The effect of kefir concentration on the quality of porous white bread has been investigated. Quality evaluation was done using flatbed scanning (FBS) for measuring crumb porosity, instrumental texture profile analysis (TPA), crust and crumb color (L * a * b *), moisture, specific volume, and density determination techniques. The correlations between porosity, brightness, and firmness were also investigated. Long fermentation time of the sourdough changed significantly (p<0.05) the cell mean area (mm2), cell mean perimeter (mm), firmness (N), chewiness (N), light reflectance, and specific volume (ml/g). A strong correlation was found between microstructure of porous white bread, brightness (L), and firmness from TPA test. Kefir prolonged the shelf life of bread.  相似文献

Gluten free breads often have poor crust and crumb characteristics and the current study was conducted to help alleviate this problem. A commercial wheat starch (Codex Alimentarius) gluten free flour was supplemented with seven dairy powders (0%, 3%, 6%, 9% inclusion rates based on flour weight). Initially a fixed water level was used (trial 1) and the resulting batters were proofed and baked. The breads were tested 24 h after baking. Powder addition reduced loaf volume by circa 6% (P<0.001). Increasing the inclusion levels of the powders decreased loaf volume (P<0.001) with a decrease of 8% for the highest level. Powder addition generally decreased the crumb L*/b* (white/yellow) ratio. Crust L* values were significantly reduced. All of the powders increased crumb hardness (P<0.001) with the exception of demineralised whey powder. Ten and 20% additional water (trial 2) was added to the formulation and the resulting breads had higher volume, and a much softer crust and crumb texture. Sensory analysis revealed a preference for breads containing skim milk replacer, sodium caseinate and milk protein isolate.  相似文献

We determined the effect of onion skin extract (OE) on the quality of wheat bread: contents of total polyphenols and flavonols, antioxidative activity and their changes during storage. With increasing doses of OE to bread, contents of total polyphenols and flavonols and the antioxidative activity were observed to increase. A higher total flavonol content was found in bread with 1% OE stored at 24 °C than in bread stored at 4 °C. There was no such relationship in the bread with 0.5% OE. Changes in flavonols content during storage for 72 h were insignificant. No clear trends of change in the antioxidant activity could be found at storage of breads. The addition of OE caused no changes in the yield and volume of bread and contributed to a decreasing value of L* parameter and to increasing values of ΔE, a* and b* parameters of bread crumb colour. Consumers accepted the smell and taste of bread with the addition of OE to a lesser extent than the control bread. Bread with 1% OE the taste was rated very low. Consumers rated the taste of bread with 1% OE low because it was bitter. Breads enriched with OE had a proper external appearance as well as crumb and crust features. Roasted onion aroma and taste were perceptible in the obtained breads. A bitterness was perceptible in breads baked with the addition of 1% of OE.  相似文献

The effect of successively replacing (10%, 20%, and 30%) wheat flour with dietary fiber (DF) from wheat, oat, barley, and maize or cereal bran (CB) from wheat, oat, and rice on cake batter, final cake quality parameters, as well as on product shelf-life was studied. Batter viscosity (control, 2.96; wheat fiber 30%, 20.21; rice bran 10%, 0.47 Pa sn), cake-specific volume (control, 2.27; wheat fiber 20%, 2.83; rice bran 30%, 1.94 cm3/g), porosity (control, 0.75; wheat fiber 30%, 0.81; rice bran 30%, 0.69), and crumb moisture content (control, 20.07%,; wheat fiber 30%, 26.45%; oat bran 30%, 13.89%) increased significantly (P < 0.05) with DF addition but decreased with CB addition. Addition of DF resulted in softer crumb texture (Control, 4.20 N; wheat fiber 20%, 3.19 N), while CB addition increased crumb firmness (rice bran 30%, 10.84 N), respectively. Minor differences were observed in the crumb and crust color of the DF cakes with respect to the control. Addition of CB decreased the L values of crumb color significantly and the decrease increased with increased level of CB incorporation. DF addition led to cakes with greater acceptance by panelists than CB addition, similar to the control. DF cakes stored in polyethylene bags at 25 °C and 60% relative humidity for 6 days showed delayed moisture loss and lower firmness compared to CB cakes. The optimal level of incorporation based both on the objective and sensory characteristics results was found 20% for DF and 10% for CB, respectively. Concluding, by incorporating DF or CB properly, cakes with improved nutritional value can be manufactured.  相似文献

