The study focuses on the impact of icing systems with aqueous (AQ batch), ethanolic (ET batch) and ethanolic‐aqueous (ET‐AQ batch) extracts of alga Fucus spiralis on the microbial and biochemical quality of chilled hake (Merluccius merluccius). After a 13‐day storage, comparison with fish kept under traditional ice proved a significant (P < 0.05) antimicrobial effect against aerobes, psychrotrophs, proteolytic and lipolytic bacteria, derived of the presence of F. spiralis ethanolic extracts in the icing medium (ET and ET‐AQ batches). Additionally, an inhibitory effect of both ethanol extracts was also obtained concerning lipid oxidation development (i.e. secondary and tertiary lipid oxidation compounds). Additionally, lipid damage assessment showed lower mean values in tertiary oxidation compound formation in hake belonging to the ET‐AQ batch throughout the whole storage period. Present research indicates that ET‐AQ ice condition can lead to a marked quality and safety enhancement as well as to profitable commercial value increases.  相似文献

Bifurcaria bifurcata is a widely extended brown macroalga, whose antimicrobial and antioxidant properties have previously been described. In this study, ethanolic extracts of B. bifurcata were included in the icing medium employed for the chilled storage of megrim (Lepidorhombus whiffiagonis). For it, two different concentrations of this brown macroalga extract (0.67 and 2.50 g lyophilized alga L?1 aqueous solution; B-1 and B-2 batches, respectively) were tested for a 14-day storage. The effect of the alga extract was compared with a counterpart batch stored in traditional ice prepared only from water (B-0 batch). Significant (p < 0.05) inhibitions of microbial activity (aerobes, psychrotrophs, lipolytic bacteria, proteolytic bacteria and Enterobacteriaceae) as well as of pH and trimethylamine formation were observed as a result of the incorporation of the alga extract in the icing medium, being this effect especially relevant in the B-2 batch. Concerning lipid damage development, a significantly (p < 0.05) lower formation of free fatty acids (lipid hydrolysis development) and of fluorescent compounds (tertiary lipid oxidation development) in samples corresponding to both alga-including batches could also be observed; this inhibitory effect was more intense in fish belonging to the B-2 batch. The icing medium proposed in this work constitutes a promising strategy in order to apply algae extracts to enhance fish quality retention during the different steps of storage and commercialization of marine species.  相似文献

The aim of this work was to evaluate a slurry ice (SI) packaging system on three bivalve species: clams (Venerupis rhomboideus), oysters (Ostrea edulis) and mussels (Mytilus galloprovincialis). Comparative analyses were performed on specimens caught in autumn and spring and compared to batches stored in conventional flake ice. Microbiological analysis of autumn specimens stored in SI showed significantly (P < 0.05) reduced numbers of mesophiles and psychrotrophs in all three species, as well as fewer Enterobacteriaceae in clams and oysters. Spring specimens also exhibited significantly (P < 0.05) lower microbial loads, with SI storage significantly (P < 0.05) improving the control of mesophiles, psychrotrophs and proteolytic bacteria in clams and oysters. Sensory analysis correlated well with microbial analyses, with a significantly (P < 0.05) better quality in terms of odour, taste, juiciness, appearance and shelf life. The SI packaging system evaluated in this work proved to be a valuable method for maintaining quality of these bivalve species.  相似文献

The Grand Sole North Atlantic fishing bank is exploited by several European countries, although time lapsed between catch and destiny arrival can attain 15 days. In the present work, the use of slurry ice (SI) system was investigated for the on-board storage of chilled fish and carried out in parallel to traditional flake icing (FI). Three species (hake, Merluccius merluccius; angler, Lophius piscatorius; ray, Raja clavata) widely present in the mentioned bank were studied. A lower (p < 0.05) microbial (aerobes, psychrotrophes, proteolytics) development was observed in fishes subjected to SI system than in their counterpart specimens stored under FI. This correlated with lower (p < 0.05) productions of trimethylamine (hake and angler) and total volatile bases (ray) and extended shelf-life for fish species kept under SI conditions. In summary, on-board employment of SI can provide higher quality and safety products to consumer and allow increased commercial values while unloading and sale.  相似文献

