The effect of vacuum time, restoration time, steam-cooking and storage at 4 °C on the iron content of vacuum-impregnated (VI) whole potato was evaluated. Whole potato tubers were immersed in a 0.4 g/100 g iron (ferric pyrophosphate) solution. Vacuum pressure of 1000 Pa was applied for 0–120 min, and atmospheric pressure restoration for 0–4 h. The result indicated that the iron content of VI potatoes increased with vacuum and restoration time; 1 h vacuum-treatment potatoes provided 6.4 times higher iron content compared to raw potatoes, and 3 h restoration time supplied 6.4 times higher iron content (>4.1 mg/100 g fr.wt.) compared to raw potatoes. Moreover, VI-cooked unpeeled or peeled potatoes had 6 times higher iron content than un-VI-cooked unpeeled or peeled potatoes. European daily potato consumption (260 g) of the VI-cooked unpeeled and peeled potatoes provided adult men with 93–104% and 67–90% of the recommended daily allowance (RDA) of iron, respectively. Also, the daily potato consumption of the unpeeled and peeled potatoes could supply adult women with 43–48% and 31–41% of the RDA, respectively. This study indicated that VI treatment of whole potato was useful for enriching the iron content.  相似文献

The effect of vacuum impregnation with ascorbic acid (AA) and calcium ascorbate (CaA) on enzymatic browning of fresh-cut potatoes was investigated. Results showed that vacuum impregnation (VI) with AA-CaA treatment for 2 min had a significant anti-browning effect. VI treatment not only maintained cell membrane integrity, inhibited the key enzyme activities of polyphenol oxidase, peroxidase and phenylalanine ammonia-lyase but also retarded generation of phenolic substrate, particularly chlorogenic acid. Meanwhile, VI promoted AA-CaA solution to infiltrate into potato tissue and delayed loss of ascorbic acid. In conclusion, VI treatment was more efficient for preventing browning with a shorter processing time of 2 min compared to traditional impregnation under atmospheric pressure and could be used as a promising method to inhibit browning of fresh-cut potatoes.  相似文献

The kinetics of ascorbic acid (AA) degradation in a fruit-based beikost product added with AA were determined after storage at 4, 25, 37 and 50 °C during 4, 8, 12, 16 and 32 weeks in plastic polypropylene/ethylene–vinyl alcohol vacuum packaging. It was confirmed that AA degradation followed an Arrhenius first-order kinetics, with an activation energy of 20.11 ± 0.33 kcal mol−1. No AA losses at 4 °C were recorded during the entire storage period. In contrast, a time- and temperature-dependent decrease (p < 0.05) in AA was observed at the other tested temperatures – the degradation rate decreasing from 50 °C to 25 °C, as expected. AA percentage retention at the end of storage ranged between 6.4% (50 °C/16 weeks) and 100.9% (4 °C/32 weeks).  相似文献

The stability of antioxidants in an apple polyphenol–milk model system was examined. The model system consisted of skim milk fortified with pH-neutralised apple polyphenols (AP, 0–200 mg per 100 ml milk), with or without ascorbic acid (100 mg per 100 ml milk). Physical and chemical changes were evaluated after thermal treatment (120 °C, 5 min) and oxidative storage (20 °C and 38 °C, up to 12 weeks). Antioxidant capacity was determined using both oxygen radical absorbance capacity (ORAC) assay and ferric reducing antioxidant power (FRAP) assay. Significant antioxidant capacity was detected in the presence of milk. Antioxidant capacity was retained during thermal treatment but decreased slowly during storage.  相似文献

The stability of anthocyanin (Cy3Gl) and ascorbic acid (AA) of pressure treated Chinese bayberry (Myrica rubra Sieb. et Zucc.) juice was investigated during storage at temperature of 4 °C and 25 °C. Samples of Chinese bayberry juice (350 mL each, packed with a polyethylene bag) were processed at 400, 500, 600 MPa in room temperature for 10 min. The retention ratio of Cy3Gl and AA content after pressure treatment was more than 98% and 96%, respectively. Both Cy3Gl and AA of pressure treated juice were more stable during storage as compared to those of the untreated control juice. The degradation of Cy3Gl and AA of samples during storage could be described using first order kinetic model. It was observed that there was a significant (p < 0.01) correlation between changes of Cy3Gl and AA content for all tested samples of Chinese bayberry juice during storage.  相似文献

