Global interest in the adverse health effects of cadmium (Cd) has focused on dietary exposure as the principal source of Cd exposure to the general population. Common assumptions used in deterministic Cd assessment in global or regional diets have limitations when applied to specific national cases where local variation in food composition and consumption patterns are different than for global or regional norms. Stochastic dietary Cd exposure assessment was conducted for the general South Korean population to understand better Cd dietary intake. Because rice (Oryza sativa) is commonly and highly consumed by Koreans, it was the dominant contributor to Cd in the diet, representing on average 25% of the total dietary exposure for the general population. Hazard index (HI) values were below the level of concern for the 95th percentile of the general population. Sensitivity analyses demonstrated that variation in rice intake and Cd concentration had the greatest influence on the Cd risk estimate for the general population. Changes in food sources, such as the use of imported rice with higher Cd levels, would lead to increased Cd exposure in the diet, thus necessitating continued vigilance as to the status of Cd within the food supply.  相似文献

A probabilistic estimation of dietary exposure to cypermethrin residues for the Chinese population was performed. Cypermethrin residue data were obtained from the national food contamination monitoring program for 2001–2006, encompassing 14,096 samples from 36 commodities with a detection rate of 10.4%. Food consumption data were gathered from the national nutrition and health survey conducted in 2002, comprising 65,915 consumers aged 2–100 years and 3701 children of 2–6 years old. The whole country was roughly divided into six regions and the ranges of the median and of P99.9 exposure estimated for these regions were 0.018–0.026 and 3.131–7.095?µg?kg?1?bw?day?1, respectively. Pak-choi and Chinese cabbage contributed 33.9 and 13.2%, respectively, to the cypermethrin intake for the general population, while pak-choi and citrus covered 30.7 and 22.5% of the total intake for children, respectively. The exposure of the rural population was higher than urban populations. Rural areas mainly located in the plains of central China had among the highest exposure of the six regions, accounting for 17.7% of the ARfD at P99.9, while the 99.99th percentile of exposure for children, especially rural children, far exceeded the ARfD, which is a cause for concern.  相似文献

The aim of this study was to estimate the dietary cadmium (Cd) intake of the Belgian adult population, to compare this dietary Cd exposure to the tolerable weekly intake (TWI) recently established by the European Food Safety Authority (EFSA) and to determine the major food groups that contribute to dietary Cd exposure in Belgium. Food consumption data were derived from the 2004 Belgian food consumption survey (two 24?h recalls, 3083 participants). Cadmium concentrations in food items (n?=?4000) were gathered from the control program of the Belgian Federal Agency for the Safety of the Food Chain for the period 2006–2008. Dietary intake per individual was calculated from consumption data and median Cd concentrations. The population mean, median and 95th percentile of the dietary intake values were 0.98, 0.85 and 2.02?µg?kg?1 body weight per week respectively. Two percent of the Belgian adult population has a dietary Cd intake above the recent TWI of 2.5?µg?kg?1 body weight established by EFSA in 2009. Cereal products and potatoes contribute for more than 60% to Cd intake.  相似文献

In order to address the issue of excessive intake of aluminium (Al) from Al-containing food additives in the Chinese diet, this study conducted a dietary exposure assessment of Al in the general population based on the national surveillance data of Al content in foods and national food consumption data. It was found that the mean dietary exposure of the whole Chinese population to Al from Al-containing food additives was 1.795 mg kg?1 bw week?1, not exceeding the PTWI, while high dietary exposures (e.g., 97.5th percentile) to Al were 7.660 and 2.103–2.903 mg kg?1 bw week?1 for children, respectively, both exceeding the PTWI. It was found that the dietary exposure to Al for 32.5% of the total Chinese population and 42.6% of children aged 4–6 years exceeded the PTWI. Wheat flour and wheat-based products are the main source of dietary A l exposure (85% of the total intake); and puffed foods are the major source of Al intake for children. These findings suggested that consumption of Al-containing food additives could be a health concern for consumers with high food consumption (97.5th percentile) and children under the age of 14 years.  相似文献

