The combined effect of blade tenderization (T, NT) and tumbling time (0, 2, 16 h) on quality characteristics of cooked beef roasts processed with 20 or 40% injection level was investigated. Properties of the beef roasts were determined by measuring processing and textural characteristics (shear force, texture profile analysis). Extended tumbling (to 16 h) favorably affected hydration properties and thermal stability, yielding lower cooking loss and purge and higher WHC for beef roasts. It also decreased shear force and hardness of beef samples by 50–60%, but was unable to increase cohesiveness. Blade tenderization prior to injection generally was found to be beneficial for textural characteristics, tended to improve cook yield, but did not influence other hydration properties. An interaction between tenderization and tumbling was observed for shear force. Blade tenderization decreased shear values by 15–20% for roasts tumbled for 0 or 2 h, but did not improve tenderness with extended tumbling.  相似文献

Ten polysaccharide gums at two levels (0.5 and 1.0%) were individually incorporated into algin/calcium (AC) and salt/phosphate (SP) structured beef rolls (<6% fat) prepared with 15 and 30% added water. Cook yield, pH, bind and textural properties were evaluated. Each gum had specific effects on properties of beef rolls. For example, kappa-carrageenan improved (P<0.001) cook yields and maintained or improved bind and texture of raw and cooked samples of both meat binding systems. Cook yields of AC products were improved with gellan gum, while yields of SP products were improved with iotacarrageenan. Other gums (xanthan, guar, pectin, carboxymethyl cellulose) improved water holding (cook yields) but had detrimental effects on product texture.  相似文献

Composition, textural, viscoelastic, hydration, colour, and sensory attributes of regular and low fat pork/beef frankfurters with and without cellulose gums (carboxymethyl cellulose (CMC) and two types of microcrystalline cellulose (MCC-I and II)) were investigated. Fat was replaced with water in the low fat products. Moisture loss during cooking was reduced in low fat products from 10 to 6% because of the addition of CMC; however, both MCC increased moisture loss by 12–15%. CMC addition also increased the amount of free water. The high fat product was lighter (higher 'L') than the reduced fat frankfurters; gums did not appreciably change the colour. The viscoelastic properties (relaxation time, elastic moduli) were unaffected by the changes in fat level. Product hardness, brittleness, gumminess and chewiness increased with the decrease in fat level. MCC-II improved the textural properties of the low fat product to those of the high fat product. Sensory panel results indicated a decrease in tenderness with low fat and this was not improved by MCC-II. Overall, acceptability scores indicated that all the products (high and low fat) were acceptable.  相似文献

Textural and physicochemical characteristics of selected hydrocolloids incorporated into low-fat, precooked, beef patties were investigated. Patties with an alginate/carrageenan combination had higher yields and percent moisture but lower shear force values than those of alginate or carrageenan treatments within the same fat level. Alginate appeared to improve texture slightly more than carrageenan, but carrageenan tended to release more free water after cooking and reheating. Patties with 10% fat were generally lower in shear value, cooking yield and percentage free water released as compared to their 5% fat counterparts with the same added ingredient. Low-fat, precooked, ground beef patties containing alginate/carrageenan combinations were comparable to regular beef patties (20% fat control) regarding yields and textural properties.  相似文献

Restructured beef rolls formulated with 1% NaCl (controls) or with 1% NaCl plus 0.07% NaOH or 0.375% sodium tripolyphosphate (STPP) had different (p < 0.05) relative bind strength and cooked yield, as follows: STPP > NaOH > controls. Percent cooked yield was inversely affected (p < 0.05) by added water level (5 > 10 > 20%). Bind values were lower (p < 0.05) in rolls with 20% added water. NaOH and STPP rolls had higher pH (p < 0.05) than controls (6.28, 6.22, and 6.07, respectively). Panel cohesiveness, juiciness, and acceptability scores were also generally higher (p < 0.05) for NaOH and STPP rolls, compared to controls. There was a high correlation (0.93) between panel cohesiveness scores and instrumental bind values. At 20% added water, STPP rolls were preferred, but at 10% added water, STPP and NaOH rolls were similar in overall acceptability. Thus, if added water level is not too high, NaOH alone or perhaps with other binding agents may be an alternative to phosphates in cooked beef rolls.  相似文献

