 Four Spanish raspberry (Rubus idaeus L.) cultivars, Autumn Bliss, Heritage, Rubi, and Ceva, were studied in order to determine, qualitatively and quantitatively, both anthocyanins and vitamin C composition, owing to their significance as dietary compounds with antioxidant activity and also to the relation with color quality. Raspberry anthocyanin composition, determined by HPLC and GC-MS, was characteristic to each cultivar. The higher anthocyanin content expressed as cyanidin-3-glucoside was found in the late cultivars, Rubi (96.08 mg/100 g f.w.) and Ceva (122.88 mg/100 g f.w.). Three cultivars showed cyanidin-3-sophoroside (63.86–21.91 mg/100 g f.w.) and cyanidin-3-glucoside (25.12–14.00 mg/100 g f.w.) as the major pigments, while Autumn Bliss had a similar relative amount of cyanidin derivatives, cyanidin-3-rutinoside being the pigment in major concentration (10.53 mg/100 g f.w.). The vitamin C contents were determined by HPLC. The Rubi cultivar showed the highest amount of vitamin C (31.14 mg/100 g f.w.). The organic acids were determined by HPLC as fruit constituents related to color quality. Citric acid was the main non-volatile organic acid (90%) in all raspberry cultivars and the Rubi cultivar showed the highest total non-volatile organic acids content (2003 mg/100 g f.w.). ABSTRACT: Raspberry (Aksu Kırmızısı, Rubin, Newburgh, Hollanda Boduru, Heritage) and blackberry (Bursa 1, Bursa 2, Jumbo, Chester) cultivars were assayed for antioxidant activity (determined as 2,2-azino-di-[3-ethylbenzothialozine-sulphonic acid][ABTS], 2,2-diphenyl-1-picrylhydrazyl radical [DPPH], and cupric ion reducing antioxidant capacity [CUPRAC]), total phenol, total flavonoid, and total anthocyanin contents. In addition, 10 anthocyanins and anthocyanidins were determined in raspberry and blackberry by liquid chromatography-mass spectrometry (LC-MS/MS). Raspberry and blackberry had the highest ABTS, DPPH, CUPRAC, total phenol, and total flavonoid contents in methanol extracts, whereas total anthocyanin contents were the highest in water extracts. The antioxidant activity of the raspberry and blackberry was directly related to the total amount of phenolic compounds detected in the raspberry and blackberry. All antioxidant activity values were highly correlated with anthocyanin content in blackberry (0.93 ≤ r ≤ 0.99, P = 0.05). On the other hand, high correlation between total flavonoid content and antioxidant activity was recorded in water extract of blackberry (0.91 ≤ r ≤ 0.93, P = 0.05). ABTS value was highly correlated with total flavonoid content in methanol extract (r = 0.90), whereas total flavonoid content was relatively less correlated with DPPH (r = 0.85) and CUPRAC (r = 0.89).  相似文献

This study describes the first application of a new procedure for acid hydrolysis of Rubus ellagitannins in methanol, which allows quantification of all the major reaction products (ellagic acid, methyl-sanguisorboate, methyl gallate and an unknown ellagic acid derivative) and estimation of the mean degree of polymerization (mDP) of Rubus ellagitannins. The ellagitannins of 21 raspberry and 15 blackberry cultivars produced in Trentino, Italy during 2005 were extracted and characterised. The total content of ellagitannins was shown to vary by a factor of 2 among raspberry cultivars and by a factor of 4 among blackberry cultivars.  相似文献

Anthocyanin and colour stability of red raspberry jams made from two different varieties (‘Zeva’ and ‘Heritage’) were analysed during 6 months, stored at three temperatures (20, 30 and 37°C). Also the influence of freezing the fruit, previously to jam manufacture, was evaluated. Different anthocyanin composition was detected for both cultivars and while ‘Zeva’ fruit had a higher total anthocyanin content, Heritage variety produced jams with a higher redness hue. The development of browning was directly related to storage temperature but not to thawing or the variety of fruit used. © 1998 Society of Chemical Industry.  相似文献

