Winter wheat is the most important cereal in Uzbekistan. Although the processing industry recognizes the low quality of local wheat, the present land use policy prioritizes production quantity, and wheat of better quality is imported to improve local flour. Yet, with increasing world market prices, Uzbekistan has to decide whether to continue allocating considerable resources for imports or to start investing in local quality improvements. This study therefore analyzed wheat production in the Khorezm region of Uzbekistan by (a) assessing the economic feasibility of local production vs. imports; and by (b) evaluating the current N-fertilizer management at field level in order to identify options for improving quality. Demand for wheat in the region currently falls short of supply by 79,000 t but under favorable world market prices, funds for importing additional wheat could be covered by cotton sales. Prices above $148 USD t−1 support the present land use policy to cultivate wheat but the baking quality of the crop is low. Higher N rates and/or an additional application of N at anthesis significantly increased grain quality. Additional costs for changes in N management, however, are currently not compensated by the price premiums at the State mills. Thus, in the absence of price incentives, it is unrealistic to expect producers to maximize quality production. Consequently, administrators must give quality greater attention by creating incentives through price differentials for higher quality, and encouraging awareness programs on wheat quality and improved on-field N management.  相似文献

Overproduction of apelin in obesity could be one of the last protective defenses before type 2 diabetes develops. To summarize the existing evidence on the association between dietary intake and apelin gene expression and concentration. We systematically searched MEDLINE, EMBASE, and google scholar and hand-searched bibliographies, including peer-reviewed articles with English abstracts, without restriction in publication date, updated until 21 February 2016 that reported the association between dietary intake and apelin gene expression or concentration. From a total of 1075 articles, we identified 12 relevant studies. There were 6 clinical trials in human and 6 studies in animals. Overall, two of three studies conducted in humans showed that calorie-restriction diet in obese subjects decreases apelin concentration. Five animal studies reported that higher intake of fatty acids and eicosapentaenoic acid (EPA) increased apelin expression and concentration. Given the paucity of data available, the heterogeneity of study designs used, and exposures tested, no quantitative meta-analysis was justified. Based on human studies, hypocaloric diet can reduce apelin concentration in obese individuals. In addition, higher intakes of total fatty acids and EPA may increase apelin gene expression and concentration.  相似文献

Ensuring global food security for a growing population remains a major challenge. This is especially true against the background of increasing food prices paired with growing income levels and changing demand patterns in the developing world. At the same time, climate change and the occurrence of more frequent and extreme natural disasters increase the vulnerability of rural farm households, negatively affecting agricultural production. Given the many dimensions of food security, no simple solution can be found. Promoting productivity of farming and increasing the efficiency of the food marketing system are effective measures contributing to rural development in developing countries. Policy reforms in agriculture and beyond help to reduce distortions and change consumers’ awareness with respect to food waste and resource use inefficiencies related to human diets. What is new in this context is the increasing link of agriculture with other sectors such as the energy and the financial markets. This calls for further research as additional pressure is being put on the global food system.  相似文献

Salt is commonly used in food processing and as a flavour enhancer. Dietary salt intake often exceeds the recommended levels and high intake is associated with several health concerns such as hypertension, cardiovascular disease and certain types of cancer. A systematic review of the literature was conducted to examine if individuals’ salt taste function and perception is associated with dietary intake. Interventional studies were excluded in order to investigate the taste-diet relationships of free-living individuals. The systematic literature search was conducted in five electronic databases and twenty articles that reported on salt taste function and perception, as well as dietary intake, were identified and included. Of these, eleven studies measured salt taste sensitivity as detection and/or recognition thresholds, seven measured salt taste intensity, and twelve assessed hedonic ratings (preference or liking). Based on the studies included in this review, salt taste sensitivity and intensity ratings were poorly associated with dietary intake. Hedonic ratings, on the other hand, were relatively more predictive of dietary intake. Considerable variations in the methods used in salt taste and dietary intake assessment were noted, which may explain the lack of taste-diet associations or inconsistent findings between studies. Although definitive conclusions cannot be drawn, this review suggests that a simple tool that assesses salt taste hedonic ratings may be a useful strategy to identify individuals who consume high levels of salt in a clinical setting and subsequently inform the selection of strategies to improve dietary salt intake in these individuals. Future studies investigating taste-diet relationship should emphasise high quality methodology and adequate statistical power for robust outcomes.  相似文献

