Apple pomace, a by-product of apple juice industry, is a rich source of fibre and polyphenols. Also in view of the antioxidant property of pomace, it would play an important role in prevention of diseases. Apple pomace procured from fruit juice industry, contained 10.8% moisture, 0.5% ash and 51.1% of dietary fibre. Finely ground apple pomace was incorporated in wheat flour at 5%, 10% and 15% levels and studied for rheological characteristics. Water absorption increased significantly from 60.1% to 70.6% with increase in pomace from 0% to 15%. Dough stability decreased and mixing tolerance index increased, indicating weakening of the dough. Resistance to extension values significantly increased from 336 to 742 BU whereas extensibility values decreased from 127 to 51 mm. Amylograph studies showed decrease in peak viscosity and cold paste viscosity from 950 to 730 BU and 1760 to 970 BU respectively. Cakes were prepared from blends of wheat flour containing 0–30% apple pomace. The volume of cakes decreased from 850 to 620 cc with increase in pomace content from 0% to 30%. Cakes prepared from 25% of apple pomace had a dietary fibre content of 14.2% The total phenol content in wheat flour and apple pomace was 1.19 and 7.16 mg/g respectively where as cakes prepared from 0% and 25% apple pomace blends had 2.07 and 3.15 mg/g indicating that apple pomace can serve as a good source of both polyphenols and dietary fibre.  相似文献

The effects of breakfast cereal composition, breakfast cereal processing, and breakfast meal composition on relative iron availability from breakfast meals were estimated using an in vitro method. Addition of wheat bran and germ to cereals and meals reduced iron availability. Presweetening caused a slight increase in iron availability. Comparisons among meals containing cereals that were similar except for type of processing showed that processing may affect iron availability. Addition of orange juice to breakfast meals caused a dramatic enhancement of iron availability. Ascorbic acid fortified apple and grape juice increased iron availability but the effect was small compared with the orange juice effect. Studies with purified organic acids showed that ascrobic and citric acids present in the juices caused the observed enhancement of iron availability. Citric acid was a more potent enhancer than ascorbic acid.  相似文献

This study evaluates the effect of the incorporation of whole‐grain wheat flour (WGWF) and of extrusion process parameters on the nutritional and technological quality of breakfast cereals. The corn flour‐based breakfast cereals were elaborated in a twin‐screw extruder following a rotatable central composite design with varied WGWF (0–100%), feed moisture (14–24%) and zones 3 and 4 barrel temperature (76–143 °C). Dietary fibre and resistant starch were significantly increased with WGWF addition. Total and digestible starch showed a decrease when WGWF increased. The RVA parameters were significantly affected by all the extrusion conditions and WGWF content. The cell structure of the extrudates was dependent of WGWF and moisture.  相似文献

This study investigated the effect of microencapsulation on the survival of Lactobacillus rhamnosus GG and Lactobacillus acidophilus NCFM and their acidification in orange juice at 25°C for nine days and at 4°C over thirty five days of storage. Alginate micro beads (10-40 μm) containing the probiotics were produced by a novel dual aerosol method of alginate and CaCl(2) cross linking solution. Unencapsulated L. rhamnosus GG was found to have excellent survivability in orange juice at both temperatures. However unencapsulated L. acidophilus NCFM showed significant reduction in viability. Encapsulation of these two bacteria did not significantly enhance survivability but did reduce acidification at 25°C and 4°C. In agreement with this, encapsulation of L. rhamnosus GG also reduced acidification in pear and peach fruit-based foods at 25°C, however at 4°C difference in pH was insignificant between free and encapsulated cells. In conclusion, L. rhamnosus GG showed excellent survival in orange juice and microencapsulation has potential in reducing acidification and possible negative sensory effects of probiotics in orange juice and other fruit-based products.  相似文献