为探究红树莓叶片生长代谢过程中酚类物质含量与抗氧化酶活性的变化规律,以‘海尔特兹’和‘秋福’红树莓叶片为材料,对其总黄酮、7种酚类物质和3种抗氧化酶活性的变化规律进行比较分析。结果表明:从5月到12月,两品种红树莓上、中、下部叶片的鞣花酸含量、过氧化物酶(peroxidase,POD)活性在生长代谢过程中均呈双峰曲线,水杨酸含量在生长代谢过程中均呈下降趋势,阿魏酸、儿茶素、表儿茶素、芦丁、总黄酮含量在生长代谢过程中均呈单峰曲线,超氧化物歧化酶(superoxide dismutase,SOD)活性一直处于较高水平,过氧化氢酶(catalase,CAT)活性呈先下降再上升又下降的变化趋势;两品种红树莓上部叶片的咖啡酸含量均呈下降趋势,中部和下部叶片均呈单峰曲线。红树莓叶片中的酚类物质含量和抗氧化酶活性因生长代谢过程而异。其中,水杨酸、阿魏酸、鞣花酸、表儿茶素含量最高的时期依次是‘秋福’的5月份上部叶片、6月份上部叶片、7月份中部叶片、7月份上部叶片,依次为59.33 mg/100 g、158.18 mg/100 g、250.84 mg/g、350.04 mg/100 g;芦丁、咖啡酸、儿...  相似文献

Seven primocane fall-bearing raspberry (Rubus idaeus L.) cultivars, Nova (red), Dinkum (red), Heritage (red), Autumn Britten (red), Josephine, Anne (yellow), Fall Gold (yellow) were analysed for potential health promoting properties including their inhibitory effect on starch and fat digestive enzymes, antioxidant activities, and phenolic composition. The tested raspberry extracts showed no detectable inhibition of pancreatic α-amylase and lipase. However, all the extracts exhibited potent inhibition of α-glucosidase with IC50 from 16.8 to 34.2 μg/mL. Four phenolic compounds, ellagic acid, cyanidin-diglucoside, pelargonidin-3-rutinoside, and catechin were identified as the active α-glucosidase inhibitors. The raspberry extracts also possessed significant antioxidant activities with oxygen radical absorbance capacities (ORAC) ranging from 136.7 to 205.2 μmol Trolox equivalents (TE)/g dry weight fruit and DPPH radical scavenging activities from 305 to 351 μmol TE/g. The total phenolic content of raspberry cultivars varied significantly from 40.9 to 98.5 mg of gallic acid equivalents/g dry weight. The anthocyanin content varied widely from 0.1 to 9.5 mg cyanidin 3-glucoside equivalents/g. Nine phenolic acids were quantified in raspberries and their total amounts varied from 157.3 to 713.5 μg/g. The enzyme inhibition and antioxidant properties of raspberry cultivars were not correlated with their total phenolic, anthocyanin, and phenolic acid content. Overall, ‘Dinkum’ and ‘Josephine’ raspberry varieties possess higher total phenolic content, ORAC, DPPH radical scavenging activity, and α-glucosidase inhibitory activity than other five cultivars.  相似文献

采用顶空固相微萃取法结合气相色谱-质谱联用技术与主成分分析,对从东北地区引种到河北省石家庄市和邢台市等地区的7种小浆果进行香气物质的检测与分析,再结合数据从香气层面对引种效果进行分析评价。结果显示,共有150种香气物质被检出,蓝莓、欧李、丰满红树莓、秋福树莓、哈瑞太兹树莓、黑加仑和灯笼果分别检出31、59、47、54、39、48种和41种香气物质。蓝莓以醇类和醛类为主体香气,分别占总香气物质的43.9%和40.9%;欧李果和黑加仑的香气主要以酯类为主,占总香气物质的80.7%和67.6%;丰满红树莓果中的香气物质以醇类和酯类居多,占总香气物质的60.0%和28.6%;秋福树莓和哈瑞太兹树莓的主体香气物质都以醇类为主,含量分别占总香气物质的41.75%和37.37%;灯笼果以酯类和酮类为主体香气,占总香气物质的31.9%和27.3%。通过对香气物质的检测分析,为7种浆果的工业开发与利用提供理论依据。  相似文献