Structured lean beef rolls (4–5% fat), formulated with 33% added water, 1% sodium chloride and 0.35% sodium tripolyphosphate and cooked to 63°, 73° and 83°, had low cook yields and poor texture and bind. Kappa-carrageen an (KC) added at 0.5–1% and NaCl at 2–3% increased cook yield and improved textural properties (bind, force to fracture, hardness). Rolls with 1.0% KC and 3% NaCl had the highest cook yield (154% meat weight basis) and the highest values for force to fracture and hardness. Cook yield decreased and hardness increased with increased cooking temperature. Effects of KC on yield and texture were most pronounced at the lowest NaCl level (1%) and the highest temperature (83°). KC also reduced purge of vacuum-packaged slices during refrigerated storage.  相似文献

The combined influence of κ-carrageenan (κ-CGN, 0.5%) and egg albumin (EA, 2%) on quality characteristics of beef gels processed without or with 0.5% microbial transglutaminase (MTG) was investigated. Beef gel properties were determined by measuring textural, hydration and colour characteristics. κ-Carrageenan favourably affected hydration properties and thermal stability, yielding lower cooking loss, purge and expressible moisture. It also increased hardness and fracturability of beef gels, but was unable to improve springiness or cohesiveness. Egg albumin either alone or in combination with MTG generally has been found to be inferior to κ-carrageenan for functionality in comminuted meat systems. Addition of EA produced an increase in lightness and yellowness, and a decrease in redness of beef gels, while the presence of κ-carrageenan resulted in lower L(?) and b(?), and higher a(?) values. No significant influence of MTG on gel colour parameters was observed.  相似文献

The effects of different proportions (0, 5, 10, 15%) of added walnuts on the physicochemical and sensory characteristics of restructured beef steak were evaluated. The addition of 10 and 15% walnut reduced (P<0.05) cooking loss. Increasing proportions of walnut in the beef steak increased (P<0.05) water binding and reduced (P<0.05) fat binding properties. The addition of walnut did not affect (P>0.05) textural properties in uncooked restructured beef steak, but in cooked products Kramer shear force and bind strength were reduced (P<0.05) when 10% or more of walnut was added. Product morphology characteristics suggest that walnut interferes with the formation of protein network structures. Restructured steaks made with added walnut presented acceptable sensory properties. Incorporation of nuts in meat products can be use to confer potential heart-healthy benefits (Spanish Patent Application 200300367).  相似文献

Effects of salt/phosphate injection level (112% or 125% pump), salt level (0.5% or 1.5% salt), and freezing/thawing on hydration characteristics, quality, and consumer acceptance of beef semitendinosus were investigated. All enhancement treatments decreased shear force by 25–35%, but negatively affected colour. Increased salt concentration yielded lower purge and cooking losses, and higher water holding capacity. The higher injection level reduced water binding properties, however, the loss in functionality with higher water addition was overcome with increased salt content. Freezing and subsequent thawing was generally detrimental to colour and water binding properties and tended to increase shear force. Freezing and subsequent thawing did not affect fluid release in steaks held for 1 day before analysis, but resulted in decreased water retention in samples held for 7 days. Holding vacuum packaged steaks for 7 days generally increased package purge and negatively affected colour parameters, although water binding characteristics were improved. Consumer panel results demonstrated a negative effect on juiciness and tenderness where meat subject to low salt/high injection was frozen then thawed – the low salt level was insufficient to maintain any positive effect of injection treatment. In general, salt/phosphate injection improved product acceptability and increased willingness to purchase.  相似文献

Chemical, physical and sensory aspects of quality were compared on encased rolls (1kg) prepared from single muscle beef (biceps femoris) cooked in a steam oven (80°C) or by radio frequency (RF) heating (500W, 27.12MHz) under recirculating water at 80°C. The RF protocol reduced cooking times to 23 and 31% of steam cooking times, respectively, in non-injected meat (PG1) and in rolls prepared with curing brines possessing similar dielectric properties (PG2-4). Compared to steam heating, cooking yields were significantly higher (P<0.05) and instrumental texture measurements related to toughness significantly lower (P<0.05) for RF cooked PG1 rolls and for meat injected with brines containing water binding dielectrically inactive additives (PG4) but not for brined rolls lacking the latter ingredients (PG2 and PG3). Participants in a 50 member untrained sensory panel were unable to detect texture differences which had been indicated by instrumental analysis for PG1 and PG4.  相似文献

