In this work, the combined effects of chitosan, modified atmosphere packaging (MAP) and packaging barrier properties on shelf life of fresh pasta is presented. In particular, all pasta samples were packaged under active and passive MAP in two different polymeric films with high and low barrier properties. In order to assess the influence of the variables described beforehand on the shelf life of pasta, the sensorial and microbiological quality has been monitored during storage. Results confirmed the antimicrobial properties of chitosan. Moreover, the findings recorded in this study suggest that the shelf life of fresh pasta is limited by the sensorial characteristics. Statistically significant differences between the shelf life of pasta packaged in low barrier and high barrier films were found. The best result was obtained for samples packaged in high barrier film, due to the ability of the packaging to maintain the gas headspace conditions during the storage.  相似文献

A range of physical tests in parallel with sensory evaluation has been carried out on frozen french fries as a function of frying time. Low strain rate flexure and high strain rate pendulum impact tests show that overall the strength and modulus of samples increases with frying time. A portable instrumented pendulum is able to differentiate between samples. The best correlation between sensory and instrumental measures is on crispness and mechanical strength. Oil and water contents change with frying time and are related to the visible layered structure in the samples. Changes in oil and water contents and structure are least between 4 and 6min. Structural change occurs after 6min corresponding to discontinuities in density, mechanical properties and sensory attributes.  相似文献

Improper cooling of cooked rice at an inappropriate temperature or leaving cooked rice at room temperature can cause food poisoning attributed to Bacillus cereus. Natural food preservative of either squid or crab polymer chitosan solution was added to examine their antibacterial properties against Bacillus cereus in cooked rice during storage at 37 and 4 °C. Both types of chitosan could retard the growth of B. cereus and total aerobic counts in cooked rice stored at 37 °C up to 1 day. In addition, the effect of chitosans on the physical and textural properties of cooked rice during storage was studied. Both chitosans slightly increased the moisture content of cooked rice. However, chitosans had no effect on the whiteness and hardness of cooked rice during storage (P > 0.05). Therefore, both chitosans have a potential to be used as food preservative for cooked rice with no negative effects on rice quality.  相似文献

The effects of 1) ripening 2, 7, and 14 d at 7 degrees C before freezing; 2) tempering 7, and 14 d at 7 degrees C after freezing; and 3) frozen storage for 1 and 4 wk at -20 degrees C, on the meltability, stretchability, and microstructure of pasta filata and nonpasta filata Mozzarella cheeses were investigated. Cheeses were cut into 5 x 10 x 7-cm blocks and vacuum-sealed 1 d after manufacture. The results were compared to the corresponding results obtained with unfrozen control samples, aged at 7 degrees C between 2 and 21 d. The changes in physical properties of frozen-stored pasta filata and nonpasta filata Mozzarella cheeses were consistent with critical damage to the cheese microstructure as compared to the unfrozen control samples. Generally, aging before and tempering after freezing resulted in increased meltability of both frozen-stored pasta filata and nonpasta filata Mozzarella cheeses. The stretchability of frozen-stored pasta filata Mozzarella cheese increased during tempering, but that of nonpasta filata Mozzarella cheese decreased during aging and tempering. In most cases, one-week frozen stored pasta filata Mozzarella cheese had higher meltability and stretchability than 4-wk frozen-stored sample. For 1-wk frozen-stored nonpasta filata Mozzarella cheese, the meltability increased but stretchability decreased when it was frozen-stored for 4 wk.  相似文献

