发酵肠生产中乳酸菌的选择   总被引:15,自引:0,他引:15  
通过对发酵肠生产中使用的乳酸菌研究,提出了乳酸菌中发酵活力较好的是干酪乳杆菌(Lc)、植物乳杆菌(Lp)和戊糖片球菌(PP)。Lc、Lp、PP之间有桔抗作用,应该单独使用。使用Lc、Lp、PP分别与玫瑰色微球菌(Mr)混合,制作发酵肠。研究了发酵肠在发酵和成熟期间的pH值、水分活度、水分含量及微生物的变化,确定最好使用干酪乳杆菌和玫瑰色微球菌混合型发酵剂,制作发酵肠。  相似文献

渝黔地区传统酸肉发酵过程中微生物区系研究   总被引:1,自引:0,他引:1  
目的:对渝黔地区传统酸肉微生物种群进行研究。方法:采用不同的选择培养基对微生物进行分离鉴定和计数。结果:从中分离出乳酸菌、酵母菌、葡萄球菌和微球菌,未发现霉菌。乳酸菌优势菌群主要是片球菌属和乳杆菌属,鉴定12株乳酸菌分别为乳酸链球菌、肠膜明串珠菌、类肠膜明串珠菌、植物乳杆菌、米酒乳杆菌、乳酸片球菌、戊糖片球菌、约氏乳杆菌、嗜盐片球菌和啤酒片球菌;优势菌株戊糖片球菌、植物乳杆菌贯穿整个发酵过程。葡萄球菌主要是表皮葡萄球菌、腐生葡萄球菌、木糖葡萄球菌和肉葡萄球菌,其中木糖葡萄球菌为主要发酵菌株。酵母菌主要为汉逊酵母属、接合酵母属、毕赤氏酵母和德巴利酵母属等,鲁氏接合酵母为优势发酵菌株。结论:优势微生物是酸肉风味品质形成的基础,本研究可为高效天然肉制品发酵剂的研究提供生物资源。  相似文献

通过对3种适合肉制品发酵的菌种:植物乳杆菌、嗜酸乳杆菌、戊糖片球菌发酵性能的研究,筛选出两种较优的组合发酵剂。再通过正交试验确定鹅肉发酵香肠组合发酵剂的最优配比,最后对鹅肉发酵香肠成熟过程和贮藏过程中的pH值和感官品质等方面进行综合分析。结果表明,由戊糖片球菌和植物乳杆菌按1∶1(V∶V)比例混合、接种量为3%(V/m)时所构成的鹅肉香肠发酵剂,其发酵性能最佳。  相似文献

为研究乳酸菌发酵对红肠品质的影响,将发酵技术应用于本无发酵工艺的红肠制品中,筛选出能够提高红肠品质的乳酸菌发酵剂。分别将常应用于发酵肉制品的7 种商业乳酸菌发酵剂(木糖葡萄球菌+戊糖片球菌(THM-17)、木糖葡萄球菌+清酒乳杆菌+类植物乳杆菌(PRO-MIX5)、木糖葡萄球菌+肉葡萄球菌+清酒乳杆菌(WBL-45)、木糖葡萄球菌+戊糖片球菌+植物乳杆菌(VHI-41)、木糖葡萄球菌+戊糖片球菌+植物乳杆菌(SHI-59)、肉葡萄球菌+木糖葡萄球菌(WBX-43)和戊糖片球菌+木糖葡萄球菌+肉葡萄球菌+乳酸片球菌(VBM-60))及8 种单菌(弯曲乳杆菌、戊糖乳杆菌、清酒乳杆菌-1、戊糖片球菌、木糖葡萄球菌、肉葡萄球菌、清酒乳杆菌-2、植物乳杆菌)以107 CFU/g的接种量接种至腌制后的肉馅中,拌馅灌肠后于35 ℃、80%湿度条件下发酵12 h,取样测定发酵后样品的乳酸菌数和细菌总数,再经干燥、蒸煮、烟熏、烘烤制得成品,测定其感官、pH值、色差、质构、亚硝酸盐、硝酸盐、生物胺及N-亚硝胺含量等指标。结果表明:15 种发酵剂中以木糖葡萄球菌和植物乳杆菌2 种乳酸菌发酵剂应用效果较好,所制得产品pH值分别为5.26和5.04,色泽美观,弹性适中,亚硝酸盐残留量(10.84、10.13 mg/kg)低,可显著抑制N-亚硝胺的形成(N-二甲基亚硝胺含量分别为1.29、2.51 μg/kg),生物胺总量较低。由此说明,木糖葡萄球菌和植物乳杆菌能够显著提高红肠产品的安全品质。  相似文献

