0.03–0.10), respectively. The above estimates fall below the tolerable weekly intake (TWI) (14 WHO2005-TE kg?1 bw day?1) established by the European Union Scientific Committee on Food (SCF) for PCDD/Fs and DL-PCBs. The margin of exposure (MOE = 3) of toddlers to BDE-99 clearly indicates this age group as target for a risk-oriented approach. This study is proposed as a first cost-effective screening in PCDD, PCDF, DL-PCB and PBDE intake assessment, with a focus also on time trends.  相似文献

An improved method for the analysis of caffeine in foods by HPLC was validated by measuring several analytical parameters. The caffeine contents of 1202 products available from Korean markets were analysed. A consumption study was conducted by using data from the Korea National Health and Nutrition Examination Survey (KNHANES), 2010–12, to estimate the caffeine intakes of the Korean population. The mean intakes of caffeine from all sources in the general population and consumers were 67.8 and 102.6 mg day?1 for all age groups, respectively. The 95th percentile intakes of the general population and consumers were 250.7 and 313.7 mg day?1, respectively. In those aged 30–49 years, the caffeine intakes of the general population and consumers were highest at 25.5% (101.8 mg kg?1 day?1) and 36.6% (0.9 mg kg?1 day?1), respectively, compared with the maximum recommended daily intake (400 mg day?1) for adults. In the general population, the main contributors to the total caffeine intake were carbonated beverage for the younger age groups and coffee for the adults. These data provide a current perspective on caffeine intake in the Korean population.  相似文献

Human exposure to polychlorinated dibenzo-p-dioxins and dibenzofurans (PCDD/Fs) and dioxin-like PCBs (dl-PCBs) should be assessed regularly. In order to evaluate the contamination levels in various food products on the Austrian market and to assess the dietary exposure of the Austrian population for the first time, a national monitoring programme was conducted from 2005 to 2011. The 235 food products comprised meat, poultry, game and offal, fish and fish products, milk and dairy products, eggs, animal fats and vegetable oils. To estimate the dietary intakes of PCDD/Fs and dl-PCBs, mean concentrations in food were combined with the respective food consumption data from the Austrian food consumption survey. Estimated dietary intakes were expressed as toxic equivalents (WHO-TEQs 1998). The mean intakes for PCDD/Fs and dl-PCBs were estimated as 0.77, 0.75 and 0.61 pg WHO-TEQ kg?1 bw day?1 for children, women and men, respectively. The main contributors to total intake were milk and dairy products followed by fish and fish products for children and women, and meat, poultry, game and offal for men (65% and 15% for children, 67% and 14% for women, and 63% and 19% for men, respectively). Comparison of the estimated dietary intakes with the toxicological reference values shows that both children and adults are well below those values.  相似文献

A total of 290 individual food samples were collected in Hong Kong, China, for 3-monochloropropane-1,2-diol (3-MCPD) fatty acid esters analysis. Most samples were processed food and in ready-to-eat form. The results show that the levels of 3-MCPD fatty acid esters were high in biscuits, fats and oils, snacks and Chinese pastry with mean bound 3-MCPD levels of 440, 390, 270 and 270 μg kg?1, respectively. The dietary exposures to bound 3-MCPD of average and high adult consumers were estimated to be 0.20 and 0.53 μg kg bw?1 day?1, respectively. The primary toxicological concern of 3-MCPD fatty acid esters is its potential to release 3-MCPD in vivo during digestion in the gastrointestinal tract. 3-MCPD would affect the kidney, the central nervous system and the male reproductive system of rats. Assuming that 100% of the 3-MCPD was released from 3-MCPD fatty acid esters by hydrolysis in the digestive system, the dietary exposures to 3-MCPD for average and high adult consumers were only 10% and 26% of the provisional maximum tolerable daily intake (PMTDI) of 3-MCPD established by the Joint Food and Agriculture Organization/World Health Organization Expert Committee on Food Additives (JECFA) (2 μg kg bw?1 day?1), respectively. The results suggest that both average and high adult consumers are unlikely to experience major toxicological effects of 3-MCPD.  相似文献

The non-carcinogenic and carcinogenic risk of arsenic and lead to adults and children via daily dietary intake of food composites in Bangladesh was estimated. The target hazard quotients (THQs), hazard index (HI) and target carcinogenic risk (TR) were calculated to evaluate the non-carcinogenic and carcinogenic health risk from arsenic and lead. Most of the individual food composites contain a considerable amount of arsenic and lead. The highest mean concentrations of arsenic were found in cereals (0.254 mg kg–1 fw) and vegetables (0.250 mg kg–1 fw), and lead in vegetables (0.714 mg kg–1 fw) and fish (0.326 mg kg–1 fw). The results showed the highest THQs of arsenic in cereals and lead in vegetables for both adults and children which exceeded the safe limit (> 1) indicating that cereals and vegetables are the main food items contributing to the potential health risk. The estimated TR from ingesting dietary arsenic and lead from most of the foods exceeded 10?6, indicating carcinogenic risks for all adult people of the study area.  相似文献

