Fatty acids (FA), phytosterols, tocopherols, phenolic compounds, total carotenoids and hydrophilic and lipophilic ORAC antioxidant capacities were evaluated in 16 cultivars of Sacha inchi (SI) seeds with the aim to valorise them and offer more information on the functional properties of SI seeds. A high α linolenic (α-Ln) fatty acid content was found in all cultivars (ω3, 12.8–16.0 g/100 g seed), followed by linoleic (L) fatty acid (ω6, 12.4–14.1 g/100 g seed). The ratio ω6/ω3 was within the 0.83–1.09 range. γ- and δ-tocopherols were the most important tocopherols, whereas the most representative phytosterols were β-sitosterol and stigmasterol. Contents of total phenolics, total carotenoids and hydrophilic and lipophilic antioxidant capacities ranged from 64.6 to 80 mg of gallic acid equivalent/100 g seed; from 0.07 to 0.09 mg of β-carotene equivalent/100 g of seed; from 4.3 to 7.3 and, from 1.0 to 2.8 μmol of Trolox equivalent/g of seed, respectively, among the evaluated SI cultivars. Results showed significant differences (p < 0.05) among the evaluated SI cultivars in the contents of ω3, ω6, antioxidant capacities and other evaluated phytochemicals. SI seeds should be considered as an important dietary source of health promoting phytochemicals.  相似文献

美藤果作为一种高营养价值的新型油料,具有重要的开发价值。检测了中国西双版纳、普洱、红河及老挝102份美藤果的品质指标,并考察了产地、病虫害与施肥对美藤果品质的影响。结果表明:美藤果平均含油量为37.4%,平均蛋白质含量为22.1%,油中不饱和脂肪酸含量高达92.17%,其中亚麻酸占45.34%。产地对美藤果品质具有显著影响,而施肥、病虫害对美藤果品质影响较小。不同产地美藤果的蛋白质、硬脂酸、亚麻酸含量具有显著差异,其中西双版纳样品的蛋白质含量显著高于普洱的,中国西双版纳、红河与老挝样品的硬脂酸含量均显著高于中国普洱的,而中国普洱样品的亚麻酸含量显著高于老挝和中国红河的。此外,施肥有利于提高美藤果的含油量。  相似文献

采用顶空固相微萃取法提取美藤果油中的挥发性成分,并通过气相色谱-质谱联用技术对其进行分析鉴定,采用峰面积归一化法确定各成分的相对含量。结果表明:美藤果油中共鉴定出46种挥发性成分,占挥发性成分总量的86.73%,主要有(2E,4E)-2,4-庚二烯醛、(2E,4Z)-2,4-庚二烯醛、乙酰基环己烯、(E,E)-3,5-辛二烯-2-酮、3,5-辛二烯-2-酮、反式-2-戊烯、正己醛、(E)-2-庚烯醛等,以醛类、酮类和烃类化合物为主,并含有少量的醇类和呋喃类化合物。  相似文献

美藤果含有丰富的油脂、蛋白质等营养物质,具有重要的营养价值。为了快速检测美藤果品质,采用传统国标方法获得美藤果水分含量、含油量(湿基)和蛋白质含量(湿基)的化学值,之后对美藤果颗粒及美藤果粉的近红外光谱全谱及不同波段光谱进行预处理,通过偏最小二乘法分别建立了美藤果颗粒及美藤果粉的校正模型。结果显示,美藤果颗粒和美藤果粉建立的校正模型的相关系数(Rc)均大于0.94,校正均方根误差(RMSEC)小于0.45%,交叉验证相关系数(Rcv)大于0.91,验证均方根误差(RMSECV)小于0.53%。用建立的美藤果颗粒和美藤果粉校正曲线对未参与建模的20个样品进行了近红外检测,结果显示,用两种方法建立的校正模型都能较好地实现对美藤果水分、含油量(湿基)和蛋白质含量(湿基)的预测,但是使用美藤果颗粒建立的校正模型进行美藤果品质检测更简便,且对样品没有破坏性。  相似文献

