Particle size distribution, which largely determines the texture of finished apple sauce, was studied in relation to the fresh fruit properties of five apple cultivars. The different effect that continuing fruit storage has on particle size distribution of the sauce, depending on cultivar, is reported. Light microscopy supported the conclusion that the cell wall components affecting the separation of cells, and possibly re-aggregation in some instances, are mainly involved in these commercially important variations in texture. The possibility that vascular tissues in the fruit and starch granules in the cells may be other, lesser contributors to sauce texture is discussed. The study emphasizes the cultivar dependency of the properties reported. 相似文献

Common pumpkin plants (Cucurbita maxima) produce fruits of 1-2kg size on the average, while special varieties of the same species called Atlantic Giant are known to produce a huge fruit up to several hundred kilograms. As an approach to determine the factors controlling the fruit size in C.?maxima, we cultivated both AG and control common plants, and found that both the cell number and cell sizes were increased in a large fruit while DNA content of the cell did not change significantly. We also compared protein patterns in the leaves, stems, ripe and young fruits by two-dimensional (2D) gel electrophoresis, and identified those differentially expressed between them with mass spectroscopy. Based on these results, we suggest that factors in photosynthesis such as ribulose-bisphosphate carboxylase, glycolysis pathway enzymes, heat-shock proteins and ATP synthase play positive or negative roles in the growth of a pumpkin fruit. These results provide a step toward the development of plant biotechnology to control fruit size in the future. 相似文献

Genetic parameters of direct and maternal effects for calving ease in Dutch Holstein-Friesian cattle

Genetic parameters of direct and maternal effects for calving ease in Dutch dairy cattle were estimated using 677,975 calving ease records from second calving. Particular emphasis was given to the presence and impact of environmental dam-offspring covariances on the estimated direct-maternal genetic correlation. Moreover, a measure of heritability for traits affected by maternal effects was developed. In contrast to previous parameters, this parameter reflects the amount of genetic variance that can be used to generate a response to selection in maternally affected traits. Estimated genetic correlations between direct and maternal effects on calving ease have often been moderately negative, particularly in beef cattle. Environmental dam-offspring covariances have been put forward as an explanation for such estimates. We investigated the impact of environmental dam-offspring covariances by fitting correlated residuals between dam and offspring records in the statistical model, and by comparing results of a sire-maternal grandsire model with those of an animal model. Results show that calving ease in Dutch dairy cattle has a direct heritability of approximately 0.08, a maternal heritability of approximately 0.04, a direct-maternal genetic correlation of approximately −0.20, and a total heritable variance equal to approximately 11% of phenotypic variance. Results of animal models and sire-maternal grandsire models were very similar. The direct-maternal environmental covariance was near zero, and consequently had very little impact on the estimated genetic parameters. Transformation of observations to a liability scale did not affect the estimated genetic parameters and yielded a nearly identical ranking of sires. 相似文献

以金童5号黄桃为原料,采用超声波技术辅助酶法进行去皮,以感官评分为评价指标,经单因素试验和响应面试验优化,确定超声波辅助酶法去皮最优条件,并对最优工艺得到的黄桃与普通酶法去皮黄桃进行品质比较。结果表明:当超声波功率450 W、酶解温度45℃、酶解时间35 min、酶质量浓度0.31g/100 mL、酶液pH 3.5、黄桃与酶液料液比1∶3(g/mL)时,黄桃去皮效果最好,其感官评分最高。研究结果证明采用超声波辅助法,可以提高酶解效率和改善酶法去皮黄桃的品质:硬度提高40%,咀嚼指数提高121%,酶用量减少38%、酶解时间缩短12%。 相似文献

