Levels of most VOCs in foods are usually low because of their volatility, and human exposure to VOCs is expected to be mainly via inhalation of ambient and indoor air. However, dietary exposures to VOCs can be significant to overall exposures if elevated concentrations of VOCs are present in foods consumed in high amounts and/or on a regular basis, and this was demonstrated in this study with the occurrence data of toluene from the recent 2014 Canadian Total Diet Study (TDS). Concentrations of toluene in the composite samples of most food types from the 2014 TDS are low and similar to the results from the previous 2007 TDS with some exceptions, such as beef steak (670 ng/g (2014 TDS) vs. 14 ng/g (2007 TDS)), poultry, chicken and turkey (307 ng/g (2014 TDS) vs. 8.8 ng/g (2007 TDS)). Toluene concentrations in most of the grain-based and fast food composite samples from the 2014 TDS are considerably higher than those from the 2007 TDS, with the highest level of 4655 ng/g found in the composite sample of crackers from the 2014 TDS (compared to 18 ng/g from 2007 TDS). Dietary exposure estimates for toluene based on the occurrence results from the 2014 TDS show that for most of the age groups, grain-based foods are the primary source, accounting for an average of 77.5% of the overall toluene intake from the diet. The highest dietary exposures to toluene were observed for the adult age groups, with estimated average exposures ranging from 177.4 to 184.5 µg/d. Dietary exposure estimates to toluene are well below oral doses associated with toxicological effects and also below the maximum estimated intake (819 µg/d) from air inhalation for adult group (20 – 70 years) based on the results from CEPA (Canadian Environmental Protection Act) assessment in 1992.  相似文献

Volatile organic compounds (VOCs) are ubiquitous in the environment due to evaporation and incomplete combustion of fuels, use of consumer and personal care products, etc. and they can accumulate in foods. Some VOCs in foods can also be formed during food processing and preparation and migrate from food packaging. In this pilot study, a GC-MS method based on headspace solid-phase microextraction (SPME) was validated and used to analyse selected individual foods which can be consumed directly and 153 different total diet composite food samples for 13 VOCs. Vinyl chloride was not detected in any of the 153 composite food samples, while the other 12 VOCs were detected at various frequencies, with m-xylene being the most frequently detected (in 151 of the 153 samples), followed by toluene (145), 1,3,5-trimethylbenzene (140), ethylbenzene (139), styrene (133), 1,2,4-trimethylbenzene (122), benzene (96), p-dichlorobenzene (95), n-butylbenzene (55), chloroform (45), naphthalene (45) and trichloroethylene (31). Concentrations of the 12 VOCs in most of the food composite samples were low, with the 90th percentiles from 1.6 ng g–1 for n-butylbenzene to 20 ng g–1 for toluene. However, some VOCs were detected at higher levels with maxima, for example, of 948 ng g–1 for m-xylene and 320 ng g–1 for ethylbenzene in chewing gum, 207 ng g–1 for styrene and 157 ng g–1 for toluene in herbs and spices. VOCs were detected at higher levels in most of the individual food items than their corresponding composite samples, for example, the average chloroform concentration in the individual canned soft drinks was 20 ng g–1 compared with 3.0 ng g–1 in their composite, and the average toluene concentration in the individual canned citrus juice was 96 ng g–1 compared with 0.68 ng g–1 in their composite. Thus, for determination of VOCs in foods which can be consumed directly, their individual food items should be analysed whenever possible for accurate exposure assessment.  相似文献

This study reports estimates on dietary exposure from the first French Total Diet Study (FTDS) and compares these estimates with both existing tolerable daily intakes for these toxins and the intakes calculated during previous French studies. To estimate the dietary exposure of the French population to the principal mycotoxins in the French diet (as consumed), 456 composite samples were prepared from 2280 individual samples and analysed for aflatoxins, ochratoxin A, trichothecenes, zearalenone, fumonisins and patulin. Average and high percentile intakes were calculated taking account of different eating patterns for adults, children and vegetarians. The results showed that contaminant levels observed in the foods examined 'as consumed' complied fully with current European legislation. However, particular attention needs to be paid to the exposure of specific population groups, such as children and vegans/macrobiotics, who could be exposed to certain mycotoxins in quantities that exceed the tolerable or weekly daily intake levels. This observation is particularly relevant with respect to ochratoxin A, deoxynivalenol and zearalenone. For these mycotoxins, cereals and cereal products were the main contributors to high exposure.  相似文献

