BACKGROUND: Characterising the levels of key phytochemicals in foods commonly consumed in the Western diet is critical for database development, estimating intake and assessing the potential health benefits associated with the consumption of these products. This paper describes a market‐basket evaluation of the key flavonoids, carotenoids and vitamin C in commercial organic (five brands) and conventional (five brands) marinara pasta sauces. RESULTS: Levels of ascorbic acid ranged from undetected up to 6.87 mg per 100 g fresh weight. The levels of total vitamin C in six of the ten samples were significantly lower than the amount listed on the Nutrition Facts Panel (P < 0.001 or P < 0.01). The contents of total vitamin C, flavonoids and lycopene were not statistically different between organic and conventional samples. Conventional pasta sauces demonstrated a significantly higher level of all‐trans‐β‐carotene (P < 0.05). CONCLUSION: This suggests that any beneficial differences in levels of flavonoids, carotenoids and vitamin C gained through cultivation practices are not measurable at the consumer level in processed tomato products. Additionally, the results point to a large disparity between the actual vitamin C content of these products and the content listed on the Nutrition Facts Panel. In the last decade, the production and consumption of organic food have increased steadily worldwide, despite the lower productivity of organic crops. Indeed, the population attributes healthier properties to organic food. Although scientific evidence is still scarce, organic agriculture seems to contribute to maintaining an optimal health status and decreases the risk of developing chronic diseases. This may be due to the higher content of bioactive compounds and lower content of unhealthy substances such as cadmium and synthetic fertilizers and pesticides in organic foods of plant origin compared to conventional agricultural products. Thus, large long-term intervention studies are needed to determine whether an organic diet is healthier than a diet including conventionally grown food products. This review provides an update of the present knowledge of the impact of an organic versus a conventional food diet on health.  相似文献

BACKGROUND: Organic food is perceived as being of better quality and healthier than conventional foods although the scientific research on organic foodstuffs is highly contradictory. The aim of the present study was to investigate if intake of carrots from four different cultivation systems grown in two consecutive years would influence various biomarkers of health in a rat model. All rats were fed a diet with 40% carrot content. The carrots were grown under conventional (C), ‘minimalistic’ organic (O1), organic (O2), or ‘very’ organic cultivation systems (O3). A control group (CO) being fed standard rat chow was included. RESULTS: The plasma α‐tocopherol concentration was higher in the O2 carrot‐based diet group than in the C carrot based‐diet group in one year, while all other health biomarkers or nutrient content differences were observed between the CO diet and the carrot‐based diets. CONCLUSION: This well‐controlled field study demonstrated no clear influence of cultivation methods or harvest year on the nutritional quality of carrots or effect of cultivation methods on health‐related biomarkers in a sensitive rat model. However, the experimental set‐up and selected biomarkers could be used as a framework for further studies of health in relation to organic foodstuff. This study was undertaken (i) to optimise and validate a suitable method for multi‐element determination in cereal products and (ii) to evaluate multi‐element content differences in commercially available conventional vs. organic wheat flours. Presented ICP‐MS method is simple and accurate for the determination of eighteen elements in cereal food. Obtained results show differences in metal content between conventional and organic wheat flours and confirm that both types of production are well within the toxicological safety limits regarding the metal contents. The significant differences among conventional vs. organic wheat flours were obtained for As, Cd, Cr, Fe, Mg, Mo, Ni and V. Toxic metals (Al, As, Cd and Pb) input was higher in conventional compared with organic wheat flours. However, further and long‐term research is needed to clearly underline the effects of organic agricultural practice on the quality of food products.  相似文献

Although several meta‐analysis studies have been published comparing the quality of food derived from organic and non‐organic origin, it is still not clear if food from organic production per se can guarantee product‐related added value to consumers. This paper aims to summarize the status quo in order to identify research gaps and suggest future research challenges. Organic food is described according to a quality model already published. The influence of organic production on food quality is structured in primary production and processing. Furthermore, organic food authentication is discussed. Organic food seems to contain fewer pesticide residues and statistically more selected health‐related compounds such as polyphenols in plant products and polyunsaturated fatty acids in milk and meat products, but the health relevance for consumers is not clear yet. Comparing food from organic origin with so called ‘conventional’ food seems not to be appropriate, because ‘conventional’ is not defined. In organic food quality research a system approach is needed from which systemic markers can be selected. Research on the impact of processing technologies on the quality according to organic principles seems of high relevance, since most of the food is processed. © 2014 Society of Chemical Industry  相似文献

