The aim of this work was to characterize the fatty acid (FA) profile of milk from intensive dairy farming systems in the Po Plain (Italy) to estimate the costs of the adopted feeding strategies and to simulate the effect of supplementary premiums on the basis of milk FA composition on milk income. Twenty dairy farms with 5 different feeding strategies were studied: 3 corn silage-based systems in which cows were supplemented with a great proportion (CCH), a medium proportion (CCM), or without commercial concentrate mix (CC0), and 2 systems in which part of corn silage was replaced with grass or legume silage (HF) or with fresh herbage (G), cut and fed indoors. Bulk milk was sampled and lactating cow performance, feeding strategies and forage characteristics were recorded through a survey, 3 times during a year. The milk FA supplementary premium was calculated considering C18:3n-3 and saturated FA (SFA) concentrations, and ratio of total cis C18:1 isomers to C16:0. The CCH, CCM, and CC0 systems bought most of their dairy cow feeds off farm, which allowed them to increase milk production to 35,000 L/yr per hectare. Their low dry matter and crude protein self-sufficiency led to higher feeding costs per liter of milk (from €0.158 to €0.184), and highest income over feed cost was achieved only for milk yield performance greater than 10,000 kg/cow per year. The use of homegrown forages in HF and G increased dry matter and crude protein self-sufficiency and reduced the feeding costs per liter of milk from 9 to 22%, compared with the other studied systems, making HF and G feeding economically competitive, even for a lower milk yield per cow. The studied systems highlighted a remarkable variation in FA profiles. The concentrations of C16:0 and SFA were the highest in CCH (31.53 and 67.84 g/100 g of FA) and G (31.23 and 68.45 g/100 g of FA), because of the larger proportion of commercial concentrate mix in the cow diet. The concentrations of C16:0 and SFA were the lowest in CCM (27.86 and 63.10 g/100 g of FA), because of low roughage-to-concentrate ratio in the cow diet, which is known to favor milk fat depression, affecting particularly these FA. The calculated supplementary premium was the highest in the CCM system, based on milk FA profiles from those herds. The HF diet was rich in forages and resulted in greater concentration of C18:3n-3 in milk (0.57 g/100 g of FA) than the other systems and thus led to an increase in milk FA supplementary premium. Milk from G and HF milk had the lowest ratio of Σn-6:Σn-3 FA compared with milk from the systems based on higher corn silage proportion in the cow diet (3.71, and 3.25, respectively, vs. 4.58 to 4.78), with the lower ratios being closer to recommendation for human nutrition.  相似文献

Although the effects of cow diet on cheese sensory properties have been well documented, the putative interactions between the biochemical and microbial milk components and their respective roles in the development of the sensory properties of cheeses have yet to be explored in depth. The aim of this study was to evaluate the specific contribution of milk fat composition to the formation of cheese sensory properties. Two creams with different fat compositions were obtained from cows fed either pasture or maize silage. Cheeses were manufactured from the same skim milk (identical chemical and microbial composition) with either the pasture- or maize silage-origin pasteurized cream added. The gross composition and microbial composition of milks did not vary with cream origin. In milks and cheeses, the fatty acid (FA) profiles were modified by the origin of the cream. The concentrations of C18:0 and unsaturated FA such as cis-9 C18:1, trans-11 C18:1, C18:3n-3, total conjugated linoleic acids, and mono- and polyunsaturated FA were higher in milks and cheeses with the pasture-origin cream than in those with the maize-origin cream. In contrast, the maize milks and cheeses had higher concentrations of short- and medium-chain saturated FA, C16:0, and C18:2n-6. The level of lipolysis was 11% in the cheese rind and only 0.30% in the cheese core. The rind of pasture cheeses had a higher concentration of free C18:0 and C18:3n-3 and a lower concentration of free C14:0 and free C16:0 than the rind of maize cheeses. The levels of major microbial groups were similar in pasture and maize cheeses at different stages of ripening. The pasture cheeses had a more elastic and creamier texture, a yellower color, and a thinner rind than the maize cheeses, but the odor and aroma of cheeses were not affected by the origin of the cream, despite a few modifications in the balance of volatile compounds from FA catabolism. Based on these results, we conclude that milk fat composition modulated by cow diet had a direct role in the texture of the cheese but no effect on flavor. The high degree of lipolysis in cheese rind, along with the higher concentration of long-chain unsaturated free FA in pasture cheeses may be responsible for antimicrobial activity, which could explain differences in the appearance of cheese rind.  相似文献