目的研究熟制小龙虾冷冻贮藏期间的品质变化。方法以熟制的带壳和去壳小龙虾为原料,将其在-18℃下贮藏1个月,通过检测虾肉的脂肪氧化程度、pH值、挥发性盐基氮(total volatile base nitrogen,TVB-N)值、盐溶性蛋白含量、色泽、质构特性等指标,考察小龙虾在冷冻贮藏期间的品质变化。结果在贮藏期间,带壳和去壳小龙虾虾肉的脂质氧化程度、pH值、TVB-N均呈上升趋势,总巯基含量和盐溶性蛋白含量持续下降,去壳虾肉颜色变化不显著,而带壳虾肉的色泽参数L*值和白度值W显著降低,硬度、弹性、咀嚼度和回复力在贮藏前期下降显著,之后下降趋势较为平缓。结论带壳和去壳的虾肉在贮藏前期(0~2周)的各指标无显著差异,而冷冻贮藏3周之后,带壳虾肉的品质优于去壳虾肉,冷冻贮藏一个月后,带壳虾肉和去壳虾肉均可正常食用。  相似文献

Juices from beef semimembranosus/adductor tissue, cooked to endpoint temperatures (EPTs) of 76, 78, 80, 82 and 84°C in a model heat-treating system, were evaluated for changes in CIELAB L*a*b*, chroma (C) and hue angle (H) values before and after storage of the cooked meat at -20°C for 3 weeks and after storage of the expressed juices under N2 at 3°C for 72 h. Increases in EPTs altered all colour values of the juices. Lightness (L*) increased while yellowness (b*) decreased; redness (a*) and C decreased progressively while H increased toward the vertical axis. Storage of the expressed juices at 3°C under N2 did not inhibit changes in a*, b*, C and H values. Regression coefficients of changes in relation to EPTs and time of storage of the expressed juices under N2 were established. Storage of the cooked meats for 3 weeks at -20°C did not change any of the colour values of the juices. These data indicate that evaluations of cooked beef for doneness by colour of expressed juices must be performed immediately after expression of the juices before oxidation of the myoglobin pigments occurs. Storage of cooked meat at -20°C does not alter the colour of the juices, therefore, valid assays for doneness of meat in relation to juice colour can be made after frozen storage. © 1997 This article is a US Government work and, as such, is in the public domain in the United States of America  相似文献

The physicochemical and organoleptic characteristics of two batches of Cabrales cheese, stored at −20°C for 4 and 8 months, respectively, were studied during subsequent ripening. Frozen storage did not result in significant alterations in overall compositional, rheological and sensory properties or the level of lipolysis. The extent of proteolysis was slightly lower in the cheeses frozen prior to ripening.  相似文献

鲜鸭分别于-35℃浸渍冷冻液和风冷冷库中冻至-18℃,然后在-18℃保藏库中贮藏5个月,以解冻汁液流失、蒸煮损失、肌肉剪切力、色泽、pH、TVB-N和微生物为指标,研究冻结速率不同对鸭在冷冻和贮藏过程中品质变化的影响,采用回归分析预测其贮藏期。结果表明:鸭体中心温度降到-18℃,浸渍式冷冻处理组用时仅仅52min,显著短于风冷组的738min;除pH值无显著差异外,浸渍式冷冻组的其他各项品质指标显著优于风冷冷冻组。  相似文献

The effects of addition of tea catechins (TC) and vitamin C (VC) on sensory evaluation, colour and lipid stability in cooked or raw beef and chicken meat patties during refrigerated storage were studied. Fresh beef striploin and chicken breast muscles were minced, following removal of external fat and connective tissue. Following mincing, beef and chicken were assigned to one of the following five treatments: control (meat treated with no antioxidant); TC200, meat plus 200 mg TC/kg muscle; TC400, meat plus 400 mg TC/kg muscle; VC200, meat plus 200 mg VC/kg muscle, VC400, meat plus 400 mg VC/kg muscle. Sodium chloride (1%) was added to all samples. Patties (125 g portions), formed from the above-treated minced meat, were oven cooked, cooled, and packaged in 30% CO2:70% N2. Fresh raw beef and chicken patties were packaged in 80% O2:20% CO2. All samples were stored for up to 7 days under fluorescent lighting at 4 °C. Sensory parameters (colour, flavour, taste, tenderness and overall acceptability) were evaluated on cooked beef and chicken patties after 1, 3 and 6 days of storage. Surface colour (Hunter L, a and b values), and lipid oxidation (2-thiobarbituric acid reactive substances) were measured on days 1, 3 and 6 of storage for cooked meats and on days 2 and 7 for raw beef and chicken. Tea catechins addition (200 or 400 mg/kg) to minced meat caused (P < 0.05) discolouration in cooked beef and chicken meat patties and significantly reduced (P < 0.001) lipid oxidation in cooked or raw beef patties compared to the control. Beef, either raw or cooked, was more susceptible (P < 0.01) to oxidation compared to chicken. Raw meat stored in high oxygen conditions was more susceptible to lipid oxidation than cooked meat stored in anaerobic conditions. Tea catechins treatments (TC200 and TC400) inhibited (P < 0.05) lipid oxidation in raw beef to a greater extent than vitamin C treatments (VC200 and VC400). These results indicate that tea catechins are potent natural antioxidants and exhibit greater antioxidant efficacy compared to vitamin C.  相似文献