The use of a combined ozonised-slurry ice system was investigated as a new refrigeration system for the on-board storage of megrim (Lepidorhombus whiffiagonis), a fish species that is usually stored aboard fishing vessels for 1 to 2 weeks. The time elapsed between the catch and unloading at the harbour affects its quality and commercial value directly. Microbiological, chemical and sensory analyses were carried out in megrim after 2 weeks of on-board storage in ozonised slurry ice, slurry ice or flake ice, and for an additional period of 6 days. Sensory analyses revealed that megrim specimens stored in ozonised slurry ice (oSI600 batch) maintained A quality even after 20 days of storage, while counterpart batches stored in flake ice showed B quality at unloading, after 14 days of on-board storage. Storage in ozonised slurry ice (oSI600 batch) also led to significantly (p<0.05) lower counts of aerobic mesophiles, psychrotrophic bacteria, Enterobacteriaceae and proteolytic microorganisms in megrim muscle as compared with flake ice. Biochemical analyses revealed that the use of ozonised-slurry ice or slurry ice alone slowed down the formation of total volatile base-nitrogen (TVB-N) and trimethylamine-nitrogen (TMA-N) in comparison with storage in flake ice, also allowing a better control of pH. Lipid hydrolysis and oxidation events also occurred at a lower rate in the ozonised-slurry ice and slurry ice batches than in the flake ice batch. The present study demonstrates that the combination of slurry ice and ozone for the on-board storage of megrim is advisable, thus improving the quality and extending the shelf life of this fish species.  相似文献

This study focuses on the quality retention of megrim (Lepidorhombus whiffiagonis) during chilled storage. Aqueous solutions of two different concentrations of citric (CA) and lactic (LA) acids were employed as icing media (0.125% CA–0.050% LA and 0.175% CA–0.050% LA, respectively; w/v). The effects of each solution on microbial activity, lipid damage and sensory acceptance were monitored for up to 13 days of storage. Lower (P < 0.05) bacterial growth was detected according to microbiological (aerobe and psychrotroph counts) and chemical (trimethylamine‐N and pH) assessments, which led to an enhancement of sensory appreciation. Whereas control fish were determined as unacceptable at day 13, the acid‐iced fish were still acceptable at that time. Concerning lipid damage, an inhibitory effect (P < 0.05) on fluorescent compound formation was observed in the acid‐iced fish. Present results allow to conclude that the use of a CA–LA icing system can provide a profitable strategy to obtain higher quality chilled fish.  相似文献

Microemulsion nanofilms based on fish skin gelatine (FSG) and 3% (w/w, gelatine) ZnO nanoparticles (ZnONP) incorporated with ginger essential oil (GEO) at different concentration (10%, 20%, 40%, 80%, w/w, gelatine) were developed and characterised. Film thickness and elongation increased, while film tensile strength and gel strength decreased as GEO level increased (P < 0.05). The water vapour permeability was reduced (P < 0.05) by GEO. Microstructural study revealed a dispersion system with GEO lipid droplet embedded into FSG matrix and some aggregation. The developed films showed strong antibacterial activity against food spoilage bacterial of psychrotrophs, mesophiles and lactobacillus spp. (LAB) in situ, and food pathogenic bacteria of Escherichia coli and Listeria monocytogenes in vitro. Together with the antioxidant activity towards lipid oxidation, the release of total volatile bases nitrogen (TVB‐N) was subsequently reduced during fresh meat storage. In conclusion, the incorporation of GEO provided the potential to make FSG‐ZnONP films more available for meat storage.  相似文献

The present study addressed the quality enhancement of chilled fish by applying a preliminary dipping treatment containing a bioactive extract of the alga Bifurcaria bifurcata. Megrim (Lepidorhombus whiffiagonis) specimens were dipped in ethanolic–aqueous solutions containing two different concentrations of the alga extract (high: HAC batch and low: LAC batch). Two types of control batch were considered (ethanol–water dipping and no dipping). Microbial, chemical and sensory qualities were monitored in fish throughout a 13-day storage period. An inhibitory effect (p?<?0.05) of the dipping treatment (washing and the presence of alga extract) on microbial activity was observed, as determined by microbial (Enterobacteriaceae, lipolytic bacteria and psychrotrophs) and chemical (trimethylamine and free fatty acid formation) analyses. In most cases, this effect was found to be more intense for prolonged storage times and in fish specimens corresponding to the HAC batch. However, the combined effect of washing and the inclusion of alga extract in the dipping medium did not affect (p?>?0.05) the rate of lipid oxidation events during storage. Interestingly, average scores revealed increased sensory quality in megrim corresponding to the HAC batch for prolonged storage (9–13 days). Consequently, the use of a bioactive extract of B. bifurcata alga as a preliminary dipping treatment can be considered of interest for further fish storage due to both its simplicity and beneficial effects on fish quality enhancement.  相似文献

