During childhood and adolescence, eating habits become established which are instrumental in determining eating behavior later in life. Various authors have described the acculturation of the Mapuche people toward Western culture. The objective of this study was to analyze the eating characteristics of indigenous and non-indigenous adolescent girls in the Araucania Region of Chile. A cross-sectional design was used with a probabilistic sample of 281 adolescents comprised of 139 indigenous and 142 non-indigenous girls attending 168 elementary schools. A modified food frequency questionnaire was applied, designed to obtain information about eating habits and consumption of Mapuche foods. The eating schedules are similar in both ethnic groups, with dinner being the meal that is least consumed. Total snack consumption per week has a mean of 7 with an interquartile range (IQR) of 5 to 10 without any differences between ethnic groups; of these snacks, only 2 were healthy (IQR = 1 to 3). The indigenous girls had a higher probability of consumption of native foods including mote (boiled wheat) (OR = 2.00; IC = 0.93-4.29), muday (fermented cereal alcohol) (OR = 3.45; IC = 1.90-6.27), and yuyo (field mustard) (OR = 4.40; IC = 2.06-9.39). The study's conclusion is that the the eating habits and behavior of indigenous adolescents are similar to those of non-indigenous girls, though the former still consume more indigenous foods.  相似文献

The Chilean school population has shown remarkable changes in their eating habits, incorporating high fat content foods to their diet, which could explain the current high obesity rates. A great proportion of these foods uses industrial fats whit high content of saturated fatty acids (SFA) and potentially contains trans fatty acids (TFA) as a result of partial oil hydrogenation or as a natural form in ruminant animals fat. The purpose of this investigation was to determine fatty acid profile, including trans fatty acids, from food consumed by the Metropolitan Region school population. A food consumption survey was applied to 203 Metropolitan Region of Chile school-children, which consisted of questions about food consumption frequency and consumer preferences. Based on the results, ten types of food products were selected. Fat content, fatty acids profile, including trans fatty acid, were determinate by GLC according to the UNE 5509 Norm. Each analysis was carried out in duplicate and three samplings were performed. It was found that a great percentage of the analyzed foods showed low TFA content (<1%). However, some of them presented remarkable saturated fatty acids content, generating a PUFA/SFA ratio with poor fat nutritional quality. The low TFA concentration found in the food may be explained by a decrease in the use of hydrogenated fats, following PAHO/WHO recommendation, which are being applied in Chile.  相似文献

In view of the interest in the role of foodstuffs in improving wellbeing and health, the object of this study is to distinguish consumer typologies in Temuco, La Araucanía Region, Chile, according to their preferences for different functional ingredients, flavouring, colouring and price in yoghurt. A semi-structured survey was applied to 400 supermarket customers. The respondents ordered eight alternative yoghurts according to their preferences, with different functional ingredients (fibre, antioxidants), flavourings (sugar, sweetener), colouring (natural, artificial) and three price options, for a conjoint analysis with fractional factorial design. Variables affecting knowledge of "functional food" were evaluated using a binomial logit model. It was determined by conjoint analysis that in general a preference existed for yoghurt containing fibre, sweetener, natural colouring, and at the lowest price. Three typologies were distinguished by analysis of hierarchical conglomerates: the majority segment (48.8%) displayed a greater preference for fibre; the second (41.7%) also preferred fibre, but gave first priority to artificial colouring and preferred a higher price. The minority (9.5%) was the only segment to prefer antioxidants. The typologies differed significantly in satisfaction with their food-related life, knowledge of the function of fibre and presence of cancer and obesity in some member of the respondent's family. The binomial logit model was significant (P < 0.01), indicating that if the consumer has a job or has had access to information on functional foods, the probability increased of knowledge of what these mean. There was thus majority acceptance of yoghurt enriched with fibre and with added sweetener.  相似文献

Obesity is a multifactorial pathology currently considered one of the main public health problems. Its prevalence is increasing dramatically in the last decades, reaching huge rates in Brazil and many other countries. Regardless of the factors associated with genetic predisposition, this pathology is often associated with abnormal food intake, and also with high consumption of caloric foods and sedentary habits. Thus, obesity is the result of an imbalance between food intake and energy expenditure. One of the greatest research interests in nutrition has currently been the dietetic determinants that may exert an influence on the process of food intake, as well as the role of foods on physiological, physical and chemical factors most related to the processes of satiation and satiety. Based on these aspects, this paper analyzes several research works to gain a better insight of the dietetic factors affecting food intake and body weight regulation.  相似文献