Reducing both hunger and high expenditure on food imports is a priority for most developing African countries. Countries that hitherto have relied heavily on food imports are seeking new approaches to increase the utilization of locally grown crops. This review uses the case of cassava to propose that scientific and technological innovations, supported by public investment and appropriate policies, offer opportunities for better utilizing locally grown crops, encouraging agro-industrial development, reducing import expenditure, and providing much-needed income (bread) to smallholders. This review highlights areas that require further research in order to achieve sustainable development in the processing of raw cassava root into cassava flour for bread production.  相似文献

As long as large-scale recording of expensive-to-measure and labor-consuming traits, such as dry matter intake (DMI) and CH4 production (CH4P), continues to be challenging in practical conditions, alternative traits that are already routinely recorded in dairy herds should be investigated. An ideal indicator trait must, in addition to expressing genetic variation, have a strong correlation with the trait of interest. Our aim was to estimate individual level and phenotypic correlations between rumination time (RT), CH4P, and DMI to determine if RT could be used as an indicator trait for CH4P and DMI. Data from 343 Danish Holstein cows were collected at the Danish Cattle Research Centre for a period of approximately 3 yr. The data set consisted of 14,890 records for DMI, 15,835 for RT, and 6,693 for CH4P. Data were divided in primiparous cows only (PC) and all cows (MC), and then divided in lactation stage (early, mid, late, and whole lactation) to analyze the changes over lactation. Linear mixed models, including an animal effect but no pedigree, were used to estimate the correlations among traits. Phenotypic and individual level correlations between RT and both CH4P and DMI were close to zero, regardless of lactation stage and data set (PC or MC). However, CH4P and DMI were highly correlated, both across lactation stages and data sets. In conclusion, RT is unsuitable to be used as an indicator trait for either CH4P or DMI. Our study failed to validate RT as a useful indicator trait for both CH4P and DMI, but more studies with novel phenotypes can offer different approaches to select and incorporate important yet difficult to record traits into breeding goals and selection indexes.  相似文献

The popularity of adding value to indigenous plant protein sources has increased due to the rise in the world population, high costs of animal protein as compared to plant proteins, and an increase in the consumer awareness of the nutritional and functional roles of dietary plant protein. Seeds of acacia plants (containing over 1,350 species) have considerable amount of protein (18.25% to 35.5%) and nutritionists have shown great interest in assessing the quality and functionality of proteins from these protein‐rich plants. In this review, the overall nutritional and health‐promoting properties of acacia seed (AS) species are introduced. Extraction, quality, and functional properties of proteins from different AS species are discussed. Furthermore, anti‐nutritional components and protease inhibitors present in AS species and the effects of processing methods applied to lower the levels of anti‐nutrients are also discussed. Previous applications of AS in food formulations are highlighted. This review aims to provide updated findings that have been reported on AS proteins and to highlight areas for further studies in order to increase the utilization potential of the seeds.  相似文献

With the developing world increasingly exposed to severe shocks and stresses, a growing number of international development agencies have now adopted resilience building as a critical long-term objective for their programmes. This paper explores the potential for this concept in the context of food security and nutrition but the reflection extends to development interventions more generally. Resilience is a rich concept, and has at its core the notion of complex dynamic processes that aptly describes the nature and dynamics of vulnerability and changes as they affect the developing world. The paper argues that the main value of resilience lies in its integrative nature, which facilitates greater collaboration between traditionally disparate groups and communities of practices. The paper also stresses some of the key conceptual and practical challenges that we face when trying to operationalise and measure resilience.  相似文献

