在人工养殖对虾过程中,水体中的微囊藻发展到一定数量将对对虾的生长构成危害。采取必要的措施可有效地抑制这种危害的发生。本文在调查研究的基础上,归纳总结出几项简单易行的预防措施。(1)采用溢流法排除微囊藻。(2)利用自然风、使用药物集中杀灭微囊藻。(3)调整水面与池埝的高差,利用波浪防止微囊藻平覆水面。(4)控制养殖密度,保证最低的溶解氧含量。 相似文献

本文介绍了一种可供准确测定白酒中挥发性含硫化合物的气相色谱法。酒样经动态顶空进样浓缩后直接注入GC,组分依靠FPD检测,GC/MS定性,外标法定量,采用此法测定了白酒中的二甲基硫、二甲基二硫与二甲基三硫的含量。回收试验的结果表明方法准确可靠。文中表列了各种有代表性的名白酒的测定结果。 相似文献

通过响应面法优化出HS-SPME-GC-MS法检测美味牛肝菌中挥发性风味物质的方法,并对恒温干燥、真空干燥及真空冷冻干燥得到的美味牛肝菌伞部、柄部干制品中挥发性风味物质进行比较分析。结果表明,影响美味牛肝菌挥发性风味物质萃取效果的因素主次顺序依次为萃取时间>萃取温度>平衡时间;在萃取温度79℃、萃取时间28 min、平衡时间23 min的最佳萃取条件下,检测出挥发性风味物质共31种。通过对不同干燥方法下美味牛肝菌伞部及柄部挥发性风味物质的检测分析,共鉴定出挥发性风味物质51种,其中醇类10种,醛类13种,酮类13种,酸类1种,酯类5种,含硫、含氮及杂环类化合物8种,烯类1种。真空冷冻干燥后美味牛肝菌伞部及柄部的总挥发性风味物质、八碳化合物及含硫化合物的种类及峰面积均高于恒温干燥及真空干燥方式。该研究结果为美味牛肝菌风味品质的调控及精深加工提供了一定的理论依据。 相似文献

Volatile flavor compounds were isolated from 70 kg of freshly roasted Florida Runner peanuts by a specially designed apparatus. The isolated volatile flavor compounds were subjected to extensive gas chromatographic fractionation and the pure fractions obtained were identified by infrared and mass spectrometry. A total of 131 compounds was identified. The following compounds are reported for the first time as flavor components of roasted peanuts: five lactones, incluing γ-crotolactone, 3-methyl-γ-crotolactone and 5-hydroxy-4-nonenoic acid, lactone; four pyrazines, three pyrroles; three pyridines, 13 sulfides, including three monosulfides, six disulfides and four trisulfides; seven thiazoles, two thiophenes, five furanoids, including 2-methyL3(2H)furanone; five oxazoles, three oxazolines, including 2-methyl-3-oxazoline; 12 hydrocarbons, one alcohol, one ketone, two acids, two esters, 2-acetoxy-2-butene, and maltol. 相似文献

The volatile flavor compounds in glassine packages were characterized using headspace concentration technique and GC/MS. The major compounds identified were 2,2-dimethyl-1,3-propanediol, 3,3-di-methyl-4-hydroxybutanal, and 2,2-dimethyl-1,3-propanediol diacetate. Compounds representing hydrocarbons, alcohols, and phthalates were also identified. The majority of these compounds could be attributed to residues from the lacquer applied to the glassine paper as a curable coating. 相似文献