The aim of this work is to identify major food sources and dietary constituents of Senegalese adults. We conducted a cross-sectional study, using a single 24-hour dietary recall interview. Foods were classified into food groups based on similarities in nutrient content or use. Food groups included foods consumed individually, or as part of food mixtures such as stews, soups, or sandwiches. Median consumption (amount/day) of each food was determined and examined by relevant subgroups. Participants were 50 healthy Senegalese men, aged 20-62 years recruited at the Hôpital Général de Grand Yoff in Dakar, Senegal and from Sendou village, a rural area outside Dakar. A total of 90 foods and beverages were identified and classified into 11 groups. Sixty-five percent of foods identified could be classified as meats, grains, or fruits/vegetables. Fruits and vegetables comprised 42% (38/90) of all foods; meats 12% (11/90); and grains 11% (10/90). Sauces (6%, 5/90), sweets (4%, 4/90), and desserts (4%, 4/90) were also reported. The most common fruits/vegetables reported were potato, carrot, mango, and lettuce; commonly reported grains were bread and rice; and commonly reported meats were fish, beef, and ox. There were no differences in reported daily intake of each food by age, ethnicity, education, or residence. Most foods reported were traditional to the Senegalese diet, despite the increasing availability of Western foods in Senegal.  相似文献

Background

Empirically derived food purchase patterns provide information about which combinations of foods were purchased from households. The objective of this study was to identify what kinds of patterns exist, which level of diet quality they represent and which factors are associated with the patterns.

Methods

The study made use of representative German consumption data in which approximately 12 million food purchases from 13,125 households are recorded. In accordance with healthy diet criteria the food purchases were assigned to 18 food groups of the German Food Pyramid. Based on these groups a factor analysis with a principal component technique was applied to identify food patterns. For these patterns nutrient and energy densities were examined. Using regression analysis, associations between pattern scores and socio-economic as well as attitude variables, reflecting personal statements about healthy eating, were analyzed.

Results

In total, three food purchase patterns could be identified: a natural, a processed and a traditional one. The first one was characterized by a higher purchasing of natural foods, the second by an increased purchasing of processed foods and the third by a meat-oriented diet. In each pattern there were specific diet quality criteria that could be improved whereas others were in line with actual dietary guidelines. In addition to socio-demographic factors, attitudes were significantly associated with the purchase patterns.

Conclusions

The findings of this study are interesting from a public health perspective, as it can be assumed that measures focusing on specific aspects of diet quality are more promising than general ones. However, it is a major challenge to identify the population groups with their specific needs of improvement. As the patterns were associated with both socio-economic and attitude variables these grouping criteria could be used to define target groups.

The purpose of the present study was to evaluate the impact of changes in income and retail prices on the consumption of foods by low income groups living in Guatemala. A representative sample of 200 low-income families living in a marginal area of Guatemala City, known as "El Milagro", was studied. Of five surveys conducted, two concerned food demand exclusively. In the first one the food consumption survey used was the 24-hr recall method, and the second survey was related to income expenditures, obtaining weekly information on expenses on foods and in other items. The expenditures were utilized to estimate the elasticity of demand, including foods. Total family expenses were used as an estimation of total income. Analyses of the data were obtained by forming three income groups: families with per capita expenses below the per capita cost of the foods basket; families with per capita expenses within the cost of the food basket, and the cost of a modified food basket (all expenses); families with an income above the modified food basket. The analyzed data clearly confirmed that: a) food expenses increase less as a response to income increases than expenses for other family needs; the income elasticity for foods high in carbohydrates content is lower with respect to food of animal origin and the income elasticity of the demand for rice and wheat bread are higher in comparison to the more basic foods such as beans, maize and maize products, roots and tubers.  相似文献

Changes in household food availability from 1988-1997 obtained in a representative sample of Metropolitan Santiago were assessed; and related to observed changes in the epidemiological profile. We evaluated expenditures in food and beverages from the IV and V Household Expenditure Surveys conducted every 10 years by the National Institute of Statistics to calculate the Consumer Price Index. Food items were similarly grouped and expenditures from both surveys adjusted to concordance by assigning prices according to of food; the units consumed outside and at home were determined. Food expenditures increased, leading to greater food availability in all households and income categories; the increment was largest in the poorest quintiles. Apparent consumption of processed cereals, pastries and baked goods, poultry and pork, processed dairies, beverages and juices, dressings and mayonnaise, pre cooked meals and meals consumed "out of home" increased. Fish, vegetables and fruits increased slightly with a concomitant decrease in legumes. The present dietary pattern is also characterized by a greater availability of animal food products and processed foods; increased energy density, fat and saturated fat energy, sugars and high glycemic index foods; lower in phytochemicals, antioxidants, dietary fiber and omega-3 fatty acids. These changes are probably having a significant impact on the epidemiological and nutritional profile of the country; as manifested by an epidemic increase in obesity and chronic disease burden related to diet and physical inactivity.  相似文献

