以赤霞珠四种砧穗组合(CS/Beta、CS/140Ru、CS/1103P、CS/5BB)为试材,采用固相微萃取法(SPME)结合气相色谱-质谱(GC-MS)联用技术,研究不同砧木对赤霞珠干红葡萄酒香气成分影响,为生产上筛选适宜砧木提供理论依据。结果表明,不同砧穗组合香气总量高低顺序为:CS/5BB>CS/Beta>CS/1103P>CS/140Ru;砧穗组合CS/Beta醇类化合物含量最高,为5 067.88 μg/L,砧穗组合CS/5BB酯类、酸类、萜烯类化合物含量最高,分别为9 406.61 μg/L、280.41 μg/L、203.75 μg/L;砧穗组合CS/1103P醛酮类化合物含量最高,为418.70 μg/L。结果表明,砧木5BB、Beta在提升赤霞珠干红葡萄酒香味中有促进作用,是葡萄优质嫁接栽培中的备选砧木。  相似文献

为得到优良的本土酿酒酵母(Saccharomyces cerevisiae),以商业酿酒酵母(DS、CECA、CEC01)为对照,采用本土优良酿酒酵母WJ1、Q12发酵赤霞珠干红葡萄酒,测定其发酵过程中总酸、残糖、酒精度、花色苷、单宁和总酚含量的变化,并对葡萄酒进行感官评价。结果表明,不同酿酒酵母发酵赤霞珠干红葡萄酒过程中总酸、残糖、酒精度、花色苷、单宁和总酚含量变化趋势一致。本土酿酒酵母WJ1发酵的赤霞珠干红葡萄酒酸度较高,为6.92 g/L,残糖、酒精度、花色苷、单宁和总酚含量分别为3.32 g/L、15.0%vol、282.35 mg/L、204.95 mg/L、3 110.04 mg/L,感官评分为89分,显著高于商业酿酒酵母(P<0.05)。酿酒酵母Q12发酵的赤霞珠干红葡萄酒酸度、残糖、酒精度分别为3.87 g/L、3.5 g/L、14.8%vol,花色苷、单宁和总酚含量分别为192.22 mg/L、205.01 mg/L、2 215.37 mg/L,感官评分为70分,显著低于商业酿酒酵母(P<0.05)。因此,本土酿酒酵母WJ1可用作发酵赤霞珠干红葡萄酒的商业酵母。  相似文献

以云南省德钦县、河北省沙城镇和山东省烟台市3个产地的赤霞珠葡萄为原料酿造干红葡萄酒。分析了3个产地赤霞珠干红葡萄酒的滴定酸、p H值、酒精度、总酚、单宁、花青素、5种花色苷单体和11种单体酚。结果表明:3个产地赤霞珠干红葡萄酒的品质指标间存在显著性差异。就酒精度、总酚和单宁而言,烟台德钦沙城酒样;而聚合指数和色调也表现出相同的趋势。德钦产地葡萄酒中5种花色苷单体总量及各单体含量(矢车菊素葡萄糖苷除外)均显著高于其他2个产地。德钦和沙城两产地赤霞珠干红葡萄酒中总单体酚含量无显著性差异,但均显著高于烟台产地葡萄酒中的含量。  相似文献

以赤霞珠和品丽珠为试材,研究摘叶处理对赤霞珠和品丽珠葡萄果实酚类物质(总花色苷、总酚、单宁及非花色苷单体酚类物质)含量的影响,为晋中南地区酿酒葡萄及葡萄酒的生产提供理论依据。结果表明,摘叶能促进葡萄果实酚类物质的积累,其中赤霞珠在转色初期摘除4片叶效果最好,能显著提高采收期成熟度、总花色苷(增加了23.92%)、总酚(增加了22.00%)及非花色苷单体酚类物质含量(增加了83.02%)(P<0.05);而品丽珠在转色末期摘除6片叶效果最佳,能显著提升采收期成熟度、总花色苷(增加了12.79%)、总酚(增加了26.17%)、单宁(增加了128.80%)及非花色苷单体酚类物质含量(增加了140.82%)(P<0.05)。  相似文献

为了比较石河子产区‘赤霞珠’和‘美乐’干红葡萄酒的品质,检测总酚、花色苷、单宁和色度等指标。结果表明,‘赤霞珠’和‘美乐’干红葡萄酒的总酚含量分别为2.29 g/L和2.33 g/L,花色苷含量分别为219.38 mg/L和240.83 mg/L,单宁含量分别为2.28 g/L和2.49 g/L,色度分别为14.19和14.94。‘美乐’干红葡萄酒各项指标的含量都优于‘赤霞珠’干红葡萄酒,石河子产区的两种葡萄酒表现出了各自不同的风格。  相似文献

