Asparagus is a highly perishable product owing to its high respiratory rate, a reason why modified atmosphere packaging (MAP) has been used in order to increase the shelf‐life of fresh asparagus. Carotenoid and chlorophyll pigments are important compounds for the maintenance of both the nutritional and sensory quality of asparagus. In this study, green asparagus spears were stored under refrigeration at 2 °C for 14 days, under MAP at 2 °C for 26–33 days and under MAP at 10 °C for 20 days. Pigment profiles were determined using high‐performance liquid chromatography (HPLC), with three classes of compounds being detected, namely oxygenated carotenoids (xanthophylls), hydrocarbonated carotenoids (carotenes) and chlorophylls. The xanthophylls identified were neoxanthin, violaxanthin, lutein and zeaxanthin. Only β‐carotene was detected in the carotene fraction. In the chlorophyll pigments, three molecules were isolated, chlorophyll b, its epimer chlorophyll b′ and chlorophyll a. Also detected were the first degradation products of chlorophylls, pheophytins b and a respectively. Modified atmosphere packaging at 2 °C was found to be effective in extending the shelf‐life for up to 4 weeks and in preserving the colour of fresh asparagus. Antioxidant activity of asparagus, broccoli and their juices was evaluated using 2,2′-diphenyl-l-picrylhydrazyl (DPPH), 2,2′-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) and β-carotene bleaching assays. Asparagus showed greater antioxidant activity than broccoli. Asparagus juice also had greater antioxidant activity than broccoli juice. Methanol and acetone extracts of asparagus and broccoli had significantly greater antioxidant activity than their water extracts. Asparagus and broccoli extracts, as well as their juices, showed no significant difference in total phenolics content. However, asparagus contained more flavonoids than broccoli. The antioxidant activity of asparagus and broccoli extracts demonstrated a linear relationship with their flavonoid content.  相似文献

The effect of water- and steam-cooking on the content of vitamin C, polyphenols, carotenoids, tocopherols and glucosinolates, as well as on the antioxidant activity of broccoli, are reported. Flavonoids, phenolic acids, vitamins C and E, beta-carotene, lutein, and glucosinolates in domestically processed broccoli were quantified using high-performance liquid chromatography (HPLC) methods; total polyphenols were determined with Folin-Ciocalteu reagent. The antioxidant capacities of broccoli extracts were evaluated using the Trolox equivalent antioxidant capacity (TEAC) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) methods. The results indicated that steam-cooking of broccoli results in an increase in polyphenols, as well as the main glucosinolates and their total content as compared with fresh broccoli, whereas cooking in water has the opposite effect. Steam-cooking of broccoli has no influence on vitamin C, whereas cooking in water significantly lowers its content. Both, water- and steam-cooking of broccoli results in an increase in beta-carotene, lutein, and alpha- and gamma-tocopherols as compared with fresh broccoli. Similar effects of steaming and water-cooking of broccoli on their antioxidant activity were observed.  相似文献

Tomato peels were firstly dried by different methods (hot air, freeze‐drying, and fluidized bed drying) to evaluate the recovery of lycopene, β‐carotene and DPPH radical scavenging activity. Comparison of the results showed that hot air drying at 50 °C was a suitable method and alternative to freeze‐drying to preserve carotenoids compounds and antioxidant activity in tomato peels. Then, ethanol/ethyl acetate (1:1) extracts from tomato peel, previously dried at 50 °C by hot air, were submitted to heat (100 °C) and light treatment (1000 lumen) to evaluate their stability as natural food dyes. Heating of the extracts caused a progressive reduction of total carotenoids, up to about 30% after 250 min of treatment, whereas the colour at the end of heat treatment showed small changes, with an overall colour difference (?E) equal to 7. Fluorescent lighting treatment showed an almost total degradation of carotenoids in the extracts after 48 h combined with a fading colour.  相似文献

Pork patties were subjected to traditional frying, cooking in a microwave oven (microwaves  +  grill), hot air cooking in a cyclojet (Electrim JI-9101 RP, Taiwan) and cooking in a steam-convection (combi) oven (hot air  +  30% steam) (BECK FCV 4 EDS, BECK GmbH, Jagsthausen, Germany). Products cooked in the combi oven (BECK FCV 4 EDS) were characterized by the smallest cooking loss, the highest retention of water and the lowest content of fat compared to other samples. The content of hydroxymethylfurfural in fried and cyclojet-cooked patties was almost twofold higher than in microwave and combi oven-cooked samples. The intensity of lipid oxidation was also higher in fried and cyclojet-cooked meat than in the other two products. The intensity of meat flavor was the strongest in the combi oven-cooked patties. All products were characterized by a low intensity of fatty flavor. The highest scores for overall acceptability were given to the combi oven-cooked patties, whereas the lowest scores were given by the panelists to the microwave-cooked patties.