类胡萝卜素是一种脂溶性化合物,具有抗氧化、保护视力等作用,对人体健康具有诸多益处。低共熔溶剂(Deep eutectic solvent,DES)是一种新型绿色溶剂,相较于传统有机溶剂,具有制备简单、生物相容性高、生物降解性好、溶剂化效率高、热稳定性好、挥发性低等优点,可应用于食物中天然物质的绿色高效提取,目前在类胡萝卜素提取上的研究尚处于起步阶段。本文简述了DES的性质与分类,重点综述了DES在提取类胡萝卜素上的研究进展,介绍了类胡萝卜素与DES的分离方法,指出了DES在类胡萝卜素提取分离上存在的问题,展望了DES用于类胡萝卜素提取分离的应用前景,以期为类胡萝卜素新型绿色提取溶剂的开发和应用提供借鉴。

This study compared the concentration of vitamin C (ascorbic acid, AA, and dehydroascorbic acid, DHA) and carotenoids (lycopene and β-carotene) between three fruits produced by organic and conventional farming. Vitamin C and carotenoids were analysed by high-performance liquid chromatography. The Student t-test (α = 5%) was applied to determine differences between the organic and conventional production systems. AA content was significantly higher in organic acerola (4023.39 mg/100 g) compared to its conventional production (2294.53 mg/100 g). Conversely, AA content was significantly higher in conventional strawberries (42.45 mg/100 g) than the organic ones (30.74 mg/100 g). The conventional production also showed significantly higher contents of DHA (persimmon: 7.50 mg/100 g vs. 0.96 mg/100 g) and β-carotene (acerola: 6130.24 μg/100 g vs. 2486.38 μg/100 g) than the organic fruits. Lycopene was only detected in persimmons, but no significant difference was observed between farming systems. There was no evidence of the nutritional superiority of the organically grown fruits.  相似文献

This experiment was conducted to determine the variations in carotenoid, vitamins A and E concentrations, and color in the plasma and milk of dairy cows following a shift from a hay diet to diets containing increasing levels of carotenoids and vitamin E. This study was performed on 32 multiparous Montbéliarde dairy cows in midlactation. After a 6-wk preexperimental period on a diet based on hay and concentrates, the cows were allocated to 4 homogeneous groups, and thereafter fed for 6 wk on isoenergetic experimental diets where the hay was replaced by an experimental feed rich in carotenoids and vitamin E, consisting in 75% grass silage and 25% alfalfa protein concentrate (PX Agro Super Desialis, Châlons en Champagne, France). The hay-to-experimental feed ratios were 100/0 in group 1, 67/33 in group 2, 33/67 in group 3, and 0/100 in group 4, providing 1.6, 3.6, 5.4, and 7.4 g/d of total carotenoids, respectively. Variations in carotenoid, vitamins A and E concentrations as well as variations in color index (CI) were monitored from d −7 through to d 42 on the experimental diets. Zeaxanthin, lutein, 13-cis-β-carotene, and all-trans-β-carotene accounted for an average 3, 10, 9, and 78%, respectively, of total carotenoids in plasma and 0, 17, 12, and 71%, respectively, of total carotenoids in milk. The switch from preexperimental to experimental diets only slightly affected zeaxanthin, lutein, and vitamin A concentrations in plasma and milk. A rapid increase in vitamin E and β-carotene (BC) was observed during the first week in both plasma and milk. For vitamin E, the time to reach a plateau was from 8 d (group 2) to 28 d (group 4) in plasma, and 5 d (groups 2-4) in milk. Plasma concentrations of BC had stabilized after 28 d in group 2 but were not stabilized after 42 d in groups 3 and 4, whereas milk concentrations of BC plateaued from d 21 in group 2 and d 28 in groups 3 and 4. At the end of the experimental period, BC and vitamin E concentrations in plasma and vitamin E concentrations in milk fat were linearly related to the proportion of experimental feed in the diet. In contrast, BC concentrations in milk fat did not differ between groups 2, 3, and 4, reflecting saturation at high levels of carotenoid intake (i.e., when plasma BC exceeded 5 μg/mL). These results suggested that under high-carotenoid diets, milk secretion of BC is not limited by the amount of plasma BC arriving to the mammary gland but by mechanisms involved in the BC transfer from plasma to milk. These mechanisms will need to be investigated. The BC concentrations were responsible for more than 80% of CI variations in plasma and 56% of CI variations in milk, where there was wide variability among individuals. Plasma CI appeared to be a more promising tool than milk CI as an indicator of the carotene content of the diets ingested by dairy cows.  相似文献