The objective of this trial was to study the interaction between the supplementation of lipid-encapsulated conjugated linoleic acid (CLA; 4.5 g of cis-9,trans-11 C18:2 and 4.5 g of trans-10,cis-12 C18:2) and feeding level to test if milk performance or milk fatty acid (FA) profile are affected by the interaction between CLA and feeding level. Twenty-four dairy goats were used in an 8-wk trial with a 3-wk adaptation to the experimental ration that contained corn silage, beet pulp, barley, and a commercial concentrate. During the third week, goats were assigned into blocks of 2 goats according to their dry matter intake (DMI), raw milk yield, and fat yield. Each block was randomly allocated to control (45 g of Ca salt of palm oil/d) or CLA treatment. Within each block, one goat was fed to cover 100% (FL100) of the calculated energy requirements and the other was fed 85% of the DMI of the first goat (FL85). Individual milk production and composition were recorded weekly, and milk FA composition was analyzed in wk 3, 5, and 7. Conjugated linoleic acid supplementation reduced milk fat content and fat yield by 17 and 19%, respectively, independent of the feeding level. It reduced both the secretion of milk FA synthesized de novo, and those taken up from the blood. No interaction between CLA and feeding level was observed on milk secretion of any group of FA. The CLA supplementation had no effect on DMI, milk yield, protein, and lactose yields but it improved calculated net energy for lactation balance. Goats fed the FL100 × CLA diet tended to have the highest DMI and protein yield. The interaction between CLA and feeding level was not significant for any other variables. Compared with the goats fed FL100, those fed FL85 had lower DMI, lower net energy for lactation balance, and lower digestible protein in the intestine balance. The body weight; milk yield; milk fat, protein, and lactose yields; and fat, protein, lactose, and urea contents in milk were not affected by feeding level. In conclusion, reduction in energy spared via fat yield reduction after CLA supplementation was not partitioned toward milk lactose or protein in goats at a low feeding level, possibly because of a simultaneous shortage of energy and amino acids. In goats on the high feeding level, energy spared tended to be partitioned toward milk protein yield, and at the same time to the prevention of excessive lipid mobilization.  相似文献

选用Hansen calf lipase、Amano lipase A6、Lipozyme RM IM 3种脂肪酶对无水奶油进行适度酶解制备奶味香基。采用气相色谱分析了酶解奶油中游离脂肪酸组成,结合顶空固相微萃取-气相色谱质谱联用技术对酶解奶油中的挥发性风味成分进行研究,并通过感官评价对酶解奶油进行风味剖面分析并对烘焙产品偏好性评定。结果表明:3种脂肪酶选择性酶解产生中短链脂肪酸的能力均较强,其中动物来源的Hansen calf lipase对中短链脂肪酸的选择性酶解能力最高,酶解奶油中短链脂肪酸相对含量为42.9%,且该酶解奶油和烘焙产品具有令人愉悦的奶味和干酪味;3种酶解奶油中的挥发性风味成分主要为脂肪酸、醛类、酮类、内酯类物质。  相似文献