PRACTICAL APPLICATIONS


Pork patties are an important meat product both in catering production for direct consumption and in convenience food industry when intended for refrigerated or frozen storage. As cooking is a main stage in preparation of patties for consumption, it is essential to use a method of cooking that ensures the high nutritional and sensory quality of products. Most often, pork patties are subjected to deep frying or traditional frying; however, several other cooking methods can be used. The present work shows that the combi oven cooking enables production of patties of desirable nutritional and sensory characteristics and low content of unfavorable compounds.  相似文献

研究了微波、汽蒸、自然和静水解冻对冷冻西兰花中叶绿素、类胡萝卜素、抗坏血酸、总酚、硫苷、异硫氰酸脂、黑芥子酶和抗氧化能力的影响。结果表明,西兰花经冷冻处理后总酚、抗坏血酸、硫苷和类胡萝卜含量均有不同程度下降,异硫氰酸酯含量却显著增加了51.1%。四种解冻方式均不同程度地影响西兰花质量。微波和汽蒸解冻较自然解冻分别缩短了97.4%和94.2%的时间。其中西兰花总酚、硫苷和类胡萝卜素含量在微波解冻和汽蒸解冻之间无显著差异,但汽蒸解冻较微波解冻的抗坏血酸含量降低23.7%。静水解冻和自然解冻导致西兰花活性成分流失,而且静水解冻流失更严重。微波解冻有效地保持了西兰花中总酚、硫苷、抗坏血酸和类胡萝卜素含量,分别是自然解冻的1.15、1.20、1.93和1.39倍,从而保持了较高的抗氧化能力。此外,微波解冻和汽蒸解冻后黑芥子酶活力降低,异硫氰酸酯含量低于自然解冻和静水解冻。综合比较,微波解冻是一种较适合冷冻西兰花解冻的方式,能够较好地保留西兰花品质。  相似文献

The effect of boiling and steaming on content of phytochemicals (carotenoids, chlorophylls, polyphenols and ascorbic acid) all evaluated by HPLC, total antioxidant capacity (TAC) measured by means of TEAC and FRAP assays and colour (L, a, b, C, H°) of three frozen vegetables (carrot, cauliflower and spinach) was evaluated. Steaming increased the content of polyphenols in all vegetables and limited the depletion of carotenoids in spinach. Accordingly, TAC remained unvaried or increased both for steamed carrot and spinach. Boiling had a more marked effect on nutritional pattern of frozen vegetables in comparison with steaming, leading to a general loss of phytochemical compounds and TAC for all vegetables. Ascorbic acid was detected only in cauliflower and decreased after both treatments. Colour of frozen vegetables was only slightly influenced by cooking, probably due to blanching pre-treatment. Slight decrements of redness (a) for carrot in relation with loss of carotenoids and greenness (−a) for steamed spinach, due to a significant loss of total chlorophylls, were observed.  相似文献

This work is intended to optimize the microencapsulation process of broccoli particles preserving their chemical healthy composition, in terms of chlorophylls and polyphenol contents and antioxidant activity, increasing its chemical stability and hiding the characteristic broccoli odor that might have a negative impact in consumer's acceptance. Thus, the microencapsulated broccoli could be easily added to processed foodstuff increasing their healthy properties without altering their sensory attributes. Experimental design and response surface methodology (RSM) was applied to optimize operating conditions and the variables that affect broccoli microencapsulation. Based on that, the optimum process conditions determined by RSM were as follows: pH value 4.5; broccoli–wall material ratio 50% and concentration of wall material 4%, where the theoretical and practical encapsulation efficiency was 60% and 58%, respectively.Industrial relevanceNowadays, consumers are increasingly interested in beneficial effects of vegetables on health. In this sense, broccoli has been highly valued for their chemopreventive effects, attributed to its composition in glucosinolates, flavonoids, carotenoids, ascorbic acid and amino acids. All these substances are easily degraded by the action of oxygen, thus reducing their potential health benefit. Microencapsulation process has the advantage of reducing the reactivity to factors such as water, oxygen or light, while reducing evaporation or transmission rate to the outside environment.  相似文献