Selected processing methods, demonstrated to be effective at reducing Salmonella, were assessed to determine if spice and herb quality was affected. Black peppercorn, cumin seed, oregano, and onion powder were irradiated to a target dose of 8 kGy. Two additional processes were examined for whole black peppercorns and cumin seeds: ethylene oxide (EtO) fumigation and vacuum assisted‐steam (82.22 °C, 7.5 psia). Treated and untreated spices/herbs were compared (visual, odor) using sensory similarity testing protocols (α = 0.20; β = 0.05; proportion of discriminators: 20%) to determine if processing altered sensory quality. Analytical assessment of quality (color, water activity, and volatile chemistry) was completed. Irradiation did not alter visual or odor sensory quality of black peppercorn, cumin seed, or oregano but created differences in onion powder, which was lighter (higher L*) and more red (higher a*) in color, and resulted in nearly complete loss of measured volatile compounds. EtO processing did not create detectable odor or appearance differences in black peppercorn; however visual and odor sensory quality differences, supported by changes in color (higher b*; lower L*) and increased concentrations of most volatiles, were detected for cumin seeds. Steam processing of black peppercorn resulted in perceptible odor differences, supported by increased concentration of monoterpene volatiles and loss of all sesquiterpenes; only visual differences were noted for cumin seed. An important step in process validation is the verification that no effect is detectable from a sensory perspective.  相似文献

This study examined the effect of the incorporation of flesh fibre concentrate (FFC) from apple, pear, and date pomaces on wheat bread dough performance and bread quality. The nutritional composition and techno-functional properties (water-holding capacity, oil-holding capacity, swelling capacity) of FFC were determined beforehand. Dough performance was evaluated by farinograph, alveograph and visco-amylograph. Bread quality was assessed by physical (weight, specific volume, and color) and textural (hardness and elasticity) parameters. Digital imaging analysis was also performed in order to better understand the observed effects. Results showed that the addition of FFC in wheat flour significantly improved (P?<?0.05) dough properties inducing an increase of water absorption (from 55 to 60 %), of stability (from 4 to 31 min),of tenacity (from 83 to 116 mmH2O) , a reduction of extensibility (from 69 to 29 mm), of softening (from 60 to 20 BU), of breakdown (from 34 to 25 BU) and of setback (from 103 to 93 BU) in comparison to the control dough (without fibre). The formulation containing FFC produced loaves that had various colors (crust, 0?<?ΔE*?<?10 and crumb, 0?<?ΔE*?<?20; ΔE* corresponding to color variation), a comparable specific volume (2.7 vs 2.9 cm3/g for control) and a more aerated internal crumb structure compared to the control. During storage of breads at 20 °C, there was no significant difference (P?<?0.05) between enriched and control bread crumb and crust texture profiles.  相似文献

Currently, consumers increasingly demand healthy foods, such as “vegetable drinks” made from nuts and cereals. In this scenario, the potential use of pistachios, grown under conventional and regulated deficit irrigation conditions (hydroSOStainable), to prepare fermented beverages was evaluated. This work addressed three important aspects: (i) water savings, (ii) use of noncommercial products, and (iii) expansion of the offer of vegetable drinks. Two commercial cultures of lactic acid bacteria (MA400 and MY800) and two sugars (glucose and fructose) were tested. Fermented drinks were evaluated by analyzing the following parameters: microbial counts, pH, titratable acidity, CIE (L*, a*, and b*) color, and total fatty acid, volatile and sensory profiles; all parameters were evaluated at 1, 15, and 30 days of cold storage (4 °C). Pistachio-based beverages proved to be excellent substrates for the growth and survival of lactic acid bacteria. The fatty acid profile was not affected by the studied factors. However, the volatile profile was more complex for the treatments conventional-MY800 (80 µg/L) and hydroSOS-MA400 (72 µg/L). HydroSOS beverages fermented with MA400 culture were less sour and had higher intensity of umami and pistachio flavor; however, hydroSOS pistachios fermented with MY800 culture had lower pistachio odor intensity. All tested factors can be considered suitable for the preparation of fermented pistachios-based beverages, considering both technological and quality aspects.  相似文献

