ABSTRACT

Following the core food (CF) models of the USA and France reported in the 2000s, this study presents the first oriental CF model, for total diet studies in Taiwan. First, we combined the four latest national dietary recall surveys from 2005 to 2012, data sets from the Nutrition and Health Survey in Taiwan (NAHSIT) covering all ages (1 to 65+ years old). In total, 3,098 NAHSIT food codes from 349,497 records of responses from 7,580 individuals were aggregated within a three-tiered scheme into 237 CFs in 54 subcategories and 16 categories. As with Western foods, Taiwanese foods were mainly aggregated by food type and major ingredient, processing method, cooking method or serving habit. In addition, we propose several categories typical to Taiwanese foods: (1) processed foods (e.g. rice paste, rice noodle, bean curd); (2) mixed foods (e.g. tomato fried with egg, Guangdong porridge) and stuffed staple foods (e.g. rice cake, zongzi); (3) Chinese Dim Sum (e.g. dumpling, salted bun); and (4) animal offal (e.g. pig liver, chicken kidney) and by-products (e.g. chicken head, pig foot). Systematic nomenclature and coding methods are also proposed. A computerised web model was developed using a graphical user interface (GUI) for automatic CF aggregation and inquiry of various consumption estimates according to the residing area, age group, and gender of consumers. Point estimates of weighted means were calculated for consumption rates (CR) based on the whole group (WG) or consumers only (CO). The CR and body weight (BW) of each individual were matched to calculate mean intake per unit body weight (g/kg bw/day). A general sample design procedure with the CF model is suggested for a total diet study (TDS) on target hazards. Strategies are also discussed for improving the quality of food matching in sample designs.  相似文献

Potato crisps are one of the food commodities that contribute most to overall dietary human exposure of acrylamide. This investigation has estimated the dietary exposure to acrylamide form potato crisps in the Spanish population. Sampling of potato crisps (n = 36) from 16 different producers were carried out in March 2008. An average level of 740 µg kg?1 (ranging from 81 to 2622 µg kg?1; minimum to maximum) and a median of 592 µg kg?1 were obtained. Acrylamide levels in marketed potato crisps have been significantly reduced (nearly to 50%) compared with a previous sampling performed 4 years earlier. The observed signal value (90th percentile) was 1377 µg kg?1 with 86% of the samples with acrylamide levels lower than 1000 µg kg?1. Dietary exposure to acrylamide from potato crisp consumption in the total Spanish population was estimated to be 0.042 µg kg?1 body weight day?1 by using a deterministic approach based on the National consumption database. In a second study, dietary exposure (based on a 3-day food record) was determined to be 0.053 µg kg?1 body weight day?1 for the adult population (17–60 years) and 0.142 µg kg?1 body weight day?1 for children (7–12 years). The contribution of potato crisps to the estimated dietary acrylamide exposure of the Spanish population is moderate as compared with other European Member States.  相似文献

Cadmium is a very toxic contaminant with food being the major source of exposure for the general public. The second German food consumption survey (Nationale Verzehrsstudie II – NVS II) with about 20 000 participants (15 371 for dietary history interviews used for this study) allowed for an updated exposure assessment for the German population. Based on these comprehensive data, information on the consumption of 545 individual food items by the German population was generated. Cadmium concentrations in food were compiled from the German food monitoring programme, European countries’ authority programmes and the published literature, covering the years from 1993 to 2008, and were multiplied with consumption data to obtain estimates of cadmium intake from food. Consumption-weighted mean cadmium concentrations per main food group were highest for cereals, followed by oily seeds & fruits, and vegetables. Due to both high consumption and considerable occurrence of cadmium, cereals and vegetables contributed most to the intake of the general public, followed by the main groups beverages, fruits & nuts, and dairy products (including milk). Cadmium intake from food was estimated to be 1.46 and 2.35 µg kg–1 bw week–1 for average and high-end consumers, respectively. This corresponds to 58% for average and 95% for high-end consumers, respectively, of a reference value derived from a recent health risk evaluation performed by EFSA, using the benchmark approach. Uncertainties in these estimates pertain to the influence of values below the limit of quantification and some foods not considered due to lacking occurrence data. In conclusion, the estimated cadmium intake of the German population from food is still close to health-based reference values. Further efforts to reduce cadmium intake are required.  相似文献