ABSTRACT: Quality assessment results of cooked meat can be significantly affected by sample preparation with different cooking techniques. A combi oven is a relatively new cooking technique in the U.S. market. However, there was a lack of published data about its effect on quality measurements of chicken meat. Broiler breast fillets deboned at 24‐h postmortem were cooked with one of the 3 methods to the core temperature of 80 °C. Cooking methods were evaluated based on cooking operation requirements, sensory profiles, Warner–Bratzler (WB) shear and cooking loss. Our results show that the average cooking time for the combi oven was 17 min compared with 31 min for the commercial oven method and 16 min for the hot water method. The combi oven did not result in a significant difference in the WB shear force values, although the cooking loss of the combi oven samples was significantly lower than the commercial oven and hot water samples. Sensory profiles of the combi oven samples did not significantly differ from those of the commercial oven and hot water samples. These results demonstrate that combi oven cooking did not significantly affect sensory profiles and WB shear force measurements of chicken breast muscle compared to the other 2 cooking methods. The combi oven method appears to be an acceptable alternative for preparing chicken breast fillets in a quality assessment.  相似文献

为了研究不同干燥方式对苹果蟠桃纸的感官品质和理化特性的影响,本文采用五种干燥方式(烘箱热风干燥、烤箱干燥、微波炉干燥、烤箱-烘箱联合干燥、烤箱-微波炉联合干燥)制备苹果蟠桃纸,考察不同干燥方式制备的苹果蟠桃纸在感官评定、质构、色泽、褐变度、总酚和维生素C含量、抗氧化活性等方面的差异。结果表明,烘箱热风干燥的产品的形态、口感、色泽、风味更能吸引感官评定人员,感官评定分数为最高(86.7),总酚类含量最高(5.66 mg GAE/g dw)、抗氧化活性较强(DPPH自由基清除率66.00%,FRAP法测定的总还原能力0.32 mmol Trolox/g dw),但维生素C含量较低(4.56 mg/100 g)、褐变程度较高。微波炉干燥的苹果蟠桃纸维生素C含量最高(9.78 mg/100 g),但感官评定分数最低为66.7,总酚含量(4.11 mg GAE/g dw)和抗氧化活性最低(DPPH自由基清除率58.00%,FRAP法测定的总还原能力 0.18 mmol Trolox/g dw)。烤箱-烘箱联合干燥和烤箱-微波炉联合干燥的产品则没有突出优势。综上,建议在苹果蟠桃纸生产中不采用微波炉干燥,采用烘箱热风干燥。  相似文献

Green asparagus (Asparagus officinalis L.), as a healthy and perishable vegetable, is processed after harvest to minimize the deterioration of its physical and chemical quality. In our research, fresh asparagus was sterilized using several methods, including a pilot-scale 915 MHz microwave-circulated water combination (MCWC) heating system, pressured hot-water heating and steam-heating in a retort. Rutin content of asparagus processed by these methods did not show significant difference. But antioxidant activity of asparagus after MCWC treatment was significantly greater than that processed by other methods. Although the shear stress of asparagus spears was significantly decreased by eight times after sterilization, no significant difference existed among the textures of asparagus processed by these methods. Asparagus processed by MCWC showed greener colour with negative a* value and greater hue value (H0) than did hot water- and retort-treated asparagus. Therefore, asparagus sterilized by MCWC showed greater antioxidant activity and greener colour than did asparagus processed by the conventional methods.  相似文献

Dehulled sesame seeds were roasted using different heat treatments. The effects of roasting treatments on the nutritive value, physicochemical properties and sensory properties of produced tahina were studied. Resultant tahina contained 586–594 g kg−1 crude oil, 219–226 g kg−1 crude protein and <30 g kg−1 crude fibre and ash. Crude protein, crude fibre, ash and N‐free extract in tahina samples were not affected by roasting treatments. However, crude oil was decreased by steam roasting and hot plate roasting. Hot plate roasting was more effective in reducing raffinose content than other roasting treatments, whereas vacuum roasting was less effective in reducing raffinose content than other roasting treatments. Tahinas were good sources of essential amino acids, especially sulphur‐containing amino acids, aromatic amino acids and tryptophan. Hot air roasted tahina followed by vacuum roasted tahina had higher total essential amino acid contents than steam roasted and hot plate roasted tahinas. Lysine was the first limiting amino acid in tahinas. Tahinas had a relatively high in vitro protein digestibility (over 83%). Tahina is a good source of niacin. Hot air roasted tahina had the highest content of B group vitamins compared with other tahina samples. Resultant tahinas had relatively high amounts of Na, Mg, K, Cu, Zn and Fe and a low amount of Ca. Roasting treatments did not affect the mineral contents. All roasted samples had a typical protein spectrum with a maximum absorption at 280 nm and minimum at 260 nm. However, the spectrum of hot air roasted tahina proteins was sharper than the spectra of other tahina proteins. Size exclusion HPLC fractionated tahina proteins into two fractions for hot roasted and vacuum roasted tahinas and three fractions for steam roasted and hot plate roasted tahinas. The gel filtration pattern of tahina proteins contained four peaks with identical elution volumes but different proportions. Hot air roasted and vacuum roasted tahinas had higher panel scores than steam roasted and hot plate roasted tahinas for all tested sensory properties. © 2000 Society of Chemical Industry  相似文献