ABSTRACT:  The aim of this study was to investigate the effect of whey protein isolate (WPI) gel microentrapment on the viability of Lactobacillus rhamnosus R011 during the production and storage of biscuits, frozen cranberry juice, and vegetable juice. Viability of microentrapped (ME) cells was compared to free cells freeze-dried in a milk-based protective solution as well as in a WPI-based solution (ungelled). During the production of biscuits and their storage for 2 wk at 23 °C, the highest stability was obtained with the cells ME in WPI gel particles. However, free cells prepared in the milk-based matrix were those that maintained the highest viability during storage of vegetable juice as well as during freezing and storage of cranberry juice. The culture prepared in a WPI-based solution had the highest drops in viable counts following the heating process of biscuits as well as during storage of vegetable juice and freezing and storage of cranberry juice. Although the WPI-based solution was not efficient in protecting free cells, it is concluded that the process of microentrapment in WPI can help in protecting the freeze-dried cells against subsequent acidic and alkaline pH conditions as well as heating and freezing of food products.  相似文献

BACKGROUND: Multicereal/pseudocereal blends based on major and minor seeds with high nutritional profile appear as a promising strategy, hardly explored, to obtain enhanced value grain‐based foods such as bread. RESULTS: In a preliminary stage the suitability of minor/ancient cereals (rye, oat, Kamut® wheat, spelt wheat) and pseudocereals (buckwheat) was assessed in single (100% of wheat flour replacement) and multigrain (from 20 to 44% of wheat flour replacement) matrices. The research allowed identification of the qualitative (oat, rye, buckwheat) and quantitative (up to 75% of wheat flour replacement) grains in the mixed matrices providing enhancement of nutritional quality (higher protein content, higher mineral content, lower digestible starch, higher viscous fibre content, higher resistant starch content, source of antioxidants) and minimisation of techno‐functional impairment and sensory depreciation of the resulting breads. CONCLUSION: The quality profile of associated mixtures of oat, rye, buckwheat and common wheat flours (20:20:20:40 w/w/w/w) endorsed the proposed grain blend as suitable to make highly nutritious, modern and innovative baked goods meeting functional and sensory standards in terms of nutritional added value (improved dietary fibre fractions, minerals and antioxidant activity, slower starch hydrolysis), palatability (high sensory scores), convenience (extended keepability during storage) and easy handling during processing. Extrusion process was developed to exploit blackcurrant juice press residues from industrial side-streams. Press residues obtained from conventional enzymatic pressing, with high content of fiber and seed oil, and novel non-enzymatic juice processing, with high content of sugars, fruit acids and anthocyanins, were extruded with barley flour, oat flour or oat bran. The recipes consisted of blackcurrant press residues (30%), cereal materials (40%) and potato starch (30%) and small amount of sugar and salt. When compared to enzymatic press residue and oat bran, the novel non-enzymatic press residue extruded with barley or oat flour had higher expansion, lower hardness and density, higher redness (a*), lower pH, and higher contents of fructose, glucose and fruit acids, all contributing positively to liking of texture, appearance, and flavor as well as berry-like experience. These characteristics were obtained with more gentle processing parameters, consisting of a lower total mass flow, screw speed and barrel temperature. Female consumers gave lower ratings in flavor, appearance and overall pleasantness for blackcurrant snacks than males. The study presented a sustainable way of utilizing industrial press residues from different processes of berry juice pressing for production of healthy snacks and breakfast cereals.  相似文献

