Suitability of Plastic Films for Modified Atmosphere Packaging of Fruits and Vegetables 总被引:11,自引:0,他引:11
Suitability of plastic films in standard configurations to maintain modified atmospheres was evaluated for common fruits and vegetables. Most films did not result in optimal O2 and CO2 atmospheres, especially when produce had high respiration. Produce with low and medium respiration could be matched with films considering O2 permeability requirements alone. MA packaging systems designed to produce optimal oxygen at suitable temperatures could have complications from transient temperature increases during storage and/or transportation. Respiration rates of fruits and vegetables increase more with temperature than do gas permeabilities of films. Higher than optimum temperatures could cause anoxia and seriously damage produce. More permeable gas pathways and temperature compensation to equalize Q10 values are needed for MA packaging systems to timction effectively. 相似文献

Innovations in food packaging systems will help meet the evolving needs of the market, such as consumer preference for “healthy” and high‐quality food products and reduction of the negative environmental impacts of food packaging. Emerging concepts of active and intelligent packaging technologies provide numerous innovative solutions for prolonging shelf‐life and improving the quality and safety of food products. There are also new approaches to improving the passive characteristics of food packaging, such as mechanical strength, barrier performance, and thermal stability. The development of sustainable or green packaging has the potential to reduce the environmental impacts of food packaging through the use of edible or biodegradable materials, plant extracts, and nanomaterials. Active, intelligent, and green packaging technologies can work synergistically to yield a multipurpose food‐packaging system with no negative interactions between components, and this aim can be seen as the ultimate future goal for food packaging technology. This article reviews the principles of food packaging and recent developments in different types of food packaging technologies. Global patents and future research trends are also discussed. 相似文献

ABSTRACT: Market increase efforts for tropical fruits have been previously limited by short shelf life. A modified atmosphere packaging (MAP) system for pineapple and mango was developed to increase shelf life of the fruits. Sample preparation consisted of hand-peeling, dicing, blanching, dipping in ascorbic acid and packaging. The treatments were: gas mixture (4% O2 , 10% CO2 and 86% N2); vacuum packaging; 100% oxygen, and control. Microbial growth, texture, and color were significantly (P < 0.005) different between the gas and other treatments. The gas mixture treatment achieved the longest shelf life. The sensory analysis showed slight difference between fresh and MAP mango and no difference between fresh and MAP pineapple. MAP could be used as a technology to extend the shelf life of mango and pineapple. 相似文献

Edible coatings are an environmentally friendly technology that is applied on many products to control moisture transfer, gas exchange or oxidation processes. Edible coatings can provide an additional protective coating to produce and can also give the same effect as modified atmosphere storage in modifying internal gas composition. One major advantage of using edible films and coatings is that several active ingredients can be incorporated into the polymer matrix and consumed with the food, thus enhancing safety or even nutritional and sensory attributes. But, in some cases, edible coatings were not successful. The success of edible coatings for fresh products totally depends on the control of internal gas composition. Quality criteria for fruits and vegetables coated with edible films must be determined carefully and the quality parameters must be monitored throughout the storage period. Color change, firmness loss, ethanol fermentation, decay ratio and weight loss of edible film coated fruits need to be monitored. This review discusses the use of different edible coatings (polysaccharides, proteins, lipids and composite) as carriers of functional ingredients on fresh fruits and vegetables to maximize their quality and shelf life. This also includes the recent advances in the incorporation of antimicrobials, texture enhancers and nutraceuticals to improve quality and functionality of fresh-cut fruits. The aim of this study was to evaluate the microbiological quality and safety of fresh produce at retail level in Korea in order to periodically update information and establish available risks associated with consumption of fresh fruits and vegetables. The samples from different markets located in 3 provinces of South Korea were collected. The protocol in the Korean Food Standards Codex was applied and generic Escherichia coli, coliforms, aerobic mesophilic bacteria (AMB), and yeast and mold (YM) in 360 packaged and unpackaged fresh fruits and vegetables were analyzed. Presence of pathogens was examined using real‐time polymerase chain reaction (q‐PCR) after enrichment of samples. For all, the microbial counts ranged from 1.7 to 10.6 log cfu/g for AMB, 2.2 to 7.9 log cfu/g for coliforms, and 5.5 to 7.9 log cfu/g for YM. Three lettuce samples were contaminated by E. coli with a bacterial load ranging from 2 to 4 log cfu/g. Salmonella spp. were not detected in any fresh produce. Listeria monocytogenes, E. coli O157:H7, and Staphylococcus aureus were found in 1 (0.6%), 3 (0.8%), and 5 (1.4%) fresh produce samples, respectively. Bacillus cereus (50.3%) and Clostridium perfringens (13.3%) had the highest prevalence. These results indicate the need for employing strict control measures and developing preventive strategies to improve the quality and safety of fresh produce in Korea. 相似文献

Preservation properties of soy protein isolate (SPI)/nano‐SiOx composite coatings to apple fruits were investigated. The sodium dodecyl sulfonate‐modified nano‐SiOx (SNS) particles were prepared by the ultrasonic method and the counter‐ion activation method, which products were designated as USNS and CSNS, respectively. The incorporation of CSNS particles was better than USNS to improve the preservation quality of the SPI film. The best conditions for the synthesis of the composite film were as follows: 10% SPI concentration, 0.3% nano‐SiOx dosage and coating time of 60 s. Under these conditions, the climacteric peak of apples was delayed to the fifth week. The apples also had better physiological indices than the control group. Nano‐SiOx particles were inlaid and evenly dispersed into the SPI film coatings. This work provides a simple CaCl2 pre‐activation method to produce SPI film coatings with good dispersion of nano‐SiOx particles for further preservation application of fresh fruits. 相似文献