The impact of cooling rates (0.40, 1.11, 1.42, 1.64, 2.47 and 3.36 °C/min) on starch retrogradation and textural properties of cooked rice was evaluated. The relationship between cooling rates and different properties were determined using Pearson correlation. Starch retrogradation enthalpy (ΔHr) of cooked rice was determined by differential scanning calorimetry, and textural properties were determined by a Texture Analyser. This study showed that the ΔHr value and hardness value had a negative correlation with cooling rate during storage, −0.963  r  −0.716, P < 0.01; −0.826  r  −0.706, P < 0.05, respectively. However, a positive correlation was found between adhesiveness and cooling rate (0.237  r  0.882, P < 0.05). These results indicated that the cooked rice chilled with slower cooling rate retrograded faster than chilled with rapid cooling rate. Therefore, high quality cooked rice can be produced by rapid cooling process.  相似文献

The effects of freezing rates and storage temperatures on starch retrogradation and textural properties of cooked rice were evaluated. Cooked rice was frozen with different freezing rates and then stored at 4 °C for 14 days or −18 °C for up to 7 months. Starch retrogradation enthalpy (ΔHr) of cooked rice was determined by a differential scanning calorimetry, and textural properties were determined by a texture analyser. The results showed that the ΔHr and hardness values had a negative correlation with freezing rate, however, a positive correlation was found between adhesiveness and freezing rate. On the other hand, the advantages (lower hardness and higher adhesiveness, less starch retrogradaton) of cooked rice gained by rapid freezing, were lost quickly in the first 3 days of storage at 4 °C. However, rapid freezing combined with −18 °C frozen storage can effectively retard starch retrogradation and maintain the textural properties of cooked rice for at least 7 months. Therefore, high quality cooked rice can be produced by combined rapid freezing with frozen storage.  相似文献

Rancidity development during frozen storage (?20 °C) of an underutilised medium‐fat‐content fish species, horse mackerel (Trachurus trachurus), was studied. Special attention was given to the effect of previous chilled storage (0, 1, 3 and 5 days) on the quality of the frozen fish. For this, chemical (free fatty acid and conjugated diene contents; peroxide value, PV; thiobarbituric acid index, TBA‐i; fluorescent compound formation) and sensory (rancid odour and taste) analyses were carried out. Hydrolytic rancidity showed an increase with frozen storage time; however, no effect of previous chilling time was observed on the frozen product. Oxidative rancidity measured by chemical (PV, TBA‐i and fluorescence) and sensory (odour and taste) indices increased with frozen storage time and also with previous chilling time. Satisfactory quality was maintained up to 7 months of frozen storage of horse mackerel provided that a short chilling time (not longer than 3 days) was employed. © 2002 Society of Chemical Industry  相似文献