The objective of this study was to determine the long-term effects of feeding monensin on milk fatty acid (FA) profile in lactating dairy cows. Twenty-four lactating Holstein dairy cows (1.46 ± 0.17 parity; 620 ± 5.9 kg of live weight; 92.5 ± 2.62 d in milk) housed in a tie-stall facility were used in the study. The study was conducted as paired comparisons in a completely randomized block design with repeated measurements in a color-coded, double blind experiment. The cows were paired by parity and days in milk and allocated to 1 of 2 treatments: 1) the regular milking cow total mixed ration (TMR) with a forage-to-concentrate ratio of 60:40 (control TMR; placebo premix) vs. a medicated TMR [monensin TMR; regular TMR + 24 mg of Rumensin Premix per kg of dry matter (DM)] fed ad libitum. The animals were fed and milked twice daily (feeding at 0830 and 1300 h; milking at 0500 and 1500 h). Milk samples were collected before the introduction of treatments and monthly thereafter for 6 mo and analyzed for FA composition. Monensin reduced the percentage of the short-and medium-chain saturated FA 7:0, 9:0, 15:0, and 16:0 in milk fat by 26, 35, 19, and 6%, respectively, compared with the control group. Monensin increased the percentage of the long-chain saturated FA in milk fat by 9%, total monounsaturated FA by 5%, total n-6 polyunsaturated FA (PUFA) by 19%, total n-3 PUFA by 16%, total cis-18:1 by 7%, and total conjugated linoleic acid (CLA) by 43% compared with the control group. Monensin increased the percentage of docosahexaenoic acid (22:6n-3), docosapentaenoic acid (22:5n-3), and cis-9, trans-11 CLA in milk fat by 19, 13, and 43%, respectively, compared with the control. These results suggest that monensin was at least partly effective in inhibiting the biohydrogenation of unsaturated FA in the rumen and consequently increased the percentage of n-6 and n-3 PUFA and CLA in milk, thus enhancing the nutritional properties of milk with regard to human health.  相似文献

The effects of varying amounts of linseed oil (LSO) in grazing dairy cows’ diet on milk conjugated linoleic acid (cis-9, trans-11 CLA) were investigated in this study. Twelve Holstein cows in midlactation (150 ± 19 DIM) were placed on alfalfa-based pasture and assigned to 4 treatments using a 4 × 4 Latin square design with 3-wk periods. Treatments were: 1) control grain supplement; 2) control grain supplement containing 170 g of LSO (LSO1); 3) control grain supplement containing 340 g of LSO (LSO2); and 4) control grain supplement containing 510 g of LSO (LSO3). Grain supplements were offered at 7 kg/d. Additional 100 g/d of algae, divided evenly between the 2 feeding times, were added to every treatment diet. Milk samples were collected during the last 3 d of each period and analyzed for chemical and fatty acid composition. Treatments had no effect on milk production (18.9, 18.5, 19.6, and 19.1 kg/d for treatments 1 to 4, respectively). Linseed oil supplementation caused a quadratic increase in milk fat (3.23, 3.44, 3.35, and 3.27% for treatments 1 to 4, respectively) and protein (3.03, 3.19, 3.12, and 3.08%) contents. Concentrations (g/100 g of fatty acids) of milk cis-9, trans-11 CLA (1.12, 1.18, 1.39, and 1.65 for treatments 1 to 4, respectively) and VA (3.39, 3.62, 4.25, and 4.89) linearly increased with LSO supplementations. Results from this trial suggest that the increase in milk cis-9, trans-11 CLA was proportional to the amounts of LSO fed. In conclusion, adding LSO to grazing dairy cow diets can improve the nutritional value of milk without compromising milk composition or cow performance.  相似文献