To develop a probiotic dietary adjunct, soymilk fermented with various combinations of lactic acid bacteria (Streptococcus thermophilus and Lactobacillus acidophilus) and bifidobacteria (Bifidobacterium longum and Bifidobacterium infantis) was subjected to freeze-drying and spray-drying. Survival of the starter organisms during the drying process, subsequent rehydration at different temperatures and during a 4-month period of storage under different storage conditions was examined. After freeze-drying, lactic acid bacteria and bifidobacteria exhibited a survival percent of 46.2-75.1% and 43.2-51.9%, respectively, higher than that noted after spray-drying. Regardless of the drying condition, S. thermophilus showed a higher percentage of survival than L. acidophilus, while B. longum survived better than B. infantis. Further study with soymilk fermented with S. thermophilus and B. longum revealed that the freeze-dried and spray-dried fermented soymilk rehydrated at 35-50 degrees C and 20 degrees C, respectively, was optimum for the recovery of the starter organisms. Both S. thermophilus and B. longum survived better in the freeze-dried than the spray-dried fermented soymilk during storage. A higher percent of survival was also noted for both the starter organisms when the dried fermented soymilk was stored at 4 degrees C than 25 degrees C. Holding the dried fermented soymilk in the laminated pouch enabled S. thermophilus and B. longum to exhibit a higher percentage of survival than in the deoxidant- and desiccant-containing glass or polyester (PET) bottle. Among all the packaging materials and storage temperatures tested, starter organisms were most stable in the dried fermented soymilk held in laminated pouch and stored at 4 degrees C. Under this storage condition, S. thermophilus and B. longum showed a survival percentage of 51.1% and 68.8%, respectively, in the freeze-dried fermented soymilk after 4 months of storage. Meanwhile, S. thermophilus and B. infantis in the spray-dried fermented soymilk showed a survival percent of 29.5% and 57.7%, respectively.  相似文献

Challenges and opportunities of minor cereals with poor viscoelastic value deserve a special attention in breadmaking applications due to their unique nutritional components. In a preliminary stage, the suitability of oat, millet and sorghum in breadmaking was assessed in simple binary wheat flour matrices in which wheat flour was replaced from 0% to 60%. The research allowed the quantification of grains (up to 30% for millet and sorghum and up to 50% for oat of wheat flour replacement) to be incorporated into the binary blended matrices providing minimization of techno-functional impairment and sensory depreciation of breads. Combinations of gluten, vegetable fat and a commercial mix of surfactants, ascorbic acid and antistaling enzymes were used to make breads with 10% increased level of wheat flour replacement by single oat, millet and sorghum in binary mixed samples. The quality profile of binary mixtures of oat–wheat (60:40 w/w), millet–wheat (40:60 w/w) and sorghum–wheat (40:60 w/w) was significantly improved in terms of keepability during storage, mainly for oat–wheat blends which stale at a similar rate than 100% wheat breads. Overall acceptability of highly replaced wheat breads deserved higher scores for oat and sorghum composite breads (7/10) than control wheat breads (6/10). Oat, millet and sorghum represent a viable alternative to make aerated breads with mitigated technological and sensory constraints based on non-viscoelastic cereals.  相似文献

Bifidobacterial food applications are limited since bifidobacteria are sensitive to e.g. acidic conditions prevalent in many food matrices. The aim of the present study was to investigate whether a low pH selection step alone or combined to UV mutagenesis could improve the viability of an acid sensitive Bifidobacterium strain, B. breve 99, in low pH food matrices. Furthermore, the potential of carriers and an oat fibre preparation to further improve the stability was studied. The best performing low pH tolerant variants in the present study were generated by UV-mutagenesis with 70-700 μJ/cm2 followed by incubation in growth medium at pH 4.5. The most promising variants regarding the low pH tolerance showed, in repeated tests with cells grown without pH control, about one Log-value better survival in pH 3.8 fruit juice after one week storage at 4 °C compared to wild-type B. breve 99. Cells grown with pH control, PDX formulated and then frozen showed poorer viability in low pH fruit juice than cells grown with no pH control. For frozen concentrates pH 3.8 was too stressful and no or small differences between the variants and the wild-type strain were seen. The differences detected at pH 3.8 with the cells grown without pH control were also seen with the frozen concentrates at pH 4.5. Some improvement in the stability could be achieved by using a combination of trehalose, vitamin C and PDX as a freezing carrier material, whereas a significant improvement in the stability was seen when oat fibre was added into the fruit juice together with the frozen cells. Due to the initial very poor fruit juice tolerance of B. breve 99 the obtained improvement in the stability was not enough for commercial applications. However, the same methods could be applied to initially better performing strains to further improve their stability in the fruit juice.  相似文献