Pigeon peas (Cajanus cajan) seeds were germinated for 4 days at 20 °C in darkness in order to improve the nutritional quality of seeds. Germination brought about a sharp reduction of α-galactosides, phytic acid and trypsin inhibitor activity (83%, 61% and 36%, respectively) and an increment of vitamin B2 (145%), vitamin C (from negligible amounts to 14 mg/100 g d.m.), vitamin E (108%) and total antioxidant capacity (28%). These flours were used as ingredients to produce pasta products in a proportion of 5%, 8% and 10%. The supplemented pasta products had shorter cooking time and higher water absorption, cooking and protein losses in water than had control pasta (100% semolina). From sensory evaluation, fortified pasta generally had acceptability similar to control pasta. Cooked pasta with the highest level of substitution (semolina:germinated pigeon pea flour at 10%) was chemically and biologically evaluated and results showed that protein, fat, dietary fibre and mineral contents were improved. Fortified pasta provided more vitamin B1, B2, E and antioxidant capacity than did control pasta. Biological assessment of fortified, cooked pasta indicated that true TD and PER value increased by 12% and 64%, respectively, in comparison with control. The germinated pigeon pea flour can be an excellent ingredient to increase the nutritional value of semolina pasta without affecting the sensory properties.  相似文献

This study was carried out to determine the possibility of adding nanopowdered chitosan (NPC) into cholesterol-reduced yogurt to improve the functionality of yogurt and the effects of adding NPC on the physicochemical, microbial, and sensory properties of the products during storage. The pH values and mean lactic acid bacteria counts of NPC-added (0.3 to ∼0.7%, wt/vol) and cholesterol-reduced yogurt ranged from 4.19 to 4.41 and from 4.75 × 108 to 9.70 × 108 cfu/mL, respectively, when stored at 4°C for 20 d, thereby indicating a possibility of prolonging the shelf life of yogurt. In color, the a* and b* values for cholesterol-reduced yogurt were not significantly influenced by the addition of NPC (0.1 to ∼0.7%, wt/vol); however, the L* values significantly decreased with the addition of the greatest concentration (0.7%, wt/vol) of NPC at 0-d storage. The sensory test revealed that the astringency scores significantly increased at 0-d storage when the greatest concentration (0.7%, wt/vol) of NPC was added into cholesterol-reduced yogurt. Based on the data obtained from the current study, it is concluded that concentrations (0.3 to ∼0.5%, vol/vol) of NPC could be used to produce an NPC-added and cholesterol-reduced yogurt without significantly adverse effects on the physicochemical, microbial, and sensory properties.  相似文献

目的研究广东省冷藏冷冻食品经营环节温度控制现状及存在的主要问题。方法采用实地调查记录和数据分析及2种形式对冷藏冷冻食品储存温度控制现状、设备维护频率及监督抽检数据进行调查与数据分析。结果 31.6%冷藏冷冻食品实际储存温度高于标示温度,且在大中小型超市均普遍存在。17.4%的超市和24.4%的设备存在不维护的情况,冷藏冷冻食品抽检不合格项目主要是微生物。结论冷藏冷冻食品经营环节温度控制不到位,存在一定食品安全风险,需要制定统一冷链物流标准规范,加大抽检力度,加强标准的宣贯加强食品安全监管。  相似文献

To compare grape seed extract (GSE) to common antioxidants in a pre-cooked, frozen, stored meat model system sausage was manufactured from lean beef (70%), pork fat (28%), and salt (2%). Antioxidants added for comparison with control included grapeseed extract (100, 300, and 500 ppm), ascorbic acid (AA, 100 ppm of fat) and propyl gallate (PG, 100 ppm of fat). Product was formed into rolls, frozen, sliced into patties, cooked on a flat griddle to 70 °C, overwrapped in PVC, then frozen at - 18 °C for 4 months. GSE- and PG-containing samples retained their fresh cooked beef odor and flavor longer (p < 0.05) than controls during storage. Rancid odor and flavor scores of GSE-containing samples were lower (p < 0.05) than those of controls after 4months of storage. The L* value of all samples increased (p<0.05) during storage. Thiobarbituric acid reactive substances (TBARS) of the control and AA-containing samples increased (p < 0.05); those of GSE-containing samples did not change significantly (p > 0.05) over the storage period.  相似文献
