Fruit smoothie samples were thermally treated (P70  10 min) or high hydrostatic pressure (HHP) processed (450 MPa) with holding time of 1, 3 or 5 min and antioxidant activity, phenolic content and colour values (L*, a* and colour intensity) were determined. Significant reductions in antioxidant activity (p < 0.001) and phenolic content (p < 0.001) were observed at the applied pressure and a maximum treatment time of 5 min. Mean values for redness (a*) showed an increase (p < 0.001) in HHP processed smoothies compared to fresh. As expected, storage also had a significant effect on colour variables but the effect was more pronounced in high pressure treated samples stored for 30 days. Both colour and antioxidant activity were significantly affected by high pressure processing. Therefore, process optimisation of high pressure systems should be considered by processors prior to its adoption as a preservation technique in order to minimise the effect on the quality of fruit smoothie products.Industrial relevanceFruit smoothies have become popular with consumers and may significantly contribute to daily antioxidant intakes. Thermal processing has been shown to reduce the antioxidant activity of fruits, thus non-thermal methods of pasteurisation such as high hydrostatic pressure processing could help retain antioxidants in fruit smoothies offering a unique selling point for processors. The present study focussed on assessing the effect of thermal and high pressure processing on the antioxidant activity and phenolic content of fruit smoothies. Since decreases in levels of antioxidants were noted during long term storage it would appear that higher pressure treatments (> 450 MPa) might be required for better retention of antioxidant compounds in fruit smoothies.  相似文献

The visual appearance and pigment stability of fruit juice blends from Opuntia and Hylocereus cacti and of betalain-containing model solutions derived therefrom were investigated at pH values ranging from 3 to 7. All samples were found to be stable as indicated by betalain contents as well as hue and chroma values over the complete pH range monitored. Both the juice and the purified betaxanthin solution from Opuntia ficus-indica cv. ‘Gialla’ were characterised by yellowish hues, while the juice and the purified betacyanin solution from Hylocereus polyrhizus displayed purplish tonalities. By blending the betaxanthin and betacyanin stock solutions, tailor-made hues covering the entire spectrum from bright yellow ( = 84) to purplish-blue ( = 333) were successfully produced. Since mixtures from purified betalains did not provide colour shades different from those obtained with raw cactus fruit juices, the use of the latter should be preferred both because of consumer-friendly labelling and improved pigment stability.  相似文献

Chagalapoli (Ardisia compressa K.) is a tropical fruit of deep purple color with a high content of pigments. Anthocyanins, polyphenol composition, antioxidant activity and physicochemical characteristics of chagalapoli fruits (CF) are analyzed. The proximal and mineral composition is similar to that found in common berries (strawberry, blackberry and blueberry). A high content of total phenolics (1051.3 ± 43.5 mg of gallic acid equivalents/100 g of FW) is present, among which anthocyanins predominated (796.0 ± 2.3 mg of cyanidin 3-O-glucoside equivalents/100 g FW). Twelve anthocyanins were separated and ten of them identified by HPLC–DAD–MS. The main anthocyanins were malvidin-3-O-galactoside (35%), delphinidin 3-O-galactoside (28%) and petunidin 3-O-galactoside (19%). Other polyphenols identified included: flavonols, flavan-3-ols (catechin and proantocyanidin dimers) and hydroxycinnamoyl derivatives. The antioxidant activity of CF was 40% higher than that found in common berries, which were simultaneously analyzed. The high content of anthocyanins in CF and its peculiar anthocyanin profile make this under-utilized fruit a promising source of pigments and phenolic nutraceuticals.  相似文献

