Small Granule Starches and Hydrophilic Polymers as Components for Novel Biodegradable Two-Phase Compounds for Special Applications Part 1: Separation and Refinement Techniques for Small Granule Starches from Amaranth and Quinoa A small technical scale process for the separation and special refinement of small granule starches from amaranth and quinoa seed was developed using basic starch technology and machinery equipment as well as a neutral extraction process with xylanases and other enzymes. By using aqueous alkaline media for starch extraction, instead of water, the native starch structure was irreversibly changed, as indicated by Brabender and RVA peak viscosities as well as damaged starch measurements. The functional properties of these smallest native starch granules (0.5–3.0 μm) were investigated for novel applications in starch-compound products. Extrusion compounding processes for the formation of two-phase compounds from small granule starches and synthetic thermoplastics with polar structure units request native starch structures with high thermal stability.  相似文献

Lactic acid bacteria (LAB) are applied in the food industry as fermentation agents for a variety of products. Cheese whey (CW) and second cheese whey (SCW) are the two main by-products of cheese production, and can be reused for biotechnological purposes. In this context, this review aims to summarise literature on the use of CW and SCW as culture media for the growth of LAB, as cryoprotectants for freeze-drying and as encapsulating agents for the spray-drying of these microorganisms. CW contains several nutrients that are reported to enhance the growth of LAB. As for SCW, research shows that it has potential to be applied as culture medium, although bacterial growth remains at least one or two log orders lower than CW. Regarding freeze-drying and spray-drying, reports indicate that whey-based cryoprotectants and CW as encapsulating agent offer significant protection from the stressful conditions employed in these processes.  相似文献

While charitable giving stagnates, Fair Trade and organic labelling as well as Cause-related Marketing campaigns are on the rise in Germany. The question as to whether the efficiency of the different systems is of relevance for consumers has received little attention in the literature so far. A latent class model for discrete choice analysis reveals five consumer segments with well distinguished preferences and willingness to pay measures for the modes of ethical consumption as well as for different donation amounts. For 27% of the 484 respondents ethical consumption occurs at the expense of other forms of ethical behaviour such as charitable giving.  相似文献

Hydration ratio of dry peas increased as soak time increased. Drained weights for the cv. Alaska decreased as soak time was increased, but drained weight for the cv. Garfield remained constant. Shear values increased for‘Alaska’, but decreased for‘Garfield’as soak time was extended. Moisture content decreased for‘Alaska’, but increased for‘Garfield’as soak time was extended. Objective color remained constant regardless of soak time. Sensory integrity (wholeness) was improved as soak time was extended for‘Alaska’peas. The addition of 0.5% CaCl2 solution to canned peas reduced hydration ratios, drained weights, and color, and increased shear values and sensory integrity and appearance.  相似文献

The beef trade, amounting to several billion Euro per year, is of great importance in the European Union. Several measures have been introduced to support beef producers, such as intervention buying. However, these payments are only effected for male beef, which represents a temptation for fraud. Consequently, reliable methods for sexing of beef are required. This report summarises existing methods in EU countries as well as possible alternatives deduced from the literature.