Authentication of regional and traditional food made of meat poses a significant challenge. It continues to be a very difficult task which requires employment of quite advanced analytical techniques. These products, despite a similar process of manufacturing, differ in taste and aroma. This happens due to the use of special breeds of animals, the application of appropriate feeding regimes as well as the effect of the place and climate. In order to perform correct identification of geographical origin, a good solution is to determine both stable isotopes as well as trace elements. It is essential to collect detailed meteorological and geochemical data and information about farming practices and to compare them with the obtained results. In a majority of cases, the performed identification is confined to species and the determination of the animal breed is very limited. In the case of individual breeds a comparative analysis of SNPs appears to present the highest potential, especially genes affecting the coat color of animals may serve as markers. Experiments confirm that genes responsible for pigmentation underwent mutations in individual breeds. Authentication on the basis of the manufacturing process appears to be easier to realize than tracing geographical origins.  相似文献

The use of ultrasounds has recently gained significant interest in the food industry mainly due to the new trends of consumers toward functional foods. Offering several advantages, this form of energy can be applied for the improvement of qualitative characteristics of high-quality foods as well as for assuring safety of a vast variety of foodstuffs, and at the same time minimizing any negative effects of the sensory characteristics of foods. Furthermore, the non-destructive nature of this technology offers several opportunities for the compositional analysis of foods. However, further research is required for the improvement of related techniques and the reduction of application costs in order to render this technology efficient for industrial use. This review paper covers the main applications of ultrasounds as well as several advantages of the use of the technology in combination with conventional techniques. BackgroundThe gut microbiota is a putative target for dietary interventions for cardio-metabolic health (CMH), including prevention of obesity, type 2 diabetes, and cardiovascular disease. This has generated considerable interest, but the actual feasibility for diet or specific foods to induce measurable, sustained and meaningful benefits for CMH risk by this route remains uncertain.Scope and approachThis report summarises an expert workshop assessing the gut microbiota as a relevant, feasible and competitive target for CMH benefits by dietary interventions. It summarises the expert presentations and overall view of participants on the current status and outlook, considering also implications for the food industry.Key findings and conclusionsChanging the gut microbiota by diet is possible, but an assessment of the impact on CMH risk is still needed, including clarifying advantages above other known dietary routes. The individual gut microbiota composition may in part determine the impact of diet and its effects on health. Therefore, future developments may identify individuals at risk and thus possible modification of the microbiota to achieve benefits in susceptible (sub) populations depending on their initial microbiota composition. Prebiotics currently appear to be the most promising ingredients; however, required doses may be relatively high and the actual role of gut microbiota needs further assessment. Overall, causal evidence linking gut microbiota interventions with CMH benefits are developing in preclinical models but are still lacking in humans. A significant research effort is needed and ongoing to determine whether potential effects can be reliably substantiated.  相似文献

Using a nationally representative household-level dataset on consumption expenditure, this paper examines the crowding-out effects of tobacco and alcohol spending on food and non-food consumption in rural India. We found a positive relationship between spending on these temptation goods and household income, but in proportionate terms the poor and socially-disadvantaged households spent more on such goods compared to others. In general, their consumption crowded out food expenditure but not as much as non-food expenditure. Tobacco expenditure crowded out more of consumer durables followed by foodgrains, healthcare and education. However, among the poor, foodgrains were traded-off more. Likewise, spending on alcohol also crowded out foodgrains, but the effects were larger for consumer durables and starker among the poor. Across social groups too, consumption of tobacco as well as alcohol led to a reallocation of budgets with consumer durables being most displaced followed by foodgrains. On the whole, the crowding out effects were larger for tobacco than alcohol and were greater for households belonging to the lower rungs of both income and social order. We identified that such crowding-out effects operated through peer effects or social interactions; hence the key inference is that government interventions aimed towards controlling tobacco or alcohol consumption would be more effective if these targeted peer groups and their group leaders.  相似文献