Fifty sausages were manufactured using different proteases (batch 1: without protease; batches 2 and 3: with validase FP II at 0.5 and 1 g kg−1, respectively; batches 4 and 5: with validase FP Concentrate at 0.5 and 1 g kg−1, respectively). Effect of the proteases on sausage quality was evaluated. Moisture content of the samples was lower (p < 0.001) in batch 1 than in batches with protease. Samples with protease presented a greater proteolysis. The protease FP Concentrate caused a higher proteolysis and amino acid content. Batches with protease presented lower values of hardness (p < 0.001), on the contrary, samples without protease presented higher hexanal content (p < 0.001). Moreover, batch 4 and 5, showed the highest oxidative stability (p < 0.001). Regarding to parameters related to red colour (a* and Hue*), batches 4 and 5 presented significant higher values of them (p < 0.001). Finally, sausages with proteases presented higher acceptance than control samples (p < 0.001), probably caused by an optimum odour (p < 0.001). Thus, a greater proteolysis in batches 4 and 5 prevents rancidity and discolouration of these samples.  相似文献

Refrigerated storage of raw milk promotes the growth of psychrotrophic bacteria, some of which produce heat-stable exoenzymes causing dairy product spoilage. The effects of storage conditions and season on the biodiversity of psychrotrophs in raw milk were examined using matrix-assisted laser desorption time of flight mass spectrometry and 16S rRNA analysis. The ability of psychrotrophs to produce protease, lipase and phospholipase C was determined. The predominant genera found were Pseudomonas (19.9%), Bacillus (13.3%), Microbacterium (5.3%), Lactococcus (8.6%), Acinetobacter (4.9%) and Hafnia (2.8%); a considerable number of isolates were hitherto unknown species and genera. Diversity varied significantly (P < 0.05), depending on the storage temperature, time, initial microbiota and season. The predominant isolates showed significantly higher heat-stable exoenzyme activities after heating at 142 °C for 4 s. Improving the quality of milk products may require differential processing of raw milk depending on the type of microbiota present, storage temperature and seasonality.  相似文献

The efficacy of oregano and thyme essential oils (OEO and TEO, respectively) in the quality retention of a refrigerated (4 °C) squid (Loligo vulgaris) ring ready‐to‐eat (RTE) product was studied. Essential oils were added at different concentrations to the coating medium during processing. An inhibitory (P < 0.05) effect of OEO on the microbial activity (aerobes, anaerobes, Enterobacteriaceae, psychrotrophs) of the squid rings was observed, with a more pronounced effect as OEO concentration increased. The addition of OEO also led to an inhibitory (P < 0.05) effect on lipid oxidation, as determined by peroxide, thiobarbituric acid‐reactive substance and interaction compound formation; however, no effect (P > 0.05) of the OEO concentrations on lipid oxidation development was detected. The addition of TEO did not lead to an inhibitory effect (P > 0.05) on the microbial activity of the refrigerated RTE squid, although a slight inhibitory (P < 0.05) effect on lipid oxidation was observed in the batches including the higher TEO concentrations.  相似文献

Effect of delayed icing of the fish Carangoides malabaricus was assessed using chemical and microbial methods to determine the impacts on the nutritional quality and sensory changes. The shelf life of the fishes iced immediately after harvest had a shelf life of 18 days, whereas the delay of icing for 4, 6, 8 and 10 h shortened the shelf life to 14, 10, 6 and 3 days respectively. The spoilage indicators, such as trimethylamine nitrogen, Total volatile basic nitrogen, free fatty acids, peroxide value, thiobarbituric acid and pH values, significantly increased (P < 0.05) during the storage period of fishes with delayed icing. The total bacterial count also increased during the storage period and due to quality deterioration, the protein and lipid contents were found significantly low (P < 0.05). This study showed that chemical and microbial changes of the sample are well correlated with nutritional and sensory qualities so that immediate icing is important for maintaining the quality and shelf life of C. malabaricus.  相似文献