ABSTRACT

Tryptamine acts as a neuromodulator and vasoactive agent in the human body. Dose–response data on dietary tryptamine are scarce and neither a toxicological threshold value nor tolerable levels in foods have been established so far. This paper reviews dose–response characteristics and toxicological effects of tryptamine as well as tryptamine contents in food, estimates dietary exposure of Austrian consumers, and calculates risk-based maximum tolerable limits for food categories. A dose without effect of 8 mg kg?1 body weight day?1 was derived from literature data. Dietary exposure via fish/seafood, beer, cheese and meat products was estimated for Austrian schoolchildren, female and male consumers, based on 543 food samples analysed in Austria 2010–15 and on food consumption data from 2008. Even worst-case estimates based on very high tryptamine contents reported in the literature did not exceed 5.9 mg kg?1 body weight day?1, and thus were below the dose without effect. Maximum tolerable levels for food commodities were calculated for high-consumption scenarios (95th percentile of female Austrian consumers). For fresh/cooked fish, preserved fish, cheese, raw sausage, condiments, sauerkraut and fermented tofu, maximum tolerable levels were 1650, 3200, 2840, 4800, 14,120, 1740 and 2400 mg kg?1, respectively. For beer, the maximum tolerable limit of 65 mg kg?1 included an uncertainty factor of 10. None of the Austrian occurrence data exceeded these levels (in fact, only 3.3% of samples demonstrated measurable amounts of tryptamine), and just one report was found in the literature on a raw fish sample exceeding the respective tolerable level. In sum, dietary intake of tryptamine should not cause adverse health effects in healthy individuals. The assessment did not take into account the combined effects of simultaneously ingested biogenic amines, and increased susceptibility to tryptamine, e.g., due to reduced monoamine oxidase activity.  相似文献

To estimate of food and nutrient intakes, 24-h recalls are frequently used in dietary assessment. However intake data collected for a short period are a limited estimator of long-term usual intake. An important limitation of such data is that the within-person variability tends to inflate the intake distribution leading to a biased estimation of extreme percentiles. Statistical models, named usual-intake models, that separate the within-person variability from the between-persons variability, have lately been implemented. The main objectives of this study were to highlight the potential impact that usual-intake models can have on exposure estimate and risk assessment and to point out which are the key aspects to be considered in order to run these models properly and be sure to interpret the output correctly. To achieve the goal we used the consumption data obtained by the French dietary survey INCA2 and the concentration data collected during the French TDS2, using Monte Carlo Risk Assessment (MCRA) software, release 8.0. For the three substances included in this study (cadmium, acrylamide and sulphites), the exposure of the upper percentiles was significantly reduced when using usual-intake models in comparison with the results obtained in the observed individual mean models, even if in terms of risk assessment the impact of using usual-intake models was limited. From the results it appears that the key aspects to consider when using usual-intake models are: (1) the normality of the log-transformed intake distribution, (2) the contribution per single food group to the total exposure, and (3) the independency of food consumption data on multiple days. In conclusion, usual-intake models may have an impact on exposure estimates although, referring to the results, it did not bring any changes in terms of risk assessment, but further investigations are needed.  相似文献

The mycotoxin deoxynivalenol (DON) is one of the most common contaminants of cereals worldwide, and its occurrence has been widely reported in raw foods and foodstuffs, around the European region, including Catalonia. In the present work, a stochastic methodology has been applied to accurately assess the exposure of the Catalonian population (Spain) to DON through food consumption. Raw contamination data was provided by a large survey conducted in this region, in addition to the raw consumption data from a nutritional study specifically designed to assess the dietary intake of the main foodstuffs related to DON contamination for all population age groups. Contamination and consumption data were combined by simulation using an essentially parametric (P-P) method. The P-P method draws sampling values from distribution functions fitted to consumption and contamination data sets. Moreover, to quantify the accuracy and reliability of the statistics estimates, we built the related confidence intervals using a pseudo-parametric bootstrap method. Considering the results drawn from the P-P simulation method, the Catalonian population should be expected to be exposed at moderated levels of deoxynivalenol, the infants and individuals with ethnic dietary patterns being the most exposed population groups  相似文献

Long-term dietary exposures to lead in young children were calculated by combining food consumption data of 11 European countries categorised using harmonised broad food categories with occurrence data on lead from different Member States (pan-European approach). The results of the assessment in children living in the Netherlands were compared with a long-term lead intake assessment in the same group using Dutch lead concentration data and linking the consumption and concentration data at the highest possible level of detail. Exposures obtained with the pan-European approach were higher than the national exposure calculations. For both assessments cereals contributed most to the exposure. The lower dietary exposure in the national study was due to the use of lower lead concentrations and a more optimal linkage of food consumption and concentration data. When a pan-European approach, using a harmonised food categorisation system and “European” concentration data, results in a possible health risk related to the intake of an environmental chemical for a certain country, it is advisable to refine this assessment, as part of a tiered approach, using national occurrence data, including an optimised linkage between foods analysed and consumed for that country. In the case of lack of occurrence data, these data can be supplemented with data from the “European” concentration database or by generating additional concentration data at country level.  相似文献

