Fermentation process improvement of soybean residue cake, a Chinese traditional fermented food, and its physicochemical analysis during fermentation were studied. One of the dominant strains in the fermentation was isolated and identified as Mucor racemosus Fresenius. The fermentation process was improved by subsection fermentation. The crude protein content decreased from 19.95 ± 0.03% in the raw soybean residue to 16.85 ± 0.10% in the fermented products, and the formaldehyde nitrogen content increased from 0.068 ± 0.004% to 0.461 ± 0.022% in final fermented cakes. Hardness of samples significantly (P < 0.05) increased whereas springiness, cohesiveness, and resilience significantly (P < 0.05) decreased with increasing fermentation time, respectively. Microstructure observations showed obvious change of the surface of cake samples during the fermentation process. PRACTICAL APPLICATION: During the soybean processing, it will produce plenty of by-products, and the most part of them is soybean residue. The discarded soybean residue causes economic loss. Fortunately, we can obtain nutritious and delicious fermented soybean residue cakes by fermenting soybean residue as raw material. 相似文献

Isoflavones impart health benefits and their overall content and profile in foods are greatly influenced at each step during processing. In this study, 2 soybean varieties (Prosoy and black soybean) were processed with 3 different grinding (ambient, cold, and hot grinding) and heating methods (traditional stove cooking, 1‐phase UHT, and 2‐phase UHT) for soymilk making. The results showed after cold, ambient, and hot grinding, the total isoflavones were 3917, 5013, and 5949 nmol/g for Prosoy; the total isoflavones were 4073, 3966, and 4284 nmol/g for black soybean. Grinding could significantly increase isoflavone extraction. The grinding process had a destructive effect on isoflavones and this effect varied with grinding temperature. Different heating methods had different effects on different isoflavone forms. Two soybean varieties showed distinct patterns with respect to the change of isoflavone profile during processing. 相似文献

以传统湿法工艺技术制备豆乳粉为基础,对浆渣分离后的豆乳进行超高压-限制性酶解处理,降低豆乳粉致敏性。在单因素试验基础上,采用响应面分析法对超高压-限制性酶解制备低致敏性豆乳粉工艺进行优化,确定最优超高压-限制性酶解的工艺参数为超高压处理压强320.00?MPa、超高压处理时间15?min、酶解时间60?min、酶添加量0.3?U/g,此条件下致敏性降低率为88.09%,但制备的豆乳粉具有微苦味,需要进一步调配以改善口感。超高压处理与酶解具有协同效应,可显著提高豆乳粉蛋白质体外消化率、显著降低豆乳粉致敏性,对不同加工工艺豆乳粉进行蛋白质体外消化率、蛋白质分散指数、过敏原含量及蛋白电泳分析,进一步证明超高压与酶解的协同效应。 相似文献

大豆肽在食品和保健品领域应用广泛,是一种颇有前途功能性食品,大豆粕含45.0%~55.0%大豆蛋白,经水解可得由3~6个氨基酸组成功能性大豆肽。发酵过程中,低分子量肽百分含量、肽转化率和酶分布与发酵条件有关,利用枯草芽孢杆菌1389、黑曲霉3.350和米曲霉A–9005发酵大豆粕,通过这些微生物所分泌各种蛋白酶对大豆粕蛋白质合适位点切割,及对某些肽基团和疏水性氨基酸末端进行修饰和重排,可达到降低成本、提高利用率和产率目的。该实验研究枯草芽孢杆菌1389分别和黑曲霉3.350、米曲霉A–9005混合发酵大豆粕制备大豆肽动态发酵过程中低分子量肽百分含量、肽转化率和酶分布之间相关性;结果表明,发酵温度30℃,接种量为10%,底物浓度3%,枯草芽孢杆菌1389与黑曲霉3.350菌种混合比3∶2,发酵36h时,低分子量肽百分含量65%以上,肽转化率70%左右,为最佳发酵条件。 相似文献