The use of slurry ice is gaining increasing importance as an advanced method for the hygienic and efficient chilling and sub-zero storage of aquatic food products. In this work, this technology was applied as a novel technique for the chilling and storage of Norway lobster (Nephrops norvegicus) – a crustacean species of high-commercial value – under refrigeration conditions at −1.5 °C. In addition, the effects of a preliminary treatment with 0.5% Na HSO3 on surface browning were evaluated and compared with the results obtained in control batches not subjected to such treatment. The processing of lobster in slurry ice significantly (p < 0.05) slowed down microbial spoilage, as determined by the counts of aerobes, psychrotrophs, proteolytic bacteria, and lactose-fermenting Enterobacteriaceae, and by the formation of volatile amines. Likewise, the autolytic breakdown mechanisms – as determined by the K value – were also significantly (p < 0.05) inhibited in the slurry ice batch. Remarkably, preliminary treatment with 0.5% sodium metabisulphite permitted better maintenance of the parameters involved in sensory quality – especially as regards the aspect of the carapace – as compared with non-treated batches, and allowed a shelf life of 9 days without surpassing the 150 mg/kg legal limit established for this food additive. On contrast, the non-treated batch stored in slurry ice exhibited a shelf life of 5 days. The combination of technological treatments proposed in this work – preliminary antimelanosic treatment and storage in slurry ice – may be successfully applied to other fresh and frozen shellfish species with a view to extending shelf life and to avoiding the legal and toxicological problems derived from current abuse of such antimelanosic agents to prevent shellfish browning.  相似文献

The application of slurry ice, a biphasic system formed by small spherical ice crystals surrounded by seawater at sub-zero temperature, was evaluated as a new storage method for ray (Raja clavata), the elasmobranch fish species that exhibits highest commercial value in the European food markets. This advanced technique was used to compare with a control batch stored 10 days in flake ice. The results obtained in the sensory analysis indicated a significant extension of the overall quality (A class fish) from 3 days (flake ice) to 6 days (slurry ice). The development of ammonia external odour was the limiting parameter in both batches and was correlated with the activity of the endogenous mechanisms involved in the degradation of proteins and non-protein-nitrogen (NPN) rather than with the activity of proteolytic microorganisms. Storage of ray in slurry ice significantly (P<0.05) slowed down both biochemical (as estimated by the follow-up of the pH, TVB-N and K-value evolution) and microbial degradation mechanisms (estimated by the development of psychrotrophes and mesophiles counts) in chilled ray muscle. According to the parameters evaluated, storage of ray in slurry ice extends the shelf-life of this elasmobranch fish species due to a better maintenance of sensory, biochemical and microbiological quality, thus facilitating its commercialization.  相似文献

This study evaluated the influence of packaging atmosphere (air versus 50% N2/50% CO2) on microbiological (mesophiles, psychrotrophs), physical (gas measurement) and chemical (pH, total volatile basic nitrogen [TVB‐N], NH3, H2S and biogenic amines) parameters in freshwater prawns during storage at 0 ± 1 °C for 240 h. To select the most appropriate packaging, 21 batches of each treatment were analysed. Both the packaging permeability and the combination of gases affected the shelf life, but the modified‐atmosphere packaging (MAP) was more efficient than air packaging, increasing the shelf life by 40 h. The parameters of pH and TVB‐N showed no statistical difference between the two atmosphere conditions all along the storage period. The biogenic amine agmatine showed potential for use as a quality indicator due to the increased concentration during storage. In further studies, this amine can be applied as an indicator for public health issue.  相似文献