BACKGROUND: Sweet red bell pepper is one of the best sources of ascorbic acid and carotenoids as well as phenolic compounds important in the human diet. There have been some studies showing a higher level of bioactive compounds in organic bell pepper fruits compared with conventional fruits, but not all studies have been consistent in this respect. The levels of carotenoids and phenolics are very variable and may be affected by ripeness, genotype and cultivation. RESULTS: The results obtained in this study showed that an organic growing system affected the level of bioactive compounds (carotenoids and polyphenols) in sweet bell pepper fruits cultivated in Poland. Organic bell pepper fruits contained significantly more dry matter, vitamin C, total carotenoids, β‐carotene, α‐carotene, cis‐β‐carotene, total phenolic acids (as well as individual gallic and chlorogenic acids) and flavonoids (quercetin D ‐glucoside, quercetin and kaempferol) compared with conventional fruits. The bell pepper variety also affected the level of antioxidant compounds in fruits. CONCLUSION: Organic growing increased the level of antioxidant compounds such as carotenoids, phenolic compounds and vitamin C in sweet bell pepper. The second significant factor affecting the antioxidant compound content of sweet bell pepper was variety. We evaluated the results of using a proprietary hydrodynamic method, which was introduced with the hope of increasing accessibility of beneficial nutrition-enhancing fruit and vegetable products. Tomato, a major dietary source of carotenoids, notably lycopene, was tested because of its many health benefits to consumers. Samples before and after treatment were compared for lycopene, phytoene, and phytofluene contents. Extractable lycopene and other carotenoids increased significantly. In nature, lycopene exists almost exclusively as the all-trans stereoisomer. Cis-lycopene isomers form during cooking and digestion, resulting in higher percentages in plasma and tissues than ingested. Cis-lycopene isomers are more bioavailable than all-trans lycopene. Extraction using this proprietary method increased extracted cis-lycopene to as high as 43% of the total lycopene, indicating increased isomerisation. This method could therefore contribute significantly to the delivery of health benefits of biologically available lycopene from tomato products for metabolic functions.  相似文献

The yields of extraction, fatty acid and carotenoid compositions, antioxidant and antimicrobial activities of organic and conventional Lycium barbarum oils and extracts were investigated. Different methods were used in the extraction: Soxhlet, maceration and Bligh & Dyer. Sample characterization was performed by proton nuclear magnetic resonance and Raman spectroscopy. Soxhlet presented a higher yield for organic (4.58%) and conventional (2.83%) fruit. The Goji samples showed a high content of unsaturated fatty acids (UFA) for organic (78.29–84.72%) and conventional (70.74–80.20%) fruit. The main phytochemicals identified in the samples were linoleic acid and zeaxanthin dipalmitate. The maceration method was the most efficient in the extraction of carotenoids with high antioxidant (2.23–40.94 mmolTE 100 g−1) and antimicrobial (3.12–200 mg mL−1) activities. The organic goji samples showed higher yield, UFA, carotenoids and biological activities and these results indicate that this fruit is suitable for cosmetic, pharmaceutical and food applications.  相似文献

