Three flat pasta types dried by low temperature (LT), high temperature (HT), and very high temperature (VHT) drying profiles were analyzed. The starch properties of these pastas, cooked at different temperatures for different times, were investigated. The starch properties were examined by observing starch swelling with a scanning electron microscope (SEM), identifying the phase difference with an ultrasonic device, and determining the water absorption and gelatinization rate with the BAP method and X-ray diffraction. The SEM images revealed expanded and gelatinized starch granules during cooking pasta and increased with drying temperature. The water absorption of pasta increased with cooking temperatures and times, and the trend was LT > HT > VHT-dried pasta. The gelatinization rate of pasta increased with cooking time and temperature. The X-ray diffractograms of pasta cooked less than 12 min showed typical A-type X-ray diffraction patterns, while in pasta cooked for 12 min, V-type diffraction was observed. Uncooked pasta showed an enhanced peak at about 2θ?=?20°, which indicated the generation of high levels of amylose–lipid complexes. The present study found that these changes occurred during drying and may affect pasta starch characteristics.  相似文献

α‐Galactoside‐free lupin flour has been used to supplement durum wheat semolina flour in order to increase the nutritive value of pasta products. Supplemented pasta products had a shorter cooking time, higher cooking water absorption, cooking loss and protein loss in water than control pasta prepared with only semolina. Sensory evaluation of cooked pastas showed that products supplemented with 80 g kg?1 of α‐galactoside‐free Lupinus angustifolius var. Emir flour or with 100 g kg?1 of α‐galactoside‐free Lupinus angustifolius var. Troll flour showed the same acceptability by panellists as the semolina pasta. These levels of supplementation were selected for further studies. The cooked α‐galactoside‐free lupin/semolina pastas showed higher amounts of protein, dietary fibre, calcium, phosphorus, magnesium, zinc and antioxidant capacity than control pasta and a reasonable level of vitamin B1, vitamin B2 and vitamin E. Biological assessment of cooked pastas indicated that the true protein digestibility did not change after the fortification of semolina but protein efficiency ratio increased sharply in the pasta supplemented with α‐galactoside‐free lupin flours (2.07 and 1.92 for Emir and Troll lupin varieties, respectively) in comparison with the control pasta (1.11). It is concluded that the α‐galactoside‐free lupin flours are an adequate ingredient to improve the nutritional quality of pasta products without adding flatulent oligosaccharides. Two commercial rice flours (GTIndica and GTJaponica, with amylose contents of 306.8 and 185.2 g kg?1 respectively) and their blended flours were used to make rice pasta. The effects of two emulsifiers (distilled glyceryl monostearate (GMS) and a commercial emulsifier (KM3000)) on the pasting and thermal properties of dried rice pasta were investigated using a Rapid Visco Analyser (RVA) and a differential scanning calorimeter (DSC). The rice pasta made from high‐amylose rice flour had better extrusion properties, better texture, whiter colour, less cooking loss and better eating quality than that made from low‐amylose rice flour. The maximum amount of low‐amylose rice flour that could be blended in for making an acceptable quality of rice pasta was 500 g kg?1. A soft texture, low adhesiveness and low gumminess of cooked rice pasta were obtained by adding 10 g kg?1 GMS. SEM investigations showed that use of an emulsifier restricted the swelling of starch granules, especially for the pasta made from high‐amylose rice flour. © 2001 Society of Chemical Industry  相似文献

KINETICS OF OSMOTIC DEHYDRATION OF MANGO   总被引:1,自引:0,他引:1  
The effects of sucrose syrup concentration (40–70 g/100‐g solution) and temperature (40–90C) on water loss and sucrose uptake by mango mesocarp slices during osmotic dehydration were investigated. The effective diffusivities for mass transfer were determined using the slope method based on the Fickian diffusion model. Water loss and sucrose uptake were proportional to the square root of osmotic contact time, implying that the process is Fickian. The specific mass transfer rate constants and effective diffusivities (De), derived from Fick's unsteady‐state diffusion equation, increased with temperature and sucrose syrup concentration. De values for water loss and sucrose uptake, which ranged between 2.59 × 10?6 to 5.12 × 10?6 m2/h and 1.70 × 10?6 to 4.14 × 10?6 m2/h, respectively, were related to absolute temperature using an Arrhenius‐type relationship. The activation energies, which fell in the range previously reported for diffusion‐controlled processes, increased with sucrose syrup concentration and varied from 9.74 to15.16 KJ/mol.  相似文献