Attention has focused on bakery products such as cake which is one of the most common bakery products consumed by people in the world. Legume by‐products, pea pods (PPs) (Pisum sativum L.) and broad bean pods (BBPs) (Vicia faba L.) mediterranean (Tunisian), has been studied for its high dietary fiber content (PP: 43.87 g/100 g; BBP: 53.01 g/100 g). Protein content was also a considerable component for both by‐products. We investigated the effect of substituted of 5%, 10%, 15%, 20%, 25%, and 30% of PP and BBP flours on the sensory and technological properties in cake. Cakes hardness increased whereas L* and a* color values decreased. The overall acceptability rate showed that a maximum of 15% of PP and BBP flours can be added to prepare acceptable quality cakes.  相似文献

The effects of addition of ginger powder (0, 3, 4.5 and 6%) in formulation were examined in order to obtain an antioxidant-enriched bread with good physico chemical and sensorial properties. The rheological properties of doughs were evaluated using dynamic rheological measurements. Physical properties, total phenolics content (TPC- Folin-Ciocalteau method), radical scavenging activity (RSA- DPPH assay) and sensory analysis (hedonic test) of the supplemented bread were determined.The highest TPC (0.48 and 0.71 mg GAE/g DW on crumb and crust respectively) and RSA activity (0.15 and 0.24 μmol DPPH/mg DW ml−1 on crumb and crust respectively) were achieved in the bread having the highest percentage of ginger powder (6%). But this sample showed the worst results regarding the rheological properties indicating that the dough and the bread had a tough structure. Moreover, by sensory evaluation this bread sample was not acceptable.Among the studied samples, bread with 3% of ginger powder showed good rheological characteristics and doubled anti-oxidant content compared to the control bread and the highest sensorial acceptability.  相似文献

The increasing interest in functional and healthy food products has promoted the use of germinated soybean flour in the manufacture of foods for human consumption. Considering the beneficial effects of soy and its germination, farinograph and extensograph were used to study the effect of adding defatted flour of germinated (32 °C, 72 h) or non-germinated soybean—at different dry protein ratios (0, 0.5, 1.0, 1.5%)—to wheat flour on: water absorption (WA), maximum consistency time (MCT), dough stability (S), maximum resistance to extension (R max), and dough extensibility (L). Baking tests (straight-dough procedure) were also performed to evaluate the effect of this addition on bread characteristics: loaf volume, texture (firmness, compression force, resilience), color (L*, a*, b*), crumb–grain structure (cell density, mean cell area, shape factor), and consumer acceptance (sensory analysis). Addition of both kinds of soybean flours increased the values of farinographic parameters (WA, MCT, S), although they did not have significant effects (p > 0.05) on extensographic properties (R max, L). Loaf volume and crumb color were improved as soy flour addition was increased, whereas crust color was not affected (p > 0.05). Texture analysis showed that the addition of soy flour produced breads similar or better than the control, whereas the addition of GSF produced a coarser crumb grain. No detectable differences were found among samples during the sensorial analysis. Germinated soybean flour was better to improve dough breadmaking properties.  相似文献

ABSTRACT: The effects of erythritol on physical and sensory characteristics of chiffon cakes were studied. The results showed that chiffon cakes prepared with 25%, 50%, 75%, and 100% replacement of sucrose with erythritol were lighter in crust and crumb and less sweet in crumbs than those with sucrose. There were no differences in the specific gravity of cake batter, volume, and moisture content between cakes prepared with sucrose or erythritol. Results from sensory evaluation also showed no significant differences in crumb color, moistness, and tenderness for any cakes.  相似文献

A novel methodology “fractal browning indicator” (FBI) is presented, that describes the enzymatic browning kinetic based on the use of irregular color patterns from banana slice images. It uses the fractal Fourier texture image value in a selected area, to calculate a fractal dimension (FD), which represents the complexity of color distribution. During the procedure, colors from digital images were first transformed to L*a*b* space color using a transformation function (quadratic model), in order to derivate three color channels, lightness (L*), redness (a*), and yellowness (b*). In the results, lightness and yellowness parameters decreased during the browning kinetic, when their respective FD values increased, indicating major color distribution complexity in a selected area analyzed during the kinetic. The redness color (a*) did not show any statistical variation. The empirical power law model was suitable to correlate enzymatic browning kinetic data both for FBI and for the traditional method (when an L* mean was used). However, enzymatic browning rates using the FBI method, were between 8.5 and 35 times higher than rates calculated with the traditional method.  相似文献