The objective of this study was to add a maternal grandsire (MGS) effect to the existing sire model for national calving ease genetic evaluations. The Animal Improvement Programs Laboratory (AIPL) of USDA assumed responsibility for conducting the national genetic evaluation for calving ease and maintaining the associated database in 1999. Existing evaluations used a sire threshold model. Adding an MGS effect to the model was expected to improve accuracy by partially accounting for merit of mates and differences in maternal ability of the dams. Dystocia data were migrated to a relational database integrated with the AIPL production database. This database design allowed more rigorous data edits by comparison with the production data and improved MGS identification (ID) rate by utilizing pedigrees from the production records. Integration of dystocia data with production data increased MGS ID rate from 58 to 73%. In addition, nearly 200,000 duplicate records were identified using the new edit system. Sire and sire-MGS models were compared using over 10 million observations available for the August 2002 national genetic evaluation. The sire model included herd-year, season, sex of calf, parity of dam, birth year group of sire, and sire. For the sire-MGS model, MGS and birth year group of MGS were added, year-seasons rather than seasons were used, and sex of calf and parity of dam were combined into a single interaction effect. Herd-year, sire, and MGS were random effects. Variance components used for the sire model were those previously used in the national evaluation and for the sire-MGS model were estimated in a separate study. Correlations between predicted genetic merits for service sire calving ease from the two models was 85%, indicating general agreement, but with some significant differences in evaluations. An integrated control strategy on preventing pericarp browning (BI) and decay incidence (DI) of longan fruit was investigated to replace sulphur dioxide (SO2) fumigation. Fruit was treated with 5% ascorbic acid (AA), citric acid (CA), oxalic acid (OA), thymol (TH) and 2% chitosan (CH) for 5 min; sealed under modified atmosphere packaging (MAP) using high permeable film; and stored at 5 °C. Fruit treated with distilled water and sealed under MAP condition (MAPC) and air condition (AIRC) was used as controls. Combined effects of chemical treatments and MAP maintained quality of longan for 56 and 49 days in CH and TH, respectively, as compared to 28 days in MAPC and 21 days in AIRC. AA, CA and OA prevented BI, restrained enzyme activities and maintained high phenols. AA, CA and OA were most potent BI inhibitors; however, DI was the limitation of these treatments, while CH and TH effectively inhibited DI. 相似文献

The objective of this study was to examine the feasibility of implementing routine national calving ease (CE) genetic evaluations of Brown Swiss (BS) and Jersey (JE) sires that include records of crossbred calvings. Records were available for 11,793 BS calvings, 3431 BS-sired crosses, 65,293 JE calvings, and 7090 JE-sired crosses. Evaluations were performed for each breed using only purebred calvings and using both purebred and crossbred calvings. In the latter evaluations, the sire-maternal grandsire model used for the routine evaluation of Holstein (HO) CE was modified to include a fixed breed composition effect to account for differences between purebred and crossbred calvings. Jersey cows had very little calving difficulty (0.5 to 0.7%) and JE bulls had a very small range of evaluations, suggesting that a routine JE evaluation would be of little value. Results from the BS evaluations suggest a routine evaluation would provide BS breeders with a useful tool for genetic improvement. Further examination of data showed that many BS calvings were in mixed herds with HO calvings. As a result, a joint evaluation for BS and HO bulls was developed. The BS data showed that there is similar genetic variability as found in the HO population, which suggests implementation of a routine evaluation including BS CE would be of value. It appears BS bulls may produce daughters with superior maternal calving ability compared with HO. Validation of the joint evaluation was performed by comparing results with the routine HO evaluation. Holstein solutions from the joint evaluation were comparable to results from the routine HO-only evaluation. Correlations among solutions and evaluations showed HO evaluations were not adversely affected by BS data and BS sires were reranked as compared with the BS-only evaluation. 相似文献

The current study encompassed a survey on the levels of toxic trace elements in two highly consumed fish species in commercial fishing centres of western, central and eastern Mediterranean Sea. A Zeeman GTA-AAS graphite furnace atomic absorption spectrometry system was used throughout the study. Toxicological evaluation of the samples revealed a low Cd content in the raw samples, ranging between 0.003 and 0.027?mg?kg?1. Pb presented significantly higher values, from 0.037 to 0.297?mg?kg?1, occasionally reaching the limit of 0.3?mg?kg?1. Heavy metal levels were particularly higher in bones, thus raising queries about the safe consumption of fish intended to be eaten as a whole, a very common practice for small fish and canned products. The influence of industrial-scale canning showed that canning enhanced heavy metal levels by 35%–80%. The effect of canning depended on metal type and reduction of moisture loss after the steam-roasting step of the canning procedure. 相似文献