Cubes of Granny Smith and Pink Lady apples were vacuum packed in barrier bags with 0% to 50% (v/v) pineapple juice (PJ) at 20°Bx and subjected to high pressure processing (HPP) at 600 MPa for 1–5 min (22 °C). The in-pack total colour change (ΔE) was observed over 4 weeks at 4 °C. Within <1 week of storage at 4 °C, texture, polyphenoloxidase, pectinmethylesterase activities, changes in ΔE and visual browning after opening the bags during air exposure (22 °C; 21% O2 ) for 5 h were also monitored. During the 4 weeks storage in bag visible colour changes were not observed. Texture and ΔE after 5 h air exposure were significantly affected by the apple variety, HPP time and % PJ used. The combined treatment significantly reduced residual PPO activity while PME activity was not affected in both varieties. Pineapple juice in combination with HPP could be used as a natural preservation system for minimally processed apples.Industrial relevanceBrowning upon opening the packs and during air exposure can adversely affect the quality of fresh-cut fruits. Combined treatment of high pressure processing (HPP) and use of pineapple juice has the potential to prevent browning for several hours giving sufficient time for presentation and use in domestic and foodservice environment where high quality fresh-like fruit is required.  相似文献

In this study, the effect of plasma and ozone treatments on the quality of orange juice was evaluated. The juice was directly and indirectly exposed to a plasma field at 70 kV for different treatment times: 15, 30, 45 and 60 s. For ozone processing, different loads (0.057, 0.128 and 0.230 mg/O3 mL of juice) were evaluated. After the treatments, the oligosaccharides were quantified by HPLC. The juice pH, color, total phenolic content and total antioxidant activity were also determined. Both processes promoted a partial degradation of the oligosaccharides in the juice. However, the juice maintained an enough amount of oligosaccharides to be classified as a prebiotic food. The phenolic content and antioxidant capacity of the treated samples was also well preserved as the pH and color. Thus, atmospheric cold plasma and ozone are suitable non-thermal alternatives for prebiotic orange juice treatment.Industrial relevanceConsumers are looking for safe food products with high quality. Thus, the food industry is currently considering non-thermal processes as an alternative to reduce the nutrient loss in processed foods. Despite atmospheric cold plasma and ozone are technologies already evaluated as an efficient non-thermal alternative for pathogens inactivation in orange juice, no previous studies on their effects on the oligosaccharides in functional fruit juice was published. This study is of industrial relevance because it demonstrates that after plasma and ozone treatment the overall quality of prebiotic orange juice was preserved and the product maintained its functional appeal.  相似文献

The present study was undertaken to assess the effect of high pressure treatments and conventional thermal processing on antioxidant activity, levels of key antioxidant groups (polyphenols, ascorbic acid and anthocyanins) and the colour of strawberry and blackberry purées. Bioactive compounds (cyanidin-3-glycoside, pelargonidin-3-glucoside, ascorbic acid) and antioxidant activity were measured in strawberry and blackberry purées subjected to high pressure treatment (400, 500, 600 MPa/15 min/10–30 °C) and thermal treatments (70 °C/2 min). Samples were assessed immediately after processing. Different pressure treatments did not cause any significant change in ascorbic acid (p > 0.05). In contrast, following thermal processing (P70  2 min) ascorbic acid degradation was 21% (p < 0.05) as compared to unprocessed purée. However, no significant changes in anthocyanins were observed between pressure treated and unprocessed purées (p > 0.05), whereas conventional thermal treatments significantly reduced the levels (p < 0.05). In general, antioxidant activities of pressure treated strawberry and blackberry purées were significantly higher (p < 0.05) than in thermally processed samples. Colour changes were minor (ΔE) for pressurised purées but the differences were slightly higher for thermally treated samples. Redness of purées was well retained in high pressure treated samples. Therefore processing strawberry and blackberry by high pressure processing could be an efficient method to preserve these products quality. Hence high pressure processing (HPP) at moderate temperatures may be appropriate to produce nutritious and fresh like purées.Industrial relevanceThis research paper provides scientific evidence of the potential benefits of high pressure processing in comparison to thermal treatments in retaining important bioactive compounds. Antioxidant activity (ARP), ascorbic acid, and anthocyanins after exposure to high pressure treatments (400–600 MPa) were well retained. Our results also show that redness and colour intensity of strawberry and blackberry purées were better preserved by high pressure processing than conventional thermal treatment. From a nutritional perspective, high pressure processing is an attractive food preservation technology and offers opportunities for horticultural and food processing industries to meet the growing demand from consumers for healthier food products. Therefore high pressure processed foods could be sold at a premium than their thermally processed counterparts as they will have retained their fresh-like properties.  相似文献