The objective of this work was to compare milk fatty acid (FA) profile and texture and appearance of Cantal cheeses obtained from cows grazing 2 different upland grasslands: a highly diversified pasture (74 species) of area 12.5 ha managed under continuous mode (C), and a weakly diversified pasture (31 species) of area 7.7 ha (an old temporary grassland) managed under rotational mode (R). A control group of cows fed a hay-based diet (indoors, I) was used. Three equivalent groups of 12 Montbéliarde cows underwent the 3 treatments from May to September 2008. The cheeses were manufactured during 3 consecutive days in early June, early July, and late August (27 cheeses in all). The texture, appearance, and chemical composition of the cheeses were determined after 12 wk of ripening. Concentrations of total saturated FA and monounsaturated FA were higher and lower, respectively, in I milks compared with pasture milks. The concentrations of trans-11-C18:1 and cis-9-C18:1, and polyunsaturated FA as well as yellowness decreased during the season in C-derived milk but remained constant in R-derived milk, through a combined effect of grass development stage and the cows’ grazing selection. The I cheeses were, on average, firmer, less creamy, less elastic, and less yellow than the pasture cheeses. Decreasing and increasing trends in texture firmness during the season were observed for C and R cheeses, respectively. The rind of the pasture-fed cow cheese had fewer, less intensely colored, and less prominent spots than did that of I cheeses. This difference was probably due to greater migration of fat to the rind during pressing because of the lower fat melting point of the pasture-fed cow cheeses, which had higher unsaturated FA content. The greater amounts of fat deposited on the rind of the pasture-fed cow cheeses may have partially inhibited the microbial activity responsible for rind appearance. Our trial underlines the importance of the effects of grazing management associated with vegetation type on milk and cheese characteristics.  相似文献

Earlier research showed that conjugated linoleic acid (CLA) content in milk fat is highest when cows’ diets are supplemented with a blend of fish oil (FO) and linoleic acid-rich oils. The objective of this study was to compare the effect of FO and sunflower oil (SFO) supplementation on milk cis-9, trans-11 CLA when dairy cows managed on pasture or in confinement. Fourteen Holstein cows were assigned into 2 treatment groups: cows grazed on alfalfa-grass pasture (PAS) or were fed corn silage-alfalfa hay mix ad libitum (LOT). Both groups were supplemented with a 8.2 kg/d grain supplement containing 640 g of FO and SFO (1:3 wt/wt). Grain supplement was fed in 2 equal portions after each milking, for a period of 3 wk. Milk samples were collected during the last 3 d of the experimental period. Milk yield was greater with the LOT diet (23.1 kg/d) compared with the PAS diet (19.4 kg/d). Milk fat percentages (2.51 and 2.95 for the LOT and PAS, respectively) and yields (0.57 and 0.51 kg/d) were similar for the 2 diets. Milk protein percentages were not affected by diets (3.34 and 3.35 for the LOT and PAS diets, respectively), but protein yields were lower for the PAS diet (0.61 kg/d) compared with the LOT diet (0.75 kg/d). Treatment diets had no effect on milk trans C18:1 concentrations [10.64 and 9.82 g/100 g of total fatty acids (FA) for the LOT and PAS, respectively] or yields (60.65 and 64.01 g/d), but did affect isomers distributions. Concentration (g/100 g of total FA) of vaccenic acid was lower with the LOT diet (2.15) compared with the PAS diet (4.52), whereas concentration of trans-10 C18:1 was greater with the LOT diet (4.99) compared with the PAS diet (1.69). Milk cis-9, trans-11 CLA concentration was greater with the PAS diet (1.52) compared with the LOT diet (0.84). In conclusion, the increase in milk cis-9, trans-11 CLA content was greater when pasture-based diets were supplemented with FO and SFO. The lower cis-9, trans-11 CLA concentration in milk from the confinement-fed cows resulted from trans-10 C18:1 replacing vaccenic acid as the predominant trans C18:1 isomer.  相似文献

