The effects of UV radiation treatment on film-forming solutions adjusted to two alkaline pH values (9 or 11) on the properties (water vapour permeability, solubility, mechanical properties, colour and microstructure) of whey protein concentrate films, and on some structural characteristics of proteins (free sulphydryl groups, degree of aggregation, denaturation and secondary structure) were evaluated. UV radiation increased protein aggregation at both pH values. Ultraviolet treatment of pH 9 solutions increased free sulphydryl groups and produced films with higher solubility, tensile strength, elastic modulus, and puncture properties and lower elongation at break; UV radiation at pH 11 decreased free sulphydryl groups and films showed higher solubility and elastic modulus and lower puncture deformation and elongation at break than untreated films. The treatment also affected film colour differently depending on the pH. In conclusion, ultraviolet treatment modifies the properties of the films in different ways depending on the pH of the solutions. 相似文献

White surface film that forms on cut surfaces of country-style ham was identified as crystalline L-tyrosine. Free L-tyrosine averaged 287.3 μmoles/g (5.2% by weight) in the film and 6.1 μmoles/g in ham tissue from which film had been removed. It is concluded that the film forms because the concentration of free L-tyrosine and certain other free amino acids in ham is greater than solubility levels; therefore, crystals form on the cut surface. The absence of surface film on knuckle muscles and film formation on other muscles of the same slice was attributed to higher NaCl (P < 0.05) of the former which decreased catheptic activity. 相似文献

研究开发防水透湿聚酯(PET)织物,利用磁控溅射法在PET薄膜及织物上制备碳氟高分子膜,利用扫描电子显微镜(SEM)、X射线衍射(XRD)、光电子能谱(XPS)对PET基底上碳氟膜的纳米结构及均匀性进行研究。SEM研究表明,一定条件下制备的碳氟膜表现出一定的有序性,呈现一定的微观结构均匀性,具有网络和棒状纳米自组装的特征;在一定条件下得到了开发防水透湿织物所需的微观网络结构。XRD研究表明碳氟膜是部分结晶的。XPS研究表明碳氟膜的氟碳面积比随着压力的增加而增加。 相似文献

用聚偏二氟乙烯(PVDF)薄膜制成适应大幅度形变的柔性传感器。设计了前置电路,选出与该电路相适合的反馈电阻和电容,测试PVDF薄膜传感器的幅频响应特性。将PVDF薄膜传感器应用在手指关节上,记录手指关节的动作,实验证明PVDF薄膜可制成检测大幅度形变的柔性传感器。 相似文献

The growth conditions of La0.7Ca0.3MnO3(LCMO) epitaxial thin film are investigated.The results indicate that the deposition temperature plays a crucial role on the growth mode of LCMO thin film.There is an optimal deposition temperature,To,for the epitaxial growth of LCMO thin film.Just only at the To,the real epitaxial LCMO thin film can be obtained.When the deposition temperature deviates from the To,the thin film tends to be polycrystalline,although it orientes growth along a certain direction(a or c axis).Moreover,the experimental results show that just only for the epitaxial thin film the ferromagnetic-paramagnetic transition temperature(i.e.the Courier temperature Tc) equals to the metal-semiconductor transition temperature(Tp).The ferromagnetic state shows metallicity and the paramagnetic state exhibits semiconducting character. 相似文献

Study of the White Film Developed on the Cut Surface of Vacuum-packed Dry-cured Ham Slices 总被引:2,自引:0,他引:2
Scanning electron microscopy of the white film developed on the cut surface of some vacuum-packed dry-cured ham slices showed a fibrous structure composed of protein materials. Gradient SDS-PAGE revealed the main components in the film were proteins with molecular weight in the range 26000–87000, but especially 37000, 41000, 56000, and 65000. Free amino acids were also in the film in low proportions (250 μg total free amino acids per mg of protein). The main amino acids were proline methionine, isoleucine, leucine, phenylalanine, histidine and tyrosine. 11.7% of the total free amino acids was tyrosine, thus indicating its minor role in formation of white film. 相似文献