Uncertainties in these estimates pertain to the influence of values below the limit of quantification and some foods not considered due to lacking occurrence data. Sulphites are widely used as a preservative and antioxidant additive in food. The aim of this study was to assess dietary sulphite intake in adults aged 35–65 years and in children aged 4–18 years living in the Basque Country, northern Spain. We determined sulphite concentrations in 909 samples covering 16 food types. The maximum permitted levels were exceeded in 17% of samples. Making recommended assumptions for non-quantifiable results, estimates of mean lower and upper bounds were calculated for sulphite concentrations in each food type. These sulphite data were combined with consumption data derived from 8417 adults from the European Prospective Investigation in Cancer and Nutrition cohort in Gipuzkoa, recruited in 1992–1995 using a diet history method, and 1055 children from the Basque Country Nutrition Children Survey, conducted in 2004–2005 using two 24-h recall questionnaires to assess diet. The results were compared with the acceptable daily intake (ADI) proposed by the Joint Expert Committee on Food Additives (JECFA). The mean dietary exposure to sulphites was 0.08 mg kg?1 bw day?1, only 11% of the ADI in the overall group of children (4–18 years old), but the acceptable intake was exceeded by 4% of 4–6 year olds. For the adults (35–65 years old), the mean dietary exposure was 0.31 mg kg?1 bw day?1, 45% of the ADI, but the acceptable intake was exceeded in 14.6% of cases. The major contributing foods were minced meat and other meat products for children and wine for adults.  相似文献

Polychlorinated dibenzo-p-dioxin and -furan (PCDD/F) and dioxin-like polychlorinated biphenyl (dl-PCB) exposure from food were estimated using new food consumption data from the recent German food consumption survey (Nationale Verzehrsstudie II – NVS II). Based on these comprehensive data, information on the consumption of 545 individual food items by the German population was derived. Concentrations of dioxin-like compounds in food were compiled from the German Food Monitoring Programme (GFMP), the German Dioxin Database, other German authority programmes, European countries’ authority programmes and the published literature covering the years 2000–2010. By multiplication with consumption data, estimates of intake from food were determined. The main food groups contributing most to the intake of the general public are dairy products (including milk), meat and fish (including seafood), followed – due to high consumption – by the main group vegetables. The combined intake of PCDD/F and dl-PCB (as toxic equivalents – TEQ) from food was estimated to be 2.11/1.53 pg kg–1 bw and day and 3.56/2.85 pg kg–1 bw and day (upper/lower bound) for average and high-end consumers, respectively. The estimated intake of average consumers is close to a reference value derived by the Scientific Committee on Food in 2001. Uncertainties in these estimates pertain to the influence of values below the limit of quantification (upper/lower bound ratio) and some foods not considered due to the lack of contamination data.  相似文献

Perfluorinated compounds (PFCs) are used in manufacturing food contact materials, including non-stick cookware coatings and oil- and moisture-resistant paper coatings. The chemical stability of PFCs poses an issue for human safety, as they do not degrade well naturally and hence may accumulate in the body. In terms of food safety, since dietary intake is thought to be a major source of exposure to PFCs, it is necessary to assess the migration of PFCs from food packaging articles to food under typical cooking and storage conditions. An analytical method was developed for assessing the migration of 16 PFCs from food contact materials to food simulants using liquid chromatography–tandem mass spectrometry. The applicability of the method for regular inspection was assessed by monitoring 312 samples. Based on the results of the exposure assessment, all food contact materials deemed to be safe for use, which evaluated migrated concentrations and dietary food intake.  相似文献

