Cadmium (Cd) contamination has become a public health concern in recent decades. The aim of the present study was to assess the contribution of dietary Cd exposure and its health risk among Shenzhen adult residents using the Total Diet Study (TDS) approach. Cd was determined in 13 food groups using 276 individual samples by ICP-MS. The major food contributors to Cd exposure of Shenzhen adult residents were ‘Vegetables’ (32.6% of the total exposure), ‘Rice and its products’ (19.2% of the total exposure) and ‘Fish, seafood and shellfish’ (18.5% of the total exposure). The mean and the 95th percentile dietary exposure to Cd of Shenzhen adults were 9.9 and 13 μg kg?1 bw month?1, respectively. The dietary exposures of all individual age-gender population subgroups were below the provisional tolerable monthly intake (PTMI = 25 μg kg?1 bw month?1), so the health risk of Cd dietary exposure of Shenzhen adults is considered to be low, but still, cadmium pollution should be strictly controlled and monitored continuously due to an exceptionally long biological half-life of cadmium.  相似文献

Acrylamide is a probable human carcinogen and known human neurotoxin. This study estimated hypothetical long-term dietary exposure to acrylamide of the Japanese people using probabilistic and deterministic approaches by combining the concentration of acrylamide in foods with the amount and frequency of food consumption in the population. Data included acrylamide concentrations in more than 2400 individual food samples from a national survey and the literature from 2004 to 2013. Food consumption amounts were derived from the data of 24,293 Japanese citizens aged 1 year and older in the 2012 National Health and Nutrition Survey. Median lifetime average dietary exposure to acrylamide was estimated as 147–154 ng/kg body weight (bw)/day (95th percentile, 226–261 ng/kg bw/day). The deterministic estimate of lifetime exposure was 158 ng/kg bw/day and ranged from 119 ng/kg bw/day for the period of life after 60 years old to 409 ng/kg bw/day for the period between 1 and 6 years old. This study found that vegetables cooked at a high temperature, coffee and cooked potato were the major food groups contributing to long-term dietary acrylamide exposure of the Japanese people.  相似文献

This paper reports an estimate of the dietary intake of lead by children and adults from the Jinhu area in South-eastern China. A duplicate diet approach was used to collect food samples in November and December 2007. The lead content was measured by furnace atomic absorption spectrometry. Median lead intakes for different groups were as follows: children: 1.65 µg(kgbw)?1 day?1; and adults: 1.10 µg(kgbw)?1 day?1. No exposure exceeded the provisional tolerable weekly intake (PTWI) of 25 µg(kgbw)?1 week?1 proposed by the World Health Organization (WHO). However, median and maximum exposure for the children group amounted to 60.8% and 97.2% of the PTWI, respectively, which were higher than those for adults, which were 40.5% and 86.4%, respectively. It was concluded that health risks due to dietary lead intake seem to be high in Jinhu.  相似文献

Lead, a ubiquitous heavy metal, can be found in the environment and food. The present study is the first to estimate the lead dietary exposure of Shenzhen adults (≥ 20 years old) in various age–gender subgroups, and to assess the associated health risk. Food samples that represented the Shenzhen people’s dietary pattern were collected and prepared for analysis. Lead was determined in 13 food groups using 276 individual cooked samples by inductively coupled plasma-mass spectrometry (ICP-MS). Dietary exposures were estimated by combining the analytical results with the local food consumption data of Shenzhen adults. The mean and 95th percentile lead exposure of Shenzhen adults were 0.59–0.73 and 0.75–0.94 μg kg?1 bw day?1, respectively. In all food groups, the highest lead exposure was from ‘Eggs and their products’ (42.4–51.6% of the total exposure); preserved eggs being the main contributor. The other major contributors to lead exposure of Shenzhen adults were ‘Fish and seafood, and their products’ (14.3–16.7% of the total exposure) and ‘Vegetables and their products’ (15.5–16.2% of the total exposure). The margin of exposure (MOE) approach was used for the risk assessment of lead, and the results showed that the risk was considered to be low in all age–gender groups for Shenzhen adults. However, having considered a number of toxic effects of lead, it is suggested that more efforts should be made to reduce the lead levels in foodstuff for Shenzhen adults.  相似文献

Dietary exposure of the Hong Kong adult population to organochlorine pesticide (OCP) residues was estimated using a total diet study (TDS) approach. OCPs listed under the Stockholm Convention as persistent organic pollutants (POPs) including, aldrin, dieldrin, chlordane, chlordecone, dichlorodiphenyltricholroethane (DDT), endosulfan, endrin, heptachlor, hexachlorobenzene (HCB), α-hexachlorocyclohexanes (HCH), β-HCH, lindane, mirex, pentachlorobenzene and toxaphene, were studied. Out of 600 composite samples, 55% contained one or more OCP residues at detectable levels. The most commonly detected OCP was DDT (32% of all composite samples), followed by HCB (30%) and endosulfan (22%). The lower- and upper-bound mean exposure estimates of OCP residues ranged from 0% to 0.5% and were 0.1–8.4% of their respective health-based guidance values (HBGVs). The lower- and upper-bound 95th percentile exposure estimates ranged from 0% to 1.2% and were 0.1–13.6% of their respective HBGVs. This indicated that dietary exposures to the OCP residues analysed would be unlikely to pose unacceptable health risks to Hong Kong adults.  相似文献