The purpose of this study was to identify the food habits of pregnant adolescents and their perception about which, of her cultural concepts, have higher influence. 54 subjects between 12 and 19 years old from Guadalajara City were included and socioeconomic, dietetic data, as food frequency consumption and cultural concepts about feeding were also explored. Chi square was used for identifying association between variables. The fat intake was lower in late vs. Early and middle stage of adolescence (57 vs. 71 g/d, p = 0.05). The iron, calcium and zinc intake was also deficient in the early/middle stage; meanwhile, the folic acid consumption was very low in the late stage of adolescence. Corn tortillas were the most consumed cereal and food (93-96%); junk food and sodas (62 and 55%) prevailed in the early/middle stage. About local costumes, "tacos", "pozole" and burgers were the most referred (74.1%). They also mentioned that fat (36.7%), junk food (30%), chili (26.7%), sodas (23.3%), processed meals (26.7%) and salt (10%) were harmful. They also believed that vegetables (77%), fruits (60 %), milk (21%), broths (17%), and meat (12.5%) were beneficial; and, 96% considered that chicken and bean broths were nutritious (myth). There were some prohibited foods (taboos) during pregnancy: chili (48%), junk food (20%), and salt (16%). Prejudices were more common among later adolescents (60.9%) (p = 0.03). The erratic food habits and the conceptual confusion of these adolescents cause a low intake of nutrients and place them in a nutritional risk.  相似文献

The objective of this study was to explore demographic and economic characteristics associated with household food security of 2,784 low-income households with pre-school aged children receiving food supplements from the Colombian Plan for Improving Food and Nutrition in Antioquia - MANA (Mejoramiento Alimentario y Nutricional de Antioquia) in the Department of Antioquia, Colombia. Included in the study was a 12-item household food security survey was collected from a cross-sectional, stratified random sample of MANA participants in which households were characterized as food secure, mildly food insecure, moderately food insecure, and severely food insecure. It was hypothesized that household food security status would be strongly associated with demographic characteristics, food expenditure variables, and food supplement consumption by children in MANA. Food insecure households were characterized by more members, older parents, and lower income (p < 0.0001). Rural residence and female head of households had higher rates of food insecurity (p < 0.01). Food insecure households had the lowest monthly expenditures food (p < 0.0001). Severely food insecure households saved the highest percentage of per capita food expenditure from consuming MANA supplements (p < 0.0001), similarly, MANA food supplement intakes were greatest in households reporting the most food insecurity (p < 0.001). The results of this study are important to describe characteristics of the population benefiting from the MANA nutrition intervention by their unique level of household food security status.  相似文献

The aim of this study was to estimate household measure diet quality, using a dietary diversity score, and its associated demographic and socio-economic factors. One hundred fifty three households representatives of the Capital District and Miranda State belonging of seventy seven day care children centers were studied. To gather data on dietary diversity, we used the food register method, collecting data on household food availability during a month. Dietary diversity at day care centers of the Capital District was 46 foods differed from that found, in Miranda State was 39 foods (p = 0.005). Likewise it differed in beneficiaries' households of the Capital District was 33 foods compared to those in Miranda State was 25 foods (p = 0.000). There were 13 and 14 foods more between day care centers and the households in both states. State (Capital District or Miranda), money spent on food per person, households size and social level were variables that explained 28.9% of dietary diversity variation in households studied. Households in the Capital District had less members, spent more money on food, and a greater proportion were non-poor compared to those in Miranda. These factors could partially explain differences in diet quality among households in the two States. Whatever perspective studied indicates that the dietary diversity had a statistically significant difference between day care centers and households in states studied. Miranda State was more deficiency than Capital District. Higher dietary diversity reflects a better quality diet at day care centers compared to households studied.  相似文献