以自根生长的马瑟兰为对照,3309、101-14、贝达3个砧木嫁接的马瑟兰为试验材料,研究不同砧木对马瑟兰果实外观性状、理化指标及所酿葡萄酒理化指标的影响。不同砧木对马瑟兰果实的影响结果表明,3种砧木显著增加果穗宽度(P<0.05);贝达砧木显著降低马瑟兰果实中还原糖含量(P<0.05);3309、101-14砧木显著提高马瑟兰果实中总酚和花色苷含量(P<0.05),101-14砧木显著提高马瑟兰果实中的单宁含量(P<0.05)。不同砧木对马瑟兰葡萄酒的影响结果表明,3309砧木显著提高葡萄酒中的总酚含量(P<0.05);3种砧木显著提高葡萄酒的pH值,降低葡萄酒色调(P<0.05),3309、贝达砧木显著增加葡萄酒色度(P<0.05)。  相似文献

以晋中南地区梅鹿辄葡萄为试材,探究延迟采收对葡萄酒基本理化指标、酚类物质、花色苷组分和非花色苷酚类物质的影响,以期为改善当地梅鹿辄葡萄酒品质提供理论依据。结果表明,延迟14 d后采收,梅鹿辄葡萄酒中的总花色素、总酚和各花色苷组分含量均有显著提高(P<0.05);延迟7 d后采收,可显著提高葡萄酒中的黄烷醇含量(P<0.05);但延迟采收对葡萄酒中的单宁含量有较显著的降低作用(P<0.05)。因此,延迟14 d采收有利于提高葡萄酒酚类物质的含量,改善葡萄酒的质量。  相似文献

分析了新疆哈密地区赤霞珠、梅鹿辄和西拉3个品种的干红葡萄酒酿造过程中pH、总酸、单宁含量以及花色苷含量的变化。结果表明,西拉和赤霞珠的pH都在酵母菌正常发酵的最佳范围内,梅鹿辄葡萄的pH则相对略高;梅鹿辄葡萄酒总酸含量为6.469 g/L、赤霞珠和西拉都略高于6.5 g/L;3个品种葡萄酒检测到的单宁含量都非常低,相比而言,梅鹿辄葡萄单宁含量相对较高为55.69 mg/L,对于葡萄酒后期品质形成贡献较大;梅鹿辄葡萄酒花色苷含量为79.427 mg/L、下降率13%;西拉葡萄酒花色苷含量79.097 mg/L、下降率11%;赤霞珠葡萄酒花色苷含量最低76.178 mg/L、下降率24%。3个品种葡萄酒的发酵各有其特点,充分利用其发酵优势,为干红葡萄酒的酿造和工艺优化提供了重要的理论依据。  相似文献

以山西晋中南地区赤霞珠为材料,采用高效液相色谱-质谱联用技术(HPLC-MS),研究不同叶幕形和每株留穗量对所酿造的干红葡萄酒中单体酚类物质种类和浓度的影响。结果表明,相比于直立叶幕,V形叶幕可提高成熟葡萄果实的成熟度,V葡萄酒中酰化花色苷的含量(33.46 mg/L)和非花色苷单体酚类物质的总量(286.25 mg/L)分别是直立形叶幕的2.80倍和2.18倍。在直立叶幕下,适当的减少单株果穗数量,可增加葡萄酒中花色苷单体酚类物质的种类和含量,此外随着每株留穗量的减少,非花色苷单体酚类物质总量有逐渐增多的趋势。在山西晋中南地区,对于赤霞珠而言,适度减少每株留穗量或运用V形叶幕栽培管理可以提高葡萄酒中单体酚类物质含量。  相似文献

研究避雨栽培对葡萄酒非花色苷酚类的影响,为酿酒葡萄避雨栽培技术的实施提供理论依据。采取简单避雨方式,以赤霞珠(Vitis vinifera L cv.Cabernet Sauvignon)葡萄为材料,在转色后进行避雨处理,以露地栽培为对照;葡萄收获后采用传统工艺酿制干红葡萄酒,测定其基本理化指标及非花色苷酚的种类和含量,获得如下结果:(1)避雨栽培降低了赤霞珠葡萄酒总酸、总酚和单宁含量,但差异不显著。(2)避雨栽培对一些单体非花色苷酚类含量存在显著影响,显著降低了黄烷醇类总量,但对黄酮醇和类黄酮酚总量无显著影响;极显著降低了苯甲酸、芪类和非类黄酮酚,增加了肉桂酸类含量。(3)对葡萄酒非花色苷酚类物质种类无影响,降低了非花色苷酚类总量但差异不显著。因此,在赤霞珠葡萄转色期采取避雨措施,对干红葡萄酒非花色苷酚类的影响不显著。  相似文献