The data on vitamin sufficiency of adults and children suffering from chronic sickness and vitamin content in mostly common hospital diets has been submitted. Polyhypovitaminosis (combined insufficiency with several vitamins) takes place irrespective of season, age and place of residence. Deficit of B group vitamins and carotenoids has been observed more frequently. All hospital diets contain inadequate level of carotenoids, strongly reduced diets are deficiently in all vitamins. Any way of vitaminization (vitamins administration, including of vitamin-enriched food products in the ration) leads to the decrease of polyhypovitaminosis frequency, to the increase of the part of people adequately supplied with all vitamins and simultaneous improvement of patients clinic status.  相似文献

Reduction of dietary sodium intake by lowering amount of sodium in foods is a global industry target. Quantitative information on current consumer knowledge of sodium reduction trends in Korea is unknown. The objective of this study was to quantify the consumer knowledge and awareness of sodium and salt reduction in foods and to characterize consumer interest in health labeling on the food package. Additionally, comparison of consumer knowledge status between Korea and United States was followed. Consumers (n = 289) participated in an internet survey designed to gauge consumer knowledge and attitudes toward dietary sodium, the sodium content in representative food products (n = 27), and their interest toward specific health claims, including sodium labeling. Questions regarding demographics as well as consumption characteristics were asked. Sodium knowledge index and saltiness belief index were calculated based on the number of correct responses regarding the salt level and sodium content in given food products. Kano analysis was conducted to determine the role of nutrition labels in consumer satisfaction with products. Current consumer knowledge on the sodium content in food products was high, and consumers were adept at matching the sodium content with the salty taste intensity of food products. Consumers’ knowledge of the relationship between diets high in sodium and an increased risk of developing previously reported sodium‐related diseases, such as hypertension, coronary heart disease, kidney disease, and stomach cancer, were also high. Information on the nutrition panel that influences the consumer satisfaction (trans‐fat, sodium, ingredient list, and country of origin) as well as adjective‐nutrition claim pairs that appeal positively to purchase intent of the product were identified.  相似文献

Light red tomatoes were exposed to different doses of ultraviolet C (UV‐C) irradiation (1.0, 3.0 and 12.2 kJ m?2). After treatment, the tomatoes were stored for 2 days at room temperature, and then analysed to determine the effect of irradiation on the main antioxidants, carotenoids and phenolic compounds and the results compared with the control samples. The lycopene content was found to have increased by 14% with respect to the control samples, while β‐carotene decreased. Cis‐isomers from lycopene also increased when the tomatoes were exposed to irradiation for more than 3 h. UV‐C irradiation also had a positive effect on total phenolic compounds; however, the same effect was not observed in the individually analysed phenolic compounds. While chlorogenic and ferulic acids increased in content, naringenin and rutin contents decreased. These results suggest that UV‐C irradiation of tomatoes could improve the beneficial effect of red tomatoes for human health by increasing the levels of certain bioactive compounds; it could also be used to obtain higher content of bioavailability components, such as cis‐isomers from lycopene.  相似文献

Contamination of agricultural and food products by some fungi species that produce mycotoxins can result in unsafe food and feed. Mycotoxins have been demonstrated to have disease‐causing activities, including carcinogenicity, immune toxicity, teratogenicity, neurotoxicity, nephrotoxicity, and hepatotoxicity. Most of mycotoxins are heat stable and cannot be easily destroyed by conventional thermal food processing or domestic cooking methods. Postharvest approaches to prevent growth of mycotoxin‐producing fungi and detoxify mycotoxins from contaminated food are important topics in food safety research. Physical, chemical, and biological methods have been applied to prevent fungal growth or mycotoxin production, or to reduce mycotoxin content in the postharvest period and contribute toward mitigating against the effects of mycotoxins on human health. This literature review aims to evaluate postharvest approaches that have been applied to control both fungi growth and mycotoxin content in food and discuss their potential for upscaling to industrial scale.  相似文献