Sulphites are widely used as a preservative and antioxidant additive in food. The aim of this study was to assess dietary sulphite intake in adults aged 35–65 years and in children aged 4–18 years living in the Basque Country, northern Spain. We determined sulphite concentrations in 909 samples covering 16 food types. The maximum permitted levels were exceeded in 17% of samples. Making recommended assumptions for non-quantifiable results, estimates of mean lower and upper bounds were calculated for sulphite concentrations in each food type. These sulphite data were combined with consumption data derived from 8417 adults from the European Prospective Investigation in Cancer and Nutrition cohort in Gipuzkoa, recruited in 1992–1995 using a diet history method, and 1055 children from the Basque Country Nutrition Children Survey, conducted in 2004–2005 using two 24-h recall questionnaires to assess diet. The results were compared with the acceptable daily intake (ADI) proposed by the Joint Expert Committee on Food Additives (JECFA). The mean dietary exposure to sulphites was 0.08 mg kg?1 bw day?1, only 11% of the ADI in the overall group of children (4–18 years old), but the acceptable intake was exceeded by 4% of 4–6 year olds. For the adults (35–65 years old), the mean dietary exposure was 0.31 mg kg?1 bw day?1, 45% of the ADI, but the acceptable intake was exceeded in 14.6% of cases. The major contributing foods were minced meat and other meat products for children and wine for adults.  相似文献

Total diet studies (TDS) are used to gather information on chemical substances in food, thereby facilitating risk assessments and health monitoring. Candidate foods for inclusion in a TDS should represent a large part of a typical diet to estimate accurately the exposure of a population and/or specific population groups. There are currently no harmonised guidelines for the selection of foods in a TDS, and so the aim of this study was to explore the possibility of generating a harmonised approach to be used across Europe. Summary statistics data from the European Food Safety Authority’s (EFSA) Comprehensive Food Consumption Database were used in this research, which provided data from national food consumption surveys in Europe. The chosen methodology for the selection of foods was based on the weight of food consumed and consumer rate. Using the available data, 59 TDS food lists were created, representing over 51 000 people across 17 countries and seven population groups. All TDS food lists represented > 85% of the populations’ diets (85.9–96.3%), while the number of foods in the TDS food lists ranged from 15 to 102. Comparison of the TDS food lists indicated that the most commonly consumed foods included wheat bread and rolls, pastries and cakes, tomatoes, apples, bananas, and chicken, while cow’s milk, tap water and orange juice were the most commonly consumed beverages across Europe. This work was complete to support EFSA and other institutions in the development of harmonised TDS into the future.  相似文献

