‘Seolhyang’ strawberries were treated with fumaric acid (FA) and UV-C irradiation and packed with rapeseed protein-gelatin (RG) film containing 1% grapefruit seed extract (GSE). The initial population of total aerobic bacteria in the strawberries was 2.9 log CFU/g, while that of samples treated with FA plus UV-C and packed with RG film was 1.3 log CFU/g. For yeast and mold populations, the control had 2.6 log CFU/g, while samples treated with the combined treatment had 1.0 log CFU/g. These results suggest that combined postharvest treatment and RG film packaging can be useful for maintaining the quality of ‘Seolhyang’ strawberries.  相似文献

To investigate the effects of postharvest treatments on strawberry (Fragaria × ananassa Duch.) quality, a combination of non-thermal treatments was investigated as a potential hurdle technique. Specifically, ‘Goha’ strawberry samples were treated with 50 ppm aqueous chlorine dioxide (ClO2) and 5 kJ/m2 ultraviolet-C (UV-C) irradiation and packed with rice bran protein (RBP) film containing 1% grapefruit seed extract (GSE). The initial population of total aerobic bacteria in the strawberries was 3.15 log CFU/g, while that of samples treated with ClO2/UV-C and packed with RBP film containing GSE was 1.64 log CFU/g. In terms of yeast and mold populations, the control had 2.98 log CFU/g, while the samples treated with the combined non-thermal processing and packed with the RBP film had 1.09 log CFU/g. In addition, after 11 days of storage, combined non-thermal treatment with RBP film packaging reduced the initial populations of total aerobic bacteria and of yeast and molds in the strawberries by 2.63 and 2.84 log CFU/g, respectively. Titratable acidity (TA) in the strawberries decreased during storage, but there was no significant difference among treatments. Postharvest treatments employed in this study produced a negligible change in the color of the strawberries, and sensory evaluation results indicated that the combined postharvest treatments provided better sensory scores compared with the control group. Therefore, these results suggest that a postharvest treatment consisting of 50 ppm ClO2/5 kJ/m2 UV-C with RBP film packaging containing GSE may be useful for maintaining the quality of ‘Goha’ strawberries.  相似文献

Barley protein (BP) was extracted from barley flour, and a BP film was prepared. To improve the physical properties of the BP film, nano‐clay was incorporated. Among the films prepared, the composite film containing 4% BP/1% Cloisite Na+ had the best physical property. The composite film containing grapefruit seed extract (GSE) was prepared and used as a packaging film for the button mushroom. Packing of the mushroom with this film inhibited microbial growth during storage. After 7 days of storage, packaging of mushrooms with the film containing 0.7% GSE reduced the populations of total aerobic bacteria and yeast and moulds by 0.95 and 0.58 log CFU/g, respectively, compared with the control. These results suggest that the BP/Cloisite Na+ film containing GSE can be used as an environment‐friendly packaging for maintaining mushroom quality during storage.  相似文献

BACKGROUND: The effectiveness of chitosan films containing Zataria multiflora Boiss essential oil (ZEO) (5 and 10 g kg?1) and grape seed extract (GSE) (10 g kg?1) on lipid oxidation and microbial (lactic acid bacteria, aerobic mesophiles and inoculated Listeria monocytogenes) characteristics of mortadella sausage at 4 °C for 21 days was evaluated. The release of total phenolics (TPs) into sausage was also assessed. RESULTS: All films exhibited antibacterial activity against L. monocytogenes on agar culture media. Chitosan films containing ZEO were the most effective on the growth of bacteria. The growth of L. monocytogenes was significantly inhibited by ZEO‐GSE containing films especially during storage of the sausages for 6 days. Aerobic mesophiles and lactic acid bacteria were the most sensitive and resistant groups to films by 0.1–1.1 and 0.1–0.7 log cycles reduction, respectively. Sausages wrapped by 10 g kg?1 GSE + 10 g kg?1 ZEO films had the lowest degrees of lipid oxidation, which was 23% lower than the control. The TPs of ZEO films decreased to zero after 6 days, whereas TPs of GSE films followed a slight decrease during the storage. CONCLUSION: Antimicrobial/antioxidant chitosan film could be developed by incorporating GSE and ZEO for extending the shelf life of mortadella sausage. A novel nanopackaging was synthesised by coating polyvinyl chloride (PVC) film with nano‐ZnO powder, and its effects on the preservation quality of fresh‐cut ‘Fuji’ apple were investigated at 4 °C for 12 days. Compared with the control (PVC film), nanopackaging significantly reduced the fruit decay rate (P < 0.05), as well as decreased the accumulation of malondialdehyde (MDA) from 74.9 nmol g?1 in the control to 53.9 nmol g?1 in the nanopackaging. Cutting caused an increase in ethylene level, suggesting wound‐induced ethylene production, which was suppressed in nanopackaging. Both the polyphenoloxidase and pyrogallol peroxidase activities were decreased in nanopackaging fruit. The initial appearance of apple slices was retained, and the browning index was prevented in nanopackaging samples, which was only 23.9, much lower than the control of 31.7 on day 12. These results indicated that nano‐ZnO active packaging could be a viable alternative to common technologies for improving the shelf‐life properties of ‘Fuji’ apples as a fresh‐cut product.  相似文献

