Antioxidant properties and changes in the levels of active compounds in fresh and processed broad beans were determined in the study. Activity of extracted substances was much higher against ABTS (2,2'-azino-bis [3-ethylbenzothiazoline-6-sulphonic acid]) than towards DPPH (2,2'-diphenyl-1-picrylhydrazyl) radicals. Phenolics extracted with 70% acetone were also more active comparing to amine compounds obtained with water both in experiments applying radicals and during oxidation of linoleic acid. Steam cooking and freezing had a negative influence on the content of polyphenols and in consequence on their activity. Cooking fresh broad beans decreased the content of those compounds by 16% and freezing – by over 30%, while cooking frozen material resulted in a much lower further decrease (2–8%). Processes applied on fresh material reduced the activity against ABTS•+ to a smaller extent (cooking by 11% and freezing by around 20%), while cooking frozen beans caused a further decrease by 10–17%.  相似文献

We investigated both the distribution of protein, ash and starch in legume (chickpeas, smooth and wrinkled peas) cotyledons, and the soaking and cooking characteristics, including gelatinization and retrogradation, of the starch. There were large differences in composition between different types of legumes and also between the outer and inner parts of legume cotyledons. Wrinkled peas exhibited much higher water absorption during prolonged soaking and there were higher hardness value determined for cooked seeds compared with chickpeas and smooth peas. While the hardness of cooked seeds decreased continuously as cooking time increased to 110 min, all legume starch was fully gelatinized after cooking for 70 min.  相似文献

Antioxidant activities of papain‐treated grass carp protein hydrolysate (HP) were investigated using in vitro methods and in grass carp mince system. Lipid oxidation, colour changes and cooking loss in grass carp mince added with 0% (control), 0.5%, 1.0%, 2.0% and 4.0% HP during refrigerated storage (4 °C) for 8 days was studied. HP could chelate 50% of Fe2+ and scavenge 50% of hydroxyl radicals at the concentration of 0.81 and 8.12 mg mL?1, respectively. And HP could effectively decrease peroxide values and inhibit the formation of thiobarbituric acid reactive substances in fish mince throughout storage (P < 0.05), at the application level range from 0.5% to 4.0%. In HP‐treated samples the formation of conjugate dienes (CDs) was retarded 5–30% at day 6 of storage compared to control. In addition, HP could significantly decrease cooking loss of fish mince samples, at the application level range from 1.0% to 4.0%.  相似文献

In this study, the effects of different cooking methods on health-promoting phytochemicals and antioxidant activity of fresh kale were investigated. Results showed that water soluble phytochemicals were significantly decreased by boiling. While stir-frying gave the highest degradation ratio for all phytochemicals, and steaming gave the lowest degradation ratio. The thermal degradation ratios of ascorbic acid, total carotenoids, total chlorophylls, total flavonols, and total phenolics content after stir-frying were 54.9, 28.2, 71.0, 81.3, and 39.3%, respectively. The results showed that steaming can be considered as the best method of cooking as it preserve the bioactive compounds and the antioxidant activity.  相似文献

An active film from chitosan incorporated with aqueous green tea extract (GTE) was developed. The effects of GTE concentrations including 2, 5, 10 and 20% (w/v) of green tea in the film-forming solution on the film properties were determined by measuring physical properties, total polyphenolic content and antioxidant activity of the active films. Fourier Transform Infrared (FTIR) spectrometry was carried out to observe the potential modifications of the chitosan films when incorporated with GTE. The results suggested that incorporation of GTE into chitosan films improved mechanical and water vapor barrier properties and enhanced polyphenolic content and antioxidant activity of the films. Changes in the FTIR spectra of the chitosan films were observed when GTE was incorporated, suggesting some interactions occurred between chitosan and the polyphenols from GTE. This study showed the benefits of incorporation of GTE into chitosan films and the potential for using the developed film as an active packaging.  相似文献