利用植物乳杆菌、戊糖片球菌、木糖葡萄球菌和变异微球菌混合发酵生产发酵型南安板鸭。采用正交试验,得到最佳的发酵工艺条件为:植物乳杆菌、戊糖片球菌、木糖葡萄球菌与变异微球菌之间的比例为1:1:2:2,发酵温度为30℃,发酵时间为18h,接种量为3%。经混合发酵后,氨基酸态氮含量增加,板鸭风味增强,营养价值提高,为工业化大生产提供了技术依据。  相似文献

研究了四种发酵剂植物乳杆菌(Lp)、嗜酸乳杆菌(La)、干酪乳杆菌(Lc)、戊糖片球菌(Pp)的生长特性和发酵性能,筛选出适宜带鱼发酵的乳酸菌,并应用正交试验对发酵工艺进行优化。结果表明:适宜带鱼发酵的乳酸菌种为La和Pp,其最佳工艺条件为:糖用量5%、接种量0.2%、La与Pp菌种配比1:3。  相似文献

对从湘西传统酸鱼4个不同发酵阶段分离的196株乳酸菌种类进行了研究,分离出的乳酸菌主要包括植物乳杆菌、戊糖片球菌、食品乳杆菌、明串珠菌、肠球菌及干酪乳杆菌等,并且这些乳酸菌在发酵过程中呈现出一种动态的变化进程。同时对分离到的乳酸菌进行了一系列的生理生化试验;产酸速率实验,耐食盐、耐亚硝盐实验,耐酸及耐胆盐实验,氨基酸脱羧酶实验以及抑菌实验,选育出具有较好的发酵剂潜力的3株植物乳杆菌和1株戊糖片球菌。  相似文献

用干酪乳杆菌,戊糖片球菌和弯曲服杆菌分别与葡萄球菌按不同配比组成的9种发酵剂生产干发酵行肠,通过测定在发酵和成熟过程中的pH值,初选出6033和10145的组合为合适的发酵剂。用该发酵剂生产干发酵香肠过程中的pH值Aw及活菌总数,乳酸菌数和球菌数的变化及感官分析的结果表明,最佳混合发酵剂的比例为6033:10145+1:2,最佳工艺条件为:20℃,RH〉95%,1d,16-18℃,RH=90%-8  相似文献

以商业发酵剂(木糖葡萄球菌+戊糖片球菌)为对照组,不同发酵剂组合(木糖葡萄球菌+副干酪乳杆菌、木糖葡萄球菌+戊糖片球菌+副干酪乳杆菌)为实验组,通过对发酵香肠水分含量、pH值、水分活度、色泽、质地、风味和感官品质等指标进行测定,确定最佳发酵剂及适宜发酵的香肠直径。结果表明:相较于商业发酵剂,木糖葡萄球菌与副干酪乳杆菌组合发酵的香肠总体可接受性相对较高,且庚醛、1-辛烯-3-醇、乳酸乙酯、戊酸乙酯、癸酸乙酯、2-甲基丙酸乙酯等愉悦风味物质为该组独有,其特征主要表现为更加浓郁的清新味、甜香味、果香味和花香味;适宜的直径(21 mm)、水分含量((25.40±0.00)%)和硬度((2 812.46±767.93)g)以及相对较高的pH值(pH 5.57±0.02)是该组发酵香肠口感显著高于其他2 组的重要原因。因此,木糖葡萄球菌与副干酪乳杆菌组合发酵的小直径香肠食用品质最佳。  相似文献