The present study was carried out to achieve a more efficient dehydration process along with low undesirable quality decrease for cream mushroom soup (CMS) by combining microwave pre-gelatinization (MPG) with infrared freeze-drying (IRFD). Wheat flour was gelatinized using a microwave heating unit for different times, and was used in CMS formulations. Freeze drying (FD) was carried out using conventional as well as IRFD and drying time, energy consumption and product quality characteristics (flavor, viscosity of rehydrate juice; moisture absorption and crystallinity of dried soup solid) of CMS were studied. Compared to FD, IRFD reduced the drying time and energy consumption by 23.81% and 28.43%, respectively. The microwave pre-gelatinization of wheat flour and subsequent use in IRFD, while in comparing with single infrared freeze drying, did not affect drying time and energy consumption; however, it significantly improved the flavor and viscosity of soup upon rehydration, and reduced the tendency to retrogradation. The microwave pre-gelatinization time of 120 s at 8 W/g energy level was found to be the most suitable condition for microwave pre-gelatinization of wheat flour.Industrial relevanceUndesirable decrease of viscosity in starch containing soup and high energy consumption of traditional freeze-drying limit the large-scale industrial production of freeze-dried starch containing product. Therefore, inhibiting viscosity reduction and reducing production cost are the crucial steps for industrial production of freeze-dried cream mushroom soup. Microwave pre-gelatinization and infrared freeze-drying have made outstanding contributions on improving starch stability and reducing drying energy consumption, respectively, which caters to the preferences of industrial production and can be used in industrial production of freeze-dried instant cream mushroom soup.  相似文献

Invasive infections caused by Enterobacter sakazakii have occurred predominantly in low-birth-weight neonates and infants younger than 2 months of age. However, infections have also occurred in healthy infants up to 8 months of age and in immunocompromised children up to 4 years of age. The ability of E. sakazakii to survive and grow in infant cereals as affected by composition of the cereal, composition of the reconstitution liquid, and temperature is unknown. A study was done to determine the survival and growth characteristics of E. sakazakii initially at populations of 0.005 and 0.52 CFU/ml of infant rice cereal, oatmeal cereal, or rice with mixed fruit cereal reconstituted with water, milk, or apple juice. Reconstituted cereals were stored at 4, 12, 21, and 30 degrees C, and populations were monitored for up to 72 h. Growth did not occur in reconstituted cereals stored at 4 degrees C or in cereals reconstituted with apple juice and stored at 12 degrees C. Populations (> or =1 CFU/ml) were detected in cereals reconstituted with water or milk and stored at 12, 21, and 30 degres C for 24, 8, and 4 h, respectively. The composition of infant cereals did not markedly affect the survival or growth of E. sakazakii in reconstituted cereals. Populations of E. sakazakii in reconstituted cereal decreased with increases in populations of mesophilic aerobic microflora up to 8 to 9 log CFU/ml, which was concurrent with decreases in pH. E. sakazakii, initially at 2.62 log CFU/ml of rice cereal reconstituted with apple juice (pH 4.32), survived at 40C for at least 14 days. The pathogen grew at 21 and 30 degrees C within 2 days and then decreased to undetectable levels (<1 CFU/10 ml) in cereal stored at 21 degrees C for 5 days or 30'C for 4 days. Initially, at 7.32 log CFU/ml, E. sakazakii was detected in rice cereal stored at 4 degrees C for 50 days. It is recommended that reconstituted infant cereals stored at 21 or 30 degrees C be discarded within 4 h after preparation or stored at -40C, temperatures at which E. sakazakii will not grow.  相似文献