The aim of this study was to assess the dietary exposure of nitrate and nitrite in France. A total of 13, 657 concentration levels of nitrate and nitrite measured in food, representing 138 and 109 food items, respectively, and coming from French monitoring programmes between 2000 and 2006, were used. Depending on the non-detected and non-quantified analysis treatment, lower and upper concentration mean estimates were calculated for each food item. These were combined with consumption data derived from 1474 adults and 1018 children from the French national individual consumption survey (INCA1), conducted in 1999 and based on a 7-day food record diary. A total of 18% of spinaches, 6% of salads, 10% of cheeses, 8% of meat products and 6% of industrial meat products exceeded the European nitrate maximum level or maximum residual level. A total of 0.4% of industrial meat products and 0.2% of meat products exceeded their European nitrite maximum level or maximum residual level. Nitrate dietary exposure averaged 40% of the acceptable daily intake (ADI; 3.7 mg kg?1 body weight day?1) for adults and 51???54% of the ADI for children with the major contributors being, for adults and children, respectively, vegetables (24 and 27% of ADI), potatoes (5 and 11% of ADI), and water (5 and 5% of ADI). The individual nitrate dietary intake of 1.4% (confidence interval (CI95th) [0.8; 2.0]) to 1.5% (CI95th [0.9; 2.1]) of adults and 7.9% (CI95th [6.2; 9.6]) to 8.4% (CI95th [6.7; 10.1]) of children were higher than the ADI. Nitrite dietary exposure averaged 33–67% of the ADI (0.06 mg kg?1 body weight day?1) for adults and 67–133% of the ADI for children, with contributions of additive food vectors at 33% of ADI for adults and 50–67% of ADI for children. The individual nitrite dietary intake of 0.7% (CI95th [0.3; 1.1]) to 16.4% (CI95th [14.5; 18.3]) of adults and 10.5% (CI95th [8.6; 12.4]) to 66.2% (CI95th [63.3; 69.1]) of children were higher than the ADI.  相似文献

The results of the assessment of the dietary exposure to annatto, nitrites, tartaric acid and sulphites within the framework of the second French total diet study (TDS) are reported. These 4 additives were selected from the Bemrah et al. study [Bemrah N, Leblanc JC, Volatier JL. 2008. Assessment of dietary exposure in the French population to 13 selected food colours, preservatives, antioxidants, stabilizers, emulsifiers and sweeteners. Food Addit Contam B. 1(1):2–14] on 13 food additives which identified a possible health risk for annatto, sulphites and nitrites and a lack of data for tartaric acid. Among the composite samples selected for the whole TDS, 524 were analysed for additives (a sample was analysed for a given additive when it was identified as a major contributor for this additive only): 130 for tartaric acid, 135 for nitrites, 59 for annatto and 200 for sulphites. Estimated concentrations (minimum lower bound to maximum upper bound) vary nationally from 0 to 9?mg/kg for annatto, 0 to 420?mg/kg for tartaric acid, 0 to 108?mg/kg for sulphites and 0 to 3.4?mg/kg for nitrites. Based on the analytical results, the dietary exposure was calculated for adults and children, separately, using lower bound and upper bound assumptions. The European ADIs for these 4 additives were not exceeded except for the dietary exposure for sulphites among 2.9% of the adult population, where the major contributors were alcoholic drinks and especially wine under both hypotheses (lower and upper bound).  相似文献

目的掌握吉林省主要食品中砷污染水平,评估吉林省居民砷暴露风险及对人体潜在的健康危害。方法 2012—2017年吉林省居民主要食品中砷的含量数据来自国家食品风险监测,共11种类别4 532份样品。食物消费量的数据来自2012年吉林省居民营养与健康调查。采用确定性评估方法 ,结合无机砷的原暂定每周可耐受摄入量(PTWI)和暴露边距(MOE),评价吉林省居民膳食中砷暴露情况。结果 11类食品中砷平均含量为0.030 mg/kg,谷物类、蔬菜类和水产类是膳食中砷的主要来源,三者贡献率之和为76.59%,其中谷物类贡献率高达54.44%。10个不同性别-年龄组平均摄入量为0.73~1.31μg/kg BW,一般人群暴露量MOE均1。结论吉林省居民膳食中砷暴露风险总体上是安全的。  相似文献

Dietary exposure of the Tunisian adult population to pesticide residue was assessed using the Total Diet Study method. In the present study 170 pesticides were searched for in 42 aggregated foods characterised by 64 food samples representing the Tunisian diet. All the food samples were collected, prepared, and analysed for remains of pesticides including organochlorine, organophosphorous, carbamates and pyrethroids. The GC-MS analysis and the LC-MS/MS analysis and some other specific analytical methods were employed for the quantification of the pesticide residues in the food samples. Results revealed that21pesticides reached amounts greater than the LOQ(12.3%) and 149 pesticides reached amounts below the LOD (88%).For the 21 pesticides quantified, the ADI was not exceeded. For the 149 non-quantified pesticides, an interval defined by the lower and upper bounds was defined to assess the dietary exposure of the Tunisian adult population to those pesticides. We conclude that 8 pesticides theoretically exceed the ADI with the 95th percentile of exposure, those are: Diféthialone, Brodifacoum, Bromadiolone, Glufosinate, Heptachlor, Dieldrin Aldrin Oxydemeton-methyl. This study concludes that there is a low dietary exposure to pesticide residue of the Tunisian adult population. In fact, all the cases where the ADI was exceeded were theoretical due to the lower ADI value used.  相似文献