用戊糖片球菌、罗伊氏乳杆菌、鼠李糖乳杆菌、植物乳杆菌、嗜酸乳杆菌共5?种乳酸菌发酵库车小白杏,通过比较发酵液在发酵过程中的菌浓度、pH值、总可溶性固形物(total soluble solids,TSS)含量、超氧化物歧化酶(superoxide dismutase,SOD)活性等理化特性及发酵结束后的感官评价,筛选出一种或几种适合发酵库车小白杏发酵液的菌株。结果表明,发酵结束后,戊糖片球菌发酵库车小白杏发酵液的SOD活性达到252.63?U/g,活菌数达到8.07(lg(CFU/mL)),TSS含量降至17.1?°Brix,感官总体评价值最佳达到97%。植物乳杆菌发酵的库车小白杏发酵液的SOD活性达到275.87?U/g,感官总体评价几何平均(geometrical mean,GM)值达到88%。嗜酸乳杆菌发酵的库车小白杏发酵液速度最快,活菌数最终达到9.95(lg(CFU/mL)),TSS含量降至16.6?°Brix,但感官总体评价GM值仅为79%。综上所述,戊糖片球菌是最适合发酵库车小白杏的菌种,而植物乳杆菌和嗜酸乳杆菌的适合度仅次于戊糖片球菌。通过比较5?种乳酸菌发酵的库车小白杏发酵液的理化性质和感官评价,可以得出结论,戊糖片球菌最适合发酵库车小白杏。  相似文献

从10 种我国自然发酵制品中分离纯化得到52 株乳酸菌及56 株过氧化氢酶阳性球菌,首先通过菌株耐受性、发酵特性等指标对菌株进行初步筛选,然后利用抑菌特性和风味特性对菌株进行复筛,选择可能改善低盐发酵香肠安全性和风味的优良菌株,最终筛选得到3 株葡萄球菌Z9、L2和R2,以及4 株乳酸菌P6、P12、X和SN1-3。经由形态学特征、生理生化特征及16S rDNA序列分析对筛选得到的菌株进行鉴定,结果表明,葡萄球菌菌株Z9、L2为腐生葡萄球菌,R2为肉葡萄球菌;乳酸菌菌株P6、P12均为植物乳杆菌,X为干酪乳杆菌,SN1-3为戊糖片球菌。最后测定菌株的生长特性及产酸能力,研究菌株间的拮抗特性,最终筛选得到戊糖片球菌SN1-3与肉葡萄球菌R2作为制作发酵香肠的复配菌株。  相似文献

The population dynamic of constitutive biota on 84 samples belonging to two different types of French fermented dry sausages during the ripening process in a pilot-scale ripening chamber was investigated. Samples were analyzed in three steps of their production: fresh product, first drying stage, and finished product. In addition, 180 strains of lactic acid bacteria were identified using a miniaturized biochemical procedure of characterization. In general, the number of lactic acid bacteria that evolved during the ripening process of French dry sausages increased during the first days of the process after which the number of these organisms remained constant at approximately 8 log CFU/g. Lactobacillus sakei and Pediococcus pentosaceus, bacteria added as starter, were the dominant species. Pediococcus urinaeequi, Pediococcus acidilactici, and particularly Lactobacillus curvatus were also present. Finally, we have to take into account that the controlled conditions of the pilot plant generally contribute to the homogenization of the behavior of the starter biota.  相似文献