The phenolic compounds in raspberry and blackberry cultivars grown in Turkey were determined by liquid chromatography–mass spectrometry (MS)/MS in fresh, just-frozen, and stored fruits at −22 °C for 6 months period. The major phenolic compounds in water extracted samples were ellagic acid (1,350.36–727.9 mg/kg fresh fruit), ferulic acid (820.78–338.27 mg/kg fresh fruit), caffeic acid (754.85–202.78 mg/kg fresh fruit), p-coumaric acid (361.68–142.63 mg/kg fresh fruit), p-hydroxybenzoic acid (534.20–233.29 mg/kg fresh fruit), and quercetin (46.97–27.31 mg/kg fresh fruit) in raspberry and ellagic acid (1,828.07–1,555.13 mg/kg fresh fruit), ferulic acid (757.69–413.82 mg/kg fresh fruit), caffeic acid (736.85–337.89 mg/kg fresh fruit), p-coumaric acid (877.45–287.15 mg/kg fresh fruit), and quercetin (74.69–56.78 mg/kg fresh fruit) in blackberry. The varietal differences in the phenolic compound contents were larger among the blackberry cultivars (from 1,828.07 to 56.78 mg/kg fresh fruit) than among the raspberry cultivars (1,350.36 to 27.31 mg/kg fresh fruit). A significant decrease was observed in the content of p-hydroxybenzoic acid (from 534.20 to 114.30 mg/kg; Aksu Kırmızısı) and the least decrease was in the content of caffeic acid (from 545.42 to 530.91 mg/kg; Heritage) in raspberry cultivars. On the other hand, ferulic acid (from 475.16 to 113.33 mg/kg) decreased significantly in blackberry (Bursa 2) after storage for 6 months.  相似文献

The aim of this study was to assess the level of some phytochemicals in 19 raspberry cultivars grown in Lithuania. The content of total ellagic acid measured after 20 h acidic hydrolysis of investigated raspberry cultivars, varied from 119.8 (cv. ‘Pokusa’) to 323.5 mg/100 g (cv. ‘Bristol’). The content of total phenolics ranged from 278.6 (cv. ‘Pokusa’) to 714.7 mg/100 g (cv. ‘Bristol’). The total anthocyanins content varied from 2.1 (yellow cv. ‘Beglianka’) to 325.5 mg/100 g (black cv. ‘Bristol’). The radical scavenging capacity of the tested raspberry cultivars highly correlating with their total phenolics and total ellagic acid content (r = 0.90 and 0.92, respectively). The results of this study expand the knowledge about variation in the content of valuable bioactive compounds in raspberries and may help for the selection and validation of the most productive cultivars.  相似文献

The effects of preharvest methyl jasmonate (MJ) application on fruit quality, flavonoid content and antioxidant capacity in black raspberry cv. Jewel (Rubus occidentalis L) and red raspberry cv. Autumn Bliss (Rubus idaeus subsp.) were studied under field condition. Raspberries treated with MJ had higher soluble solids content, total sugars, fructose, glucose, sucrose and lower titratable acids (TAs), malic acid and citric acid than untreated fruit. MJ also significantly enhanced the content of flavonoids and the antioxidant capacities in the fruit. The cv. Jewel had higher soluble solids and lower TAs compared with the cv. Autumn Bliss. On the basis of fresh weight of fruit, ‘Jewel’ also had significantly higher anthocyanin, total phenolic content and antioxidant activity than ‘Autumn Bliss’.  相似文献