Approximately 3000 food samples from the Slovenian market and 2500 drinking (tap) water samples in the period 2011 ? 2016 were evaluated for the presence of toxic elements lead (Pb) and cadmium (Cd) and the overall chronic dietary exposure was assessed for each element. The highest mean concentrations were found for Pb in products for special nutritional use – dietary supplements (0.383 mg/kg) and for Cd in fish and seafood (0.117 mg/kg). The consumption data were obtained from the national study of the household budget and from the European Food Safety Authority (EFSA) summary statistics. Chronic dietary exposure was estimated deterministically. The average Pb and Cd intakes from food and drinking (tap) water ranged for children from 0.90 to 1.021 µg/kg bw/day and 4.65 to 5.65 µg/kg bw/week, respectively, and for adults, including adolescents, from 0.40 to 0.53 µg/kg bw/day and 1.98 to 2.82 µg/kg bw/week, respectively. The high consumption of cereal-based foods and vegetables contributed most to overall Pb and Cd intake in the majority of the age groups. The exposure to Pb was generally lower and that to Cd was higher compared to the average EU values. The most exposed were children, as the health-based guidance values were exceeded for both elements, which indicates a health concern. An important contribution to Cd exposure can be attributed to grains and potatoes grown in Slovenia, where the soil contains more Cd than that in other EU countries. Further efforts to reduce Pb and Cd intake are required to minimize potential health risks.  相似文献

目的 分析食品中镉的污染水平,对广西居民主要膳食中镉的健康风险进行评估。方法 对2013—2018年39类食品中的镉含量进行统计分析,结合居民食物消费数据,参考镉的暂定每月可耐受摄入量(PTMI),采用简单分布评估法对广西居民主要膳食中镉的暴露进行评估。结果 39类食品中镉的平均含量为0.086 mg/kg,检出率和超标率分别为67.37%(17 025/25 271)和5.68%(1 435/25 271)。藻类食品中镉的平均含量最高,为0.769 mg/kg。大米是居民膳食中镉的主要来源,贡献率为52.57%。居民膳食中镉的月平均摄入量为30.62 μg/kg BW,为PTMI的122.48%。结论 广西居民膳食中镉的暴露水平较高,应引起重视。大米是南方地区的主粮且其对居民膳食中镉贡献率最高,应加强对大米镉污染从农田到餐桌全环节的研究,从源头控制污染。  相似文献

目的掌握吉林省居民主要食物中汞含量水平,对居民食品中汞的膳食暴露健康风险进行初步评估。方法按照随机采样方法,2015~2016年在全省63个县市区采集8类1237份食物样品,按照GB/T5009.17-2003《食品中总汞及有机汞的测定》,结合居民膳食消费数据,计算、比较每周耐受摄入量(provisional tolerable weekly intake,PTWI)。结果 8类食物中汞的平均含量均值为7.07μg/kg。总汞的每周平均暴露量为0.50~1.01μg/kg·bw,占PTWI的12.54%~25.19%。谷物类、水产类和蔬菜类是居民膳食中总汞的主要来源。结论吉林省地区居民膳食中总汞暴露水平是安全的。谷物类食品对居民膳食贡献率最高,且吉林省谷物类食物消费量大,故建议强化谷物类食物中汞污染的控制,从源头上降低其污染量,减少膳食风险。  相似文献