Due to the growing market of food products associated to good health, the colour changes and stability of anthocyanin extracts from acerola, containing high level of ascorbic acid, and from açai, rich in flavonoids, were evaluated in an isotonic soft drink like system and in buffer solution. The degradation of anthocyanins from both sources followed first-order kinetics in all the systems, under air, either in the presence or absence of light. Addition of sugars and salts had a negative effect on the anthocyanin stability, being the rate constant (kobs) values in isotonic soft drink system 6.0 × 10 2 h 1 for acerola and 7.3 × 10 4 h 1 for açai, both in the dark. In the presence of light, the anthocyanin degradation was 1.2 times faster for acerola and 1.6 times faster for açai in soft drink isotonic systems, as compared to their respective buffer solutions. The highest stability observed in all açai systems was correlated to its high total flavonoid content and absence of ascorbic acid. The gradual degradation of red colour during storage of all systems was verified by the decrease of a⁎ values, accompanied with decreased colour intensity (decrease in C values) and tonality changes from red to yellow colour, as the h values increased during the experiment time.Industrial relevanceFunctional foods and addition of bioactive compounds to processed foods and drinks are a worldwide growing market. Thus, the aim of this study was to evaluate the stability of added anthocyanins from acerola and açai to an isotonic soft drink system and to study the effect of fluorescent light, mimicking the supermarket conditions, in such systems. Since colour is of fundamental importance for the acceptance of a food by consumers, the colour fading that occurs in these systems was also verified.  相似文献

Postharvest pericarp browning of litchi fruit results in an accelerated loss in shelf life and a reduced commercial value. Visual quality was lost in only 6 h at ambient temperature when fruit were removed from storage at 2 °C, due to browning. The experiment was conducted to test the role of chitosan coating in inhibiting skin browning and extending shelf life of cold-stored litchi fruit at ambient temperature. Litchi fruit were treated with 2 g chitosan/100 g solution and then stored for 20 days at 2 °C and 90–95% relative humidity (RH), prior to shelf life evaluation at 25 °C and 80–90% RH. Changes in polyphenol oxidase (PPO) activity, anthocyanin concentration, colour index, eating quality and concentrations of total soluble solids and titratable acidity were measured. The effects of chitosan coating on disease incidence were also evaluated. Application of chitosan coating delayed the decrease in anthocyanin content, the increase in PPO activity and the changes in colour index and eating quality, reduced the decrease in concentrations of total soluble solids and titratable acidity, and partially inhibited decay. The results suggested that treatment with chitosan coating exhibited a potential for shelf life extension at ambient temperature when litchi fruit were removed from cold storage.  相似文献

The inactivation of inoculated (S. cerevisiae) and spoilage microorganisms, i.e. yeasts and lactic acid bacteria (LAB), in clear and turbid grape juice was investigated using a pilot scale UV system. The biodosimetry method was used for UV dose prediction in a continuous flow UV reactor. Weibull model was applied for fitting the inactivation data. The flow rates (774, 820 ml/min) in this system were very close to the ones used in fruit juice processing. S. cerevisiae in clear juice was reduced by 3.39 ± 0.04 at 65.50 mJ/cm2 of UV dose. 1.54 ± 0.04 and 1.64 ± 0.03 log CFU/ml reductions were obtained for spoilage yeasts and LAB in turbid juice at UV dose of 78.56 and 67.97 mJ/cm2, respectively. The soluble solids (°Brix) and pH of grape juice samples were not affected by UV-C treatment (p > 0.05). Although the color parameters slightly were changed after irradiation, the color of PCGJ and FSTGJ did not show visual difference compared to the untreated samples.Industrial relevanceUV light has a potential to reduce the levels of microbial contamination in liquid foods. Although grape juice has many beneficial health effects, it has a fairly short shelf life. Therefore, pasteurization is required. But the thermal pasteurization has some undesired effects on the juice quality. Consumer demands for high quality fruit juice with fresh-like characteristics have markedly expanded in recent years. In the current study, the microbial inactivation efficiency of a pilot scale UV system for non-thermal treatment of clear and turbid grape juice was evaluated under conservative conditions. Most of the physicochemical properties of grape juice samples were not significantly affected from UV-C treatment (p > 0.05). This would be a major advantage in the processing of nutritious juice products.  相似文献