以东北地区6 种不同品种的红树莓营养叶片为原料,采用分光光度法测定总酚、总黄酮和原花青素含量;使用3 种方法评价体外抗氧化活性并分析抗氧化活性与总酚、总黄酮和原花青素含量的相关性;采用超高效液相色谱-串联质谱法鉴定多酚类物质。结果表明,6 种红树莓叶片总酚含量高于总黄酮与原花青素含量。欧洲红的总酚与总黄酮含量最高,分别为(5.56±0.06)mg/g和(3.77±0.06)mg/g;哈瑞泰兹的原花青素含量最高为(3.06±0.04)mg/g。3 种抗氧化能力评价方法中,红树莓叶提取物对2,2’-联氮-双-(3-乙基苯并噻唑啉-6-磺酸二铵盐)(2,2’-azino-bis(3-ethylbenzthiazoline-6-sulphonate),ABTS)阳离子自由基清除能力与1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基清除能力具有极显著正相关性,相关系数为0.992;红树莓叶提取物中总酚含量和对ABTS阳离子自由基清除能力与对DPPH自由基清除能力的相关性显著,相关系数分别为0.886和0.891。超高效液相色谱-串联质谱法检出红树莓叶提取物中的13 种多酚类物质,其中有6 种酚酸和7 种类黄酮,主要酚酸为鞣花酸、绿原酸、没食子酸等;主要类黄酮为芦丁、儿茶素、表儿茶素、金丝桃苷等。  相似文献

本研究拟在初步揭示悬钩子属浆果不同发育时期叶片中鞣花酸的变化规律。以黑莓、树莓及杂交类型共21个品种不同时期叶片为试材,用超声辅助溶剂提取法提取叶片中鞣花酸,用紫外分光光度法快速检测鞣花酸含量。在此基础上,选取其中5个品种分析评价了叶片抗氧化能力、抗氧化物质含量及糖类物质含量与鞣花酸含量的关系。结果表明,黑莓、树莓鞣花酸在嫩叶中含量较高,随着叶片的发育和衰老呈下降趋势,以黑莓‘宝森’嫩叶鞣花酸含量最高达39.622 mg/g,以树莓‘哈瑞泰兹’老叶中鞣花酸含量最低为7.649 mg/g。进而分析5个品种叶片的抗氧化能力及抗氧化物质含量,发现其与鞣花酸含量变化趋势相似,而叶片中糖类物质含量与鞣花酸含量变化呈负相关。研究结果为黑莓、树莓叶片中鞣花酸的功能研究及进一步开发利用提供部分基础理论依据。  相似文献

以东北地区6 种红树莓果实加工后的果渣提取物为实验材料,研究其总酚、总黄酮、原花青素、花色苷含量和体外抗氧化活性的差异。结果表明:宝石红果渣提取物中总酚、总黄酮和原花青素含量最高,分别为14.18、3.71、15.28 mg/g;哈瑞太兹果渣提取物中花色苷含量最高,为0.68 mg/g;菲尔杜德和野生果果渣提取物的总还原能力与VC接近;除哈瑞太兹外,其他品种红树莓果渣提取物对(1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基和2,2’-二氮-双(3-乙基苯并噻唑-6-磺酸)二铵盐自由基(2,2’-azino-bis(3-ethylbenzthiazoline-6-sulfonic acid) radical,ABTS+·)的清除率均大于VC。相关性分析结果表明红树莓果渣提取物的总还原能力与总黄酮、原花青素含量的相关性较大;对DPPH自由基的清除率与原花青素、花色苷含量的相关性较大;而对ABTS+·的清除率与总酚和总黄酮含量的相关性较大。在6 个红树莓品种中,菲尔杜德和野生果果渣提取物具有较强的抗氧化活性。  相似文献

ABSTRACT

Content of individual sugars, organic acids, total phenolics (TPH), some important phenolic compounds (kaempferol, myricetin, quercetin, and ellagic acid) and total antioxidant capacity (TAC) in the fruits of strawberry, raspberry and blackberry were studied. A comparison was made between cultivars and wild relatives of each species (Fragaria vesca L., Rubus idaeus L. and Rubus fruticosus L.). The main sugars found were fructose and glucose both in the fruits of wild species and the studied cultivars. Citric acid was determined to be the major organic acid in most of tested berries with the exception of blackberry cultivars, where malic acid was dominant. The content of individual phenolic compounds varied among the wild species, as well as among the studied cultivars. Ellagic acid content was higher in F. vesca, R. idaeus and R. fruticosus (122.5 µg/g FW, 12.71 µg/g FW and 61.7 µg/g FW, respectively) than that obtained in analyzed cultivars. Overall, TPH expressed higher values in the wild strawberry and blackberry species in comparison to the studied cultivars, and consequently, the highest levels of TAC were recorded in F. vesca (5.78 mg asc/g FW), followed by R. fruticosus (4.95 mg asc/g FW).