Vitamin A deficiency is of public health importance in Sri Lanka. Carotenoids are a significant source of provitamin A. The objective of this study was to analyse the carotenoid composition of jackfruit (Artocarpus heterophyllus sinhala: Waraka) kernel using MPLC and visible spectrophotometry and to determine the bioavailability and bioconversion of carotenoids present in jackfruit kernel by monitoring (i) the growth and (ii) levels of retinol and carotenoids in the liver and serum of Wistar rats provided with jackfruit incorporated into a standard daily diet. Carotenoid pigments were extracted using petroleum ether/methanol and saponified using 10% methanolic potassium hydroxide. Six carotenoids were detected in jackfruit kernel. The carotenes β‐carotene, α‐carotene, β‐zeacarotene, α‐zeacarotene and β‐carotene‐5,6‐epoxide and a dicarboxylic carotenoid, crocetin, were identified, corresponding theoretically to 141.6 retinol equivalents (RE) per 100 g. Our study indicated that jackfruit is a good source of provitamin A carotenoids, though not as good as papaya. Serum retinol concentrations in rats supplemented with jackfruit carotenoids were significantly higher (p = 0.008) compared with the control group. The same was true for liver retinol (p = 0.006). Quantification was carried out by RP‐HPLC. These results show that the biological conversion of provitamin A in jackfruit kernel appears satisfactory. Thus increased consumption of ripe jackfruit could be advocated as part of a strategy to prevent and control vitamin A deficiency in Sri Lanka. Copyright © 2004 Society of Chemical Industry  相似文献

Many tropical fruits can be considered a reservoir of bioactive substances with a special interest due to their possible health-promoting properties. The interest in carotenoids from a nutritional standpoint has recently greatly increased, because of their important health benefits. Here we report the native carotenoids composition in six tropical fruits from Panama, which is considered a region of great biodiversity. The native carotenoid composition was directly investigated by an HPLC-DAD-APCI-MS methodology, for the first time. In Corozo 32 different carotenoids were detected, including a high content of β-carotene and lycopene. Sastra showed the highest content of zeaxanthin among the fruit investigated. In Sapote 22 different carotenoids were detected, including β-carotene and 10 different zeaxanthin-di-esters. Frutita showed a very high content of the apo-carotenoid β-citraurin, and of a number of its esters. In Maracuyà chino 14 carotenoids were detected, including a high amounts of mono-esterified lauric acid with β-cryptoxanthin and with cryptocapsin. Mamey rojo was characterised by ketocarotenoids with κ rings, both hydroxylated and not hydroxylated.  相似文献

BACKGROUND: Frequent consumption of fruits and vegetables is associated with a lowered risk of cancer, hypertension and heart disease, due, among other factors such as modulation of gene expression and improvement of gap junctional communication, to the presence of various forms of antioxidants present in the foods as carotenoids. Otherwise, consumers demand organic products which they believe have more flavour and are of greater benefit to the environment and human health. The effects of organic farming on CIE L*a*b* colour, mineral content, carotenoid composition and sensory quality of Hernandina mandarin juices were studied. RESULTS: Organic farming of mandarin oranges resulted in juices with higher contents of minerals and carotenoids, and of better sensory quality. For instance, organic juice contained a total concentration of carotenoids of 14.4 mg L?1 compared to 10.2 mg L?1 of conventional juice. CONCLUSION: Mandarin orange juices can be considered as a good source of some important nutrients, such as potassium and antioxidant chemicals, e.g. β‐cryptoxanthin. 当前,生态环境持续恶化问题已经引起国际社会的高度重视,从全球范围内看,环境污染问题的加剧,给人类的身体健康带来了极大的威胁,在此背景下,各国政府针对环境污染对人类身体健康所带来的危害与影响问题加大了研究力度,并以专门机构与部门的设置为进一步解决环境问题探寻出路。而持久性有机污染物(POPs)在农药中的运用,使得农产品农药污染问题加剧,并引起了社会的高度重视。本文就食品中持久性有机污染物的现状进行调查与评价,阐述了持久性有机污染的特征,分析了食品中持久性有机污染物的来源与危害,并针对食品中POPs污染现状进行了分析,最后为如何实现对POPs污染物的有效防治提出了对策。  相似文献