To investigate the influence of climatic conditions and season on milk composition, bulk tank milk was sampled on 5 occasions during a period of 15 mo from 20 Swedish dairy farms. These farms included 5 organic and 5 conventional farms in central Sweden and 7 traditional conventional farms and 3 conventional farms growing maize for silage in southern Sweden. Feed data and milk yield were recorded and milk was analyzed for content of fatty acids, carotenoids, and tocopherol. Differences between milk from the 2 regions and between summer and winter seasons were shown. Milk from central Sweden differed from milk from southern Sweden in that it had a higher content of carotenoids, tocopherol, short-chain fatty acids (C4-C14), C18:0, and C18:3 n-3 and a lower content of C16. Summer milk samples had a lower fat content and contained higher amounts of C18:1 cis-9 and conjugated linoleic acid cis-9,trans-11, and lower amounts of C4 to C16 compared with winter milk. Differences between farm types from central Sweden were lower content of conjugated linoleic acid cis-9,trans-11 and higher content of C18:3 n-3 in organic milk compared with conventional milk. In southern Sweden the use of maize silage caused lower milk content of carotenoids and C18:3 n-3 when compared with traditional feeding. Differences in milk composition could be related to climatic differences because legumes are more dominating in the leys of central Sweden and maize growing is limited to southern Sweden.  相似文献

The objective of this study was to compare the effects of oilseed‐based supplements, rapeseed and linseed, against a barley‐based control, on the fatty acid composition, and subsequent solid fat ratio, of the milk fat from dairy cows. In addition, as a means of understanding the digestive processes which influence the milk fat composition, ruminal extracts were collected from the cows and analysed for fatty acid composition. Four lactating dairy cows each fitted with a rumen fistula were provided with silage and one of four concentrate diets. The main constituent of the concentrate supplements was either rapeseed (ground or unground), linseed (unground) or a barley control. The diets were offered in accordance with a 4 × 4 Latin square arrangement. The oilseed‐supplemented concentrates provided the cows with 620–640 g fatty acids day?1. Experimental treatments were provided to the cows for 2 weeks, after which ruminal extracts were collected over a 24 h period and a milk sample was taken. All extracts were analysed for fatty acid composition. The diets fed influenced the long‐chain fatty acid composition of the ruminal extracts and milk fat. The proportion of C18:1n‐9 in the ruminal extracts increased from 202–224 to 282–321 g kg?1 of the total fatty acids when the cows were provided with the rapeseed‐based diets. The linseed‐based diet increased the C18:1n‐9 proportion of the ruminal extracts from 164 to 218 g kg?1 of the total fatty acids. Both rapeseed‐based diets also resulted in a higher proportion of C18:0 in the ruminal extract, possibly owing to biohydrogenation of the dietary fatty acids. This proportion of C18:0 in the ruminal extract was lowest immediately after feeding, increasing to a maximum 4–6 h later. Both rapeseed‐based concentrates increased the proportion of C18:1n‐9 in the milk fat to approximately 300 g kg?1 of the total fatty acids as compared with 214 g kg?1 for the control. The proportion of C18:1n‐9 in the milk fat from the cows offered the linseed‐based concentrate was 246 g kg?1 of the total fatty acids. There were also significant decreases in the proportions of C16:0 in the milk fat from the cows offered all oilseed‐based concentrates. There was no difference between the fatty acid compositions of the milk fats from the cows fed the ground or unground rapeseed‐based supplements. The oilseed‐based supplements also resulted in significant decreases in the solid fat content of the milk fat at temperatures ranging from 0 to 35 °C, which would be indicative of a softer, more spreadable butter. © 2002 Society of Chemical Industry  相似文献