Pulsed light (PL) and Thermosonication (TS) were applied alone or in combination using a continuous system to study their effect on Escherichia coli inactivation in apple juice. Selected quality attributes (pH, °Brix, colour (L, a, b, ΔE), non-enzymatic browning (NEBI) and antioxidant activity (TEAC)) were also evaluated pre- and post-processing. Two PL (360 μs, 3 Hz) treatments were selected and the juice exposed to energy dosages of 4.03 J/cm2 (‘low’ (L)) and 5.1 J/cm2 (‘high’ (H)) corresponding to 51.5 and 65.4 J/mL, respectively. The juice was also processed by TS (24 kHz, 100 μm) at 40 °C for 2.9 min (L) or 50 °C for 5 min (H), corresponding to 1456 and 2531 J/ml energy inputs, respectively. The effect of the resulting four energy levels and sequence (PL + TS and TS + PL) was studied. When the technologies were applied individually the maximum reduction achieved was 2.7 and 4.9 log CFU/mL (for TS (H) and PL (H) respectively), while most of the combined treatments achieved reductions in the vicinity of 6 log CFU/mL, showing an additive effect for both technologies when acting in combination, regardless of the sequence applied. All treatments significantly changed the colour of apple juice and the sequence in which the technologies were applied affected colour significantly (P < 0.05). The energy level applied did not affect any of the measured quality attributes.  相似文献

Mulberry fruit is well known as a good source of anthocyanins with many biological activities. However, there are several colors of mulberry fruits, even from the same species, which may generate different amounts of anthocyanins. This study investigates anthocyanin content and antioxidant levels as well as tyrosinase inhibition activity in the extract from various colors of mulberry fruit, Morus alba. The effects of heat and light, which the extract may be exposed to during food processing, on anthocyanin and antioxidant activities are also evaluated. Our results show that purple-colored mulberry fruit extract contains the highest levels of anthocyanin and strongest antioxidant as well as anti-tyrosinase properties compared with other colors mulberry fruit extracts. Light or heat exposure by incubation of the mulberry fruit extract at 70 °C for 10 h significantly deteriorated total anthocyanin and ascorbic acid content and led to a corresponding increase of the IC50 values.  相似文献

This study aimed to evaluate the potential of dynamic high pressure (DHP) technology to inactivate pathogenic and spoilage microflora in orange juice. Escherichia coli O157:H7 ATCC 35150, Lactobacillus plantarum ATCC 14917, Leuconostoc mesenteroides ATCC 23386 and two orange juice isolates: Saccharomyces cerevisiae and Penicillium ssp. were subjected individually to different DHP treatments. The effectiveness of DHP treatment was first evaluated in phosphate buffered saline (PBS) before application in orange juice samples. The inactivation efficacy of DHP depended on the pressure applied and the number of passes. It was more efficient against Gram-negative strains than Gram-positives. Complete inactivation and 5 log reduction of E. coli O157:H7 were achieved in orange juice at 200 MPa after 5 and 3 passes at 25 °C, respectively. Lower inactivation was obtained with Penicillium ssp. (4 log), S. cerevisiae (2.5 log), L. plantarum (2.3 log) and L. mesenteroides (1.6 log). The gathered results revealed the potential of DHP to inactivate all the tested microorganisms and then, it could constitute a promising alternative technology for cold pasteurization of fruit juices.  相似文献

A central composite rotatable design was employed to study the effect of ultrasound assisted extraction conditions namely sonication amplitude (10–90%), sonication cycle (0.1–1.0 s?1), solid–liquid ratio (2–10) and extraction time (5–35 min) on the total anthocyanin extraction from Garcinia indica Choisy. Overall extractions of total anthocyanin, acidity and antioxidant activity were considered as response variables. The significant (p < 0.05) response surface models with high coefficients of determination values (R2) ranging from 0.91 to 0.93 were fitted for the experimental data, which indicated that the polynomial response models fitted well for describing the extraction efficiencies of anthocyanin, acidity and antioxidant activity. Based on the design, the optimal conditions for obtaining higher extraction were extraction time 35 min, cycle ranging from 0.44 to 0.48 s?1, percentage amplitude ranging from 10 to 14%, and solid–liquid ratio 10. The graphical optimization of superimposed contour plots fulfilled the conditions to obtain total anthocyanin (Y1)  135 mg/100 g DW, total titratable acidity (Y2)  25 g/100 g DW and antioxidant activity (Y3)  14.5 M Trolox/100 g DW. The study demonstrated that response surface methodology can be utilized for deriving the optimum conditions for extraction of anthocyanin from G. indica Choisy.  相似文献