该研究采用三种不同透氧率瓶塞(经典、至尊500和至尊300)对赤霞珠干红和贵人香干白葡萄酒进行两年的瓶内储存,通过测定不同瓶塞葡萄酒溶解氧(DO)、顶端空间游离氧(HSO)含量、单体花色苷总含量、CIELab颜色参数、挥发性香气成分及感官评价,分析不同瓶塞对葡萄酒感官品质的影响。结果表明,不同瓶塞葡萄酒中DO和HSO含量下降幅度为经典>至尊500>至尊300。a*值、b*值、色度(Cab值)和色调(hab值)与单体花色苷总含量呈极显著正相关(P<0.01),而L*值与之呈极显著负相关(P<0.01)。不同瓶塞赤霞珠干红葡萄酒中共检测出30种挥发性香气成分,包括4种醇类,11种酯类,8种有机酸类,1种萜烯类和6种酚类。至尊瓶塞感官品质优于经典瓶塞,至尊500与至尊300之间无明显差异。  相似文献

The effect of Graciano (GRA) (Spanish valuable variety of limited production) vs. Cabernet Sauvignon (CS) (world wide known French variety) wines on the anthocyanin, pyranoanthocyanin and non-anthocyanin phenolic composition of wines from Tempranillo (TEM-base wine) (largely cultivated Spanish variety) was studied in wine blends prepared with 25% and 10% (v/v) of each modifier after 4, 6, 9, 16.5 and 23 months of ageing in the bottle. Blending mainly resulted in a higher concentration of peonidin anthocyanins for the TEM-GRA blends, of acetyl-glucoside anthocyanins and anthocyanin-pyruvic acid adducts for the TEM-CS blends, and of flavanols for the blends with both GRA and CS varieties, giving rise to wines with a more balanced anthocyanin/flavanol ratio. Blending also enhanced the changes expected to occur in the phenolic compounds during ageing in the bottle. Particularly, anthocyanins and flavanols in the blends disappeared faster than in the base wine, and this was more pronounced for the 75:25 than for the 90:10 blends. These effects were similar for both modifier wines, independent of the specific changes produced in the anthocyanin profile of the base wine, but coincided with the similar optimization of the anthocyanin/flavanol ratio provided by both Graciano and Cabernet Sauvignon wines.  相似文献

利用高效液相色谱-质谱联用技术测定野生资源‘桂葡6号’乙醇发酵结束和瓶储3?个月的葡萄酒中花色苷类物质的组成及含量,并与欧亚种‘赤霞珠’进行对比。结果发现,‘桂葡6号’乙醇发酵结束和瓶储3?个月酒样中花色苷总量为548.94?g/L和427.89?g/L,分别是同期‘赤霞珠’的1.2?倍和2.7?倍左右。‘桂葡6号’乙醇发酵结束和瓶储3?个月酒样中分别检测到25?种和19?种花色苷,双糖苷是其中最主要的花色苷类型,含量最高的是甲基花青素-3,5-O-双葡萄糖苷。与欧亚种‘赤霞珠’相比,瓶储3?个月‘桂葡6号’酒样中3’,5’-羟基取代花色苷比例较高,而酰基化、甲基化和吡喃型花色苷比例较低。‘桂葡6号’花色苷组成及含量与欧亚种‘赤霞珠’差异明显,这由其品种特性决定。?  相似文献

为了综合评价酿酒葡萄品种特性,以酿酒葡萄美乐、品丽珠、赤霞珠为研究对象,采用比色法测定果实不同部位酚类物质含量,并对结果进行主成分分析。结果表明,赤霞珠葡萄果皮中总酚、单宁、黄烷醇、花色苷含量分别为28.82 mg/g、23.15 mg/g、41.19 mg/g、9.25 mg/g,均显著高于美乐和品丽珠(P<0.05);赤霞珠葡萄种子中总酚、单宁、总类黄酮分别为14.56 mg/g、5.74 mg/g、2.32 mg/g,显著高于品丽珠(P<0.05)。主成分分析结果表明,赤霞珠葡萄酚类物质在第一主成分和第二主成分综合得分为82.27分,为酚类物质含量丰富的品种。  相似文献