Escherichia coli O157:H7 survival in apple juice supplemented with Cornus fruit (Cornus officinalis Sieb. et Zucc.) extract was studied. Inoculated samples with or without Cornus fruit extract were kept at 21 and 7 degrees C. Microbial analysis was conducted on days 0, 1, 3, 5, and 7. MacConkey sorbitol agar (MSA), tryptic soy agar (TSA), and thin agar layer (TAL) medium were used to compare the recovery of bacteria stressed under combination treatment. Influence of temperature, storage time, and Cornus fruit on survival of cells was evaluated. The most dramatic reduction of E. coli O157:H7 was observed in apple juice with Cornus fruit extract at 21 degrees C. At 7 degrees C, E. coli O157:H7 was reduced by 2.3logcfu/ml in the apple juice with Cornus fruit extract compared to the control sample on day 7. TAL and TSA were more efficient than MSA. Cornus fruit extract can be used in combination with temperature and storage time controls to inactivate E. coli O157:H7 in apple juice. This study has shown that TAL is a viable method of recovering and differentiating injured microorganisms and apple juice supplemented with Cornus fruit has potential as a value-added beverage with antimicrobial effects and potential health benefits.  相似文献

The onset glass transition temperature (Tgo) of Granny Smith apple products was evaluated as a function of drying conditions (air drying and freeze-drying) and moisture and water activity (aw) levels. Tgo was determined in the 0–0.75 aw range, and it was found to have a maximum value at aw= 0 (Tgo= 4.5 ± 1.6C) for freeze-dried apple and a minimum value at aw= 0.75 (Tgo= -81.4 ± 0.1C) for freeze-dried apple juice. A linear relationship between Tgo and aw was obtained in all cases. Theoretical Tgo values at aw= 0 were calculated using these equations, and were within the range of 3.0C (freeze-dried apple) and 10.5C (apple dehydrated at 30C). When Gordon and Taylor's linear model was applied to the experimental data of all the apple products, K values within the range 2.4 (freeze-dried apple juice) and 3.6 (apple dehydrated at 60C), and the theoretical Tg of solids values at aw= 0 between the range -16.3C (freeze-dried apple juice) and -1.9C (apple dehydrated at 60C) were obtained. No effect of the type of drying on the value of Tg was detected.  相似文献

Colour and turbidity of conventional bentonite-gelatin clarified apple juice was compared with 30,000–50,000 and 100,000DA hollow fibre ultrafiltered apple juice, with and without pectinolytic enzyme treatment. Results indicated that objective quality of ultrafiltered apple juice compared favourably with conventionally clarified apple juice over 30 weeks of storage at 37.5°C. However, treatment with pectinolytic enzymes before ultrafiltration increased both the initial colour and the browning rate. No significant differences were found in the values of the transmission haze after storage.  相似文献

Bread is a major staple food consumed daily in all parts of the world. A significant part of the human population cannot tolerate gluten, a storage protein found in wheat, rye and barley, and therefore, products made from alternative cereals are required. During this study, the bread-making potential of seven gluten-free flours, wheat and wholemeal wheat flour was compared. Fermentation potential of the different flours was determined, showing that dough development height of gluten-free and wholemeal wheat samples was lower than for wheat and oat flour. Apart from standard bread quality parameters such as loaf-specific volume and physical crumb texture, also water activity and shelf life have been determined. The shelf life of gluten-free breads was reduced compared to wheat bread. Aroma profiles were evaluated by a trained panel. Wheat, oat and wholemeal wheat breads were liked moderately, while the remaining samples had lower liking scores. Crumb grain characteristics were investigated using image analysis, and microstructure was observed by scanning electron microscopy. Overall, only breads produced from oat flour were of similar quality to wheat bread, and the utilization of buckwheat, rice, maize, quinoa, sorghum and teff flours resulted in breads of inferior quality.  相似文献