Inconsistent risk estimates for dietary heterocyclic amine (HCA) exposure and cancers may be due to differences in exposure assessment methods and the associated measurement error. We evaluated repeatability and comparability of intake estimates of the HCA 2-amino-1-methyl-6-phenylimidazo[4,5b]pyridine (PhIP) among two food frequency questionnaire (FFQ) collections, three diary collections, and three measurements of urinary PhIP and its metabolites in 36 non-smokers in Baltimore, Maryland, during 2004–2005. Collections spanned ~9 months. Method repeatability was characterised with intraclass correlation coefficients (ICCs). Comparability among methods was assessed with Spearman correlation coefficients. Within-subject variability in PhIP intake was comparably high across all methods (ICCs of 0.20, 0.30, and 0.15 for FFQ, diary, and creatinine-adjusted urinary PhIP, respectively). Mean diary-based PhIP intake and mean urinary PhIP concentration were strongly correlated when restricting the analysis to participants with at least one non-zero diary-based estimate of PhIP intake (n?=?15, r?=?0.75, p?=?0.001), but not in the full study population (n?=?36, r?=?0.18, p?=?0.28). Mean PhIP intake from the FFQ was not associated with that either based on the diary or urinary PhIP separately, but was modestly correlated with a metric that combined the diary- and biomarker-based approaches (r?=?0.30, p?=?0.08). The high within-subject variability will result in significantly attenuated associations if a single measure is used to estimate exposure within an epidemiologic study. Improved HCA assessment tools, such as a combination of methods or validated biomarkers that capture long term exposure, are needed.  相似文献

The paper’s main purpose is to estimate the dietary exposure to lead for the inhabitants of Jiangsu province, China. Lead concentration data were obtained from the national food contamination monitoring programme during 2007–10. Food samples (n = 2077) were collected from 23 food categories in Jiangsu province. Consumption data were derived from Chinese national nutrition and health survey in 2002, which included 3938 inhabitants from 1451 households in Jiangsu province. Concentration data were combined with consumption data to estimate the dietary intake for the inhabitants of 2–6, 7–17 and 18–80 years, respectively. The β-binomial–normal (BBN) model was used to estimate the long-term intake for the population in Jiangsu province. The distribution of individual margin of exposure (IMoE) was introduced to assess the health effect. Uncertainty of IMoE was quantified by Monte Carlo and bootstrap methods. The mean levels of dietary exposure to lead were estimated at 3.019 µg kg?1 bw day?1 for children aged 2–6 years, 2.104 µg kg?1 bw day?1 for teenagers aged 7–17 years, and 1.601 µg kg?1 bw day?1 for adults aged 18–80 years. The mean intakes for the urban and rural populations were 1.494 and 1.822 µg kg?1 bw day?1, respectively. From the 25th to 99.9th percentiles, IMoE was 0.125–2.057 for 2–6 years and 0.473–7.998 for 18–80 years, respectively. The distribution of IMoE could indicate a public health concern on lead for the Chinese population in Jiangsu. Control measures should be taken to reduce lead exposure in Jiangsu province.  相似文献

A dietary survey was conducted over three consecutive days by using 24-hour dietary recall in the Pearl River Delta of South China to investigate the dietary consumption status. A total of 1702 food samples, 22 food groups, were collected, and aluminium concentrations of foods were determined by using ICP-MS. Weekly dietary exposure to aluminium of the average urban residents of South China was estimated to be 1.5 mg kg?1 body weight, which amounted to 76% of the provisional tolerable weekly intake. Wheat-made products (53.5%) contributed most to the dietary exposure, followed by vegetables (12.2%). The high-level consumers’ weekly exposure to aluminium was 11.1 mg kg?1 body weight, which amounted to 407% of the provisional tolerable weekly intake. The results indicated that the general urban residents in South China might be safe from aluminium exposure, but the high-level consumers might be at some risk of aluminium exposure. The foods contributing to aluminium exposure were processed food with aluminium-containing food additives. It is necessary to take effective measures to control the overuse of aluminium-containing food additives.  相似文献