Effect of cooking on the antioxidant properties of coloured peppers   总被引:1,自引:0,他引:1  
Pepper (Capsicum annum L.) has long been recognized as an excellent source of antioxidants, being rich in ascorbic acid and other phytochemicals. This study was conducted to investigate the effect of different cooking methods on the antioxidant properties of coloured peppers. Six varieties of peppers were subjected to different cooking methods, such as microwave heating, stir-frying and boiling in water, for 5 min individually. The cooked and raw peppers were analyzed for radical-scavenging activity (RSA) and total polyphenol content (TP) using 1,1-diphenyl-2-picrylhydrazyl–high-pressure liquid chromatography (DPPH)–HPLC and Folin-Ciocalteu methods, respectively. The samples were also evaluated for ascorbic acid content (AsA) by HPLC. Total carotenoid content was determined spectrophotometrically. Results suggest that there is no significant (P > 0.05) difference in RSA, TP, AsA and total carotenoid contents between the cooked and raw peppers when processed for 5 min. However, the cooked peppers show marked differences (P < 0.05) in the RSA, TP and AsA when cooked for 5 min in boiling water with further reduction observed after boiling for 30 min. This may be due to the leaching of antioxidant compounds from the pepper into the cooking water during the prolonged exposure to water and heat. Therefore, it is vital to use less water and cooking time and also to consume the water used for boiling so as to obtain the optimum benefits of bioactive compounds present in peppers. It is concluded that microwave heating and stir-frying without using water are more suitable cooking methods for pepper, to ensure the maximum retention of antioxidant molecules.  相似文献

The present work evaluates the potential of sorghum with high content of tannins for wholegrain flour production. Two types of mills were used: a roller mill (RM) and a blade (BM) mill. The impact of moisture and grinding on yield, physical, chemical and thermal properties were evaluated. Maximum yield was obtained using a BM with 25% moisture in the grain, resulting in 60.9% versus 28% (g flour g−1 of wholegrain sorghum) for the RM. Grain moisture and milling type affected flour colour and ashes. For both mills, the pasting and thermal properties of flour with grain moisture variation were significantly different from the untreated control sample. By studying the procedures for flour production and quality characteristics, it is possible to produce flour with good physical attributes, which can contribute to the development of gluten-free foods based on sorghum for the coeliac population.  相似文献

ABSTRACT:  Epidemiological studies demonstrated that the consumption of dietary antioxidant was associated with the prevention of atherosclerosis. The aim of this study was to investigate the antioxidant activities of the hydrophilic extracts from 9 selected legumes based on copper-induced human LDL oxidation model in vitro . The antioxidant activities were assessed on the basis of the formation of conjugated dienes (lag time of oxidation) and thiobarbituric acid reactive substances (TBARS) as the early and later stage markers of LDL oxidation. The results showed that the extracts of black beans ( Phaseolus vulgaris L.), lentils ( Lens culinaris ), black soybeans ( Glycine max ), and red kidney beans ( Phaseolus vulgaris L.) had significant ( P < 0.05) longer LDL oxidation lag times (128.8, 124.2, 107.7, and 111.1 min, respectively) than the LDL control group (94.9 min). No significant lag-time lengthening was observed in other tested legume extracts. On the other hand, black beans, lentils, black soybeans, red kidney beans, and pinto beans exhibited higher antioxidant capacities (Trolox equivalents) than yellow peas, green peas, chickpea, and yellow soybeans in both LDL-conjugated dienes assay and LDL-TBARS assay. Meanwhile, the antioxidant activities of these legumes against LDL-lipid peroxidation in the above assays were found to correlate very significantly ( P < 0.01) with their phenolic substances, and DPPH radical scavenging activity and ORAC (oxygen radical absorbance capacity). These results suggest that consuming black beans, lentils, black soybeans, and red kidney beans may have potential in preventing the development of atherosclerosis from the perspective of inhibiting LDL oxidation.  相似文献

Broccoli and green asparagus were cooked using boiling water, steam, microwave oven and combi oven with overheated steam and combination of hot air with overheated steam (only broccoli). Vegetables were analysed for chlorophylls a and b, carotenoids, total polyphenols, antioxidant activity, colour parameters and sensory properties. Cooking in the combi oven with overheated steam was an effective method to achieve the highest levels of polyphenols and antioxidant activity, but it negatively influenced the contents of chlorophylls in both vegetables and carotenoids in asparagus. Boiling and cooking in the combi oven with overheated steam or hot air and steam ensured the best and comparable sensory properties of broccoli. Asparagus showed a lower susceptibility to heat treatments than broccoli as none of the treatments applied caused significant differences in colour redness and yellowness, polyphenol content and sensory properties of this vegetable.  相似文献

Functional properties, antioxidant and Angiotensin-converting enzyme (ACE) inhibitory activities of peanut protein isolate (PPI) and peanut protein hydrolysate (PPH) prepared using Alcalase, at different (10%, 20%, 30% and 40%) degrees of hydrolysis, (DH) were investigated. Hydrolysis (at DH > 10%) significantly (p < 0.05) improved the solubility (>80%) of PPI, especially in the pH range of 4–6. However, PPI showed better emulsifying and foaming properties than PPH (p < 0.05). As DH increased, ferrous ion chelating activity, 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging activity and ACE inhibitory activity of PPH increased, while reducing power decreased (p < 0.05). Bleaching of beta-carotene by linoleic acid was suppressed better by PPI and PPH at 10% DH than of PPH at higher DH. Thus, the results reveal that DH affects functional properties, antioxidant and ACE inhibitory activities of peanut protein.  相似文献