Oil was extracted from fried chipped potatoes using supercritical carbon dioxide. The goals of the study were to determine the effect of process parameters on the extraction, explore the scalability of the process, and determine useful kinetic parameters. Extraction conditions range 27.6–41.4 MPa (4000–6000 PSI), 35–80 °C and solvent flow rate of 0.5–5.0 g CO2/min. Up to 100% of the oil was recovered from the potato chips at the highest pressure and temperature conditions. Two process conditions were chosen for comparison of performance with a larger scale (1:5) system, maintaining the same CO2 flow rate to feed mass ratio. Good agreement between scales was seen at the higher pressure and temperature settings. Kinetic parameters, calculated using a literature model, indicated that, as expected, the extraction is limited by internal diffusion.  相似文献

Bamboo shoots are regarded as potential sources of sterols. The effects of genetic variability, parts and harvest seasons on the sterol content and composition in the bamboo shoots have been determined using a novel ultra-performance liquid chromatographic atmospheric pressure chemical ionisation mass spectrometer method. The results showed that the representative sterols in bamboo shoots were β-sitosterol, campesterol, stigmasterol, ergosterol, cholesterol and stigmastanol; exception stigmastanol, the significant differences were observed in the sterol content of different species (112.4–279.6 mg/100 g dry wt), different harvest seasons (195.3–279.6 mg/100 g dry wt) and different parts (253.6–321.8 mg/100 g dry wt); the sterol composition was similar in different species and different harvest seasons, however, it was significantly different between shoot bodies and shoot shell. The genetic variability, parts and harvest seasons could significantly affect the sterol composition in the bamboo shoots. The spring shoot shell of Phyllostachys pubescens contained the highest sterol content (321.8 mg/100 g dry wt).  相似文献

The objective of this study was to study overall nutritional implication of storage on tomatoes (cv. Tradiro), harvested from a commercial greenhouse in Canterbury, New Zealand. The harvested tomatoes were stored at 7, 15 and 25 °C, for a period of 10 days. The soluble phenolics and ascorbic acid contents of tomatoes showed slight increases during storage, regardless of temperature. The mean lycopene content of tomatoes stored at 15 and 25 °C on the 10th day of storage was, approximately, 2-fold (7.5 mg/100 g) than of the tomatoes stored at 7 °C (3.2 mg/100 g). The soluble antioxidant activity increased from 17–27% during the storage period of tomatoes.  相似文献

Carotenoid composition of green leafy vegetables (GLVs, n = 30) with medicinal value was analyzed by HPLC; vitamin A activity (as retinol equivalent, RE) of provitamin A carotenoids was calculated. Results show that among GLVs studied, the level of β-carotene (50–130 mg/100 g dry wt) was higher in nine GLVs than other carotenoids while lutein (50–187 mg/100 g dry wt) and zeaxanthin (1–5 mg/100 g dry wt) were higher in 12 GLVs than other xanthophylls. α-Carotene was detected only in nine GLVs, ranging from 1 to 37 mg/100 g dry wt. Interestingly, Chenopodium album, Commelina benghalensis and Solanum nigrum were found to contain higher levels of both lutein and β-carotene in the range of 84–187 and 50–115 mg/100 g dry wt, respectively. The values of retinol equivalents (RE) ranged from 641 to 19101 and were higher (>10,000) in six GLVs of the 30. The results demonstrate that GLVs studied contained higher levels of RE and lutein.  相似文献