The incorporation of fibres, whether insoluble or soluble, in durum wheat pasta negatively impacts desirable end‐use properties, especially if incorporated in significant amounts. Fibres can disrupt the starch–protein matrix of the dough during pasta preparation and can also often swell more readily with water than starch, competing with the starch for water during dough development. Similar degrees of substitution with different fibres gave markedly different impacts on firmness, stickiness, cooking loss and sensory attributes, suggesting that results obtained for one fibre cannot readily be generalized to other fibres. The in vitro starch digestibility of the pastas was significantly reduced when resistant starch, β‐glucan‐enriched flour, carboxymethyl cellulose or guar gum was incorporated but increased when pollard or inulin was added. In many instances, different sources of the same fibre gave dramatically different impacts on the properties of cooked durum wheat pasta. © 2014 Society of Chemical Industry  相似文献

We used a Fick's unsteady state diffusion equation to estimate the time required for a single spherical shaped bacterium (assuming Enterococcus faecium as the target microorganism) in low‐moisture foods to equilibrate with the environment. We generated water sorption isotherms of freeze‐dried E. faecium. The water activity of bacterial cells at given water content increased considerably as temperature increased from 20 to 80 °C, as observed in the sorption isotherms of bacterial cells. When the water vapor diffusion coefficient was assumed as between 10?12 and 10?10 m2/s for bacterial cells, the predicted equilibration times (teq) ranged from 8.24×10?4 to 8.24×10?2 s. Considering a cell membrane barrier with a lower water diffusion coefficient (10?15 m2/s) around the bacterial cell with a water diffusion coefficient of 10?12 m2/s, the teq predicted using COMSOL Multiphysics program was 3.8×10?1 s. This result suggests that a single bacterium equilibrates rapidly (within seconds) with change in environmental humidity and temperature.  相似文献

Processing techniques like cooking and freezing exhibited significant (P < 0.001) reduction in the bacterial load of cuttlefish, Sepia pharaonis, and marine crab, Portunus pelagicus. Raw cuttle fish had 2.4 × 107 cfu/g which on cooking reduced to 9.7 × 106 cfu/g. Freezing reduced the bacterial load further as cooked frozen product had only 9.9 × 104 cfu/g. Similarly, raw crab had 2.6 × 107 cfu/g which on cooking reduced to 6.5 × 106 cfu/g. A further reduction in bacterial load was seen after freezing as cooked frozen crab exhibited only 7.3 × 104 cfu/g. Escherichia coli and Staphylococcus aureus were present in the limit of acceptability for fish and fish products. Salmonella typhimurium and Vibrio cholerae were absent even in raw stage. Biochemical analysis performed on stored frozen products of cuttle fish and crab exhibited a significant (P 0.05) increase in bacterial spoilage and rancidity with increasing days of storage. Total volatile base nitrogen, trimethylamine, thiobarbituric acid and free fatty acid contents in frozen products of cuttle fish and crab increased significantly with 120 days of frozen storage.  相似文献