After water, tea is considered to be one of the most consumed drinks worldwide. To get the maximum benefit from the whole‐leaf teas, the manufacturers provide instruction that these teas can be steeped 2–3 times over 6–8 h. In this study, the effect of consecutive steeping on radical‐scavenging ability of whole leaf green tea (unfermented), oolong tea (partially fermented) and black tea (fully fermented) was determined. Green tea showed the highest level of antioxidant activity, total phenolic and flavonoid content followed by oolong tea and black tea irrespective of the number of steeping done. The result also demonstrated that re‐steeping reduced the antioxidant potential of teas. Moreover, it was revealed that green tea is the best candidate for re‐steeping followed by oolong and then black tea.  相似文献

In this study, fifty‐one monofloral Sardinian honeys from ten various floral origins were screened for their phenolic content, antioxidant activity, colour and electrical conductivity. The total phenolic amounts have been evaluated by Folin–Ciocalteu method, whereas quantification of several phenolic compounds (phenolic acids and flavonoids) has been carried out by HPLC‐DAD technique. The richest sample in phenolic compounds resulted strawberry tree honey with about 40 mg GAE/100 g, as well FRAP test and DPPH˙ test confirm that antioxidant activity of strawberry tree honey extract exceed both honey extracts and synthetic antioxidants like BHA and BHT. Among the studied phenolic compounds a total of five phenolic acids (ferulic, syringic, trans‐cinnamic, chlorogenic and p‐hydroxycinnamic) and nine flavonoids (catechin, kaempferol, rutin, quercetin, luteolin, apigenin, galangin, pinocembrin and pinobanksin) were identified. Our results show good correlations between total polyphenol amount and antioxidant activity and between colour and electrical conductivity.  相似文献

The effects of various proteases on the formation and characteristics of rice dreg protein hydrolysates (RDPHs) were investigated. Enzymatic hydrolysis of often under-utilised rice dreg protein (RDP) with different enzymes studied here was found to significantly improve protein content and solubility. RDPHs prepared by alkaline protease showed better protein recovery, producing higher protein content with much smaller peptides, while hydrolysates generated by Protamex showed the highest antioxidant activities with more than 80% solubility over a wide pH range. The results indicated that the type of protease greatly influenced the molecular weight and amino acid residue composition of RDPH. The enzyme type also determined the functional properties and antioxidant activity of the recovered proteins. It was found that an optimum allocation of alkaline protease in addition to the Neutrase enzyme could be an appropriate strategy to produce RDPH with desirable functionalities, antioxidant properties, and low salt content.  相似文献

The effects of soaking, boiling and steaming processes on the total phenolic components and antioxidant activity in commonly consumed cool season food legumes (CSFL’s), including green pea, yellow pea, chickpea and lentil were investigated. As compared to original unprocessed legumes, all processing steps caused significant (p < 0.05) decreases in total phenolic content (TPC), DPPH free radical scavenging activity (DPPH) in all tested CSFL’s. All soaking and atmospheric boiling treatments caused significant (p < 0.05) decreases in oxygen radical absorbing capacity (ORAC). However, pressure boiling and pressure steaming caused significant (p < 0.05) increases in ORAC values. Steaming treatments resulted in a greater retention of TPC, DPPH, and ORAC values in all tested CSFL’s as compared to boiling treatments. To obtain cooked legumes with similar palatability and firmness, pressure boiling shortened processing time as compared to atmospheric boiling, resulted in insignificant differences in TPC, DPPH for green and yellow pea. However, TPC and DPPH in cooked lentils differed significantly between atmospheric and pressure boiling. As compared to atmospheric processes, pressure processes significantly increased ORAC values in both boiled and steamed CSFL’s. Greater TPC, DPPH and ORAC values were detected in boiling water than that in soaking and steaming water. Boiling also caused more solid loss than steaming. Steam processing exhibited several advantages in retaining the integrity of the legume appearance and texture of the cooked product, shortening process time, and greater retention of antioxidant components and activities.  相似文献