从白酒窖泥中分离得到11株乳酸菌,经16S rDNA基因序列同源性分析,鉴定为1株短乳杆菌、1株鼠李糖乳杆菌、2株干酪乳杆菌和7株铅黄肠球菌。分析了11株菌MRS培养基发酵产乳酸性能,结果表明:乳酸产量与菌群生长呈正相关,鼠李糖乳杆菌L9、干酪乳杆菌L10与L11发酵液乳酸含量较高,分别为15.74、15.58、14.74 g/L。4株代表菌相同条件下发酵高粱培养液产挥发性风味组分,共有物质13种,包含了白酒中重要香气成分:乙酸、己酸、乙酸苯乙酯和苯乙醇,且乙酸、己酸相对含量较高。各菌产可挥发性组分差异明显,相对含量较高的化合物种类为:短乳杆菌L5产烷烃类化合物(27.91%),铅黄肠球菌L8产醇类化合物(43.14%),鼠李糖乳杆菌L9产酯类(7.35%)、酮类(3.61%)和吡嗪类(3.3%)化合物,干酪乳杆菌L11产酸类(27.98%)和芳香类(5.96%)化合物。仅有短乳杆菌L5产四甲基吡嗪,短乳杆菌L5和铅黄肠球菌L8可明显产乙醇,鼠李糖乳杆菌L9和干酪乳杆菌L11产3-羟基-2-丁酮。这些物质对白酒风味和口感有重要影响。研究显示,窖泥中各种乳酸菌特征不一,对白酒酿造有不同影响。本研究旨在为进一步挖掘白酒酿造功能微生物、拓展乳酸菌的应用提供理论依据。 相似文献

以真空和散装2 种包装方式、秋季和冬季生产的重庆城口香肠为对象,采用顶空固相微萃取和气相色谱-质谱联用分析和鉴定了重庆城口香肠的挥发性风味成分。结果表明:鉴定出重庆城口香肠中各类挥发性化合物共105 种。其中烯烃类27 种、醇类22 种、芳香类16 种、烷烃类12 种、酯类11 种、醛类7 种、含氮化合物3 种、酸类2 种、酮类2 种、杂环类1 种、炔烃类1 种、呋喃类1 种。散装香肠中对风味有着重要贡献的挥发性化合物含量多于真空包装香肠。冬季生产的重庆城口香肠挥发性风味较秋季生产的香肠浓郁。确定出重庆城口香肠的特征风味物质为烯烃类、醛类、酯类和醇类。烯烃类多来源于生产重庆城口香肠时添加的香辛料,呈现出重庆城口香肠所特有的麻辣;而其他的特征风味主要由肉中发生的生物化学反应而产生。 相似文献

The volatile components of cantaloupe pericarp were analyzed during ripening by gas-liquid chromatography-mass spectrometry. Thirty-two compounds were identified from concentrates prepared by steam distillation-solvent extraction of the volatiles. Eight of the constituents including ethyl (methylthio) acetate, (Z)-6-nonenyl acetate, (Z, Z)-3,6-nonadienyl acetate, benzyl propionate, benzyl alcohol, a sesquiterpene hydrocarbon, cinnamyl acetate and an isomer of 3,4-dimethoxyacetophenone have not been identified previously. Headspace analysis of cantaloupe samples at six stages of maturity showed increases in total ethyl and acetate esters, acetaldehyde, ethyl acetate, and ethanol with maturation. Levels of these compounds remained low and relatively constant until the breaker stage and thereafter increased rapidly until the fruit was fully mature. 相似文献

The volatile flavor constituents of defatted soy flour were isolated by a specially designed apparatus. The isolated volatiles were fractionated by gas chromatography. The fractions with characteristic beany, grassy, and green odors were identified by infrared and mass spectrometry. A total of 25 compounds was identified, including nine alcohols, six aldehydes, nine ketones, and 2-pentyl furan. Among the identified compounds, 2-pentyl furan and ethyl vinyl ketone are probably the key compounds for the beany and grassy odors of the soy flour. All the compounds identified in this study can be postulated as autoxidative decomposition products of soy lipids. Therefore, the presence of these compounds in soy flour might be due to the incomplete removal of lipids in soy flour. 相似文献

采用同时蒸馏萃取-气相色谱-质谱联用分析技术,对野生和养殖长吻鮠肌肉挥发性风味成分进行提取、鉴定、分析。结果表明,从野生和养殖长吻鮠肌肉中分别检测出70、60 种挥发性成分,主要包括醛、醇、酮、烃、酸、酯类等物质,其中烃、醛、醇类物质含量较高,野生和养殖长吻鮠肌肉中含量分别为1 555.74、693.46、380.38 ng/g和3 270.53、348.8、104.11 ng/g;野生和养殖长吻鮠均表现出鱼腥臭、脂香、草味,其中对风味贡献较大的是挥发性羰基化合物和醇类物质;此外,酯类及从环境中蓄积的苯、萘等化合物也会对鱼肉香味起到协同或累加作用。综合比较,野生长吻鮠腥味特征高于养殖长吻鮠。 相似文献