以美藤果壳为原料,用70%乙醇提取得到美藤果壳酚类粗提物,研究大孔树脂纯化美藤果壳酚类物质的工艺条件,对AB-8、HPD300、NKA-9、D101、S-8、DM130 6种型号大孔树脂进行了筛选。结果表明:NKA-9型大孔树脂为纯化美藤果壳酚类物质最佳树脂;NKA-9型大孔树脂纯化美藤果壳酚类物质的最佳工艺条件为上样液质量浓度10 mg/m L、上样速度2.0 m L/min、以70%的乙醇溶液洗脱、洗脱速度1.0 m L/min、洗脱剂体积2.5 BV。在最佳工艺条件下纯化后的美藤果壳酚类物质的总酚含量为73.8%,对比于粗提物中的总酚含量33.2%,提高了1.2倍。  相似文献

美藤果(Plukenetia volubilis L.)原产于南美洲,已被当地居民食用了3 000多年.美藤果油中α-亚麻酸含量在42%以上,总不饱和脂肪酸约占脂肪含量的92%以上,是一种营养价值很高的健康食用油,目前已被批准为新资源食品.本文介绍了美藤果油在成分、性质、毒理安全性和产品应用方面的研究开发进展,包括脂肪酸和甘三酯组成、脂质活性成分,油脂的理化性质、氧化稳定性和热性质,以及其在保健品、化妆品等领域的应用开发进展,最后对美藤果油未来的研究方向进行了总结和展望.  相似文献

This study examined the effect of dehydration on the phenolic compounds and antioxidant activity of blackcurrant (Ribes nigrum L.) pomaces (DBP) subjected to hot air oven drying (HOD), industrial rotary drying (IRD) and freeze drying (FD). Temperature and residence time were evaluated for HOD, whereas air-on and air-off temperature, ratio of drum rotor speed to air speed and particle size were evaluated for IRD. The highest total anthocyanins (ATC) and flavonols (FLV) were obtained in particle size of> 5.0 mm using IRD at 475°C/97°C (air-on/air-off) and higher ratio of drum rotor speed to air speed. Smaller size particles were found susceptible to degradation due to high temperature and retention time applied in IRD, resulting in loss of phenolic compounds in DBP, and thus, HOD was deemed more suitable. Overall, drying method selection and parameters of operation are key in preserving the concentrations of individual HCA and FLV in DBP.  相似文献

The phenolic compounds in extracts from pressed olive cake were investigated. Free phenolic compounds were extracted from olive cake using methanol. To liberate bound phenolic compounds, the olive cake was subjected to basic and acidic hydrolysis followed by methanol extraction. The individual phenolic compounds and antioxidant activity of the extracts were determined. The highest total phenolic content and antioxidant activity were obtained using methanol extraction for 12 h at 70 °C. The RP-HPLC profiles for full-fat and defatted olive cake showed that protocatechuic acid, hydroxybenzoic acid, sinapic acid, p-coumaric acid, rutin and hesperidin were the predominant free phenolic compounds. Meanwhile, syringic acid, sinapic acid, caffeic acid and protocatechuic acid were the predominant bound phenolic acids. A positive correlation was observed between total phenolic content and antioxidant activity. The results indicated that most of the phenolic compounds in olive products were present in their free forms (75–90% of total phenolic content), while bound phenolic compounds were only a small proportion (10–25%) of total phenolic content.  相似文献

The objective of this study was to assess antioxidant and antiproliferative activities of four different Turkish pomegranate varieties (Hatay, Hicaz, Adana and Antalya) using an in vitro HepG2 cancer cell model. All the pomegranate extracts employed in this study significantly diminish the proliferation of HepG2 cells in a dose‐dependent manner. The total phenolic acid, anthocyanin and flavonoid contents for each of the four varieties were determined. The Hatay pomegranate variety had the highest total phenolic acid (337.4 ± 2.34 mg/100 g) and flavonoid (58.42 ± 2.25 mg/100 g) contents of the pomegranates examined. Antioxidant activities of the pomegranates were determined using DPPH and ABTS radical scavenging assays. The lack of correlation between colour index value and antioxidant–antiproliferative activities suggested that phenolic acids and flavonoids are predominant compounds influencing pomegranate's bioactivity rather than anthocyanins. Individual phenolic acids found in Hatay pomegranates were determined, using an HPLC system, as gallic acid being the most predominant phenolic compound.  相似文献