The influence of alternative drying environmental conditions on the proteolysis of a traditional Portuguese fermented sausage was evaluated, in relation to different ripening periods. Traditional sausages (batch T) had lower pH than counterparts (batch M), with differences (P < 0.05) focused at the fermentation stage. A remarkable accumulation of free amino acids (FAA) was detected in both batches along the ripening process, with batch T having higher mean levels than batch M (1795.2 mg 100 g−1 DM vs. 1742 mg 100 g−1 DM in S7, respectively), but with differences being significant for long ripened products. In both batches, glutamic acid became the most concentrated FAA in end products currently consumed (101.6 mg 100 g−1 DM and 111.0 mg 100 g−1 DM – S6; 233.8 mg 100 g−1 DM and 220.9 mg 100 g−1 DM – S7 from batches T and M, respectively) followed by leucine > alanine > taurine > serine > valine and taurine > alanine > leucine > serine > valine sequences in the former product from batches T and M, respectively, and, coincidently, the same sequence for both batches in the later (serine > leucine > alanine > proline > valine). Such effect on FAA concentrations led to a distinct (P < 0.05) expression of sweet, bitter, acidic and aged sensorial attributes between batches, in S8 and S9 products.BA typical quantitative sequences varied between batches according to the ripening stage, with differences in S6 and S7 end products also reflecting the distinct microbial development rates and profiles observed. Slurry ice is a biphasic system that has recently shown a number of advantages when employed as a chilling medium for fish species. Its use for a crustacean species of high commercial value, Norway lobster (Nephrops norvegicus), was evaluated in parallel with traditional flake icing. Quality parameters related to microbial spoilage and biochemical breakdown (aerobe and psychrotroph counts, pH, K value, total volatile amines, trimethylamine, free fatty acids and non‐enzymatic browning reactions) were assessed and compared with sensory (carapace, eyes, gills, odour and flesh) acceptability. Storage in slurry ice produced a significant (P < 0.05) inhibitory effect on both microbial growth (as determined by aerobes, psychrotrophs and volatile amines) and autolysis breakdown (as determined by K values and the release of free fatty acids) in comparison with the flake ice batch. In contrast, an enhancement effect of slurry ice on carapace browning was observed as a result of enzymatic browning development. Slurry ice batch also showed a more intense non‐enzymatic browning reaction in the lipid extract of the edible flesh. With a view to limiting both browning effects, the incorporation of an anti‐melanosis agent in the liquid phase of the slurry ice system is envisaged. Lobster krill (Munida genus) represents an under‐valued crustacean frequently caught on European fishing banks. In this work, its sensory, microbiological and biochemical qualities were evaluated during chilled storage. Additionally, the effects of a prestorage antimelanosic treatment consisting of soaking in sodium metabisulphite (SMB) solutions at two different concentrations (0.25% and 0.75%) were also studied. SMB prestorage treatment provided lobster specimens that still exhibited acceptable sensory quality after 10 days of storage, while control specimens were unacceptable at that time. SMB treatment also resulted in a significant (P < 0.05) inhibition of microbial growth, mainly of Enterobacteriaceae, psychrotrophes and proteolytic bacteria. Low lipid oxidation levels were observed for all batches; however, a significantly higher (P < 0.05) retention of polyunsaturated fatty acids was found in SMB‐treated lobster, especially in the 0.75% SMB batch. The results presented here open the way to the potential commercialisation of currently under‐utilised lobster krill as a chilled product.  相似文献

The effect of addition of essential oils of marjoram (Origanum marjorana L.) and rosemary (Rosmarinus officinalis L.) at concentration of 200 mg/kg to beef patties formulated with 200 g/kg mechanically deboned poultry meat (MDPM) was studied. The proximate composition, lipid oxidation, sensory characteristics and microbial counts of beef patties manufactured with 200 g/kg MDPM (percentage of lean portion) were assessed during frozen storage at ?18 °C. Beef patties formulated with MDPM (200 g/kg) showed significant (P < 0.05) reduction in protein content and significant (P < 0.05) increase in fat content. Incorporating MDPM in beef patties formulation significantly (P < 0.05) increased the TBARS (Thiobarbituric acid reactive substance) values and significantly (P < 0.05) reduced the flavor and overall acceptability scores. Addition of essential oils of marjoram and rosemary at level of 200 mg/kg significantly (P < 0.05) reduced the TBARS and significantly (P < 0.05) increased the sensory scores of beef patties during frozen storage period. Overall, the study indicated the potential use of natural herbal essential oils to protect against lipid oxidation and improve the sensory attributes of beef patties formulated with MDPM.  相似文献

The main objective of this study was to determine the ability of various decontaminants to increase the prevalence of resistance to antibiotics in Escherichia coli populations on poultry. Chicken legs were dipped for 15 min into aqueous solutions (wt/vol) of trisodium phosphate (TSP; 12%), acidified sodium chlorite (ASC; 1200 ppm), ascorbic acid (AA; 2%) or citric acid (CA; 2%), or tap water (control). Samples were analyzed immediately after treatment (day 0) and after five days of storage at 7 ± 1 °C. A total of 250 E. coli isolates (50 from each group of samples; 25 on day 0 and 25 on day 5) were tested against twelve antibiotics of clinical significance by means of a standard disc-diffusion technique. A high prevalence of resistance to antibiotics was observed for E. coli strains from control samples, with three (6.0%) isolates sensitive, three (6.0%) resistant to one antibiotic and 44 (88.0%) isolates resistant to two or more antibiotics. Isolates from control samples had a lower prevalence of resistance than those from treated samples to ampicillin-sulbactam (P < 0.01, samples treated with TSP), amoxicillin-clavulanic acid (P < 0.001, ASC, AA and CA), cephotaxime (P < 0.05, TSP), trimethoprim-sulphamethoxazole (P < 0.05, AA; P < 0.01, CA), tetracycline (P < 0.01, CA), ciprofloxacin (P < 0.001, ASC; P < 0.05, AA; P < 0.01, CA) and nitrofurantoin (P < 0.01, TSP). These results suggest that the chemical decontaminants tested could favor the emergence, selection and/or proliferation of antibiotic-resistant strains in microbial populations on poultry meat.  相似文献