Qualities of cloudy apple juices from apple slices treated by high pressure carbon dioxide (HPCD) and mild heat (MH) were evaluated. Temperatures were from 25 to 65 °C, time 20 min, and pressure 20 MPa. Polyphenol oxidase (PPO) was completely inactivated by HPCD and its minimal residual activity (RA) by MH at 65 °C was 38.6%. RA of pectin methylesterase (PME) with HPCD was significantly lower than MH and its minimum was 18%. L value of cloudy apple juice from HPCD-treated apple slices was significantly greater than that from MH-treated apple slices, however, b value, browning degree (BD) and turbidity were lower. And no differences in a value, total soluble solids, pH and conductivity were observed. After 7-day storage at 4 °C, HPCD caused no BD alteration but a significant turbidity loss. MH increased BD at 55 and 65 °C, and led to turbidity loss from 35 to 65 °C. The turbidity was not well related to RA of PME.Industrial relevanceCloudy apple juice is one of the popular fruit juices, and it requires strict processing treatment conditions to protect its quality, especially to prevent enzymatic browning and cloud loss. HPCD is one promising novel non-thermal technique and is likely to replace or partially substitute thermal processes. This study analyzed the effect of HPCD as a pretreatment means on qualities of cloudy apple juice, including inactivating enzymes which are crucial to quality control. Available data provided in this study will benefit the fruit juice industry.  相似文献

In this paper, ultrasound-assisted extraction (UAE) conditions of natural melanin from dried fruit bodies of Auricularia auricula (A. auricula) were investigated. By single-factor experiments, ultrasound power was determined at 250 W and the other factors (temperature, liquid–solid ratio and duration) were chosen to further optimize extraction conditions using response surface methodology (RSM). The Box–Behnken experimental results showed the optimum extraction conditions as follows: a temperature of 63 °C, a liquid–solid ratio of 43 mL/g and a duration of 36 min. Under these conditions, two extractions sufficiently reached the maximal melanin yield (120.05 mg/100 g). Light absorbance, solubility and redox properties of the melanin extracted from A. auricula were similar to those of the typical melanin.Industrial relevanceAuricularia auricula (A. auricula) has been used as food and drug in China for a long time. The annual production of A. auricula in China was 1.44 million tons in 2007 (http://www.mushroommarket.net/news/show.asp?id=19769). However, most of this precious macro-fungus product was only used as cuisine materials, and many of its functional components, such as melanin, a healthful natural food colorant, were not fully developed and employed. In this paper, ultrasound-assisted extraction (UAE) was applied to melanin extraction from A. auricula fruit bodies to improve the extraction efficiency. This research helps to develop a new and economical method of extracting natural melanin and to fully use this edible mushroom.  相似文献

Tomato juice samples were ozonated with control variables of ozone concentration (1.6–7.8 %w/w) and treatment time (0–10 min). Effects of ozone processing variables on quality parameters of pH, oBrix, titratable acidity (TA), cloud value, non-enzymatic browning, colour values ( L *, a *, and b *) and ascorbic acid (AA) content were determined. No significant changes ( P  > 0.05) in pH, oBrix, TA, cloud value and Non enzymatic browning (NEB) ( P  ≤ 0.05) were found with ozonation. L *, a * and b * colour values were significantly affected by ozone concentration and treatment time. A significant reduction of AA (96 %) was observed at an ozone concentration of 7.8%w/w and a treatment time of 10 min. Results presented in this study indicate that visual colour and nutritional quality is significantly affected during ozone processing. Thus, the effects of ozonation on the nutritional properties of tomato juice should be considered by processors prior to its adoption as a preservation technique.  相似文献