PRACTICAL APPLICATIONS

In recent years, both wild and cultivated berries have become very attractive for consumers because of potentially beneficial phytochemicals contained in these fruits. Fruit nutritional quality can be described by standard quality parameters (sugars and organic acids), and the analysis of antioxidant capacity influenced by specific related compounds. The importance of flavonoids and other phenolics have been suggested to play a preventive role in the development of cancer and heart disease. A significant positive correlation observed in this study between total phenolics and total antioxidant capacity indicate the need for the use of wild species in the breeding programs of small fruits, especially strawberry and blackberry, in order to increase their nutritive value and the health benefits.  相似文献

A 1‐y storage trial was designed involving different temperatures (8, 21, and 30 °C) to assess the antioxidant properties of a dessert formulated with concentrated juices of grape, blackberry, blackcurrant, raspberry, and cherry. The total antioxidant activity (TAA) of the dessert was measured as the scavenging capacity of the 2,2′‐azino‐di‐[3‐ethylbenzothiazoline‐6‐sulphonate] radical cation (ABTS) and as its iron‐reducing ability (FRAP). Color was spectrophotometrically measured, and vitamin C and phenolics were analyzed by HPLC. The color parameters and the concentrations of different antioxidant compounds were affected by storage conditions, especially in samples stored at 30 °C, although the TAA remained practically invariable during storage.  相似文献

Abstract: The raspberry (Rubus idaeus L.) is an economically important berry crop that contains many phenolic compounds with potential health benefits. In this study, important pomological features, including nutrient content and antioxidant properties, of a domesticated and 3 wild (Yayla, Yavuzlar, and Yedigöl) raspberry fruits were evaluated. Also, the amount of total phenolics and flavonoids in lyophilized aqueous extracts of domesticated and wild ecotypes of raspberry fruits were calculated as gallic acid equivalents (GAEs) and quercetin equivalents (QE). The highest phenolic compounds were found in wild Yayla ecotype (26.66 ± 3.26 GAE/mg extract). Whilst, the highest flavonoids were determined in wild Yedigöl ecotype (6.09 ± 1.21 QA/mg extract). The antioxidant activity of lyophilized aqueous extracts of domesticated and wild ecotypes of raspberry fruits were investigated as trolox equivalents using different in vitro assays including DPPH?, ABTS?+, DMPD?+, and O??2 radical scavenging activities, H2O2 scavenging activity, ferric (Fe3+) and cupric ions (Cu2+) reducing abilities, ferrous ions (Fe2+) chelating activity. In addition, quantitative amounts of caffeic acid, ferulic acid, syringic acid, ellagic acid, quercetin, α‐tocopherol, pyrogallol, p‐hydroxybenzoic acid, vanillin, p‐coumaric acid, gallic acid, and ascorbic acid in lyophilized aqueous extracts of domesticated and wild ecotypes of raspberry fruits were detected by high‐performance liquid chromatography and tandem mass spectrometry (LC‐MS‐MS). The results clearly show that p‐coumaric acid is the main phenolic acid responsible for the antioxidant and radical scavenging activity of lyophilized aqueous extracts of domesticated and wild ecotypes of raspberry fruits.  相似文献

An oxygen radical absorbance capacity (ORAC) method based on pyrogallol red bleaching (ORAC-PGR) was used to evaluate the scavenging activity of berry extracts (blackberry, blueberry, and raspberry). Among berry extracts, only raspberry protected pyrogallol red through a clear induction time, related exclusively to ascorbic acid. The lag time allowed an estimation of the ascorbic acid concentration and its contribution to the total ORAC value, estimating that 66% of the ORAC-PGR value of raspberry is related to ascorbic acid. Also, from the induction time, an ascorbic acid concentration of 36 mg per 100 g of fresh weight was estimated for raspberry samples. The ORAC-PGR procedure could be considered as a fast and specific methodology for an estimation of ascorbic acid concentrations in complex samples.  相似文献