Yeast extract (YE) is a kind of umami additives used in fermented condiments, it also has special yeasty flavour (YF), which is not widely accepted by some consumers. In this paper, the technology of mixed microbial transformation was applied to eliminate or cover up YF during mixed fermentation. FG10, which is produced by Hubei Angel Yeast Co. Ltd, is a kind of YE that has the distinctive YF and has been applied to the market. It had good sensory evaluation after 6 h with Saccharomycopsis fibuligera and Lactococcus lactis. At 6 h, compared with single fermentation, the number of bacteria of L. lactis was enhanced by 34.28%, and the number of bacteria of S. fibuligera was reduced by 47.93%. The yeasty flavoured substances propionic acid and butyric acid were completely removed. The result of GC-MS showed that acetal, phenyl acetaldehyde, 2,4-dimethylbenzaldehyde, benzaldehyde, isoamyl alcohol, 5-methyl-2-furan methanol, phenylethanol were generated or increased. Furthermore, the amino acids of YE were significantly different after fermentation by different microorganisms (P < 0.05), The flavour compounds and amino acids in YE before and after fermentation had closely correlation (r = 0.94), the consumption of amino acids in mixed fermentation promoted the variety of corresponding flavour compounds, which boosted the formation of free YF YE. In addition, taste substances lactic acid generated 6.27 ± 0.115 g L−1 and nucleotides improved 15.05%, which were beneficial to natural YF free seasoning with YE as raw material.  相似文献

The effects of textural preferences on sensory intensity and hedonic scores assigned by consumer panelists (50 preferred “soft” and 38 “crisp” beans) to green beans (Phaseolus vulgaris L.) of two cultivars cooked by 2 methods were studied. Boiled and 'Strike’beans were rated lighter than steamed and‘Mustang’beans.‘Mustang’beans were scored more acceptable for color, flavor, and overall likability. Soft textural preference panelists liked steamed beans less than boiled beans for texture, flavor, and overall likability. Hedonic scores assigned by panelists of crisp textural preference did not differ by preparation method. Selecting panelists without considering textural preferences may influence hedonic but not intensity scores.  相似文献

In this work maltogenic amylase (MAase) was encapsulated into the mixture of maltodexrin and beeswax (BW) for retarding staling of gluten-free bread. The effects of maltogenic amylase (MAase) concentration (8.2, 45, and 82 mg/ml), maltodextrin with dextrose equivalent (DE) 4–7 (MD) (1, 2.5, and 4%) and, BW (1, 2.5, and 4%) on the encapsulation efficiency (EE) of encapsulated enzyme were optimized using RSM. The optimized formulation was MAase with 8.2 mg/ml, MD 4% and BW 1%, leading to the highest EE (79.35%), thus chosen for subsequent experiments. The prepared particles were 1,190.50 nm with PDI of 0.336 and zeta potential of −8.30 mV. Surface morphologies of produced particles were almost spherical with layered appearance. Batter with this formulation led to higher cross over point in frequency sweep than free enzyme-loaded batter. Lower weight loss, higher volume index, darker crust color, whiter crumb color, more aerated microstructure, less hardness in crumb, and higher sensorial acceptability on the first day and during storage period in the breads containing encapsulated MAase was observed.  相似文献

Effect of selected additives and their combinations on the sensory quality of final cereal products prepared from the mixture of flours (wheat T 650, rye T 930, and spelt) and from wheat flour T 512 was studied. The following sensory parameters were considered: shape (cambering); crust (color, thickness, hardness); crust/crumb (odor, taste); crumb (elasticity, porosity, color, hardness (resistance to bite); adhesiveness (to palate at longer chewing). It was found that sensory parameters increased after the application of the selected combinations of improving additive substances (ascorbic acid, enzymes and emulsifiers) and concentration of the enzyme preparation Lipopan 50 BG had a positive effect on sensory parameters and on the reduction of the applied amount of emulsifiers in the final product.  相似文献