Dry sausage fermented by Lactobacillus rhamnosus strains   总被引:7,自引:0,他引:7  
The ability of three probiotic Lactobacillus rhamnosus strains GG, E-97800 and LC-705 and one commercial Pediococcus pentosaceus starter strain (control) to produce dry sausage was studied. During the fermentation process the numbers of inoculated lactic acid bacteria increased from approx. 7 log10 to 8-9 log10 cfu/g and the pH values decreased from 5.6 to 4.9-5.0. The sensory test indicated that the dry sausages fermented by L. rhamnosus LC-705 were inferior to the control sausages. The presence of inoculated experimental strains as predominant organisms in the dry sausages was recognised on the basis of their genetic fingerprints by ribotyping. The concentrations of biogenic amines remained low during the ripening process. These results indicated that the studied Lactobacillus rhamnosus strains, especially strains GG and E-97800, are suitable for use as probiotic starter cultures in fermenting dry sausage.  相似文献

The objective of this study was to investigate the effect of starter culture addition on proteolysis of Thai fermented sausages. Sausages inoculated with six different external starter cultures—Pediococcus pentosaceous, Pediococcus acidilactici, Weissella cibaria, Lactobacillus plantarum, Lactobacillus pentosus, and Lactobacillus sakei—were compared with naturally fermented sausages. The results of microbiological analysis indicated that the dominance of lactic acid bacteria (LAB) could inhibit the growth of pathogens and spoilage. Proteolysis was observed during fermentation by the reduction of myofibrillar and sarcoplasmic proteins and the increase in nonprotein nitrogen (NPN) and total free amino acids. The highest increase in concentration of NPN and free amino acids was obtained from sausages inoculated with LAB. Sodium dodecyl sulphate polyacrylamide gel electrophoresis (SDS-PAGE) showed a similar pattern of proteolysis of sarcoplasmic proteins in all sausages, while that of the inoculated sausages with L. plantarum, L. pentsus, and L. sakei exhibited increased degradation of myofibrillar protein bands at 200 and 45 kDa.  相似文献

通过比较不同比例植物乳杆菌与木糖葡萄球菌的复合发酵剂的生长活性、产酸能力、耐盐及耐亚硝酸盐特性,筛选最佳复配比例的混合发酵剂并制作发酵香肠。旨在探究复合发酵剂对发酵香肠理化品质及生物胺的影响。结果表明:植物乳杆菌与木糖葡萄球菌复合比为1:1时,具有较好的生长、产酸、耐盐及耐亚硝酸盐能力。接种1:1的植物乳杆菌与木糖葡萄球菌混合发酵剂制备的香肠pH值下降速率快于单一乳酸菌组和空白对照组;发酵结束混合组pH值降为4.95,显著低于对照组和单一组(P<0.05);pH值下降改变了蛋白质与水分结合能力、促使香肠Aw随之降低,使得混合组Aw低于单一组和对照组;相比香肠色泽,3组差异不显著(P>0.05)。成熟后期混合组尸胺和组胺检出量均低于单一组和对照组。由研究结果可知添加复合发酵剂有助于提高香肠安全性、缩短发酵成熟周期。  相似文献

ABSTRACT:  A total of 192 lactic acid bacteria were isolated from 2 types of naturally fermented dry sausages at 3 different stages of the ripening process in order to select the most suitable strains as starter cultures in dry-cured sausage manufacture according to their technological characteristics such as glucose fermentation, lactic and acetic acid production, and proteolytic, lipolytic, and antimicrobial activities. Identification of the isolates revealed that 31.2% were Pediococcus pentosaceus , 26.9% Lactococcus lactis , 18.6% Pediococcus acidilactici , 17% Lactobacillus brevis , and sporadic isolates of Leuconostoc mesenteroides , Lactobacillus plantarum , and Lactobacillus curvatus . Most of the strains did not produce gas from glucose and showed the capacity to produce lactic acid rapidly. Some 25% of the strains were able to degrade tributyrin (esterase activity), but none showed lipolytic activity against olive oil and pork fat. Only 3 strains of P. acidilactici showed weak proteolytic activity against myofibrillar or sarcoplasmic proteins. Also, the same strains showed antimicrobial activity against Listeria monocytogenes . Nine strains with the best properties were preselected and tested for biogenic amine production. The results showed that two of the strains, identified as P. acidilactici by polymerase chain reaction, had the potential to be further tested as starter cultures in pilot processing of Iberian sausages.  相似文献