Red algae (RA) film containing grapefruit seed extract (GSE) was used as a wrapping film for cheese and bacon. RA film containing 1% GSE was prepared to inhibit the growth of pathogenic bacteria such as Escherichia coli O157:H7 and Listeria monocytogenes. Wrapping of cheese and bacon with the film decreased the populations of E. coli O157:H7 and L. monocytogenes. After 15 days of storage, wrapping of cheese with the RA film reduced the populations of E. coli O157:H7 and L. monocytogenes by 1.21 and 0.85 log CFU/g, respectively, compared to control. Bacon wrapped with the RA film also decreased the populations of E. coli O157:H7 and L. monocytogenes by 0.45 and 0.76 log CFU/g, respectively. Wrapping of bacon with the RA film decreased peroxide and thiobarbituric acid values. These results suggest that RA film containing GSE is a useful wrapping material for extending the shelf lives of cheese and bacon.  相似文献

The objective of this study was to evaluate the inhibitory effect of grape seed extract (GSE), green tea extract (GTE), nisin and their combinations (nisin with either GSE or GTE) against Listeria monocytogenes. The inhibitory effect of these natural compounds was evaluated in phosphate buffer solution (PBS) medium containing approximately 109 colony‐forming units (CFU/mL) of L. monocytogenes. The effectiveness of these compounds in a meat model system was evaluated by surface inoculation (approximately 106 CFU/g) of L. monocytogenes onto turkey frankfurters. The inoculated frankfurters were dipped into soy protein film‐forming solutions with and without the addition of antimicrobial agents (GSE 1% or GTE 1% or nisin 10000 IU or combinations). Samples were stored at either 4 °C or 10 °C. The inhibitory effects of edible coatings were evaluated on a weekly basis for 28 d. The greatest inhibitory effect was observed in the PBS medium containing GSE (1%) and nisin (10000 IU/mL), which caused a 9‐log cycle reduction of L. monocytogenes population after 3 h incubation at 37 °C. In the meat system, the L. monocytogenes population (7.1 CFU/g) was decreased by more than 2 log cycle after 28 d at 4 °C and 10 °C, in the samples containing nisin (10000 IU) combined with either GSE (1%) or GTE (1%). This research has demonstrated that the use of an edible film coating containing both nisin and natural extracts is a promising means of controlling the growth and recontamination of L. monocytogenes on ready‐to‐eat meat products.  相似文献

ABSTRACT: The effectiveness of whey protein isolate (WPI) coatings incorporated with grape seed extract (GSE), nisin (N), malic acid (MA), and ethylenediamine tetraacetic acid (EDTA) and their combinations to inhibit the growth of Listeria monocytogenes, E. coli O157:H7, and Salmonella typhimurium were evaluated in a turkey frankfurter system through surface inoculation (approximately 106 CFU/g) of pathogens. The inoculated frankfurters were dipped into WPI film forming solutions both with and without the addition of antimicrobial agents (GSE, MA, or N and EDTA, or combinations). Samples were stored at 4 °C for 28 d. The L. monocytogenes population (5.5 log/g) decreased to 2.3 log/g after 28 d at 4 °C in the samples containing nisin (6000 IU/g) combined with GSE (0.5%) and MA (1.0%). The S. typhimurium population (6.0 log/g) was decreased to approximately 1 log cycles after 28 d at 4 °C in the samples coated with WPI containing a combination of N, MA, GSE, and EDTA. The E. coli O157:H7 population (6.15 log/g) was decreased by 4.6 log cycles after 28 d in samples containing WPI coating incorporated with N, MA, and EDTA. These findings demonstrated that the use of an edible film coating containing nisin, organic acids, and natural extracts is a promising means of controlling the growth and recontamination of L. monocytogenes, S. typhimurium, and E. coli O157:H7 in ready‐to‐eat poultry products.  相似文献