The objectives of this study were to quantify the effects on production performance and milk fatty acid (FA) profile of feeding dairy cows extruded linseed (EL), a feed rich in α-linolenic acid, and to assess the variability of the responses related to the dose of EL and the basal diet composition. This meta-analysis was carried out using only data from trials including a control diet without fat supplementation. The dependent variables were defined by the mean differences between values from EL-supplemented groups and values from control groups. The data were processed by regression testing the dose effect, multivariable regression testing the effect of each potential interfering factor associated with the dose effect, and then stepwise regression with backward elimination procedure with all potential interfering factors retained in previous steps. This entire strategy was also applied to a restricted data set, including only trials conducted inside a practical range of fat feeding (only supplemented diets with <60 g of fat/kg of dry matter and supplemented with <600 g of fat from EL). The whole data set consisted of 17 publications, representing 21 control diets and 29 EL-supplemented diets. The daily intake of fat from EL supplementation ranged from 87 to 1,194 g/cow per day. The dry matter intake was numerically reduced in high-fat diets. Extruded linseed supplementation increased milk yield (0.72 kg/d in the restricted data set) and decreased milk protein content by a dilutive effect (?0.58 g/kg in the restricted data set). No effect of dose or diet was identified on dry matter intake, milk yield, or milk protein content. Milk fat content decreased when EL was supplemented to diets with high proportion of corn silage in the forage (?2.8 g/kg between low and high corn silage-based diets in the restricted data set) but did not decrease when the diet contained alfalfa hay. Milk trans-10 18:1 proportion increased when EL was supplemented to high corn silage-based diets. A shift in ruminal biohydrogenation pathways, from trans-11 18:1 to trans-10 18:1, probably occurred when supplementing EL with high corn silage-based diets related to a change in the activity or composition of the microbial equilibrium in the rumen. The sum of pairs 4:0 to 14:0 (FA synthesized de novo by the udder), palmitic acid, and the sum of saturated FA decreased linearly, whereas oleic acid, vaccenic acid, rumenic acid, α-linolenic acid, and the sums of mono- and polyunsaturated FA increased linearly when the daily intake of fat from EL was increased. In experimental conditions, EL supplementation increased linearly proportions of potentially human health-beneficial FA in milk (i.e., oleic acid, vaccenic acid, rumenic acid, α-linolenic acid, total polyunsaturated FA), but should be used cautiously in corn silage-based diets.  相似文献

Most cows encounter a state of negative energy balance during the periparturient period, which may lead to metabolic disorders and impaired fertility. The aim of this study was to assess the potential of milk fatty acids as diagnostic tools of detrimental levels of blood plasma nonesterified fatty acids (NEFA), defined as NEFA concentrations beyond 0.6 mmol/L, in a data set of 92 early lactating cows fed a glucogenic or lipogenic diet and subjected to 0-, 30-, or 60-d dry period before parturition. Milk was collected in wk 2, 3, 4, and 8 (n = 368) and blood was sampled weekly from wk 2 to 8 after parturition. Milk was analyzed for milk fatty acids and blood plasma for NEFA. Data were classified as “at risk of detrimental blood plasma NEFA” (NEFA ≥0.6 mmol/L) and “not at risk of detrimental blood plasma NEFA” (NEFA <0.6 mmol/L). Concentrations of 45 milk fatty acids and milk fat C18:1 cis-9-to-C15:0 ratio were subjected to a discriminant analysis. Milk fat C18:1 cis-9 revealed the most discriminating variable to identify detrimental blood plasma NEFA. A false positive rate of 10% allowed us to diagnose 46% of the detrimental blood plasma NEFA cases based on a milk fat C18:1 cis-9 concentration of at least 230 g/kg of milk fatty acids. Additionally, it was assessed whether the milk fat C18:1 cis-9 concentrations of wk 2 could be used as an early warning for detrimental blood plasma NEFA risk during the first 8 wk in lactation. Cows with at least 240 g/kg of C18:1 cis-9 in milk fat had about 50% chance to encounter blood plasma NEFA values of 0.6 mmol/L or more during the first 8 wk of lactation, with a false positive rate of 11.4%. Profit simulations were based on costs for cows suffering from detrimental blood plasma NEFA, and costs for preventive treatment based on daily dosing of propylene glycol for 3 wk. Given the relatively low incidence rate (8% of all observations), continuous monitoring of milk fatty acids during the first 8 wk of lactation to diagnose detrimental blood plasma NEFA does not seem cost effective. On the contrary, milk fat C18:1 cis-9 of the second lactation week could be an early warning of cows at risk of detrimental blood NEFA. In this case, selective treatment may be cost effective.  相似文献