The effect of sunflower head pith on the functional properties of emulsions was studied by using a model system. Oil/water (O/W) model emulsion systems were prepared from fresh and frozen beef by the addition of the pith at five concentrations. Emulsion capacity (EC), stability (ES), viscosity (EV), colour and flow properties of the prepared model system emulsions were analyzed. The pith addition increased the EC and ES and the highest EC and ES values were reached when 5% of pith added; however, further increase in the pith concentration caused an inverse trend in these values. Fresh beef emulsions had higher EC and ES values than did frozen beef emulsions. One percent pith concentration was the critic level for the EV values of fresh beef emulsions. EV values of the emulsions reached a maximum level at 5% pith level, followed by a decrease at 7% pit level.  相似文献

Three studies were conducted to determine the effects of blade tenderization (BT), fungal protease, ficin and papain on sensory ratings, textural properties and frozen storage life of restructured steaks from beef bullock chuck. Neither blade tenderizing of chuck muscles prior to incorporating it into restructured steaks nor the use of 0.05% or 0.10% fungal protease had an effect on the amount of connective tissue or textural properties of the cooked product. The addition of 0.10% fungal protease to restructured steaks increased the frozen storage life of the restructured steaks from 82 days (0%) to 149 days and over 157 days for 0.05%. The addition of ficin and papain had a detrimental effect on texture, flavor and overall satisfaction ratings. The methods tested in the present study are not suitable treatments for reducing the amount of detectable connective tissue in restructured steaks from beef bullock chucks.  相似文献

In this study, the changes during storage in the physicochemical, textural and sensory properties of nonfat yoghurts fortified with whey proteins, namely whey protein concentrates (WPC), whey protein isolates and whey protein hydrolysates, were investigated. Enrichment of nonfat yoghurt with the whey protein additives (1% w/v) had a noticeable effect on pH, titratable acidity, syneresis, water‐holding capacity, protein contents and colour values on the 14th day of storage (< 0.01). The addition of whey proteins to the yoghurt milk led to increases in the hardness, cohesiveness and elasticity values, resulting in improved textural properties. The addition of WPC improved the texture of set‐type nonfat yoghurt with greater sizes in the gel network as well as lower syneresis and higher water holding capacity. This study suggests that the addition of whey protein additives used for fortification of yoghurt gave the best textural and sensory properties that were maintained constant during the shelf life.  相似文献

Two experiments were done to determine the effect of storage conditions and meat cut on the processing characteristics of beef roasts. The first experiment examined the effect of storage condition (fresh/frozen), cap on/off, thawing regime and holding time post thawing on purge, brine uptake, cook yield and colour of raw and cooked roasts. The second experiment examined the effect of meat cut (insides/flats) and chilled storage for up to 8 weeks on processing characteristics of roast beef. Purge was greater for insides stored frozen without cap and air thawed. Frozen thawed cuts had increased brine retention after injection, after tumbling and after cooking. Flats had less purge and higher cook yields when manufactured into roast beef. Raw and cooked colour was not significantly affected by most factors investigated. Raw meat was more red than meat that had been frozen.  相似文献

将不同浓度的迷迭香提取物(0、0.02%、0.04%和0.06%)添加到牛肉丸中,并以0.02%丁基羟基茴香醚(BHA)做对照,测定迷迭香处理组和对照组牛肉丸在冻藏过程中的过氧化物值(PV)、硫代巴比妥酸值(TBARS)、色差值(L*值、a*值)、保水性和质构特性,并对牛肉丸进行感官评价,考察迷迭香提取物对牛肉丸脂肪氧化和品质特性的改善作用。结果表明,迷迭香提取物可显著降低冻藏牛肉丸的PV值和TBARS值,抑制牛肉丸的脂肪氧化程度;同时,提高牛肉丸的a*值,使其保持良好的色泽;迷迭香提取物还能降低牛肉丸的蒸煮损失和解冻损失,改善牛肉丸的保水性;硬度、弹性和咀嚼性等质构特性也得到改善;感官评价结果显示,迷迭香处理组牛肉丸的感官评分较高,具有良好的感官品质。因此,迷迭香提取物具有抑制冻藏肉牛丸制品脂肪氧化和改善其食用品质的潜在应用价值。  相似文献