In 2004 the National Household Survey (Pesquisa Nacional por Amostras de Domicilios-PNAD) estimated the prevalence of food and nutrition insecurity in Brazil. However, PNAD data cannot be disaggregated at the municipal level. The objective of this study was to build a statistical model to predict severe food insecurity for Brazilian municipalities based on the PNAD dataset. Exclusion criteria were: incomplete food security data (19.30%); informants younger than 18 years old (0.07%); collective households (0.05%); households headed by indigenous persons (0.19%). The modeling was carried out in three stages, beginning with the selection of variables related to food insecurity using univariate logistic regression. The variables chosen to construct the municipal estimates were selected from those included in PNAD as well as the 2000 Census. Multivariate logistic regression was then initiated, removing the non-significant variables with odds ratios adjusted by multiple logistic regression. The Wald Test was applied to check the significance of the coefficients in the logistic equation. The final model included the variables: per capita income; years of schooling; race and gender of the household head; urban or rural residence; access to public water supply; presence of children; total number of household inhabitants and state of residence. The adequacy of the model was tested using the Hosmer-Lemeshow test (p = 0.561) and ROC curve (area = 0.823). Tests indicated that the model has strong predictive power and can be used to determine household food insecurity in Brazilian municipalities, suggesting that similar predictive models may be useful tools in other Latin American countries.  相似文献

Legal specifications in India are issued by the Central Committee for Food Standards and are limited in number. Specifications issued by the Indian Standards Institution (ISI), which are discussed in this paper, are optional but prestigious and much more numerous. Foods based on milk proteins emphasize minimal protein damage, estimated by solubility measurement, and high sanitary quality. The latter is common to all other ISI food specifications as well. Edible oilseed proteins for use as food ingredients are formulated in various types or grades and carry such criteria as protein level, fiber content, and appropriate antinutrient level. Proteins from various sources may enter products such as protein mixes, weaning and toddler foods, biscuits, “vegetable” milks, and offspring of the latter like yogurt, ice cream, and reconstitutable powders. In certain products, protein level may be varied inversely with protein quality. To define the latter, the protein efficiency ratio has been adopted and a working methodology for India evolved through collaborative experimentation. The level of any added vitamins and minerals in these protein foods is such that an expected daily consumption of the food would carry 1/3 the Indian recommended daily allowance. Concentrate protein foods stand in a class apart in their very high levels of the nutrients present. Enriched staples like wheat flours could carry proteins, vitamins, and minerals or omit proteins if found functionally disadvantageous. Codes of practice are being developed by ISI in related fields, such as food advertising, in which one clause enjoins that sound established foods or food practices should not be denigrated; food labeling, in which the problem is to ensure a label meaningful to consumers; and date marking, which could hinge on certain and expected shelf life of the food.  相似文献

The diet should, ideally, provide adequate amounts of all nutrients. The traditional foods of many Latin American countries, however, must be fortified or enriched with certain nutrients to satisfy the needs of the whole population. These measures should be considered as temporary, until improvements are achieved in dietary diversification, economic conditions, nutrition education and food processing and storage. Restoration of nutrients lost during cooking or processing and equalization of new foods with the nutrients present in traditional foods, are also important. Conditions for a successful program of fortification or enrichment include a widespread and regular intake of the dietary vehicle, high bioavailability of the added nutrient, low costs of the nutrient and the fortified vehicle, central processing, organoleptic characteristics that ensure acceptability, stability of the product during storage and cooking, no risk of toxicity, and adequate control during the process, distribution, marketing and consumption of the fortified vehicle or food. Control measures must be supported by legal sanctions to those who do not comply with the norms for obligatory fortification or enrichment. Control measures must also identify the necessary modifications due to changes in dietary habits or public health interventions. In Latin America there are fortification and enrichment programs with various nutrients in which local diets are scarce. Many Latin American scientists have been pioneers in this field.  相似文献

Abstract

In the recent years, extensive research is under way about the use of natural bioactive compounds and production of functional foods to increase community health and reduce the risk of various food-related diseases. Among different bioactive compounds, the health benefits of peptides and protein hydrolysates make these compounds as nutraceutical food-additives in the formulation of functional foods. But due to physicochemical instability, hygroscopicity and bitterness, direct use of the bioactive peptides in food formulations is difficult. Encapsulation of these compounds in different carriers is one of the most common techniques to overcome the mentioned disadvantages. Among different techniques of encapsulation, spray-drying is the most economical and flexible process for reduction of hygroscopicity, masking of unpleasant-flavors and increasing the stability of bioactive peptides. In this study, the health benefits of peptides and hydrolysates, their disadvantages and applications of microencapsulation by spray-drying technique have been discussed. Also, the most recent results concerning the effect of encapsulation process with different carriers on physicochemical properties, physical and antioxidant stability, masking of bitterness and morphological characteristics of spray-dried powders loaded with bioactive peptides have been investigated.  相似文献