Potential probiotic cultures suitable as starter cultures for the Scandinavian-type fermented sausages were identified among strains well-adapted to fermented meats as well as strains originating from a culture collection. From 15 different fermented meat products, 22 strains were isolated as dominant non-starter lactic acid bacteria (NSLAB). The isolates were identified by RAPD, API and sequence analysis of 16S rRNA and showed to be five strains of Lactobacillus sakei, five strains of Lactobacillus farciminis, five strains belonging to the group of Lactobacillus plantarum/pentosus, four strains of Lactobacillus alimentarius, two strains of Lactobacillus brevis and one strain of Lactobacillus versmoldensis. Heterofermentative strains as well as strains not growing at 37 degrees C and not lowering pH below 5.1 in a meat model were excluded leaving 9 strains for further studies. These strains together with 19 strains from a culture collection were evaluated by in vitro methods including survival upon exposure to pH 2.5 or 0.3% oxgall and adhesion to the human colon adenocarcinoma cell line Caco-2 as well as antimicrobial activity against potential pathogens. Strains that fulfilled all the probiotic criteria and showed to be fast acid producers in a meat model included three strains belonging to the group of Lb. plantarum/pentosus (MF1291, MF1298, MF1300) which originated from the dominant NSLAB of fermented meat products. MF1291 and MF 1298 were further identified as Lb. plantarum and MF1300 as Lb. pentosus. The three strains were all successfully applied as starter cultures for the production of fermented sausage. The viable count at the end of the processing period reached high cell numbers (4.7x10(7)-2.9x10(8) cfu/g) and pH of the sausages decreased to pH 4.8-4.9 without any flavour deviation compared to sausage fermented by a commercial meat starter culture.  相似文献

以麦胚为原料,利用复合乳酸菌发酵研制麦胚乳酸菌发酵饮品。以离心沉淀率为评价指标,优化稳定剂含量;采用单因素试验及正交试验,优化麦胚乳酸菌发酵饮品工艺条件,并测定其理化指标。结果表明,最佳稳定剂为羟丙基二淀粉磷酸酯0.5%、琼脂0.2%;最佳发酵工艺条件为嗜热链球菌(Streptococcus thermophiles)、保加利亚乳杆菌(Lactobacillus bulgaricus)、乳双歧杆菌(Bifidobacterium lactis)、鼠李糖乳杆菌(Lactobacillus rhamnosus)、植物乳杆菌(Lactobacillus plantarum)、嗜酸乳杆菌(Lactobacillus acidophilus)、干酪乳杆菌(Lactobacillus casei)按照配比1∶1∶1∶1∶1∶1∶1制备发酵剂,接种量0.03%,发酵时间24 h,发酵温度 42 ℃。在此最佳条件下,麦胚乳酸菌发酵饮品为乳酪色,质地黏稠,口感细腻,总蛋白3.53 g/100 g,总膳食纤维2.12 g/100 g,维生素E 1.28 mg/100 g,亚油酸669 mg/100 g,α-亚麻酸75.8 mg/100 g,乳酸活菌数2.1×109 CFU/mL。  相似文献

该研究利用高效液相色谱(HPLC)法对65株来源于传统发酵肉制品的耐盐、耐亚硝酸盐乳酸菌所产生物胺进行定性定量检测,筛选出降解率最高的不产生物胺菌株PL-ZL001。经形态观察、生理生化试验研究,并结合16S rDNA序列分析对其进行鉴定,同时探索其作为发酵剂对发酵香肠中生物胺含量的影响。结果表明,菌株PL-ZL001被鉴定为植物乳杆菌(Lactobacillus plantarum),添加菌株PL-ZL001可抑制发酵香肠中6种生物胺的积累,尤其是对毒性最大的组胺含量的控制,效果显著优于商业用木糖葡糖球菌(Staphyloccus xylose)(P<0.05)。  相似文献