Cowpea leaves form an important part of the diet for many Kenyans, and they are normally consumed after a lengthy cooking process leading to the inactivation of peroxidase (POD) that could be used as an indicator for the potential shelf life of the vegetables. However, color degradation can simultaneously occur, leading to poor consumer acceptance of the product. The kinetics of POD in situ thermal (for thermal treatments in the range of 75 to 100 °C/120 min) inactivation showed a biphasic first‐order model, with Arrhenius temperature dependence of the rate constant. The kinetic parameters using a reference temperature (Tref) of 80 °C were determined for both the heat‐labile phase (kref = 11.52 ± 0.95 × 10?2 min?1 and Ea of 109.67 ± 6.20 kJ/mol) and the heat‐stable isoenzyme fraction (kref = 0.29 ± 0.07 × 10?2 min?1 and Ea of 256.93 ± 15.27 kJ/mol). Color degradation (L*, a*, and b* value) during thermal treatment was investigated, in particular as the “a*” value (the value of green color). Thermal degradation (thermal treatments between 55 and 80 °C per 90 min) of the green color of the leaves followed a fractional conversion model and the temperature dependence of the inactivation rate constant can be described using the Arrhenius law. The kinetic parameters using a reference temperature (TrefC = 70 °C) were determined as krefC = 13.53 ± 0.01 × 10?2 min?1 and EaC = 88.78 ± 3.21 kJ/mol. The results indicate that severe inactivation of POD (as an indicator for improved shelf life of the cooked vegetables) is accompanied by severe color degradation and that conventional cooking methods (typically 10 min/100 °C) lead to a high residual POD activity suggesting a limited shelf life of the cooked vegetables.  相似文献

The effects of adding egg albumen or whey proteins to pasta made from parboiled rice flour (PR) were investigated. Pasta quality was evaluated in terms of color, furosine content, and cooking properties (water absorption, cooking loss, and consistency at the optimal cooking time). The surface heterogeneity of the cooked and uncooked materials was studied, and some starch properties (pasting properties and starch susceptibility to α-amylase hydrolysis) were assessed, along with the features of the protein network as determined by conditional solubility studies and with ultrastructural features of the cooked products. Egg albumen improved pasta appearance and gave a product with low cooking loss, firmer, and nutritionally more valuable than the other ones. In albumen-enriched pasta, small starch granules appear homogeneously surrounded by a protein network. In the uncooked product, the protein network is stabilized mostly by hydrophobic interactions, but additional disulfide interprotein bonds form upon cooking. Thus, addition of 15 % liquid albumen to PR results in significant improvement of the textural and structural features of rice-based gluten-free pasta.  相似文献

Resistant starch (RS) included in pasta can have auspicious health benefits and functional properties. The resistance of starch, however, can be greatly influenced by the applied food preparation process. The aim of the present study was to investigate the effects of two different resistant starches on the digestibility of pasta and to predict the impact of the conventional pasta processing (extrusion under standard conditions, 120 bars, 40°C; drying in an air-drying room at 35–40°C and cooking until the optimum cooking time) on the quality of different resistant starch included in products by using an in vitro enzymatic hydrolysis method. Results showed that the applied, conventional pasta extrusion step had only a small effect on the liberated glucose level and did not influence the RS content significantly. The cooking in contrast caused an increased digestibility and the lost of resistance of all pasta products. The digestibility was significantly lower (p < 0.05) in the case of raw and dried samples compared to the cooked pastas. It can be concluded that the resistant starches used in the samples are heat sensitive and their properties change radically during the pasta preparation, mainly during cooking.  相似文献

Shear Induced Starch Conversion During Extrusion   总被引:1,自引:0,他引:1  
Using a capillary rheometer and a singlerscrew extruder, waxy corn starch was extruded at a relatively low temperature range. Notable conversions induced by shear energy were obtained in very short residence times (from several sec to 1 min). Conversions up to > 70% were also achieved. Kinetic studies showed that conversion caused by shear energy was more efficient than that by thermal energy. The shear rate constant, k, was an exponential function of shear stress and a linear function of shear rate. The minimum shear stress required to cause starch conversion was from 104 to 106 N/m2 for 100°C to 21°C. In such “shear” experiments, the maximum temperature rise due to viscous thermal dissipation, measured experimentally and calculated theoretically, was too low to cause any significant thermal cooking of starch. The shear converted starch extrudates were unpuffed and had shapes of traditional pasta.  相似文献