采用气相色谱法(GC)对18个羊奶样品中短中链游离脂肪酸(FFA)和短中链结合脂肪酸(CFA)组成进行检测,并对游离脂肪酸(FFA)和结合脂肪酸(CFA)与羊奶膻味强度进行相关性分析。结果表明,在羊奶短中链脂肪酸中,游离脂肪酸是引起羊奶膻味的主要因素,其中己酸(C6∶0)、辛酸(C8∶0)和癸酸(C10∶0)与羊奶膻味强度呈极显著相关(p<0.01),是引起羊奶膻味的主要游离脂肪酸(FFA);肉豆蔻酸(C14∶0)和棕榈酸(C16∶0)与羊奶膻味强度呈显著性相关(p<0.05),也对羊奶膻味有一定的贡献。结合态脂肪酸与羊奶膻味强度不显著(p>0.05),与羊奶膻味关系不大。   相似文献

Four ruminally lactating Holstein cows averaging 602 ± 25 kg of body weight and 64 ± 6 d in milk at the beginning of the experiment were randomly assigned to a 4 × 4 Latin square design to determine the effects of feeding whole flaxseed and calcium salts of flaxseed oil on dry matter intake, digestibility, ruminal fermentation, milk production and composition, and milk fatty acid profile. The treatments were a control with no flaxseed products (CON) or a diet (on a dry matter basis) of 4.2% whole flaxseed (FLA), 1.9% calcium salts of flaxseed oil (SAL), or 2.3% whole flaxseed and 0.8% calcium salts of flaxseed oil (MIX). The 4 isonitrogenous and isoenergetic diets were fed for ad libitum intake. Experimental periods consisted of 21 d of diet adaptation and 7 d of data collection and sampling. Dry matter intake, digestibility, milk production, and milk concentrations of protein, lactose, urea N, and total solids did not differ among treatments. Ruminal pH was reduced for cows fed the CON diet compared with those fed the SAL diet. Propionate proportion was higher in ruminal fluid of cows fed CON than in that of those fed SAL, and cows fed the SAL and CON diets had ruminal propionate concentrations similar to those of cows fed the FLA and MIX diets. Butyrate concentration was numerically higher for cows fed the SAL diet compared with those fed the FLA diet. Milk fat concentration was lower for cows fed SAL than for those fed CON, and there was no difference between cows fed CON and those fed FLA and MIX. Milk yields of protein, fat, lactose, and total solids were similar among treatments. Concentrations of cis-9 18:1 and of intermediates of ruminal biohydrogenation of fatty acids such as trans-9 18:1 were higher in milk fat of cows fed SAL and MIX than for those fed the CON diet. Concentration of rumenic acid (cis-9, trans-11 18:2) in milk fat was increased by 63% when feeding SAL compared with FLA. Concentration of α-linolenic acid was higher in milk fat of cows fed SAL and MIX than in milk of cows fed CON (75 and 61%, respectively), whereas there was no difference between FLA and CON. Flaxseed products (FLA, SAL, and MIX diets) decreased the n-6 to n-3 fatty acid ratio in milk fat. Results confirm that flax products supplying 0.7 to 1.4% supplemental fat in the diet can slightly improve the nutritive value of milk fat for better human health.  相似文献