Six different batches of cold-pressed black cumin seed oils (BCSO) were evaluated for their fatty acid profiles, thymoquinone contents, oxidative stability, and antioxidant properties. Linoleic, oleic, and palmitic acids were the major fatty acids in the tested oils. The cold-pressed BCSO samples differed in their oxidative stability measured as the oxidative stability index (OSI). The greatest OSI was about 155 h, and the lowest OSI was proximately 76 h, reflecting a 2-fold difference in their oxidative stability. These BCSO contained significant level of phenolic components with a concentration ranging from 1.02 to 1.40 mg gallic acid equivalents/g oil. In addition, BCSO contained about 3.48-8.73 mg/g thymoquinone and trace amount of dithymoquinone. Electron spin resonance (ESR) analysis showed that cold-pressed BCSO contained natural antioxidants and was able to suppress radical mediated lipid peroxidation in fish oil. The methanol extracts of BCSO could directly react with and quench DPPH radicals, which further confirmed the antioxidant property of these BCSO. The results from the present study suggest that cold-pressed black cumin seed oil may serve as an excellent dietary source of thymoquinone and natural antioxidants.  相似文献

Chemical profiles of aqueous or ethanolic extracts of 140, 170 and 200 °C-heated perilla meal were identified by GC-MS, and antioxidant properties of the extracts were observed via in vitro assays and in bulk oil or oil-in-water (O/W) emulsion. A total of 22 and 27 chemicals were found in aqueous and ethanolic extracts from non-heated samples, respectively. As the heating temperature increased to 200 °C, the carbohydrate and derivative contents decreased significantly (P < 0.05), whereas rosmarinic acid concentration decreased in both extracts. Ethanolic extracts possessed higher antioxidant activities than aqueous extracts based on the results of radical scavenging and ferric-reducing antioxidant power assays and the Rancimat assay, but there were no significant differences among samples (P > 0.05). In the case of O/W emulsions, aqueous extracts inhibited lipid oxidation more efficiently than ethanolic extracts at 50 °C. In particular, heat treatment decreased the antioxidant activities of ethanolic extracts and not aqueous extracts in the O/W emulsion system. Aqueous extracts are recommended in moisture-rich emulsion-based foods while ethanolic extracts are more suitable in a lipid-rich environment for enhancing oxidative stability.  相似文献

This study was aimed to investigate the influence of solvent (water and ethanol in concentration: 50%, 70% and 96%) and extraction temperature (25–80) °C on polyphenols extraction of grape seed (Vitis vinifera L. cv. “Frankovka”) cultivated in Eastern Croatia. The best results were reached using 50% ethanol at 80 °C. The most abundant individual polyphenolic compound was catechin which makes the average of 45.11% of the total phenolic content followed by epicatechin (34.45%), procyanidin B2 (12.90%), gallic acid (5.34%), gallocatechin (1.58%), epicatechin gallate (1.01%). The antioxidant activity of extracts was determined by DPPH‐method and it was highly dependent on extraction solvent and temperature. The total extractable proanthocyanidins content of extract had the highest positive correlation (r = 0.994) with antioxidant activity, which indicated that these compounds might be the most important antioxidant in examined grape seed extracts. Relationship between phenolic content and colour of extracts was observed.  相似文献

Chemical composition, polyphenols, flavonoids, carotenoids and antioxidant activities of twenty-five cultivars of sweet potato were investigated. Starch, crude protein, crude fat, total dietary fibre, reducing sugar and ash contents ranged between 51.88–69.21, 2.36–7.79, 0.24–1.11, 5.02–14.35, 1.07–9.78 and 1.95–4.29 g per 100 g dry weight (DW), respectively. Cultivars of Longshu, Pushu 32 and Qinshu No.7 (Shanxi province) displayed the highest values in total polyphenol contents (9.38, 9.11 and 8.76 mg GAE per g DW, respectively), Huangmeigui showed higher flavonoids content (2.54 mg RE per g DW), Xiangshu presented higher anthocyanin content (1.02 mg per g DW), whereas Pushu 32 had the highest β-carotene content (208.11 μg per g DW). Strong significant positive correlations were presented between antioxidant activities and total polyphenol and flavonoid contents, indicating that polyphenols and flavonoids are essential antioxidants in sweet potatoes. Among all cultivars, Pushu 32 presented the highest grey relational grade (GRG) value (0.7811), suggesting its importance as a healthy diet.  相似文献

The addition of bioactive polyphenolic compounds to dairy products is linked to improve their antioxidant potential. The aim of the present investigation was to evaluate the effect of strawberry polyphenol on physicochemical properties, total phenolic and antioxidant activity of stirred dahi. Strawberry polyphenol extract was used to fortify stirred dahi (0.5 mg/mL). This fortification resulted in a sevenfold increase in the antioxidant activity of polyphenol‐enriched stirred dahi, while pH, acidity, water‐holding capacity and viscosity remained comparable with the control. Sensory analysis indicated that the product was acceptable up to 2 weeks when stored at 7–8 °C with no significant difference (P > 0.05) in the antioxidant activity and total phenolic content.  相似文献