The aim of the present study was to characterize lactic acid bacteria (LAB) strains isolated from traditional fermented gilaburu fruit juice and their probiotic potential. The LAB counts of the fermented gilaburu fruit juice were in the range of 3.92–8.30 log cfu/g. Total of 332 isolates belonging to Lactobacillus and Leuconostoc species were characterized from traditional fermented gilaburu juice by genotypic methods. It was also determined that the major LAB strains belong to Lactobacillus plantarum (173 isolates), Lactobacillus casei (52 isolates) and Lactobacillus brevis (24 isolates), while Lactobacillus buchneri, Lactobacillus parabuchneri, Lactobacillus pantheris, Leuconostoc pseudomesenteroides and Lactobacillus harbinensis were the least in isolated LAB strains. In terms of the probiotic potentials, Lb. plantarum strains were able to grow at pH 2.5, but 3 of Lb. casei strains, one of each Lb. brevis and Lb. buchneri strains could not grow at the same pH. All selected LAB stains were resistant to bile salt at ≤ 0.3% concentration. While all the LAB species grew at 15 °C, two Lactobacillus hordei strains could also grow at 45 °C. The highest cell hydrophobicity degrees were for Lb. casei (G20a) and Lb. plantarum (G19e) as 87.5 and 86.0%, respectively. Listeria monocytogenes and Bacillus cereus were the most sensitive bacteria against the selected LAB strains, while Escherichia coli and Staphylococcus aureus were the most resistant. Again all the isolated LAB species were resistant to three antibiotics; kanamycin, streptomycin and vancomycin. Characterization and probiotic potentials of the LAB isolated from fermented gilaburu (Viburnum opulus) juice were studied first time, and further research needs to be done on their behaviors in similar food formulations as a probiotic.  相似文献

Sixteen Indian commercial carrot cultivars were analysed for variations in β-carotene, total phenolics, total flavonoids, total monomeric anthocyanin and antioxidant activity. Antioxidant activity was measured using four in vitro assays viz. ferric reducing antioxidant power (FRAP), cupric reducing antioxidant power (CUPRAC), 2, 2-diphenyl-1-picrylhydrazyl (DPPH) and Trolox equivalent antioxidant capacity assays (TEAC). Additionally six colour attributes were evaluated. Among carrot cultivars, significant differences (p < 0.05) were obtained with respect to antioxidant composition and antioxidant activity. Total phenols and total flavonoids varied from 7.98 to 291.48 mg/100 g fresh weight (fw) and 3.00 to 111.70 mg/100 g fw respectively. Chemometric tools like principal component analysis (PCA) and agglomerative hierarchical clustering (AHC) were applied to understand possible classification Indian carrot cultivars based on colour properties, bioactive antioxidant compounds and antioxidant potentiality. PCA revealed that the first two components represented 92.9% of the total variability in the total variation. AHC classified cultivars into four main groups on the basis of the measured parameters. Black coloured genotype was found to be rich source of phenols, flavonoids and anthocyanin with very high antioxidant activity. Orange cultivars were found to be rich sources for β-carotene compared to red & black cultivars.  相似文献

In this study, five common proanthocyanidin purification techniques were evaluated prior to phloroglucinolysis, followed by HPLC analysis. An optimized purification method was then used to identify and quantify the proanthocyanidins (extension and terminal units of epigallocatechin, catechin, epicatechin, A type trimer, and A type dimer) of commercially available cranberry products (juices, concentrates, tablets, and capsules; n = 17). Two size exclusion beads (Toyopearl 4 TSK HW-40C and Sephadex LH-20) were found suitable for proanthocyanidin purification, though proanthocyanidin extension and terminal unit composition was contingent upon the cleanup procedure utilized. These data illustrate that purification methods require consideration prior to conducting any cranberry proanthocyanidin analyses, and have to be accounted for when comparing values between studies. Total proanthocyanidin levels ranged from 11.7 (juice) to 436.4 (tablet) mg/100 mL or 100 g values obtained from Sephadex LH-20 purification, while total anthocyanin levels ranged from 0.54 (juice) to 98.00 (tablet) mg/100 mL or 100 g.  相似文献