The impact of soaking, cooking, and industrial dehydration on the phenolic profile, antioxidant activity, and functional properties of two bean varieties (Cannellini and Pinta) was investigated. HPLC-PAC and HPLC-MS (ESI) analysis identified phenolic acids (44% and 41% of the total of identified phenolics, respectively) as the main phenolic compounds in raw Cannellini flour and catechins and procyanidins (63%) in raw Pinta flour. As a result of the industrial dehydration, a general reduction of these bioactive compounds and antioxidant activities (ORAC) was observed; however, their levels were still relevant in dehydrated bean flours. The raw and processed flours exhibited low oil holding capacity (1.00-1.15 mL/g), whereas water-holding capacities rose to 3.0-3.8 mL/g. Emulsifying activities and foaming capacities were inhibited during thermal processing. Thus, the significant occurrence of bioactive phenolic compounds, the relevant antioxidant capacities along with the interesting functional properties of dehydrated bean flours make them to be considered functional ingredients for food formulation.  相似文献

Bioactive compounds from Brazilian hop (Humulus lupulus L.) cultivars were extracted by ultrasound and their phenolic profile compared with commercial hop from the USA. The most effective extraction conditions (solution of ethanol 49%, at 52 °C and a solid/liquid ratio of 1 g per 34 mL) for the total phenolic compounds (TPC) were determined using a Central Composite Rotatable Design. The Brazilian hop showed higher content of TPC (33.93 ± 0.67 mg GAE g−1), total flavonoids (54.47 ± 0.10 mg QE g−1) and higher antioxidant activity (ABTS: EC50 21.29 ± 1.36 μL mL−1; DPPH: EC50 3.91 ± 0.17 μL mL−1) when compared with the USA hop. The main phenolic compounds present in the extracts were the flavonoids isoquercitrin and quercetin. The antioxidant properties of the Brazilian hop extract had not been reported yet in the literature for this raw material, thus showing potential to be incorporated in polymeric films used as active packaging.  相似文献

Consumption of diets rich in phenolic compounds has been associated with reduced risk of chronic diseases. The effect of cooking and simulated gastrointestinal digestion on phenolic compounds and antioxidant properties of two cowpea (Vigna unguiculata) types was determined. Phenolic acids, flavan‐3‐ols and flavonols were the main groups of phenolic compounds identified. Cooking and simulated enzyme digestion of the cooked cowpea samples rendered some phenolics less extractable (possibly by promoting binding with other food components) or more extractable (possibly by release of bound forms). Total phenolic contents and radical scavenging properties of the cowpeas were reduced upon cooking, but increased upon simulated enzyme digestion. Cowpea extracts inhibited human LDL oxidation at a concentration of 2 mg mL?1 possibly due to their phenolic content. Phenolic compounds in cowpea can potentially protect against cardiovascular diseases for which LDL oxidation is a risk factor.  相似文献

The antioxidant capacity, total phenolic content, and major phenolic compounds of a total of 19 commonly consumed spices in China were systematically investigated. Ultra performance liquid chromatography (UPLC) coupled with photodiode array detector (PDA) was used to identify and quantify the phenolic compounds in the spice extracts. Galangal exhibited the highest antioxidant capacity, associated with the highest total phenolic content. Furthermore, galangin was identified as the principal phenolic component and the main contributor to the highest antioxidant capacity of galangal. Spices in the family Rutaceae and Lauraceae possessed very high antioxidant capacity and high levels of phenolics. Generally, chlorogenic acid and rutin were identified as the dominant phenolic compounds in the spice extracts. This study might provide useful information not only for human health, but also for screening new economic natural antioxidants that could be used in foods.  相似文献

Murta (Ugni molinae T.) berries were air‐dried at five temperatures (40, 50, 60, 70 and 80 °C), and the changes in β‐carotene, phenolic acids, total phenolic and flavonoid contents and antioxidant capacities (DPPH and ORAC) were investigated. The berries showed a high content of β‐carotene, which decreased during drying temperature between 40 °C and 80 °C. Free and bound phenolic acids were also determined, showing gallic acid to be the prevalent phenolic acid. Total phenolic and flavonoid contents in the dried berries showed a higher decrease at lower temperature due to longer drying time. The radical‐scavenging activity also showed higher antioxidant activity at higher drying temperatures (70–80 °C) than at lower drying temperatures (40–50 °C). Total phenolic content (TPC) and flavonoids showed good correlation with antioxidant capacity. Murta berries proved to be an excellent source of antioxidants and bioactive compounds and are therefore a potential ingredient for new functional food products.  相似文献