The effect of thermal processing and the berry cultivar has been the subject of several studies, to serve as a basis for the least possible loss of bioactive compounds and antioxidant capacity. In Brazil, there are numerous blackberry cultivars under cultivation, and in this context, the aim of this work was to study how the bioactive compound contents and antioxidant capacity of blackberry jelly were influenced by the cultivars (Guarani, Brazos, Comanche, Tupy, Cherokee, Caingangue and Choctaw). Analysis was made of 7 fresh blackberry cultivars and 7 blackberry jelly formulations. Analysis of antioxidant activity, total phenolics, total anthocyanins and ascorbic acid was performed. It was verified that the contribution of the heat sensitive antioxidants compounds is considerable in all blackberry cultivars, and the degradation of these compounds was significantly different between the different blackberry cultivars. The Brazos and Caingangue cultivars stand out as undergoing the lowest losses in processing, resulting in jellies richer in bioactive compounds and higher antioxidant capacity.  相似文献

ABSTRACT

Seven red raspberry cultivars (Heritage, Canby, Willamette, Hollanda Boduru, Newburgh, Tulameen and Meeker) were evaluated for their total anthocyanin (TACY), total phenolics (TP), trolox equivalent antioxidant capacity (TEAC), fatty acids (FAs) and soluble sugars properties. The TACY, TP and TEAC content ranged from 171.5 to 475.0 µg/g fresh weight (fw), 864.4–1246.9 µg gallic acid equivalent/g fw and 19.4–32.7 µmol TE/g fw, respectively. The highest values of TACY, TP and TEAC content were obtained from the Newburgh cultivar. The FA compositions of raspberry cultivars ranged from 4.97 to 20.31% saturated FAs, 14.65–18.47% monounsaturated FAs (MUFAs) and 62.85–78.68% polyunsaturated FAs (PUFAs). Cultivars Meeker and Newburgh had the highest level of MUFAs, respectively, while the highest level of PUFAs was observed in cultivar Hollanda Boduru. The main soluble sugars of the seven raspberry genotypes were also separated, identified and quantified using high‐performance liquid chromatography with refractive index detection. According to the results, fructose, glucose and sucrose were detected as the main soluble sugars, while xylose and mannose were not detected in the raspberry fruits.

PRACTICAL APPLICATIONS

There have been no previous studies comparing the fruit quality characteristics of raspberry cultivars. Raspberries may be a good alternative crop with a high market value, especially highly profitable due to the long harvesting period, because of the ideal climatic conditions. The objective of this work was to evaluate seven red raspberry cultivars in terms of their total anthocyanin, total phenolic, antioxidant capacity, fatty acids profile and soluble sugar properties.  相似文献

目的 研究树莓叶茶和嫩尖茶的抗氧化活性成分。方法 对树莓叶茶和嫩尖茶的鞣花酸、黄酮和多酚含量进行了测定, 并与绿茶炒青进行了比较, 在此基础上考察了不同种类茶叶对DPPH和ABTS自由基的清除能力。结果 树莓叶茶和嫩尖茶的鞣花酸含量较为丰富, 最高达26.75 mg/g, 是特级炒青6.8倍, 黄酮含量也较绿茶炒青高, 达18~22 mg/g; 树莓嫩尖茶的多酚含量同炒青接近, 均超过180 mg/g, 两者的抗氧化活性均较强, 而树莓叶茶的总多酚含量较低, 仅为绿茶和树莓嫩尖茶36%~39%, 抗氧化活性较弱。相关性分析发现茶叶样品的抗氧化活性与多酚含量呈极显著正相关。结论 树莓叶茶抗氧化性较弱, 而嫩尖茶具有较强的抗氧化活性, 可以加以推广。  相似文献