The effect of pressure treatments of 100 and 200 MPa (10 and 20 min) and of thermal blanching at 70 °C, 80 °C and 98 °C (1 and 2.5 min), on sweet green and red bell peppers was compared. Pressure treated peppers showed a lower reduction on soluble protein and ascorbic acid contents. Red peppers presented even an increased content of ascorbic acid (15–20%), compared to the untreated peppers. Peroxidase and pectin methylesterase (whose activity was only quantifiable in green peppers) showed a higher stability to pressure treatments, particularly the latter enzyme, while polyphenol oxidase was inactivated to the same final level by the thermal blanching and pressure treatments. Pressure treatments resulted in comparable (in green pepper) to higher (in red pepper) microbial loads compared to blanching. Pressure treated green and red peppers presented similar to better firmness before and after tunnel freezing at −30 °C, compared to thermally blanched peppers, particularly those blanched at 98 °C. The results indicated that pressure treatments of 100 and 200 MPa can be used to produce frozen peppers with similar to better nutritional (soluble protein and ascorbic acid) and texture (firmness) characteristics, comparable activity of polyphenol oxidase and higher activity of pectin methylesterase, while pressure treated peppers show a higher level of peroxidase activity. It would be interesting to use higher pressures in future studies, as an attempt to cause a higher reduction on microbial load and on enzymatic activity.  相似文献

Combined antioxidative effects of lettuce extract and α-tocopherol, quercetin or ascorbic acid (AA) were investigated for peroxidation of l-α–phosphatidylcholine liposomes with oxidation initiated by lipophilic or by hydrophilic azo-initiators. Lettuce extract had a clear antioxidative effect as evidenced by a lag phase for formation of conjugated dienes, and α-tocopherol and especially quercetin acted synergistically in prolongation of the lag phase both following initiation in the lipid phase and in the aqueous phase. Combination of AA with lettuce extract showed in contrast a lag phase that was similar to that observed for AA alone. Storage of lettuce extract for 24 h at refrigerator or room temperatures resulted in a decreasing lag phase with increasing storage time for both storage temperatures, an effect not counteracted by addition of quercetin or α-tocopherol. Heating of lettuce extract for 10 min at 80 °C did not affect the lag phase and heating of lettuce extract resulted in an increasing synergism for added quercetin and α-tocopherol indicating that thermal inhibition of polyphenoloxidase (PPO) increases antioxidant potential and interaction.  相似文献

In this study, ascorbic acid, total polyphenols and proanthocyanidins of fresh-cut cashew apple were quantified. Antioxidant capacity was determined in whole juice and in polyphenols extracts by three methods: 2,2-diphenyl-1-picrylhydrazyl (DPPH), ferric reducing antioxidant power (FRAP) and ??-carotene bleaching. Effect of cutting and storage for 24 h at 2 °C, 27 °C and 40 °C on these compounds were also evaluated. Cashew apple presented 163 mg of ascorbic acid per 100 g of fresh weight (FW). Soluble and hydrolysable polyphenols contents were 12.79 mg GAE/100 g FW and 18.53 mg GAE/100 g FW and proanthocyanidins were 9.27 mg/100 g FW. Antioxidant capacity of juice and polyphenols extract was high for DPPH method. Storage temperatures affected bioactive compounds on cut cashew apple. The content of ascorbic acid decreased in all temperatures. Proanthocyanidins were more sensitive to 40 °C than to other temperatures. The content of polyphenols and antioxidant capacity of juice by DPPH assay did not change. However, the reducing power was lower in samples kept at high temperatures. A strong positive correlation between ascorbic acid and FRAP (r = 0.99) and a negative correlation between DPPH and FRAP (r = − 0.79) were observed. No correlations were found between polyphenols and antioxidant capacity indicating the importance of phenolic composition in the extracts. The results confirm the importance of temperature and injury on the quality of cashew apple.  相似文献

The aim of this work was to study the effect of high hydrostatic pressure on the bioaccessibility of specific nutrients (antioxidant, minerals and starch) in apple and to establish processing conditions that maximise the health benefits. The apple was pressurised at 500 MPa during 2, 4, 8 and 10 min. The antioxidant activity, mineral and starch content and bioaccessibility of apple samples were significantly affected by the processing and digestion conditions. Therefore, these results indicated that in vitro digestion has a noticeable effect on the antioxidant concentration, IC50, with much lower values (a smaller IC50 value corresponds to a higher antioxidant activity) of apple samples compared with those untreated and non-digestion. Apple has the highest calcium content (30.33 ± 1.94 mg/100 g), iron (14.46 ± 3.49 mg/100 g) and zinc (6.22 ± 0.91 mg/100 g). High hydrostatic pressure increased the mineral contents availability by 2.11–303.00% for calcium, 4.63–10.93% for iron and 8.68–28.93% for zinc. The dialysability and solubility of calcium, iron and zinc with respect to the values for the untreated sample were reduced by this high pressure technique. Consumption of apple under high hydrostatic pressure may supply substantial antioxidants, mineral and starch, which may provide health promoting and disease preventing effects.  相似文献