Mung bean grains exhibit high level of antioxidant activity due the presence of phenolic compounds. Near‐infrared spectroscopy (NIRS), in conjunction with chemometrics, was used to develop a rapid, nondestructive, chemical free and easy‐to‐use method to determine these compounds in sixty genotypes of mung bean. NIRS calibration curve with high‐performance liquid chromatography (HPLC) as reference method was used to determine phenolic compounds (catechin, chlorogenic acid, caffeic acid, p‐coumaric acid, t‐ferulic acid, vitexin, isovitexin, myricetin, quercetin and kaempferol). It was observed that partial least square regression (PLSR) model in the wavelength range of 1600–2500 nm with standard normal variate (SNV) and linear baseline correction (LBC) as preprocessing techniques can measure phenolic compound accurately (R2 > 0.987) with root‐mean‐square error less than 1.82%. This study shows that NIRS along with chemometrics is an accurate method to estimate the phenolic compounds rapidly and nondestructively.  相似文献

BACKGROUND: Phenolic compounds have recently received considerable attention for their ability to protect plant and human cells from oxidative stress‐induced damage. Red clover (Trifolium pratense L.) is a rich source of isoflavonoids with multiple potential protective functions. The aim of this study was to identify and characterise phenolic compounds in red clover roots by high‐performance liquid chromatography and mass spectrometry and to study the effects of stress factors and growth stage on root phenolics. RESULTS: A total of 28 phenolic compounds were tentatively identified in red clover roots. The most abundant phenolics in pot‐grown roots were formononetin glycoside malonate (G‐M) (1.51–4.26 mg g?1), formononetin (2.21–3.57 mg g?1) and biochanin A (1.73–2.17 mg g?1), whereas field‐grown roots were rich in formononetin‐G‐M (3.90–4.27 mg g?1), maackiain‐G‐M (2.35–3.02 mg g?1) and pseudobaptigenin‐G‐M (1.80–2.58 mg g?1). Concentrations were affected by the growth stage. Ozone exposure slightly affected the total phenolic content in roots and also had minor effects on individual compounds. CONCLUSION: Elevated ozone, cultivation regime and growth stage affected the levels of phenolics in red clover roots, suggesting sensitivity of root phenolics to biotic and abiotic stress conditions. The antioxidant activity and antimicrobial property of phenolic extracts from acerola (Malpighia emarginata DC) fruit were assessed. The contribution of ascorbic acid and phenolic compounds in the total antioxidant capacity of the extracts was also evaluated. The extracts showed high total phenolic values and possessed high antioxidant activity as expressed by 2,2′‐diphenylpicrylhydrazyl (DPPH) and oxygen radical absorbance capacity assays (ORAC). The ascorbic acid content ranged from 405 to 1744 mg/100 g of fruit on a fresh weight basis. The antioxidant capacity of the phenolic fractions was in the following order: anthocyanins<phenolic acids<flavonoids. The phenolic fractions contributed 7.1–36.5% of the antioxidant activity expressed by ORAC, whereas the contribution of ascorbic accounted for 18–39% of the total activity. Selected extracts from the flavonoids fraction showed some activity against Staphylococcus aureus.  相似文献

The influences of different osmotic solution pretreatments (sucrose, glucose and maltose with concentration of 45%) on the volatile compounds, phenolic compounds and other physicochemical parameters in frozen mangoes were studied. Volatile and phenolic compounds were measured using SPME/GC‐MS and HPLC method, respectively. The results revealed that compared with untreated frozen mango, some volatile compounds (e.g. alcohols, aldehydes and some terpenes and esters) increased significantly and there were more compounds identified in osmo‐dehydrofrozen samples. These changes positively affected mango aroma and resulted in higher sensory scores for osmo‐dehydrofrozen samples. In addition, data on phenolic compounds showed that dehydrofrozen samples pretreated in glucose and sucrose had higher ρ‐hydroxybenzoic acid and quercetin contents, respectively, while samples pretreated in maltose showed higher ρ‐coumaric acid and sinapic acid contents compared with untreated frozen samples. The current work indicates that osmo‐dehydrofreezing can improve the retention of phenolic and aromatic compounds in frozen mango.  相似文献