With the aim to develop nutritionally and functionally improved biscuits, standard wheat flour based recipe was supplemented with inulin (Raftilin) (10.5%) in combination with one of the following raw materials: soy flour, amaranth, carob (24.5%), apple fibre or oat fibre (16.5%). Various nutritional parameters such as proteins, fat, ash, carbohydrates total minerals, protein digestibility and energy value were determined in modified biscuits. Dietary fibre content, polyphenolic content and bioavailability and antioxidative activity were also assessed in the view of estimating the functionality of investigated samples. In order to evaluate the impact of technological procedure (baking) on analysed parameters, all experiments were conducted in dough samples as well. Supplementation with soy flour resulted in significant increase (p < 0.05) in protein content and digestibility (from 10.04 to 14.49 mg/100 g and from 68.9% to 81.5%, respectively). The increase of total dietary fibre content in relation to the reference sample ranged from 30.9% (sample with amaranth) to 130.6% (sample enriched with oat fibre). Best results regarding total phenolic content and antioxidative activity were achieved by incorporation of carob and apple fibre into the reference sample. Supplementation with inulin resulted in significant decrease of the total energy value of modified biscuits (from 445 to 412 kcal/100 g dry matter).  相似文献

Cereals are often promoted as important sources of dietary fiber. Ninety one breakfast cereals available in Canada and four unprocessed wheat brans were therefore analyzed for neutral detergent fiber (NDF) after rapid digestion with α-amylase from porcine pancreas. Many breakfast cereals contained less than 5% NDF. Wheat cereals contained 5–30% NDF, oat cereals contained 5% NDF, and corn and rice contained little NDF. Cereal NDF was predominantly hemicellulose (pentosans); pentose sugars liberated under hydrolysis represented up to 15% of processed bran cereals and 20–25% of unprocessed bran.  相似文献

Breakfast cereals are usually manufactured by extrusion followed by drying and toasting steps in which thermal treatments are applied. In addition, owing to the low water activity and the content in cereals of proteins and carbohydrates, precursors of the Maillard reaction, this reaction and degradation of sugars are favoured during processing. Acetic and formic acids have been identified as final products of Maillard reaction (MR) and sugar caramelisation. Acetic and formic acid contents have been determined by ion exchange high‐performance liquid chromatography in 56 commercial breakfast cereals. Results were evaluated taking into account the sample formulation. Acetic and formic acids were detected in all samples, and significant variations were observed for acetic acid depending on the protein and fibre content. Acetic acid, originating from 1‐deoxyglucosone cleavage during MR, proved to be a good indicator of processing in cereals enriched with or based on wheat flour because of their high protein content. Fibre addition increased acetic acid concentration. The application of acetic acid as a chemical marker of processing in breakfast cereals and its possible generation pathways are discussed. Normal (pH 3.7) and adjusted (pH 5.0) pasteurized apple juice containing cinnamon (0, 0.1, 0.2, and 0.3%) was inoculated with Listeria monocytogenes Scott A 49594 at 10(4) CFU/ml and stored at 5 and 20 degrees C for 7 days. Counts on tryptic soy agar (TSA), modified Oxford (MOX) medium, and thin agar layer (TAL) were determined at 1 h and 1, 3, and 7 days. The TAL method (MOX medium overlaid with TSA) was used for the recovery of injured cells. In apple juice, both at normal and adjusted pH, with any doses of cinnamon, no L. monocytogenes (a 4.6-log CFU/ml reduction) was detected after 1 h of storage at both temperatures, and no growth occurred at any points of storage. Therefore, cinnamon by itself (regardless of pH) had a pronounced killing effect. A further enrichment step with brain heart infusion agar showed that L monocytogenes was completely inactivated in apple juice stored at 20 degrees C, except in pH 5.0 samples with 0.1% of cinnamon. The TAL method was as effective as TSA in recovering injured cells of L. monocytogenes. Cinnamon considerably inactivates L. monocytogenes in apple juice and thus enhances the safety of this product.  相似文献