Vitamins A and E were determined by HPLC in 20 starting, milk-based powdered infant formulae from local markets. We traced the evolution of these compounds, once the packets had been opened, during 0, 30 and 70 days of storage at room temperature (≈25 °C; min. 23 °C, max. 25.5 °C). Immediately after opening the packets, vitamin A ranged from 0.55 to 0.94 mg RE/100 g (93.3–183 μg RE/100 kcal) and vitamin E from 6.58 to 27.8 mg α-TE/100 g (1.36–5.39 mg α-TE/100 kcal). All the samples had higher vitamins A and E contents than those declared on the label, vitamin A mean adequacy values: 134% ± 17, min. 98%, max. 162%, and vitamin E 185% ± 47, min. 101%, max. 286%, including values at 0, 30 and 70 days of storage.  相似文献

This study compared the concentration of vitamin C (ascorbic acid, AA, and dehydroascorbic acid, DHA) and carotenoids (lycopene and β-carotene) between three fruits produced by organic and conventional farming. Vitamin C and carotenoids were analysed by high-performance liquid chromatography. The Student t-test (α = 5%) was applied to determine differences between the organic and conventional production systems. AA content was significantly higher in organic acerola (4023.39 mg/100 g) compared to its conventional production (2294.53 mg/100 g). Conversely, AA content was significantly higher in conventional strawberries (42.45 mg/100 g) than the organic ones (30.74 mg/100 g). The conventional production also showed significantly higher contents of DHA (persimmon: 7.50 mg/100 g vs. 0.96 mg/100 g) and β-carotene (acerola: 6130.24 μg/100 g vs. 2486.38 μg/100 g) than the organic fruits. Lycopene was only detected in persimmons, but no significant difference was observed between farming systems. There was no evidence of the nutritional superiority of the organically grown fruits.  相似文献

The morphological, thermal and pasting properties of starch separated from potatoes of three varieties (Kufri Chandramukhi, Kufri Jyoti and Kufri Chipsona-2), treated either with CIPC (isopropyl N-(3 chlorophenyl) carbamate) or γ-irradiation (Co60, 0.1 and 0.5 kGy) and subsequently stored at 8, 12 and 16 °C for 90 days, were studied. Scanning electron microscopy (SEM) showed the presence of oval and irregular shaped starch granules with a diameter range of 15–16 μm. Mean granule size of starch separated from potatoes stored at 12 °C ranged from 18–25 μm and irradiation treatment resulted in an increase in the proportion of small size granules. The irradiation of potatoes with 0.5 kGy resulted in starch with significantly lower peak-, trough- and breakdown-viscosity as compared to starch from potatoes treated with either CIPC or 0.1 kGy irradiation. The irradiation of potatoes with 0.5 kGy caused a significant increase in setback and pasting temperature. Pasting temperature of starch was observed to vary with the storage temperature. Starch separated from potatoes stored at higher temperature showed lower pasting temperature and vice versa. The starch from potatoes stored at 8 °C showed higher peak-, trough- and breakdown-viscosity and lower setback. Peak viscosity increased and swelling volume decreased with increase in storage temperature. FTIR spectra showed that the starch from irradiated potatoes displayed a significant decrease in the intensity of the C–H stretch region between 2800 and 3000 cm−1, which was observed to be irradiation dose-dependent, and higher with 0.5 than 0.1 kGy. However, a slight broadening of O–H stretch (3000–3600 cm−1) in starches from irradiated potatoes was observed. The spectral changes caused by γ-irradiation were apparent in the O–H stretch (3000–3600 cm−1), C–H stretch (2800–3000 cm−1) and bending mode of water (1600–1800 cm−1).  相似文献