Aflatoxins (AFs) are hepatocarcinogenic mycotoxins that can contaminate grains and oil seeds in tropical and sub-tropical areas and have been detected in maize and peanut products of Haiti. The first objective was to assess human exposure to AFs among Haitians at an urban hospital (GHESKIO) and a rural health centre (HCBH). The second objective was to test the association between AF exposure and reported dietary intake of potentially contaminated foods, such as maize, peanut products and milk. Measurement of urinary AFM1 by HPLC revealed that among 367 participants 14% and 22% at GHESKIO and HCBH, respectively, had detectable AFM1. The maximum and median AFM1 concentrations for all detected samples were 700 pg AFM1 ml–1 and 11.7 pg ml–1, respectively. Detection of AFM1 was significantly associated with peanut consumption (p < 0.05). Controlling for diet and age group in a logit model, patients who reported peanut consumption the day of the survey and patients from HCBH had greater log odds of excreting detectable AFM1 (p < 0.001 and 0.002, respectively); females had lower log odds (p = 0.020). Recalled frequency of consuming non-dairy animal-sourced foods, an indicator of diet quality, approached significance (p = 0.056) as an inverse predictor of urinary AFM1 detection. The findings augur the need for interventions that will improve food safety in Haiti and limit exposure to AFs, particularly among rural communities.  相似文献

The aim of this study was to estimate the dietary cadmium (Cd) intake of the Belgian adult population, to compare this dietary Cd exposure to the tolerable weekly intake (TWI) recently established by the European Food Safety Authority (EFSA) and to determine the major food groups that contribute to dietary Cd exposure in Belgium. Food consumption data were derived from the 2004 Belgian food consumption survey (two 24?h recalls, 3083 participants). Cadmium concentrations in food items (n?=?4000) were gathered from the control program of the Belgian Federal Agency for the Safety of the Food Chain for the period 2006–2008. Dietary intake per individual was calculated from consumption data and median Cd concentrations. The population mean, median and 95th percentile of the dietary intake values were 0.98, 0.85 and 2.02?µg?kg?1 body weight per week respectively. Two percent of the Belgian adult population has a dietary Cd intake above the recent TWI of 2.5?µg?kg?1 body weight established by EFSA in 2009. Cereal products and potatoes contribute for more than 60% to Cd intake.  相似文献

Acrylamide is a probable human carcinogen and known human neurotoxin. This study estimated hypothetical long-term dietary exposure to acrylamide of the Japanese people using probabilistic and deterministic approaches by combining the concentration of acrylamide in foods with the amount and frequency of food consumption in the population. Data included acrylamide concentrations in more than 2400 individual food samples from a national survey and the literature from 2004 to 2013. Food consumption amounts were derived from the data of 24,293 Japanese citizens aged 1 year and older in the 2012 National Health and Nutrition Survey. Median lifetime average dietary exposure to acrylamide was estimated as 147–154 ng/kg body weight (bw)/day (95th percentile, 226–261 ng/kg bw/day). The deterministic estimate of lifetime exposure was 158 ng/kg bw/day and ranged from 119 ng/kg bw/day for the period of life after 60 years old to 409 ng/kg bw/day for the period between 1 and 6 years old. This study found that vegetables cooked at a high temperature, coffee and cooked potato were the major food groups contributing to long-term dietary acrylamide exposure of the Japanese people.  相似文献

Due to the 2011 labelling of styrene monomer as “reasonably anticipated to be a human carcinogen” by the National Institutes of Health’s National Toxicology Program (NTP) and the controversy over whether styrene oligomers mimic the physiological effects of estrogen, an updated review of styrene monomer and oligomers in food and food contact materials (FCMs) was performed. The concentrations of styrene monomer and oligomers were determined in 24 polystyrene (PS) products and ranged from 9.3 to 3100 mg kg–1 for the styrene monomer, 130–2900 mg kg–1 for the sum of three styrene dimers, and 220–16,000 mg kg–1 for the sum of six styrene trimers. Foods in contact with PS packaging had styrene monomer concentrations ranging from 2.6 to 163 ng g–1; dimer concentrations from the limit of quantitation (LOQ) to 4.8 ng g–1 and trimer concentrations were all below the LOQ (2 ng g–1). Diffusion coefficients (Dp) and partition coefficients (K) were also calculated for styrene dimers and trimers. The results presented here indicate that styrene monomer concentrations in foods have not significantly changed since the 1980s and monomer concentrations in food packaging quantified in this study were all below USFDA limits. Although styrene dimers and trimers are present in higher concentrations in PS FCMs than the monomer, their migration to food is limited because of their high K values (4 × 102 to 2 × 106) and their low diffusion coefficients in PS products. Additionally, diffusion coefficients calculated using USFDA-recommended food simulants and Arrhenius plots describing the temperature dependence of styrene dimers and trimers can be used in future calculations of dietary intake of the styrene oligomers.  相似文献