The objective of this work was to evaluate the effect of six pretreatments on quality and nutritional contents of sliced Galega kale submitted to convective drying. Among all treatments, steam blanching was the most favourable, allowing improvements in retention of vitamin C, total antioxidant capacity and chlorophylls in comparison to the absence of pretreatment. Total phenolic losses were not reduced by steam blanching, but the retention was improved by combining this approach with a previous immersion in a metabisulphite solution. Moreover, steam blanching improved the colour parameters and appearance, providing a final dried product more similar to the fresh sample.  相似文献

Treatments with hot air were applied to broccoli (Brassica oleracea L) florets to investigate the effect on several quality and senescence parameters. To select the optimum treatment, florets were treated with different combinations of time/temperature ranging from 1 to 3 h and 37 to 50 °C and then placed in darkness at 20 °C. Most treatments delayed yellowing and loss of chlorophylls, except those performed at 37 °C, which accelerated senescence. Treatment at 48 °C for 3 h caused the highest delay in chlorophyll loss and was chosen to analyse its effect on quality and senescence. Non‐treated florets showed yellowing and reduced their chlorophyll content during storage. Heat treatment delayed the onset of chlorophyll catabolism by 1 day and slowed down the rate of degradation. Treated florets also showed lower losses of total sugars and proteins and an inhibition of protein solubilisation. Control heads showed an increment in CO2 production, which was not detected in heat‐treated florets. Total antioxidants decreased and thiobarbituric acid‐reactive substances (TBARS) increased during storage. The treatment delayed the decrease in antioxidant content and inhibited the increment in TBARS. In conclusion, treatment at 48 °C for 3 h delayed broccoli senescence at 20 °C and contributed to maintaining an overall better quality of the product. The effect of air‐drying parameters on antioxidant activity and changes in antioxidant compounds of broccoli (Brassica oleracea L.) were studied. Broccoli samples were dried to 70 g kg?1 moisture content using temperatures ranging from 50 to 100 °C and air flow‐rates from 1.20 to 2.25 m s?1, resulting in drying times from 25 to 90 min. Temperature, owing to its positive effect on the oxidation kinetics, was negatively correlated with ascorbic acid and free and total polyphenol contents but not with kaempferol, even though the sample dried at the highest temperature showed the lowest kaempferol content. The air flow‐rate was positively correlated with the total (TPP) and free (FPP) polyphenol contents because it led to a reduction in the drying time. No correlation was found between air flow‐rate and kaempferol content. Air flow‐rate and temperature positively affected the antioxidant activity by reducing the drying time. High‐temperature, short‐time processes maximised the antioxidant activity of broccoli owing to the negative effect of drying time on antioxidant activity. The antioxidant activity of broccoli was positively and significantly correlated with the FPP content but not with TPP and kaempferol. The evaluation of hydroxymethylfurfural content as an indicator of the occurrence of a Maillard reaction in dried broccoli did not support the hypothesis of a contribution of MRPs to the antioxidant activity of dried broccoli. The microbial, physical, sensory and nutritional quality of boiled (vacuum and conventional), steamed, pressure cooked, sous vide, microwaved (sous vide and conventional), deep-fried (vacuum and conventional) and grilled kailan-hybrid broccoli (Bimi®) after cooking was studied. Sous vide microwaving greatly decreased microbial counts, achieving very low psychrophilic and enterobacteria counts (1.1 and 0.2 log CFU g?1, respectively). Vacuum boiling and sous vide reduced the stem broccoli firmness by approximately 54–58 %, reaching a pleasant and moderate softening. Sous vide, grilling and steaming induced the lowest stem colour changes. Generally, all cooking treatments showed a good overall sensory quality. The total phenolic content (1,148 mg CAE kg?1 fw) usually increased after cooking, with microwave and grilled treatments registering the highest increases up to 2-fold. Commonly, the total antioxidant capacity (296.6 mg AAE kg?1 fw) increased after cooking by sous vide, microwaving and frying treatments registering the highest increments, by approximately 3.6-fold. Generally, the cooking process reduced the initial vitamin C content, with vacuum and conventional boiling showing the lowest and highest losses with 27 and 62 %, respectively, while vacuum deep frying preserved the initial value (1,737 mg kg?1 fw). As a main conclusion, the studied grilling and vacuum-based cooking treatments resulted in better microbial quality, colour, stem firmness and sensory quality than the remaining ones. This maintained or even improved the total antioxidant content of the new kailan-hybrid broccoli studied.  相似文献

