燕麦淀粉与常见淀粉的性质对比研究   总被引:2,自引:0,他引:2  
以常见市售淀粉(小麦淀粉、玉米淀粉、土豆淀粉)为参比,研究了燕麦淀粉的透明度、凝沉性、冻融稳定性、溶解度、膨润力和糊化特性.结果表明:燕麦淀粉的透明度、凝沉性、冻融稳定性比小麦淀粉、玉米淀粉和土豆淀粉都要差.燕麦淀粉的溶解度在4种淀粉中是最高的,而膨润力是最低的.燕麦淀粉的糊化特性与小麦淀粉较接近.  相似文献

微波辅助提取马铃薯淀粉及其特性研究   总被引:1,自引:0,他引:1  
微波辅助提取马铃薯淀粉,并对淀粉化学组成及特性进行分析。通过单因素和正交试验研究微波功率、微波时间、马铃薯破碎粒度及料水比对马铃薯淀粉提取率的影响。结果表明:各因素均对马铃薯淀粉提取率具有极显著影响;马铃薯处理量300g,在微波功率500W、微波时间4min、马铃薯破碎粒度0.246mm、料水比1:1(g/mL)时,马铃薯淀粉提取率高达93.85%,比传统方法增加6.31%。马铃薯淀粉蛋白质含量0.13%,直链淀粉含量34.60%,颗粒形状为椭圆形、扇形或圆形,平均粒径23.1μm,峰值黏度1332BU,溶解度、膨润力及透明度降低,凝沉性提高。  相似文献

采用碱法工艺提取脚板薯淀粉,并对其组成、透明度、冻融稳定性、凝沉性、持水性、溶解度、膨胀度、糊化和黏度特性等理化性质进行了分析。结果表明:脚板薯直链淀粉含量为27.05%,淀粉透明度、凝沉性、持水力、热稳定性较好,但冻融稳定性差,不易糊化,脚板薯淀粉的溶解力和膨润力随着温度的升高而增大,与水之间的相互作用较强。  相似文献

通过对板栗粉中占主要成分的淀粉的研究,为后期板栗粉冲剂开发提供试验理论依据,探讨了板栗淀粉糊的溶解度和膨润力、透明度、凝沉性、冻融稳定性以及凝胶强度等性质,并与小麦淀粉、玉米淀粉进行了比较。研究结果表明,从85℃开始,板粟淀粉的溶解度和膨润力都有很明显的上升;板栗淀粉的透明度低于小麦淀粉和玉米淀粉相似;凝沉现象随时间的增加比较明显;板栗淀粉的冻融稳定性和凝胶强度性质较其他两种淀粉出色。  相似文献

对不同种类淀粉的理化性质进行了比较研究,结果表明:淀粉的种类不同,其偏光现象和粒径大小也存在差异;溶解度和膨润力的大小顺序均满足:土豆淀粉红薯淀粉绿豆淀粉玉米淀粉小麦淀粉;土豆淀粉透明度最好;土豆淀粉和红薯淀粉冻融稳定性较差,玉米淀粉冻融稳定性最好;绿豆淀粉凝沉性最好,土豆淀粉凝沉性最差。  相似文献

选取山东农科院提供4种小米(济12、济13、保18、复1)及山东省部分地区种植2种小米(市1、市2)作为研究对象,采用1%SDS法提取小米淀粉,对不同品种小米淀粉直链淀粉含量、可溶直链淀粉含量、凝沉性、膨润性、溶解度等进行研究,并对淀粉理化指标进行相关性分析。结果显示,不同品种小米直链淀粉含量为2.27%~31.98%,其中以市1品种含量最高;复1和市2膨润力和溶解度最大;凝沉性排列次序为:高直链小米淀粉(市1)>中直链小米淀粉(济12、济13、保18)>低直链小米淀粉(复1、市2);淀粉理化指标间进行相关性分析结论为:溶解度、膨润力、凝沉体积皆与直链淀粉含量呈显著负相关。  相似文献

以白心薯、红心薯和紫心薯为原料,测定了3种不同甘薯淀粉糊的透明度、凝沉性、冻融稳定性、表观黏度、膨润度和溶解度等物理特性,并进行差异分析。试验结果表明,白心薯淀粉糊的直链淀粉含量最高,溶解度和膨润度较小,透明度最低,凝沉性最高,冻融稳定性最强,表观黏度最大,热稳定性差;紫心薯淀粉糊的溶解度和膨润度在各温度下都比其它两种甘薯淀粉糊高,属于高膨胀型淀粉,表明紫心薯淀粉与水分子结合能力最强,紫心薯淀粉糊的热稳定性和凝胶强度好,透明度最高,凝沉性最低,表观黏度最小;而红心薯淀粉糊的各种物理特性均居于白心薯和紫心薯两种淀粉糊之间。  相似文献