This study estimated the theoretical maximum daily intake (TMDI) of Sunset Yellow (SY) synthetic food dye by the Brazilian population through food consumption data from the Household Budget Survey (HBS) of the Brazilian Institute of Geography and Statistics (IBGE, 2008/09). The study covered the population in urban and rural areas in the five regions of the country, and from different age groups, in order to verify if it were possible to exceed the acceptable daily intake (ADI) of SY, which is 4.0 mg kg–1 body weight. This was assessed by cross-checking food products containing this dye from the largest supermarket chains in Brazil with data from the HBS-IBGE 2008/09. These data showed that the average consumption of SY per capita did not exceed the ADI in any of the aforementioned population groups. However, when considering food consumption in urban and rural areas (279 and 260 mg of SY day–1), in the five regions of the country (260–338 mg of SY day–1), and for adolescents (332 mg SY day–1), it is noted that part of the population could be exceeding the recommended ADI, which may pose health risks. Although it is unlikely that individuals will exceed the SY ADI, this may occur in some cases, especially for younger people.  相似文献

Perchlorate is a thyroid hormone-disrupting compound and is reported to occur widely in the environment. Little is known on human exposure to perchlorate in Kuwait. In this study, 218 water samples, 618 commonly consumed foodstuffs and 532 urine samples collected from Kuwait were analysed to assess the exposure of the Kuwaiti population to perchlorate. For the estimation of daily intake of perchlorate, food consumption rates were obtained from the National Nutrition Survey in the State of Kuwait (NNSSK). The results showed that leafy vegetables accounted for a major share of perchlorate exposure among the Kuwaiti population at 0.062 µg kg1 bw day1 (36.2%), followed by fruits at 0.026 µg kg1 bw day1 (15.3%) and non-leafy vegetables at 0.017 µg kg1 bw day1 (10.1%). The urinary perchlorate geometric mean (GM) concentrations ranged from 8.51 to 17.1 µg l1 for the five age groups, which were higher than those reported in other countries. The estimated urinary perchlorate exposure for the Kuwaiti general population was 0.42 µg kg1 bw day1, which was higher than that reported for the United States. The dietary intake of perchlorate for the Kuwaiti population ranged from 0.14 to 0.67 µg kg1 bw day1 for the five age groups, with a mean total daily intake of 0.17 µg kg1 bw day1 for the general population. The highest estimated dietary mean daily intake of perchlorate (0.67 µg kg1 bw day1) was found for children at 3–5 years. The estimated dietary perchlorate exposure in Kuwait is higher than the recommended mean reference dose (RfD) but lower than that of provisional maximum tolerable daily intake (PMTDI) set by the Joint FAO/WHO Expert Committee on Food Additives (JECFA).  相似文献

Low levels of styrene may be found in foods as a result of possible migration from polystyrene-based food packaging and as a result of its formation during the biodegradation of a wide variety of naturally occurring compounds with structures similar to styrene. In this study, composite food samples from a recent (2014) Canadian Total Diet Study were analysed for styrene, and levels of styrene in samples of most food types were low in general with a few exceptions (e.g. 4934 ng/g in herbs and spices). Dietary exposures to styrene were estimated for different age-groups based on the occurrence data and the food consumption data for all persons, and they are 0.17–0.38 µg/kg body weight/day for children and 0.12–0.16 µg/kg body weight/day for adults, similar to air intakes (0.085–0.27 µg/kg body weight/day). Thus, for the general population, both food and air contribute similar portions of the total daily intake of styrene for all age groups. However, for the smoking population, intakes from cigarettes are still the major route of exposure to styrene.  相似文献

Aflatoxins (AFs) are hepatocarcinogenic mycotoxins that can contaminate grains and oil seeds in tropical and sub-tropical areas and have been detected in maize and peanut products of Haiti. The first objective was to assess human exposure to AFs among Haitians at an urban hospital (GHESKIO) and a rural health centre (HCBH). The second objective was to test the association between AF exposure and reported dietary intake of potentially contaminated foods, such as maize, peanut products and milk. Measurement of urinary AFM1 by HPLC revealed that among 367 participants 14% and 22% at GHESKIO and HCBH, respectively, had detectable AFM1. The maximum and median AFM1 concentrations for all detected samples were 700 pg AFM1 ml–1 and 11.7 pg ml–1, respectively. Detection of AFM1 was significantly associated with peanut consumption (p < 0.05). Controlling for diet and age group in a logit model, patients who reported peanut consumption the day of the survey and patients from HCBH had greater log odds of excreting detectable AFM1 (p < 0.001 and 0.002, respectively); females had lower log odds (p = 0.020). Recalled frequency of consuming non-dairy animal-sourced foods, an indicator of diet quality, approached significance (p = 0.056) as an inverse predictor of urinary AFM1 detection. The findings augur the need for interventions that will improve food safety in Haiti and limit exposure to AFs, particularly among rural communities.  相似文献