Exposure of the Slovak Republic population to cadmium from food and drinks was studied. Calculations were done by means of 1,66,312 food, plant and animal raw materials and drinks sampled within systematic inspection and monitoring of contaminants in 1990–2003. Exposure assessment of average inhabitants to cadmium from actual and model consumption patterns were calculated and compared with the provisional tolerable weekly intake (PTWI) value. Considering the model consumption, the exposure doses were assessed also for selected demographic groups. The assessed exposure of the population to cadmium has been persistently low with a moderately decreasing tendency especially for the past few years. The assessed real weekly exposure doses of cadmium from foodstuffs and beverages in the last 5 years while using the mean values and median values were 20–14.8% PTWI and 12.6–7.6% PTWI, respectively.  相似文献

Food consumption data are a key element of EFSA’s risk assessment activities, forming the basis of dietary exposure assessment at the European level. In 2011, EFSA released the Comprehensive European Food Consumption Database, gathering consumption data from 34 national surveys representing 66,492 individuals from 22 European Union member states. Due to the different methodologies used, national survey data cannot be combined to generate European estimates of dietary exposure. This study was executed to assess how existing consumption data and the representativeness of dietary exposure and risk estimates at the European Union level can be improved by developing a ‘Compiled European Food Consumption Database’. To create the database, the usual intake distributions of 589 food items representing the total diet were estimated for 36 clusters composed of subjects belonging to the same age class, gender and having a similar diet. An adapted form of the National Cancer Institute (NCI) method was used for this, with a number of important modifications. Season, body weight and whether or not the food was consumed at the weekend were used to predict the probability of consumption. A gamma distribution was found to be more suitable for modelling the distribution of food amounts in the different food groups instead of a normal distribution. These distributions were combined with food correlation matrices according to the Iman–Conover method in order to simulate 28 days of consumption for 40,000 simulated individuals. The simulated data were validated by comparing the consumption statistics of the simulated individuals and food groups with the same statistics estimated from the Comprehensive Database. The opportunities and limitations of using the simulated database for exposure assessments are described.  相似文献

The aim was to estimate the adult exposure to cadmium, lead and mercury from daily household diets in Eastern Poland (Lublin city and province). A duplicate diet approach was used to top collect diet samples in 1990, 1993, 1998 and 2002. Cadmium and lead contents were measured by flame atomic absorption and the mercury content was measured by cold vapour atomic absorption spectrometry. The intake of the three elements was calculated using FOOD computer software. The exposure to cadmium taken with daily diets was from 16.4 - 34.5 μg/person/day (27-58% PTWI). The lead exposure was 66.5 - 106 μg/person/day (31-49% PTWI), which posed a smaller risk, and the exposure risk to mercury of 4.08-6.65 μg/person/day (10-16% PTWI) was even lower.  相似文献

This study aims to compare the pesticide residue dietary intake of the French general population and the vegetarian population, separated into five specific diets: omnivorous (OMN), lacto-vegetarian (LV), ovo-lacto-vegetarian (OLV), pesco-lacto-vegetarian (PLV) and vegan (VG). Theoretical Maximum Daily Intakes (TMDIs) based on Maximum Residue Levels (MRLs) were calculated as a percentage of the Acceptable Daily Intake (ADI). Among the 421 pesticides studied, only 48 had TMDI above ADI for at least one population subgroup. An excessive exposure was noticed for 44, 43, 42, 41 and 30 pesticides in the OLV, VG, OMN, LV and PLV groups, respectively, versus 29 in the general population. Meat and egg products consumption was responsible for higher intakes of organochlorine pesticides in the general population than in the vegetarian population (TMDI = 348% versus 146–183% ADI for aldrin). However, as the limited consumption of animal-origin commodities was largely offset by a higher fruit, vegetable and cereal intake in the vegetarian diets, vegetarians appear to be preferentially exposed to pesticides, for which fruit, vegetables and cereals are the main contributors, such as tri-allate, chlorpyrifos-methyl and diazinon. This study illustrates that consumption habits have a real impact on pesticide exposure in terms of intake levels, number and type of pesticides, representing a potential risk of dietary exposure. Except for organochlorine compounds, the vegetarian population may be more exposed to pesticide residues than the general population due to specific dietary habits. Thus, this population should be considered for risk assessment of pesticide residues.  相似文献

基于2009年、2010年对全国13个花生主产省155个县市2 571份代表性花生样品检测分析获得的12 855个黄曲霉毒素检测数据,以及卫生部2002年、2004年中国居民营养与健康状况调查报告中膳食消费数据,采用Monte Carlo模拟和Bootstrap抽样方法量化人群花生黄曲霉毒素膳食暴露量的变异度和不确定度,构建了中国花生黄曲霉毒素风险评估中膳食暴露非参数概率评估模型,依据年龄段、地区间和收入水平差异的人群花生黄曲霉毒素膳食暴露量,分析了各暴露量分布的指标统计量和90%置信区间。评估结果显示,2~5岁儿童为花生黄曲霉毒素膳食摄入的高暴露人群,其高端暴露量(P97.5)中位值为每千克体重每天1.342ng(表示为ng.kg-1.d-1,下同),四分位间距为0.151ng.kg-1.d-1;18~45岁成人中,城市人群花生黄曲霉毒素膳食暴露量高于农村,其高端暴露量(P97.5)中位值为0.695ng.kg-1.d-1,四分位间距为0.078ng.kg-1.d-1;中等收入水平人群花生黄曲霉毒素膳食暴露量最高,其高端暴露量(P97.5)中位值为0.874ng.kg-1.d-1,四分位间距为0.086ng.kg-1.d-1。花生黄曲霉毒素膳食暴露非参数概率评估方法克服了点评估方法不能定量评估结果变异度和不确定度的缺点,结果更为精确。  相似文献