Kale (Brassica oleracea var. Acephala), broccoli (Brassica oleracea var. botrytis italica), Brussels sprouts (Brassica oleracea L. var. gemmifera) and green and white cauliflower (Brassica oleracea var. botrytis) were used to determine their contents of antioxidising agents: vitamin C, carotenoids and polyphenols. The examined vegetables were found to contain between 40.6 and 107 mg/100 g FW of vitamin C, from 0.04 to 2.7 mg/100 g FW of carotenoids, and from 144 to 773 mg/100 g FW of polyphenols. Cauliflower was found to contain the smallest amount of these compounds and kale the largest. The antioxidant activity of the vegetables was determined on the basis of their ability to extinguish the ABTS free radical. The aquathermal processes to which the vegetables were subsequently subjected reduced their antioxidant activity, mainly due to escape of vitamin C and polyphenols into the water environment. These losses were largest in the case of leafy or highly fragmented vegetables.  相似文献

Gac fruit aril has an attractive orange red colour and very high level of carotenoids, giving it exceptional antioxidant properties. However, spray drying of this material has not been successful and malto dextrin is considered as a suitable drying aid to preserve its colour and antioxidant properties. This paper reports the effects of inlet drying air temperature (120, 140, 160, 180 and 200 °C) and maltodextrin addition (10%, 20% and 30%) on the physicochemical and antioxidant properties of the Gac aril powder. Moisture content and bulk density, colour characteristics, total carotenoid content (TCC), encapsulation efficiency and total antioxidant activity (TAA) were significantly affected by maltodextrin concentration and the inlet air temperatures. However, pH, aw and water solubility index were not significantly influenced by the spray drying conditions. Overall, a good quality Gac powder in terms of colour, TCC and TAA can be produced by spray-drying at inlet temperature of 120 °C and adding maltodextrin concentration at 10% w/v.  相似文献

The aim of this study was to describe a phytochemical profile, including phenolic compounds, antioxidant capacity, colour and sensory quality attributes (colour, aroma, consistency, sweetness intensity and desirability) of a sour cherry puree (SCP) supplemented with different natural sweeteners. Supplementation of SCP with the sweeteners only slightly affected polyphenol content, which was by 9% (SCP with steviol glycosides) to 26% (SCP with erythritol) lower than in pure SCP. Furthermore, the products with natural sweeteners were characterised for the lowest antioxidant activity than the SCP sample, especially in SCP with erythritol and xylitol. In addition to having high content of polyphenols and high antioxidant activity, these products were also attractive to consumers, especially when supplemented with xylitol, palm sugar or sucrose, but not with Luo Han Kuo fruit, which was found unacceptable. The results showed that most of the obtained SCPs had very promising and interesting phytochemical properties and sensory profiles.  相似文献

Effects of ultrasound combined with high hydrostatic pressure (HHP) on physicochemical properties,microorganisms and storage attributes of cold brew tea were investigated. HHP at 400 MPa/5 min/25 °C inactivated the total aerobic bacteria, yeast and mould in cold brewed tea prepared by static brewing (SB-tea) at 13 h/4 °C, ultrasonic bath (UB-tea) at 150 W/120 min/0 °C and ultrasonic pulveriser (UP-tea) at 600 W/40 min/0 °C, ensuring their microbiological safety. The results showed that there was no significant difference in the concentration of tea polyphenols between hot brewed tea prepared by 7 min/100 °C and cold brewed tea under different preparation conditions, while the caffeine in cold brewed tea was significantly lower (P < 0.05) than that in hot brewed tea. During the storage period of 8 days, compared with the untreated group, the cold brewed tea after HHP treatment had better microbiological safety. In addition, HHP treatment constantly maintained the tea polyphenols, pH, colour, antioxidant capacity and turbidity in cold brewed tea. The untreated and HHP-treated cold brew tea were evaluated by 20 trained volunteers. Results showed that UB-tea was more close to SB-tea than UP-tea in sensory profile, while HHP seem to maintain a good sensory profile as well. Therefore, this particular combined technology of ultrasonic bath and HHP displayed considerable potential for application in the cold brew tea manufacturing industry.  相似文献