Bisphenol F (BPF) was found in mustard up to a concentration of around 8 mg kg?1. Contamination of the raw products or caused by the packaging could be ruled out. Also, the fact that only the 4,4?-isomer of BPF was detected spoke against contamination from epoxy resin or other sources where technical BPF is used. Only mild mustard made of the seeds of Sinapis alba contained BPF. In all probability BPF is a reaction product from the breakdown of the glucosinolate glucosinalbin with 4-hydroxybenzyl alcohol as an important intermediate. Hot mustard made only from brown mustard seeds (Brassica juncea) or black mustard seeds (Brassica nigra) contained no BPF. BPF is structurally very similar to bisphenol A and has a similar weak estrogenic activity. The consumption of a portion of 20 g of mustard can lead to an intake of 100–200 µg of BPF. According to a preliminary risk assessment, the risk of BPF in mustard for the health of consumers is considered to be low, but available toxicological data are insufficient for a conclusive evaluation. It is a new and surprising finding that BPF is a natural food ingredient and that this is the main uptake route. This insight sheds new light on the risk linked to the family of bisphenols.  相似文献

This study aimed to assess aflatoxin and fumonisin intake through corn tortilla consumption in Veracruz city. Between October 2013 and February 2015, a total of 120 corn tortilla samples (2 kg samples, 40 samples per year) were randomly collected. Aflatoxins and fumonisins were quantified by high performance liquid chromatography coupled with a fluorescence detector. A probability density function (PDF) was used for describing corn tortilla intake, body weight of the Veracruz city population, mycotoxin content of corn tortilla samples and estimated mycotoxin daily intake. The Monte Carlo method with 10,000 iterations was employed to assess the population exposure risk. The highest level of total aflatoxins (AFT) was 22.17 μg kg?1, and 526.6 μg kg?1 for fumonisins B1 plus B2, with 85% and 90% of contaminated samples respectively. Up to 69.7 % of the population was estimated to consume a higher aflatoxin dose than that recommended by the JECFA (1 ng kg?1 of body weight per day); it was found that the recommended dose was exceeded to a greater extent in the male population, due to higher consumption of corn. The risk of fumonisin intake was less than 5 % due to the low presence and levels of these toxins in corn tortillas. The results suggest that corn tortilla consumers are at dietary risk caused by AFT contamination; this information should be considered when taking action to protect public health.  相似文献

Paper is one of the most commonly used food packaging materials. During the production of packaging paper, it is possible for trace amounts of heavy metals to be incorporated as contaminants. These could migrate into food when packaging paper (food contact paper) is used for cooking, storing and eating. The aim of this study was to determine the migration of lead (Pb) and arsenic (As) from food contact paper into a food simulant and then to assess human safety through the estimated daily intake (EDI) with consumption factor. Migration tests were conducted for 310 samples using 4% acetic acid as a food simulant at 25°C for 10 min and at 95°C for 30 min. Concentrations of Pb and As in a food simulant were quantified by inductively coupled plasma mass spectrometry. LODs for Pb and As were 0.002 and 0.005 µg L?1, respectively. The migration of Pb from food contact paper ranged from not detected (ND) to 17.5 μg L?1 at 25°C for 10 min and from 0.10 to 25.6 μg L?1 at 95°C for 30 min while As ranged from ND to 0.44 μg L?1 at 25°C for 10 min and from ND to 0.87 μg L?1 at 95°C for 30 min. The migration of Pb and As determined in this study confirm that the human exposure was within safe levels based on the EDI of food contact paper compared with the provisional tolerable weekly intake for Pb of 25 μg kg?1 bw and for As of 15 μg kg?1 bw.  相似文献

Dietary exposure of the Valencian region population to lead, cadmium, inorganic arsenic (iAs), chromium, copper, tin and methylmercury (meHg) was assessed in a total diet study carried out in the region of Valencia in 2010–11. A total of 8100 food samples were collected and analysed. Occurrence data were combined with consumption data to estimate dietary exposure in adults (> 15 years of age) and young children (6–15 years of age). The estimated intake was calculated by a probabilistic approach. Average intake levels (optimistic scenario) for lead, iAs, chromium and tin were 0.21, 0.08, 1.79 and 1.87 µg kg?1 bw day?1 respectively; for Cd and meHg average intake levels were 0.77 and 0.54 µg kg1 bw week?1, respectively, and for Cu, 1.60 mg day?1. In terms of risk characterisation, the results showed that 2.84% of the adult population may exceed the BMDL10 (benchmark dose lower confidence limit) established for Pb, which is linked to renal effects; whereas 28.01% of the young children population may exceed the BMDL01 related to neurodevelopment effects. In addition, 8.47% of the adult population and 12.32% of young children exceeded the meHg tolerable weekly intake (TWI).  相似文献