Temperature is a crucial factor affecting the quality and safety of food products during both distribution and storage. The difficulty in controlling and monitoring the temperature history of food products makes it difficult to precisely predict shelf life. Time–temperature indicators (TTIs) provide a visual summary of a product’s accumulated chill-chain history, recording the effects of both time and temperature. Attempts have been made to develop a prototype of a time–temperature indicator based on the diffusion of lactic acid, which is temperature-dependent. Four lactic acid-based TTIs were made in different substrate concentrations. Color changes associated with the diffusion of lactic acid were monitored. In the vapor diffusion of lactic acid, an irreversible color change of a chemical chromatic indicator (from green to red) clearly and progressively occurred due to the pH reduction. The temperature dependence of these TTIs kinetics was characterized isothermally in the range of 4–45 °C, yielding activation energy (Ea) of, approximately, 50 kJ mol−1. The mathematical models of each TTI were established according to the relationships between color changes and time and temperature. The differences between the Ea values of the TTIs and the Ea associated with food quality losses – including enzymatic loss, hydrolysis, lipid oxidation, nutrient loss and microbial growth – were less than 40 kJ mol−1, and therefore these TTIs could be considered as good candidates to monitor food quality losses. Although these TTIs do not cover the whole range of food quality losses, they could be applied to show the time–temperature history of some foods, especially fruits and vegetables, and to indicate food quality associated with time–temperature exposure.  相似文献

Sizeable scientific evidence indicates the health benefits related to phenolic compounds and dietary fiber. Various phenolic compounds-rich foods or ingredients are also rich in dietary fiber, and these two health components may interrelate via noncovalent (reversible) and covalent (mostly irreversible) interactions. Notwithstanding, these interactions are responsible for the carrier effect ascribed to fiber toward the digestive system and can modulate the bioaccessibility of phenolics, thus shaping health-promoting effects in vivo. On this basis, the present review focuses on the nature, occurrence, and implications of the interactions between phenolics and food components. Covalent and noncovalent interactions are presented, their occurrence discussed, and the effect of food processing introduced. Once reaching the large intestine, fiber-bound phenolics undergo an intense transformation by the microbial community therein, encompassing reactions such as deglycosylation, dehydroxylation, α- and β-oxidation, dehydrogenation, demethylation, decarboxylation, C-ring fission, and cleavage to lower molecular weight phenolics. Comparatively less information is still available on the consequences on gut microbiota. So far, the very most of the information on the ability of bound phenolics to modulate gut microbiota relates to in vitro models and single strains in culture medium. Despite offering promising information, such models provide limited information about the effect on gut microbes, and future research is deemed in this field.  相似文献

Worldwide obesity has reached a pandemic proportion. World Health Organization (WHO) estimates that by 2020, two thirds of the global disease burden will be attributable to obesity and obesity associated complications. Existing anti-obesity drugs, affecting one of the fundamental processes of the weight regulation in human body, have displayed serious side effects which outweigh their beneficial effects. Clinical and non-clinical researchers in this area are now facing a challenge to search for non-pharmacological alternatives for the prevention of obesity. Dietary interventions and life style changes with enhanced physical activity are two such options. Considering the importance of dietary interventions, the present review highlights the role, significance and potential of functional food ingredients for the management of obesity and associated co-morbidities.  相似文献