Wines made from 3 spine grape (Vitis davidii Foex) genotypes-Junzi 1# (JZ 1#), Junzi 2# (JZ 2#), and Liantang (LT)-and Cherokee rose (Rosa laevigata Michx., CR) were evaluated for their phenolics composition and antioxidant activities by several assays, including 2,2'-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS scavenging capacity, cupric ion reducing antioxidant capacity, and metal-chelating capacity). The results showed that CR wine had higher contents of total phenolics, total flavonoids, and oligomeric proanthocyanidins than the 3 spine grape genotype wines and Cabernet Sauvignon (CS) wine. Among the 3 varieties of spine grape wines, JZ 1# had higher contents than the 2 other genotypes. Moreover, the total monomeric anthocyanins in JZ 1# was about 4.5-fold higher than those in CS wine and CR wine. A significance analysis demonstrated that the antioxidant capacity (as measured by the ABTS scavenging capacity and cupric ion reducing antioxidant capacity) of CR wine was significantly higher than that of the control and spine grape wines. With respect to metal-chelating capacity, the CR wine was the strongest amongst all the wine samples tested, followed by JZ 1#. This indicates that CR and JZ 1# wines can potentially be considered as wild fruit wines with abundant phenolic compounds and antioxidant activities. PRACTICAL APPLICATION: Spine grape (Vitis davidii Foex) and Cherokee rose (Rosa laevigata Michx.) are 2 species of important wild plants in South China. However, they have not yet been effectively developed and utilized. Recently, some researchers attempted to convert their juice to wine. We anticipate that this research will provide sufficient experimental evidence for their good antioxidant activity and potential for further development and utilization.  相似文献

Vitis vinifera cv. Cabernet Sauvignon and Vitis rotundifolia cv. Noble wines were made with different skin contact times to investigate the anthocyanin content of fractions isolated from the wines by low pressure column chromatography. The effect of acetaldehyde addition to wine was also investigated. The fractions were analyzed by a modified HPLC procedure using a 3-solvent gradient and a C-18 reverse phase column. Cabernet Sauvignon fractions contained different combinations of anthocyanins; Noble wine fractions contained different ratios of five anthocyanins present in the wines. These differences are hypothesized to influence the long-term stability of the wines.  相似文献

Forty-two wines produced from grapes grown in Idaho were examined in this study. The samples examined were from four monovarietal wines (12 Cabernet Sauvignon, 9 Merlot, 7 Riesling, 14 Chardonnay). Wine samples represented twelve wineries that obtain their fruit from vineyards located within Idaho’s Snake River Valley. Titratable acidity, pH, specific gravity, colour measurements (lightness, chroma, and hue), % haze, total anthocyanins, total phenolics, total tannins, antioxidant capacity, and individual stilbene measurements were performed. The antioxidant capacities (ORAC values) of Idaho wines ranged from 3.1 (Merlot wine) to 87.0 (Cabernet Sauvignon wine) μmol of Trolox/ml (mean = 38.5 μmol of Trolox/ml). Mean ORAC values of Merlot wines (mean = 27.6 μmol of Trolox/ml) were lower than the other three styles (mean for Cabernet Sauvignon wines = 41.0 μmol of Trolox/ml, mean for Chardonnay wines = 42.8 μmol of Trolox/ml, and mean for Riesling wines = 39.4 μmol of Trolox/ml). Free stilbene levels (four different stilbenes) were examined by direct-HPLC/DAD/ESI-MS/MS method. Piceid and resveratrol (both trans- and cis-) were found in the samples. Stilbene levels ranged from 0.97 (Riesling wine) to 12.88 (Cabernet Sauvignon wine) mg (expressed as trans-resveratrol)/l. This is the first paper to report the current chemical composition of Idaho wines.  相似文献

The influence of the application of a pulsed electric field (PEF) treatment (5 kV/cm, 2.1 kJ/kg) to the grape pomace on different quality parameters and anthocyanins content of Cabernet Sauvignon wines obtained after different maceration times (48, 72, 96 and 248 h) has been investigated.Regardless of the maceration time, the application of a PEF treatment led to freshly fermented model wines that were richer in colour intensity, total polyphenols index (TPI), tannins and showed better visual characteristics. It was observed that the concentration of anthocyanins compounds in the freshly fermented model wines obtained from PEF-treated pomace was higher, as compared to the control wine. The HPLC anthocyanic profiles of freshly fermented model wines obtained from PEF-treated pomace were similar to those of control wine indicating that the permeabilization of the cell membranes of pomace did not produce a selective effect on any anthocyanin. Malvidin-3-glucoside and Malvidin-3-glucoside acetate were the predominant anthocyanins in both control and PEF wine.According to the results obtained in this investigation the application of a PEF treatment permitted to reduce the maceration time during vinification of Cabernet Sauvignon grapes from 268 to 72 h.  相似文献