The dietary exposure to selected PFAAs was estimated in four selected European states (Belgium, the Czech Republic, Italy and Norway) representing Western, Southern, Eastern and Northern Europe. The harmonised sampling programme designed in the European Union project PERFOOD was targeted at identifying seven selected PFAAs, including perfluorooctane sulfonic acid (PFOS) and perfluorooctanoic acid (PFOA), in food items that are most important both in terms of consumption and based on known high contamination patterns. The estimated average dietary exposure for adults (18–64 years) and children (3–9 years) is generally below or close to 1 ng kg–1 BW day–1 for all seven PFAAs. Considering the high consumption of food groups that contribute most to the exposure does not result in estimates exceeding 4 ng kg–1 BW day–1. Thus, based on the TDIs proposed by EFSA for PFOS (150 ng kg–1 BW day–1) and PFOA (1500 ng kg–1 BW day–1), no concern can be identified. There are distinct dietary exposure patterns from region to region as a result of different food consumption and contamination patterns. Foods of plant origin (e.g. fruit and vegetables) are most important for the dietary exposure to PFHxA, PFOA and PFHxS, while the consumption of foods of animal origin (particularly fish and seafood) mostly contributes to the dietary exposure to PFDA and PFUnDA. For the dietary exposure to PFNA and PFOS, food of animal and plant origin contributes with equal importance. In conclusion, region-to-region differences as well as the relative importance of food of different origin for each PFAA should be paid more attention in further research.  相似文献

Volatile organic compounds (VOCs) are ubiquitous in the environment due to evaporation and incomplete combustion of fuels, use of consumer and personal care products, etc. and they can accumulate in foods. Some VOCs in foods can also be formed during food processing and preparation and migrate from food packaging. In this pilot study, a GC-MS method based on headspace solid-phase microextraction (SPME) was validated and used to analyse selected individual foods which can be consumed directly and 153 different total diet composite food samples for 13 VOCs. Vinyl chloride was not detected in any of the 153 composite food samples, while the other 12 VOCs were detected at various frequencies, with m-xylene being the most frequently detected (in 151 of the 153 samples), followed by toluene (145), 1,3,5-trimethylbenzene (140), ethylbenzene (139), styrene (133), 1,2,4-trimethylbenzene (122), benzene (96), p-dichlorobenzene (95), n-butylbenzene (55), chloroform (45), naphthalene (45) and trichloroethylene (31). Concentrations of the 12 VOCs in most of the food composite samples were low, with the 90th percentiles from 1.6 ng g–1 for n-butylbenzene to 20 ng g–1 for toluene. However, some VOCs were detected at higher levels with maxima, for example, of 948 ng g–1 for m-xylene and 320 ng g–1 for ethylbenzene in chewing gum, 207 ng g–1 for styrene and 157 ng g–1 for toluene in herbs and spices. VOCs were detected at higher levels in most of the individual food items than their corresponding composite samples, for example, the average chloroform concentration in the individual canned soft drinks was 20 ng g–1 compared with 3.0 ng g–1 in their composite, and the average toluene concentration in the individual canned citrus juice was 96 ng g–1 compared with 0.68 ng g–1 in their composite. Thus, for determination of VOCs in foods which can be consumed directly, their individual food items should be analysed whenever possible for accurate exposure assessment.  相似文献