Within the European project called EXPOCHI (Individual Food Consumption Data and Exposure Assessment Studies for Children), 14 different European individual food consumption databases of children were used to conduct harmonised dietary exposure assessments for lead, chromium, selenium and food colours. For this, two food categorisation systems were developed to classify the food consumption data in such a way that these could be linked to occurrence data of the considered compounds. One system served for the exposure calculations of lead, chromium and selenium. The second system was developed for the exposure assessment of food colours. The food categories defined for the lead, chromium and selenium exposure calculations were used as a basis for the food colour categorisation, with adaptations to optimise the linkage with the food colour occurrence data. With this work, an initial impetus was given to make user-friendly food categorisation systems for contaminants and food colours applicable on a pan-European level. However, a set of difficulties were encountered in creating a common food categorisation system for 14 individual food consumption databases that differ in the type and number of foods coded and in level of detail provided about the consumed foods. The work done and the problems encountered in this project can be of interest for future projects in which food consumption data will be collected on a pan-European level and used for common exposure assessments.  相似文献

Deoxynivalenol (DON) is the most important of the trichothecenes in terms of amounts and occurrence in wheat. This compound was shown to be associated with a glomerulonephropathy involving an increase of immunoglobulin A in humans. This study assessed the occurrence of DON in wheat flour and the exposure of Brazilian teenagers, adults and elderly to this mycotoxin due to intake of wheat flour-based products. DON extraction in wheat flour was carried out by solid phase extraction and the quantification was performed by ultra-high proficiency liquid chromatography with diode-array detection. A total of 77.9% of all samples were positive for DON, with concentrations ranging from 73.50 to 2794.63 µg kg?1. The intake was calculated for the average and 90th percentile of the contamination levels of DON in foods based-wheat for teenagers, adults and elderly in Brazil, and compared with the provisional maximum tolerable daily intakes (PMTDI). Females of all age groups were exposed to DON at higher levels when compared to males in regard of consumption of breads and pastas. Teenagers were the main consumers of foods derived from wheat flour, with maximum probable daily intakes of 1.28 and 1.20 µg kg?1 b.w. day?1 for females and males, respectively. This population is at an increased risk of exposure to DON due to consumption of wheat flour-based foods in Brazil.  相似文献

Total mercury levels and methylmercury levels were investigated for various grain parts (whole rice, rice husk, brown rice, polished rice, and bran) of 507 rice samples from 15 main rice-producing areas of China. The average total mercury contents in brown rice samples and polished rice samples were 4.2 and 3.3 μg/kg, respectively, the percentages exceeding the national standard limit were 0.59% and 0.39%, respectively. The average methylmercury levels were 2.9 and 2.4 μg/kg in brown rice and polished rice, respectively. The order of total mercury contents in different parts of rice was bran > brown rice > whole rice > rice husk > polished rice, and the order for methylmercury was bran > brown rice > whole rice > polished rice > rice husk. Total mercury intakes and methylmercury intakes were estimated for the Chinese population and the associated health risks were assessed.  相似文献

Estimations of dietary exposure via the consumption of flavoured foods play a central role in the safety evaluation of flavouring substances. To assess uncertainties, actual data regarding the occurrence and concentration levels of flavouring substances were determined in commercially available flavoured foods, using Earl Grey tea as an example. The contents of the consistently occurring monoterpenes linalyl acetate, linalool, limonene, β-pinene and γ-terpinene were determined in 90 tea samples purchased in 10 European Union member states. Rather narrow frequency distributions were observed for the major compounds linalyl acetate and linalool. The factors (1) country of purchase, (2) source of the products (national/international brands versus private label brands versus speciality tea shops), and (3) enantiomeric purities of the flavouring substances had no significant impact on the contents of the flavouring substances. Only in teas sold as loose leaves were the median contents of linalyl acetate and linalool (66% and 39%, respectively) higher than in teas offered in tea bags. Significant losses of flavouring substances were observed on storage of teas, indicating an impact of the type of packaging and the flavouring technology on the contents of flavouring substances in the product finally consumed.  相似文献