以绿豆淀粉为原料,冰醋酸为乙酰化剂,制备低取代度的乙酰化绿豆淀粉。对乙酰化绿豆淀粉的膨润力、溶解度、凝沉性、透明度、黏性、质构特性等进行研究。结果表明:与原淀粉相比,经过乙酰化处理的绿豆淀粉透明度、膨润力、溶解度均比原淀粉有所增加,糊化温度降低,谷值黏度、末值黏度有所升高,而峰值黏度、衰减值则降低,绿豆淀粉乙酰化后凝胶特性也有所改善。  相似文献

对绿豆淀粉和芸豆淀粉的颗粒形态及大小、溶解度、膨润力、透光率、糊化特性、老化特性等理化性质差异进行比较。结果表明:芸豆淀粉颗粒多呈椭圆形,粒径大小范围是17.89~28.80μm;绿豆淀粉颗粒呈现圆形或椭圆,形粒径大小范围是10.50~27.59μm;绿豆淀粉的膨润力、溶解度开始上升的温度较芸豆淀粉的早,并且芸豆淀粉的膨润力和溶解度在任意相同温度下都略小于绿豆淀粉;芸豆淀粉比绿豆淀粉的透明度先增加又随后降低,并且绿豆淀粉的透明度变化比较缓慢,而芸豆淀粉的透明度变化非常明显;绿豆淀粉比芸豆淀粉易于糊化;芸豆淀粉老化的速度高于绿豆淀粉。  相似文献

为了提高慈姑淀粉的利用率,采用微波、苹果酸、盐酸、三偏磷酸钠、α-淀粉酶、乙酸酐6种不同改性方法对慈姑淀粉进行改性,并对改性后淀粉的理化特性进行了分析。结果表明:与原淀粉相比,6种处理后的慈姑淀粉均属于A型晶体结构;微波处理后的慈姑淀粉颗粒抱团成为较大颗粒,直链淀粉的相对含量增加,透明度、析水率、溶解度和膨胀度均低于原淀粉;苹果酸处理的慈姑淀粉颗粒破碎明显,透明度及膨润度降低,溶解度和直链淀粉相对含量升高;盐酸处理的慈姑淀粉颗粒出现凹坑和空洞,直链淀粉相对含量增加,凝沉性、析水率及糊化峰值温度提高,淀粉中有基团—Cl接入;三偏磷酸钠处理的慈姑淀粉颗粒出现裂纹,透明度、溶解度及膨润度降低,其糊化特性温度和焓值升高,羟基发生缔合明显;α-淀粉酶处理的慈姑淀粉颗粒表面粗糙,出现大量的凹陷,凝沉性和透明度升高,直链淀粉的相对含量降低,1 047/1 022的比值比原淀粉大,其结构更加短程有序;乙酸酐处理的慈姑淀粉颗粒表面部分出现孔洞,晶型结构没有发生改变,直链淀粉相对含量、溶解度和透明度升高,膨润度降低。综上,不同的处理方法对慈姑淀粉的理化性质影响不同,根据应用需求,可选择对应特性的改性慈姑淀...  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

An internet website (http://cpf.jrc.it/smt/) has been produced as a means of dissemination of methods of analysis and supporting spectroscopic information on monomers and additives used for food contact materials (principally packaging). The site which is aimed primarily at assisting food control laboratories in the European Union contains analytical information on monomers, starting substances and additives used in the manufacture of plastics materials. A searchable index is provided giving PM and CAS numbers for each of 255 substances. For each substance a data sheet gives regulatory information, chemical structures, physico-chemical information and background information on the use of the substance in particular plastics, and the food packaging applications. For monomers and starting substances (155 compounds) the infra-red and mass spectra are provided, and for additives (100 compounds); additionally proton NMR are available for about 50% of the entries. Where analytical methods have been developed for determining these substances as residual amounts in plastics or as trace amounts in food simulants these methods are also on the website. All information is provided in portable document file (PDF) format which means that high quality copies can be readily printed, using freely available Adobe Acrobat Reader software. The website will in future be maintained and up-dated by the European Commission's Joint Research Centre (JRC) as new substances are authorized for use by the European Commission (DG-ENTR formerly DGIII). Where analytical laboratories (food control or other) require reference substances these can be obtained free-ofcharge from a reference collection housed at the JRC and maintained in conjunction with this website compendium.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