To better understand some of the mechanisms that control selection of novel foods differing in postingestive consequences, we offered goats current season's (CSG) and older (OG) growth twigs from the shrub blackbrush (Coleogyne ramosissima). CSG is higher than OG in nitrogen (1.04% v. 0.74%) and it is more digestible in vitro in goat rumen fluid (48% v. 38%). Nevertheless, goats acquire a preference for OG because CSG contains much higher levels of a condensed tannin that causes a learned food aversion. When CSG and OG were offered to goat naive to blackbrush, the goats did not choose either OG or CSG exclusively, but when they finally (1) ate more CSG than OG within a meal (averages of 44 g and 16 g, respectively) and (2) ate enough CSG within the meal to acquire an aversion (average of 44 g), they ingested less CSG than OG from then onward. Accordingly, the change in food selection resulting from postingestive feedback was influenced by the amount of each food ingested within a meal. This was further shown when we varied the amounts of CSG and OG that goats ingested within a meal, and then gave them by gavage the toxin lithium chloride (LiCl). They subsequently ate less of the food eaten in the greatest amount, regardless of whether it was CSG or OG. The salience of the flavor (i.e., taste and odor) of CSG and OG also played a role in the acquired aversion to CSG. Salience evidently was due to a flavor common to both OG and CSG that was more concentrated in CSG. We conclude that the relative amounts of different foods ingested within a meal, and the salience of the flavors of those foods, are both important variables that cause goats to distinguish between novel foods that differ in postingestive consequences.  相似文献

Transition metal promoted oxidative degradation reactions impact quality, shelf‐life, and nutritional content of many packaged foods. When trace metals are present in packaged foods, they can initiate degradation of nutritional compounds such as unsaturated fatty acids, carotenoids, antioxidants, phytosterols, and many vitamins. These reactions occur at metal concentrations naturally occurring in foods (often in the low parts per billion range) therefore complete metal removal is not a practical solution to inhibit these reactions. Chelators such as EDTA can be added to inhibit metal‐promoted oxidation, however there is significant consumer and industry demand to eliminate EDTA from product formulations. Other natural chelators such as citric acid are ineffective in many foods and in some cases can actually increase oxidation rates by increasing metal solubility. An alternate approached to control transition metal reactivity is to utilize active packaging technologies. However, current approaches to antioxidant active packaging can impact packaging film mechanical properties and often exhibit low antioxidant activity. This review article surveys and critically reviews advances in the control of lipid oxidation, paying particular attention to novel advances in both food product formulation (e. g. additives, food microstructure) as well as food packaging. We introduce a new concept of active packaging in which metal ion chelation by non‐migratory active packaging materials may enable removal of synthetic food additives from product formulations while maintaining product quality and shelf‐life.  相似文献

ABSTRACT: BACKGROUND: Food Frequency Questionnaires (FFQs) are commonly used in epidemiologic studies to assess long-term nutritional exposure. Because of wide variations in dietary habits in different countries, a FFQ must be developed to suit the specific population. Sri Lanka is undergoing nutritional transition and diet-related chronic diseases are emerging as an important health problem. Currently, no FFQ has been developed for Sri Lankan adults. In this study, we developed a FFQ to assess the regular dietary intake of Sri Lankan adults. METHODS: A nationally representative sample of 600 adults was selected by a multi-stage random cluster sampling technique and dietary intake was assessed by random 24-h dietary recall. Nutrient analysis of the FFQ required the selection of foods, development of recipes and application of these to cooked foods to develop a nutrient database. We constructed a comprehensive food list with the units of measurement. A stepwise regression method was used to identify foods contributing to a cumulative 90% of variance to total energy and macronutrients. In addition, a series of photographs were included. RESULTS: We obtained dietary data from 482 participants and 312 different food items were recorded. Nutritionists grouped similar food items which resulted in a total of 178 items. After performing step-wise multiple regression, 93 foods explained 90% of the variance for total energy intake, carbohydrates, protein, total fat and dietary fibre. Finally, 90 food items and 12 photographs were selected. CONCLUSION: We developed a FFQ and the related nutrient composition database for Sri Lankan adults. Culturally specific dietary tools are central to capturing the role of diet in risk for chronic disease in Sri Lanka. The next step will involve the verification of FFQ reproducibility and validity.  相似文献