BACKGROUND: Changes in the properties of starch during postharvest hardening of trifoliate yam (Dioscorea dumetorum) tubers need to be investigated. In this work the starch gelatinisation kinetics of D. dumetorum cv. Yellow stored under prevailing tropical ambient conditions (0.98–2.32 kg vapour per 100 m3 airflow) for 0, 2, 7, 14, 21 and 28 days was studied using a 3 × 5 factorial experiment with three cooking temperature (75, 85 and 95 °C) and five cooking times (0, 5, 10, 20 and 40 min). Samples were also evaluated for starch properties and gelatinisation temperature. RESULTS: Storage of D. dumetorum tubers caused starch damage. However, the starch gelatinisation temperature was between 70 and 75 °C irrespective of the tuber storage duration. The starch gelatinisation reaction followed first‐order kinetics defined by the relationship ln(1 ? α) = ? kGt. The gelatinisation rate was significantly influenced (P≤0.05) by cooking temperature and increased with tuber storage duration. The activation energy also increased with tuber storage duration. CONCLUSION: Although the gelatinisation temperature of D. dumetorum starch was not influenced by tuber storage, the starch gelatinisation process was affected by tuber storage duration, since tuber storage involved a greater need of energy for starch gelatinisation, which may be an effect of the postharvest hardening phenomenon. In this research, the effects of different cooking processes (grilling, oven, and microwave cooking) on microbial flora and chemical composition of the raw and cooked meatballs as consumed in Tekirdaǧ were investigated. Microbial flora of the raw meatballs was as follows: total bacteria, 6.02×106 cfu/g; psychrophilic bacteria, 1.3×105 cfu/g; yeast and mould, 2.4×105 cfu/g; coliforms, 1.1×105 cfu/g; Escherichia coli, 1.0×102 cfu/g; total staphylococcae, 3.3×102 cfu/g; Staphylococcus aureus, 85 cfu/g. While Salmonella was found in only one sample, none of the samples contained Clostridium perfringens. The cooking processes clearly decreased the microbial flora (2–3 log cycles in grilling (71°C) and oven‐cooked (79°C( 3–4 log cycles in microwave (97°C) heating) of the meatballs. However, because of the crust formation and high moisture losses from the meatball surface in microwave heating, some sensorial defects were observed in the final product. Also, fat and moisture losses were higher in microwave cooking compared to the other cooking processes. In conclusion, it is advised to use slightly higher temperatures than used in the grilling or conventinal cooking procedures to increase microbial quality of the meatballs studied in this research.  相似文献

The protein and mineral salts of rice were found to have increased while water-soluble substances were found to have decreased as a result of parboiling. Parboiling resulted in marked changes in the amylograph properties of rice paste, as well as increasing its resistance to alkali dispersion. The grains were shorter but wider, with lower water absorption and swelling capacity during cooking than those of raw-milled rice.The differences in ultrastructure between dry and cooked raw-milled and parboiled rice were studied with a scanning electron microscope. Complete deformation of the starch granules was evident in the raw-milled rice after cooking for 9 × 102 and 12 × 102 s, while those of parboiled rice showed great resistance to deformation. Variations in the over-cooked grains of both raw-milled and parboiled rice were studied.  相似文献

Precooked biscuits (7 cm diameter × 2 cm thickness), preserved by freezing, were evaluated in a regional bakery. Heat and mass transfer during these processes and through the final baking were studied. Precooking was conducted at 180C for 18 min; convection and conduction were the predominant phenomena for heat transfer, with an α = 1.71 × 10?7 m2/s. Diffusion mechanism adequately modeled (r2 = 0.94, PEM < 2.5%) the moisture loss during cooking stage, with a D = 1.04 × 10?6 m2/s. The freezing point obtained inside a tunnel freezer (forced air at ? 40C), was ? 6.73C, consistent with the predicted value. Volume changes were minimal during frozen storage because of high fat content and few variations in the freezer temperature. Final baking in conventional gas and microwave ovens were compared. Higher moisture loss and minimal color change occurred in the microwave baking. Instrumental texture of both final treatments were significantly different, in contrary to sensory evaluation (α = 0.05). The methods produced a good choice for product commercialization after baking.  相似文献