Ellagic acid is a phenolic compound which occurs naturally in strawberries. Interest in ellagic acid has increased during the past few years owing to its properties as a micronutrient. The objective of this study was to determine the ellagic acid content in strawberries compared with that in other common fruits and to evaluate its variability, the effects of ripening stage, and the tissue and seasonal variability in selected cultivars widely grown in Argentina. Strawberries showed significantly higher levels of ellagic acid than many other fruits of economic importance, ranging from 0.16 to 2.07 mg g?1 dry weight. The ellagic acid content was highest in green fruit, intermediate in mid‐ripe fruit and lowest in full‐ripe fruit. Cultivars ‘Chandler’ and ‘Camarosa’ contained the highest amounts of ellagic acid in strawberries with edible value (0.78 and 0.70 mg g?1 dry weight respectively), while ‘Oso Grande’ and ‘Milsei’ exhibited the lowest (0.35 and 0.31 mg g?1 dry weight respectively). Free‐radical scavenging capacities of strawberries and blackberries treated with methyl jasmonate (MJ), allyl isothiocyanate (AITC), essential oil of Melaleuca alternifolia (tea‐tree oil or TTO), and ethanol (EtOH) were investigated. All of these natural volatiles tested reduced the severity of decay in both strawberries and blackberries during storage at 10 °C as compared to the control. Most of these compounds enhanced antioxidant capacity and free‐radical scavenging capacity, except the AITC treatment. The MJ treatment for strawberries and blackberries had the highest antioxidant capacity, expressed as oxygen radical absorbance capacity (ORAC) values, after 7 days of storage. Moreover, the MJ treatment promoted the antioxidant capacity in strawberries and blackberries as measured by the radical 2,2‐di (4‐tert‐octylphenyl) ‐1‐picrylhydrazyl (DPPH) and the radical cation 2,2′‐azinobis(3‐ethylbenzothiazoline‐6‐sulfonic acid) diammonium salt (ABTS?+) scavenging activity in both 7 and 14 days after storage. The MJ treatment also increased scavenging capacities on the superoxide radical (O2??), hydrogen peroxide (H2O2), hydroxyl radical (?OH), and singlet oxygen (1O2) in strawberries and blackberries. Treatment with TTO or EtOH enhanced most of these free‐radical scavenging capacities, except for H2O2 in strawberries, and for O2?? and 1O2 in blackberries. These results indicated that all of the natural volatile compounds tested in this study, except AITC, promoted the antioxidant capacity and scavenging capacity of most major free radicals and, thus, helped to improve the physiology of berry fruits and enhanced their resistance to decay. While AITC was also very effective in reducing decay, its effect on free‐radical scavenging capacity was inconsistent, suggesting that additional mechanisms may be involved in its inhibition of fungal growth. Covering the soil with plastic film is an important method to modify soil temperature and improve the conditions for plant growth. For the optimal use of films in horticulture, it is necessary to quantify this effect, which depends particularly on the optical properties of the film. Five films, used mainly for soil covering in asparagus cultivation, were tested by measuring the soil temperature as well as the transmittance and reflectance in the short‐ and long‐wavelength bands: ‘Taschenfolie schwarz/weiß’, a film with black and white surfaces and pockets for fastening; ‘Antitaufolie’, a film with anti‐condensation coating, ‘Solartherm plus Folie’, a film with black top and transparent sides; ‘MaterBi Folie’, a biodegradable film; and ‘Thermoplus Folie’, a black polyethylene with transparent sides. All films were produced in Germany. The temperature measurements were carried out under controlled irradiation (short‐wavelength band) and ambient temperature conditions in the laboratory: first, 182 W m?2 and 11 °C at a depth of 0.4 m, and second, 340 W m?2 at 20 °C. A significant relationship between the temperature increase or decrease by covering the soil with the film and the calculated apparent quantities of the reflectance in the short and long‐wavelength band was derived (r2 = 0.85, n = 12). Furthermore, first tests with a physical model were carried out to obtain basic information, which should be used in the development of strategies for film management in the field. This study was undertaken to determine the effects of two commercially available brown onion varieties, ‘Cavalier’ and ‘Destiny’, supplemented at two different levels, on blood lipid and oxidative status using the pig as a model. Twenty‐five female cross‐bred pigs were allocated to one of five dietary treatments that consisted of a high‐fat control diet with no onion added, a low onion dose of 10 g onion MJ?1 DE and a high dose of 25 g onion MJ?1 DE for each variety of onion. Supplementation with ‘Destiny’ onion resulted in a 21% (p < 0.05) reduction in the averaged fasted and postprandial plasma triacylglyceride (TG) measurements taken over the six‐week period in comparison with the control pigs. The average fasting and postprandial plasma cholesterol concentrations were significantly reduced by 5.5 and 12.4% in pigs that consumed the low and high dose of ‘Destiny’ onion, respectively (p < 0.010), while ‘Cavalier’ was only effective at lowering cholesterol levels by 10% at the lower dose of supplementation. Inhibition in the rate of serum lipoprotein oxidation, measured as lag time, was increased by 23% (p < 0.05) in plasma obtained from pigs that consumed ‘Cavalier’ compared with the control and ‘Destiny’ onion diets. These data indicate that onion consumption level may provide a dietary means of manipulating some of the risk indices associated with coronary heart disease, but the responses varied with type and dose of onion. In this study, we aimed to improve the physical properties of Gelidium corneum–gelatin (GCG) film by including nano‐clay in the film‐forming solution and tested the antimicrobial properties of the thymol‐containing composite film as a packaging material for chicken breast. Addition of nano‐clay improved the physical properties of GCG film. The tensile strength of the GCG film containing 1% Cloisite Na+ was 38.13 MPa, compared to the 26.65 MPa for the GCG film. The water vapour permeability of the GCG film was 3.56 ng m m?2sPa, while that of the GCG film with 1% Cloisite Na+ was 3.24 ng m m?2sPa. Incorporation of thymol into the film had its antimicrobial activities against Escherichia coli O157:H7 and Listeria monocytogenes. When used to pack chicken breast, the GCG/nano‐clay film containing thymol inhibited microbial growth during storage.  相似文献