Response surface methodology was used to investigate the main effects and interactions of sodium caseinate (SC, 0–2%), microbial transglutaminase (MTG, 0–0.6%) and carrageenan (CGN, 0–0.8%) on water binding, textural and colour characteristics of pork gels. Higher κ-carrageenan and sodium caseinate content favored hydration properties and thermal stability, yielding lower cooking loss and higher water holding capacity. Their addition also increased hardness of pork gels, but was unable to improve springiness or cohesiveness. Sodium caseinate either alone or in combination with MTG generally has been found to be inferior to κ-carrageenan for functionality in comminuted meat systems. Although MTG had no effect on binding properties it was found to increase strength of the gels at higher SC levels. Addition of SC and ic-carrageenan significantly altered colour, while no significant influence of MTG on gel colour parameters was observed.  相似文献

Microstructure of gels formed at 71°C from different mixtures of beef myofibril protein (BMP; 6.1% protein) and whey protein (WP) were studied by transmission electron microscopy (TEM). At a ratio of30:10 (w/w) of whey protein concentrate (WPC; 79.5% protein) to BMP, WP formed a network of aggregated clusters in which beef myofibril proteins were embedded. WP apparently acts as a filler and possibly as a cementing agent for the meat pieces. At a lower ratio of 10:30 (wl w), the WP aggregates occupied and increased the interstitial spaces between the myofibril protein and reinforced the network. The location of WP in the interstitial spaces might explain its water binding ability in beef patties formulated with WP and water. WP protected the beef myofibril protein structure during heating as less disintegration in the Z-line was observed in gels with WP compared to the control. Low-fat (10% fat) ground beef patties with added 10% water and 1–4% whey protein concentrate (WPC), cooked to three different internal temperatures (60, 70 and 80°C), were evaluated for their cooking characteristics and examined by TEM. For all levels of addition, WPC improved the cooking yield compared to a non-formulated control of 10% fat. Fat retention was also improved at the highest level of WPC addition. The increased cooking yield was shown to be caused principally by the better water retention. The textural parameters, hardness and chewiness, were not affected by WPC addition but increased with increasing cooking temperature. These temperature-induced changes were matched by marked changes to the ultrastructure of the meat products.  相似文献

The effects of reducing fat level from 20% to 12% and 9%, substituting pork fat with olive oil and adding locust bean/xanthan gum (0.5% and 0.6%) on emulsion stability, jelly and fat separation, processing yield, cook loss, texture and sensory characteristics of frankfurters were investigated and compared with control samples. Addition of locust bean/xanthan gum produced a significant increase in hydration/binding properties, characterised by lower cook losses, increasing yield, better emulsion stability and lower jelly and fat separation. The substitution of pork fat by olive oil did not affect these parameters. Indeed, results showed that reducing fat levels together with increasing moisture and locust bean/xanthan gum addition do not affect the sensory or textural properties, but olive oil addition produces a decrease in hardness and an increase in adhesiveness, however the overall acceptability was not affected.  相似文献

A three-factor Box-Behnken design was adopted for studying the simultaneous effects of processing variables such as fat (10–30%), wheat bran (5–15%) and NaCl (0–2%) on physicochemical, textural and sensory properties of cooked beef patties. In addition, the ridge analysis was conducted to find the values of processing variables that maximise and minimise the texture profile analysis (TPA) parameters (hardness, chewiness, gumminess, adhesiveness, springiness, resilience and cohesiveness) and sensory ratings. Experimental design allowed for evaluation of potential interactive and quadratic effects between these variables; fat wheat bran and NaCl. It was found that protein and fat contents of patties was decreased and increased, respectively as the amount of wheat bran increased. NaCl increased the ash content of patties. Fat and wheat bran had a notable influence on textural properties, which improved the textural properties at certain levels. Lower addition of wheat bran and NaCl into patty resulted in higher acceptable product with respect to firmness, juiciness and overall quality properties.  相似文献