Over two thirds of the world’s poorest and most food-insecure people live in developing countries. Since Food Assistance Programs (FAPs) are the most commonly applied food security interventions in these countries, their effective management remains a shared concern in development policies. In addition to addressing short-term relief needs, FAPs have also been funding integrated rural development projects. This paper assesses how FAPs are operationalized in terms of food aid distribution among people in different social and economic strata in Nepal. In addition, it also explores micro-level institutional, technical and geographical factors that influence the implementation of FAPs based community projects in order to analyze their potential efficiency in stimulating local development. Results suggest that FAPs do bring certain benefits, for instance helping to reduce household food deficits as well as acting as a safety net for poorer households, by reducing their reliance on debt as a means of securing food. However, they also suggest that the provision of food by FAPs is not equitable in view of intra-community socio-economic variations and food security needs. Households belonging to the high caste and thus enjoying better food security conditions were found to exploit their political and social networks in order to acquire a disproportionately higher amount of food assistance. Furthermore, the community projects also failed to attract effective local participation which, in turn, led them to becoming incompatible with the needs, priorities and capacities of local communities. From the perspective of ‘targeting’, we conclude that the continuation of FAPs in their existing modalities mostly maintain the status quo, and can even have the effect of exacerbating local inequalities.  相似文献

Frying is one of the most common methods of preparing foods. However, it may lead to the formation of potentially hazardous substances, such as acrylamide, heterocyclic amines, trans fatty acids, advanced glycation end products, hydroxymethyl furfural and polycyclic aromatic hydrocarbons, and adversely alter the desirable sensory attributes of foods, thereby reducing the safety and quality of fried foods. Currently, the formation of toxic substances is usually reduced by pretreatment of the raw materials, optimization of process parameters, and the use of coatings. However, many of these strategies are not highly effective at inhibiting the formation of these undesirable reaction products. Plant extracts can be used for this purpose because of their abundance, safety, and beneficial functional attributes. In this article, we focus on the potential of using plant extracts to inhibit the formation of hazardous substances, so as to improve the safety of fried food. In addition, we also summarized the effects of plant extracts, which inhibit the production of hazardous substances, on food sensory aspects (flavor, color, texture, and taste). Finally, we highlight areas where further research is required.  相似文献

This study explores the role of food brand logo orientation on consumers’ perceptions and attitudes regarding food products through four studies. Study 1 examines the effects of food brand logo orientation (diagonal vs. vertical) on consumer perceptions of food tastiness and risk. The findings suggest that diagonal (vs. vertical) food brand logos result in higher (lower) taste and risk perception in branded food. Study 2 reveals the underlying mechanisms of this effect by introducing perceived movement as a mediator between logo orientation and food perception. The results support the inference that movement is an underlying mechanism for the effect. Study 3 examines the effects of brand logo orientation and regulatory focus on consumer attitudes regarding branded food. The results suggest that for consumers with a promotion focus, a diagonal (vs. vertical) oriented logo leads to a more favorable attitude toward the food. For consumers with a prevention focus, a diagonal (vs. vertical) oriented logo leads to a less favorable attitude toward the food. Study 4 establishes validity of the above findings regarding native English speakers.  相似文献

Core disgust is a negative emotion, comprised of disgust in response to food, animals, and from the body itself (and its products). Individual differences exist in the level to which people experience the emotion of core disgust. Sensitivity to disgust has been associated negatively with Body Mass Index (BMI) in overweight and obese people, and to eating disorders independently from BMI. This study investigates the relationship between disgust sensitivity and BMI by examining data from the Italian Taste Project (n = 2317). We hypothesized that the relationship between disgust sensitivity and BMI, after accounting for age and gender, may be mediated by other factors, such as 6-n-propylthiouracil (PROP) sensitivity or eating restraint, and that this relationship might differ in non-obese and obese individuals. Results showed that the relationship between sensitivity to disgust and food behaviors is complex and differs between obese and non-obese people. Two mediation models were considered. In the first case restrained eating acted as a mediator of disgust sensitivity in the prediction of BMI, while in the second one BMI acted only as a partial mediator of disgust sensitivity in the prediction of restrained eating. This suggests that heightened sensitivity to core disgust may be associated with a heightened sensitivity to self-disgust, motivating restrained eating behaviors when BMI is higher, but only in non-obese individuals.  相似文献