Changes in ‘fresh’ and ‘cooked‐notes’ during thermal treatment of cupuaçu (Theobroma grandiflorum) pulp were evaluated and modelled. Isothermal experiments in the temperature range of 70–98 °C were carried out and a non‐linear regression was performed to all data to estimate kinetic parameters. ‘Fresh’ and ‘cooked‐notes’ change followed simple first‐order (Ea = 78–82 kJ·mol−1, z = 30–31 °C) and reversible first order (Ea = 80–85 kJ·mol−1) kinetics, respectively. Although ‘cooked‐notes’ were linearly correlated with ‘fresh‐notes’ (R2 = 0.99), the former was a better indicator for quality degradation. Five different coloured sweet peppers (Capsicum annuum cv. Signal), white, green, yellow, orange and red were analysed for total carotenoids, α‐tocopherol, sugars (glucose, fructose and sucrose), organic acids (citric and ascorbic acids) and anti‐oxidant properties. The mature fruits, ‘Signal Red’, ‘Signal Orange’ and ‘Signal Yellow’ contained higher carotenoids, α‐tocopherol, sugars and organic acids than the immature fruits, ‘Signal Green’ and ‘Signal White’. Among the mature fruits, ‘Signal Red’ was the highest in total carotenoids [9.15 mg (100 g)?1 of fresh weight] while ‘Signal Orange’ was the highest in α‐tocopherol [5.40 mg (100 g)?1 of fresh weight]. ‘Signal Red’ and ‘Signal Orange’ contained the most sugars and organic acids. The suppression of 2,2′‐azobis (2,4‐dimethylvaleronitrile) (AMVN)‐induced oxidation of methyl linoleate by the acetone extracts from the coloured sweet peppers resulted as follows: ‘Signal Red’ > ‘Signal Orange’ ≈ ‘Signal Yellow’ > ‘Signal Green’ ≈ ‘Signal White’. The order of 1,1‐diphenyl‐2‐picrylhydrazyl (DPPH) radical scavenging activities of the acetone extracts was similar to that of suppression of methyl linoleate oxidation.  相似文献