A procedure was developed to predict moisture loss from cooling data of potato packed in gunny bags and stacked on wooden platforms in commercial cold stores. To predict the moisture loss, mass transfer coefficients kcand kmwere estimated during the storage period, which were found to decrease with time. The calculated time average kcand kmvalues were 1.83 × 10?4 m/s and 2.31 × 10?10 kg/s·m2·Pa during the transient cooling period and 1.59 × 10?4 m/s and 2.27 × 10?10 kg/s·m2·Pa for the rest of the storage period, respectively. The estimated moisture losses were 4.8, 4.74 and 4.78%, at the center of three different stacks, for a storage period of 8 months. The corresponding experimentally measured weight losses at the center of the same stacks were 5.2, 5.1 and 5.26% with a variation of 11, 7.5 and 10.2%, respectively. Therefore, the procedure adopted in this study may be used to assess the moisture loss from potatoes under the different storage conditions. The effect of relative humidity (RH) and potato temperature on moisture loss was also predicted using the developed procedure. Decrease in RH of the storage air increased the moisture loss. The potatoes stored below 85% RH incurred more than 7% water loss. Therefore, 88–90% RH in the cold store may be used to limit the maximum moisture loss within the permissible limit of 5% even after 8 months of storage. It was also found that increasing the potato temperature exponentially increased the rate of moisture loss.  相似文献

Finely-ground malt was held in suspension in water for various times at given temperatures and measurements were then made of the susceptibility of starch to enzymic hydrolysis. The results were used to determine first-order rate constants for the process of conversion of starch to the susceptible form. The variation of rate constant with temperature was satisfactorily described by the Arrhenius relationship with an activation energy of 8·06 × 104 cal/mole and a frequency factor of 6·73 × 1053 min?1. The variation of the extent of conversion with temperature was adequately described by a cumulative normal relationship with a mean of 49·8°C and a standard deviation of 5·79°C.  相似文献

Resistant starch (RS) is that fraction of starch, which escapes enzymic hydrolysis in the small intestine and passes in the colon. Effect of storage time (12 and 24 h) and temperature (4 °C and 25 °C) was studied on RS content of the pressure‐cooked cereal and legume grains/seeds and their flours. RS content was observed to increase in the stored cereals and legumes, with more enhanced increase in the flour samples stored at refrigeration temperature for longer duration (41.4% in wheat flour and 85.4% in pea flour). Significant positive correlations were observed between RS content (4 °C, 24 h) and amylose (y = 0.388 × –5.948, r = 0.840, P ≤ 0.05, n = 7) as well as between % increase in insoluble dietary fibre content (4 °0C, 24 h) and amylose (y = 2.257 × –27.724, r = 0.971, P ≤ 0.05, n = 7). Reduced in vitro starch digestibility of the cooked/stored samples (4 °C, 24 h) was observed when compared to freshly cooked samples.  相似文献

Acrylamide (AA) contents of commercial market‐purchased foods and of traditional home‐cooked Korean foods were investigated. The effect of cooking method on AA amount in potatoes was also studied. AA contents of roasted barley and corn ranged from 116 to 449 µg kg?1 and of chips ranged from 12 to 3241 µg kg?1, representing a very high variation in AA contents among tested samples. Lower levels of AA were found in wheat flour chips compared to potato chips. AA contents of ramen noodles were below 37 µg kg?1, whether they contained potato starch or not. The AA contents of Korean home‐cooked oil fried foods increased in the following order: yakwa < whole deep‐fried sea tangle < ground and deep‐fried lotus root < ground and pan‐fried lotus root < French fries < ground and pan‐fried potato. Lotus root and garlic also had the potential to produce AA during cooking. Pre‐treatment such as grinding, boiling, freezing and thawing increased the AA formation in oil‐fried potato. Temperature was more influential than time on AA formation during deep‐oil frying. Removing water‐soluble fractions reduced AA content of cooked potatoes.