Chilean consumer preferences include foods that may contain considerable amounts of furan, a potential human carcinogen. However, there is no information regarding dietary exposure to furan in Chile. Thus, the objective of this work was to determine the Chilean exposure to dietary furan. To accomplish this objective, the furan concentration of 14 types of commercial foods processed at high temperature were analysed based on a modified headspace-GC/MS (HS-GC/MS) method in which the limits of detection for different food matrices ranged from 0.01 to 0.6 ng g?1. In addition, a risk assessment was made with exposure estimates based on dietary data from national studies on different age groups (9-month-old babies, school children, adults and elderly people). Of the food items surveyed “American”-type coffee (espresso coffee plus hot water) obtained from automatic coffee machine (936 ng g?1) and low moisture starchy products like crisps and “soda”-type crackers showed the highest furan concentrations (259 and 91 ng g?1, respectively). Furthermore, furan was also found in samples of breakfast cereals (approximately 20 ng g?1), jarred fruit baby foods (8.5 ng g?1) and orange juice (7.0 ng g?1). School children (aged 9–13 years) represented the highest intake of furan (about 500 ng kg?1bw day?1), with margins of exposure of 2479 and 2411, respectively, which points to a possible public health risk.  相似文献

Perchlorate is a thyroid hormone-disrupting compound and is reported to occur widely in the environment. Little is known on human exposure to perchlorate in Kuwait. In this study, 218 water samples, 618 commonly consumed foodstuffs and 532 urine samples collected from Kuwait were analysed to assess the exposure of the Kuwaiti population to perchlorate. For the estimation of daily intake of perchlorate, food consumption rates were obtained from the National Nutrition Survey in the State of Kuwait (NNSSK). The results showed that leafy vegetables accounted for a major share of perchlorate exposure among the Kuwaiti population at 0.062 µg kg1 bw day1 (36.2%), followed by fruits at 0.026 µg kg1 bw day1 (15.3%) and non-leafy vegetables at 0.017 µg kg1 bw day1 (10.1%). The urinary perchlorate geometric mean (GM) concentrations ranged from 8.51 to 17.1 µg l1 for the five age groups, which were higher than those reported in other countries. The estimated urinary perchlorate exposure for the Kuwaiti general population was 0.42 µg kg1 bw day1, which was higher than that reported for the United States. The dietary intake of perchlorate for the Kuwaiti population ranged from 0.14 to 0.67 µg kg1 bw day1 for the five age groups, with a mean total daily intake of 0.17 µg kg1 bw day1 for the general population. The highest estimated dietary mean daily intake of perchlorate (0.67 µg kg1 bw day1) was found for children at 3–5 years. The estimated dietary perchlorate exposure in Kuwait is higher than the recommended mean reference dose (RfD) but lower than that of provisional maximum tolerable daily intake (PMTDI) set by the Joint FAO/WHO Expert Committee on Food Additives (JECFA).  相似文献

Acrylamide is a probable human carcinogen and known human neurotoxin that can be generated in food through heating. Using a mathematical modelling approach, our previous study estimated long-term average dietary exposure to acrylamide in the Japanese people; however, the validity of these estimates remained unknown. Here, we aimed to obtain a more accurate estimate of acrylamide exposure that would reflect the usual practice of heat processing and consumption of foods in the population. We collected duplicate diet samples and dietary records during 24 h from a group of Japanese adults. A total of 110 duplicate diet samples were analysed for acrylamide by LC-MS/MS. Data from individual dietary records were used to examine the association between dietary acrylamide exposure and consumption of selected food groups (e.g., coffee, tea, confectioneries, and vegetables prepared at high temperature [deep-frying, stir-frying, sautéing, and baking]). Of the 110 homogenised diet samples, 108 contained detectable levels of acrylamide. Dietary exposure to acrylamide ranged from 8 to 1582 ng/kg body weight (bw)/day, with the mean value of 215 ng/kg-bw/day and median value of 143 ng/kg-bw/day. This mean value was higher than the value we previously estimated for Japanese adults using a mathematical approach. Multiple linear regression analysis showed log dietary acrylamide exposure was significantly associated with consumption of coffee and vegetables prepared at high temperature during 24-hr of sampling (adj. R2 = 0.250, p < 0.001). We revealed significant difference in dietary acrylamide exposure between participants who had coffee and vegetables prepared at high temperature (median, 169 ng/kg-bw/day; range, 35–1224 ng/kg-bw/day, n = 42) and those who had none of them (median, 75 ng/kg-bw/day; range, 8–311 ng/kg-bw/day, n = 15) (Steel-Dwass test, p < 0.05).  相似文献