目的 探究不同鱼类鱼汤中挥发性风味物质的差异。方法 采用气相色谱和气相色谱质谱联用,对鳙鱼、鲫鱼、鳊鱼、黄鱼、三文鱼、鳕鱼六种鱼类鱼肉脂肪中的脂肪酸与鱼汤中的挥发性风味物质进行了测定与对比。结果 在6种鱼鱼肉中共检测出20种脂肪酸,其中饱和脂肪酸7种,单不饱和脂肪酸5种,多不饱和脂肪酸8种。在鱼汤中共检测出挥发性风味物质72种,其中醛类16种,烃类27种,酯类6种,醇类10种,酮类5种,其他类8种。结论 鳙鱼、鲫鱼、鳊鱼与三文鱼中主要包括棕榈酸、油酸和亚油酸,相比于这四种鱼,鳕鱼和黄鱼中的ω-3PUFA类脂肪酸含量较高,而亚油酸含量较少。鱼汤的挥发性风味物质中均以醛类、醇类、烃类为主,淡水鱼的挥发性风味物质中醇类含量显著高于海水鱼,且淡水鱼挥发性风味物质总量也显著高于海水鱼。  相似文献

研究成品发酵乳在4℃、室温和37℃储存条件下主要风味物质的变化,包括羰基化合物乙醛、双乙酰以及挥发酸和酸性物质,同时考察发酵乳的风味强度和风味协调性等感官品评指标.结果显示发酵乳的主要风味化合物质量分数均呈增加趋势,且增长速度先快后慢.风味比较协调的发酵乳,其乙醛与双乙酰质量分数的比例在0.56-0.70之间.风味物质和风味评分分数的相关分析证明,发酵乳中的各风味化合物相关显著,且对发酵乳的风味强度和风味协调性均有不同程度的影响.  相似文献

Four lactating Holstein cows fitted with ruminal and duodenal cannulas were used in a 4 x 4 Latin square design to determine the effects of feeding micronized and extruded flaxseed on milk composition and blood profile in late lactation. Four diets were formulated: a control (C) diet with no flaxseed, a raw flaxseed (RF) diet, a micronized flaxseed (MF) diet, and an extruded flaxseed (EF) diet. Flaxseed diets contained 12.6% flax-seed (dry matter basis). Experimental periods consisted of 21 d of diet adaptation and 7 d of data collection. Feeding flaxseed reduced milk yield and energy-corrected milk by 1.8 and 1.4 kg/d, respectively. Yields of milk protein and casein were also lower for cows fed flaxseed diets than for those fed the C diet. Milk yield (1.6 kg/d) and milk fat percentage (0.4 percentage unit) were lower for cows fed EF than those fed MF. Plasma cholesterol and nonesterified fatty acid concentrations were higher for cows fed flaxseed diets relative to those fed the C diet. Flaxseed supplementation decreased plasma concentrations of medium-chain (MCFA) and saturated (SFA) fatty acids and increased concentrations of long-chain (LCFA) and monounsaturated fatty acids. Feeding flaxseed reduced the concentrations of short-chain fatty acids (SCFA), MCFA, and SFA in milk fat. Consequently, concentrations of LCFA and unsaturated fatty acids were higher for cows fed flaxseed diets than for those fed the C diet. Flaxseed supplementation increased average concentrations of C(18:3) and conjugated linoleic acid by 152 and 68%, respectively. Micronization increased C(18:3) level, and extrusion reduced concentrations of SCFA and SFA in milk. It was concluded that feeding raw or heated flaxseed to dairy cows alters blood and milk fatty acid composition. Feeding extruded flaxseed relative to raw or micronized flaxseed had negative effects on milk yield and milk composition.  相似文献

配制型酸乳饮料不仅营养丰富,风味酸甜可口,而且生产工艺相对简单,在市场上很有竞争力。研究配制型酸乳饮料的生产工艺,结果表明:当全脂奶粉含量为5%时,同时添加耐酸CMC0.2%和阿拉伯可尔0.1%两种稳定剂,稳定性很好,口感细腻无异味。进一步添加1.0%的变性淀粉TAX-TRA,可以增加酸乳饮料风味、厚实感明显加强、余味更足。当酸乳饮料pH为4.0时,添加10%蔗糖或6%蔗糖和0.02%安赛蜜都可以使饮料酸甜可口。  相似文献