Cadmium (Cd) contamination has become a public health concern in recent decades. The aim of the present study was to assess the contribution of dietary Cd exposure and its health risk among Shenzhen adult residents using the Total Diet Study (TDS) approach. Cd was determined in 13 food groups using 276 individual samples by ICP-MS. The major food contributors to Cd exposure of Shenzhen adult residents were ‘Vegetables’ (32.6% of the total exposure), ‘Rice and its products’ (19.2% of the total exposure) and ‘Fish, seafood and shellfish’ (18.5% of the total exposure). The mean and the 95th percentile dietary exposure to Cd of Shenzhen adults were 9.9 and 13 μg kg?1 bw month?1, respectively. The dietary exposures of all individual age-gender population subgroups were below the provisional tolerable monthly intake (PTMI = 25 μg kg?1 bw month?1), so the health risk of Cd dietary exposure of Shenzhen adults is considered to be low, but still, cadmium pollution should be strictly controlled and monitored continuously due to an exceptionally long biological half-life of cadmium.  相似文献

目的了解陕西省市售食品中铝污染状况,评估陕西省居民膳食中铝摄入水平及其潜在的健康风险。方法 2013—2015年在陕西省10个地市随机采集8类食品共计666份,按照食品中铝测定的标准操作程序进行检测,结合陕西省开展的居民膳食营养状况调查中各类食物的消费量数据,采用点评估方法,对陕西省不同性别-年龄组人群膳食中铝摄入水平及其潜在的风险进行评估。结果陕西省居民全人群膳食中铝平均每日摄入量为0.154 9 mg/kg BW,不同性别-年龄组人群以18~59岁女性摄入量最高,为0.178 5 mg/kg BW。当食物中铝含量取P97.5数值时,膳食中铝摄入量最高的人群是2~7岁儿童。各性别-年龄组人群膳食中铝平均暴露量(铝含量数据采用平均值)安全限值(MOS值)均1,偏高暴露量(铝含量数据采用P97.5数值)MOS值均1。2~7岁和8~12岁儿童膳食中铝摄入贡献率较高的食品是油炸食品和焙烤食品,其他组人群膳食中铝摄入贡献率前3位的食品均是油炸食品、凉皮和淀粉制品。结论陕西省居民不同性别-年龄组人群膳食中铝偏高暴露量已超过最新的健康指导值。女性和儿童是暴露量较高的人群,油炸食品是不同性别-年龄组人群膳食中铝摄入的最主要来源。  相似文献

Perchlorate is a thyroid hormone-disrupting compound and is reported to occur widely in the environment. Little is known on human exposure to perchlorate in Kuwait. In this study, 218 water samples, 618 commonly consumed foodstuffs and 532 urine samples collected from Kuwait were analysed to assess the exposure of the Kuwaiti population to perchlorate. For the estimation of daily intake of perchlorate, food consumption rates were obtained from the National Nutrition Survey in the State of Kuwait (NNSSK). The results showed that leafy vegetables accounted for a major share of perchlorate exposure among the Kuwaiti population at 0.062 µg kg1 bw day1 (36.2%), followed by fruits at 0.026 µg kg1 bw day1 (15.3%) and non-leafy vegetables at 0.017 µg kg1 bw day1 (10.1%). The urinary perchlorate geometric mean (GM) concentrations ranged from 8.51 to 17.1 µg l1 for the five age groups, which were higher than those reported in other countries. The estimated urinary perchlorate exposure for the Kuwaiti general population was 0.42 µg kg1 bw day1, which was higher than that reported for the United States. The dietary intake of perchlorate for the Kuwaiti population ranged from 0.14 to 0.67 µg kg1 bw day1 for the five age groups, with a mean total daily intake of 0.17 µg kg1 bw day1 for the general population. The highest estimated dietary mean daily intake of perchlorate (0.67 µg kg1 bw day1) was found for children at 3–5 years. The estimated dietary perchlorate exposure in Kuwait is higher than the recommended mean reference dose (RfD) but lower than that of provisional maximum tolerable daily intake (PMTDI) set by the Joint FAO/WHO Expert Committee on Food Additives (JECFA).  相似文献