The thawing characteristics and post-thawing quality of frozen pork treated with high voltage electrostatic fields (HVEF) were compared with those of an air-thawed control. A multiple points-to-plate electrode operating at voltages above 6 kV significantly shortened the thawing time. Under electrode voltages 4, 6, 8, and 10 kV, thawing times were 70, 52, 46, and 40 min respectively, versus 64 min in the control. HVEF treatment was particularly effective in the temperature range −5–0 °C. HVEF treatment reduced the total microbial counts in thawed frozen meat by 0.5–1 log CFU/g, without affecting meat quality. During five days of post-thawing storage, the volatile basic nitrogen (VBN) levels increased from 10.64 to 16.38 mg/100 g under 10 kV applied voltage, while the control VBNs increased from 10.66 to 19.87 mg/100 g. This suggests an application potential for HVEF treatment in the thawing and storage of frozen meat.  相似文献

This study assessed the application of an antibrowning solution using vacuum impregnation (VI) and then electron‐beam irradiation as a means to extend the shelf life of sliced white button mushrooms (Agaricus bisporus). A preliminary study helped to determine the best antibrowning solution and VI process parameters. Mushroom slices were impregnated with 2 g/100 g ascorbic acid + 1 g/100 g calcium lactate; 2 g/100 g citric acid + 1 g/100 g calcium lactate; 1 g/100 g chitosan + 1 g/100 g calcium lactate; and 1 g/100 g calcium lactate at different vacuum pressures and times and atmospheric restoration times. Selection of the antibrowning solution and VI parameters was based on texture and color of the mushroom slices. Next, the slices were irradiated at 1 kGy using a 1.35‐MeV e‐beam accelerator. Physicochemical, sensory, and microbial quality of mushrooms was monitored for 15 d at 4 °C. The best impregnation process in this study was 2 g/100 g ascorbic acid and 1 g/100 g calcium lactate at 50 mm Hg for 5 min and an atmospheric restoration time of 5 min. The control (untreated) samples suffered structural losses throughout storage. Only the vacuum impregnated‐irradiated samples had acceptable color by the end of storage. Sensory panelists consistently preferred the samples produced with VI and irradiation because exposure to ionizing radiation inhibited growth of spoilage microorganisms.  相似文献

Phenolic compounds and their changes during vacuum frying were investigated for a Chinese purple yam. Three cyanidin derivatives and one peonidin derivative were tentatively identified by HPLC–DAD–ESIMS analysis; sinapic acid and ferulic acid were identified by HPLC–DAD analysis with authentic chemicals. There were 31.0 mg/100 g (dry weight, DW) of total anthocyanin (ACN) and 478 mg/100 g DW of total phenolic content (TPC) in the fresh yam. Sinapic acid and ferulic acid were 135 and 31.3 mg/100 g DW respectively. The blanching process caused about 60% of ACN, and 30–50% of phenolic acids and TPC to be lost, which showed that anthocyanins were most vulnerable during blanching. The retention rate of the phenolic compounds during vacuum frying was 60–69%, indicating it was a practical technology for purple yam processing, on account of its impact on the phenolic compounds stability.  相似文献

Major anthocyanins, ascorbic acid content, total phenolic content, and the radical scavenging activity against ABTS and DPPH radicals in petals of orange Nasturtium flowers (Tropaeolum majus), were investigated. Anthocyanin (ACN) content in the petals was 72 mg/100 g FW and pelargonidin 3-sophoroside represented 91% of the total ACN content. The ascorbic acid content was 71.5 mg/100 g and the total phenolic content as determined by the Folin–Ciocalteau method was 406 mg GAE/100 g FW. The radical scavenging activities against ABTS and DPPH radicals were 458 and 91.87 μm trolox eq/g FW, respectively. The excellent free radical scavenging activities along with high phenolic and ascorbic acid content of Nasturtium flowers suggest that they could be source of natural pigments and antioxidants for applications in functional foods.  相似文献