The effects of crude malva nut gum (CMG) on the texture, digestion and the glycaemic index (GI) of white bread were investigated. Different CMG levels (0%, 2.5%, 5%, 7.5% and 10% w/w based on weight of flour) were added into a bread formula. The lightness (L*) and loaf‐specific volumes of the bread decreased with increased CMG levels. Firmness of the bread increased with increased CMG content. The in vitro starch digestion kinetics showed that bread containing CMG had generally lower predicted GI (74–81 vs. the control). In vivo human testing showed that increasing the CMG reduced the GI of the bread. The GI values of bread containing CMG ranged from 73 to 98 of the control. Overall liking scores of consumers ranged between ‘like slightly’ and ‘like moderately’ (6.1–7.1) compared to 7.1 for the control. Thus, the addition of CMG in carbohydrate‐based foods may lower the GI.  相似文献

The physical properties of a composite film prepared from barley bran protein and gelatin (BBG) were investigated. Tensile strength (TS) and elongation at break (E) values of the BBG film decreased as barley bran protein content increased. TS increased with increasing gelatin content, but E values decreased. The optimal conditions for the preparation of the BBG film were 3 g barley bran protein, 3 g gelatin, and 1 g sorbitol in 100 mL film-forming solution. In order to inhibit the growth of pathogenic bacteria, a BBG film containing grapefruit seed extract (GSE) was prepared. After 15 days of storage, populations of Escherichia coli O157:H7 and Listeria monocytogenes inoculated on salmon packaged with the BBG film containing GSE decreased by 0.53 and 0.50 log CFU/g, respectively, compared to the control. Also, packing salmon with the BBG film containing GSE decreased the peroxide value and thiobarbituric acid value by 23.0% and 23.4%, respectively.  相似文献

The aim of this study was to investigate the effect of delactosed whey permeate (DWP) treatment on antioxidant and physicochemical properties of strawberries. Fresh strawberries treated with 3% DWP were analysed for different quality, nutritional and microbiological markers during 10 days of storage at 5 °C. The results showed that DWP treatment significantly reduced incidences of decay (70%) and numbers of total aerobic counts (~1.4 Log10 CFU g?1) and yeast and moulds (~1.8 Log10 CFU g?1). DWP treatment also inhibited the loss of firmness (15%) and maintained significantly (P ≤ 0.05) higher levels of vitamin C, total phenols and antioxidant activity of strawberries. Sensory scores confirmed that the DWP‐treated strawberries retained a good appearance and overall quality. The aroma and colour attributes were not reduced during storage. These results suggest that DWP treatment has potential to extend the shelf‐life and maintain the quality of strawberries during storage.  相似文献

In this study, gas chromatography–olfactometry (GC‐O) (sniffing) combined with gas chromatography–mass spectrometry (GC‐MS) analysis was applied to identify volatile aroma‐active compounds in homogenised segments of fresh and stored ‘Mor’ mandarins. The GC‐O nasal impact frequency method was used to identify Twenty‐three aroma‐active compounds, of which seventeen odorants were identified by GC‐MS. The aroma of fresh ‘Mor’ mandarins derived from a mixture of eleven odorants that contribute ‘green’ [(E)‐3‐hexenol and hexanal], ‘fresh’ [(E)‐carveol], ‘fruity’ (ethyl 2‐methylbutanoate), ‘citrus’ (limonene), ‘floral’ (linalool), ‘musty’ (β‐myrecene and γ‐terpinene), ‘potato’ (α‐terpinene), ‘mushroom’ (unknown 2) and ‘cabbage’ (α‐cubebene) odours. During postharvest, storage losses were observed in ‘green’ [(E)‐3‐hexenol] and ‘fresh’ [(E)‐carveol] odours, accompanied by increases in ‘fruity’ (ethyl propanoate) and several unpleasant aromas, such as ‘alcohol’ (ethanol), ‘musty’ [α‐pinene, (E)‐2‐nonenal and 1‐terpinen‐4‐ol] and ‘fatty’ (octyl acetate and δ‐cadinene) odours, all of which possibly account for the observed decrease in sensory acceptability after harvest.  相似文献

Chinese cabbages cv ‘Yuki’ (Brassica campestris L ssp pekinensis (Lour) Olsson) were treated with air containing 1‐methylcyclopropene (1‐MCP) at concentrations ranging from 0 to 1 µl l?1 for 12 h at 22°C before storage for 9 weeks at 3°C. Quality, weight loss and trimming loss were measured before treatment, and before and after storage, but were not influenced by 1‐MCP. 1‐MCP at 0.1 and 1.0 µl l?1 elicited increased levels of respiration and ethylene production which subsided when the cabbages were placed in cold storage.