The effect of common dietary polyphenols on growth of human gut bacteria and their adhesion to enterocytes was investigated. The influence on the growth of a probiotic (Lactobacillus rhamnosus), a commensal (Escherichia coli) and two pathogenic bacteria (Staphylococcus aureus, Salmonella typhimurium) was determined, together with effects on adhesion of pathogenic and probiotic bacteria to cultured Caco-2 cells. All polyphenols, except rutin, were found to affect the viability of representative gut flora in vitro, at doses likely to be present in the gastrointestinal tract, but to differing degrees. Naringenin and quercetin were the most active with the lowest minimum inhibitory concentrations for all the four bacteria tested. The remaining polyphenols had the most marked effect on the Gram positive enteropathogen S. aureus. Naringenin and phloridzin were the most effective inhibitors of S. typhimurium adherence to Caco-2 enterocytes while phloridzin and rutin enhanced the adherence of the probiotic L. rhamnosus. Polyphenols appear to have potential to alter gut microecology and, by affecting the total number of beneficial microflora in the gut, may confer positive gut health benefits. 相似文献

In this paper, an alternative procedure for in situ and continuous monitoring of the status of the hypertonic solutions used in industrial osmotic dehydration (OD) process of fruit and vegetables is presented and validated. The proposed method, which is based on microwave reflectometry technique, circumvents the limitation of traditional control methods, since it discovers the relation between the characteristic parameters of osmotic solutions and the corresponding measured reflection coefficients. In fact, as the OD proceeds, the dielectric characteristics of the solution, associated to the reflectometry measurements, can be directly related to the variation of the water activity (aw), which is the parameter that is typically considered to assess the dewatering capacity of the solution. As a result, through the method presented herein, a continuous monitoring of the dewatering capacity of the osmotic solution, associated to its qualitative status, is possible, which, in turn, is useful also for optimizing the OD industrial process. The proposed method was preliminarily validated on reference aqueous solutions of sucrose. The feasibility of HRMAS NMR as an efficient technique for metabolic studies of tomato fruit and tomato tissues is described. A good-taste tomato variety from Almería (Spain) (commercial name Zayno) was chosen for this study. Fruits of three different ripening stages (green, turning and red) were selected, based on their external appearance. NMR data of whole fruits were obtained through 1H HRMAS NMR spectra of tomato purée. Flesh, peel and seeds from mature red fruits were separately analysed. 1H HRMAS NMR spectra showed resolutions similar to that of solution 1H NMR with the advantages of minimal sample manipulation and possibility of analysing polar and non-polar compounds simultaneously. Seeds could be clearly distinguished by visual comparison of the spectra. Tryacylglycerols, in which linoleic (47%) and oleic (28%) acyl chains preponderate, were the major components of seeds. By contrast, signals of fructose, glucose, citric acid, and the amino acids GABA, glutamine and glutamate dominated the spectra of flesh, peel and tomato purée. Principal components analysis, performed on the covariance matrix, revealed a clear separation between peel and flesh. Apart form the presence of the cutin biopolymer, peel showed a specific accumulation of sugar and sugar moieties related to pectin degradation, as well as glycosylated metabolites. Chemometric analysis also allowed the metabolic trajectory from green to red mature stages to be visualised. However, sample heterogeneity in the analysis of the whole fruit proved to be an important issue. The source of such heterogeneity was assigned to the presence of tissues of different hardness in the small amount of sample used. The presence of two clusters of samples at the turning stage indicated that the levels of certain metabolites could diverge significantly in fruits with almost identical appearance. 相似文献