Twenty-four hour duplicate diets, including drinking water and snacks, were collected from 24 adults living in five Canadian cities. Each diet was separated by the participants into 10 food categories, and each of the samples was analyzed in duplicate for lead, cadmium, arsenic and fluoride. Minimum detection limits for the respective elements in foods were about 0.1, 0.01, 0.3 and 5 ng/g. Mean dietary intakes were 53.8 micrograms/day or 0.80 micrograms/kg/day for lead, 13.8 micrograms/day or 0.21 micrograms/kg/day for cadmium, and 16.7 micrograms/day or 0.26 micrograms/kg/day for arsenic. The median intakes were 42.7 micrograms/day or 0.57 mu/kg/day for lead, 11.9 micrograms/day or 0.17 micrograms/kg/day for cadmium, and 9.79 micrograms/day or 0.139 micrograms/kg/day for arsenic. Half of the participants lived in communities with 1 microgram/g fluoride in the drinking water, and half lived in cities with less than 0.2 microgram/g fluoride in the water. The dietary intake of fluoride for the former was 2802 micrograms/day or 39.7 micrograms/kg/day; while that of the latter was 563 micrograms/day or 8.5 micrograms/kg/day. The respective median intakes of fluoride were 2090 micrograms/day or 30.3 micrograms/kg/day, and 414 micrograms/day or 7.0 micrograms/kg/day. Contribution of individual foods and food categories to the dietary intakes is discussed.  相似文献

Dietary exposures to eight metallic contaminants, aluminium (Al), antimony (Sb), cadmium (Cd), lead (Pb), methylmercury (MeHg), nickel (Ni), tin (Sn) and vanadium (V), of the Hong Kong adult population were estimated using the total diet study (TDS) approach. The estimated mean exposures of Al (0.60 mg kg–1 bw week–1), Sb (0.016–0.039 µg kg–1 bw day–1), Cd (8.3 µg kg–1 bw month–1), Pb (0.21 µg kg–1 bw day–1), MeHg (0.74 µg kg–1 bw week–1), Ni (3.1 µg kg–1 bw day–1), Sn (0.029–0.031 mg kg–1 bw week–1) and V (0.13 µg kg–1 bw day–1) were well below the relevant health-based guidance values (HBGVs) where available. However, dietary exposures to MeHg of women aged 20–49 years (child-bearing age) accounted for 150% of the provisional tolerable weekly intake (PTWI) and to Al and Cd of some high consumers were found exceeding or approaching the HBGVs. The major food contributors of MeHg were fish and seafood (90%), of Al were non-alcoholic beverages including tea (33%), and of Cd were vegetables (36%). MeHg exposure during pregnancy was a public health concern in Hong Kong due to potential health risks to the foetus. Results suggest that there is a need to continue monitoring the exposures to metallic contaminants, especially Al, Cd and MeHg, of the Hong Kong population.  相似文献

ABSTRACT

The goal of this study was to find the relationship between dietary nitrite and risk of esophageal cancer, and determine the amount of nitrite intake to establish the oral highest daily intake to prevent the occurrence of esophageal cancer. Duplicate portions of three-consecutive-day diets were collected from 100 patients with esophageal precancerous lesions and 100 controls. The average nitrite daily intakes for esophageal precancerous lesions and normal people were 15.72 mg/d and 11.11 mg/d. The median nitrite daily intakes for cases and controls were 8.76 mg/d and 5.33 mg/d. Positive association was observed between the risk of esophageal precancerous lesions and dietary nitrite intake (p = 0.035). An increased risk of esophageal precancerous lesions was observed for cases or controls in the highest intake quartile of nitrite (highest vs. lowest quartile odds ratio (OR) = 2.256, 95% confidence interval (CI): 1.012–5.026). These results suggest that dietary nitrite intake may influence the risk of esophageal cancer; populations with high incidence of esophageal cancer should take control of nitrite intake as one of the measures to prevent esophageal cancer.  相似文献

In spring and fall 1994, 123 respondents participated in a duplicate 24-h diet study. Each respondent collected one duplicate of the food and drinks, including drinking water he/she consumed in a continuous 24-h period. Lyophilised subsamples were analysed for fatty acid content by means of an in-house developed and validated gas chromatographic method with flame ionisation detection. From these data the fatty acid intake per person per day and the fatty acid profile were calculated. From the measured fatty acid content, the calculated intake of all participants was on average: for fat 79.9 g, for fatty acids 62.9 g, for saturated fatty acids 29.0 g, for monounsaturated fatty acids 22.8 g, for polyunstaturated fatty acids 9.7 g and for trans fatty acids 3.8 g. The intake expressed as percentage of the total energy intake (en%) of all participants was on average: for saturated fatty acids 12.7 en%, for monounsaturated fatty acids 10.0 en%, for polyunstaturated fatty acids 4.3 en% and for trans fatty acids 1.7 en%. The average intake on fat was 35.0 en% and the average fatty acids intake was 27.6 en% No differences were found between both sampling periods nor between men and women. The average intake of fat equals and of saturated fatty acids was above the recommendation of the Dutch Food and Nutrition Council (Voedingsraad) of a maximum of 30–35 en% of fat and of a maximum of 10 en% of saturated fatty acids. The fatty acid profile found in this study corresponds well with the profile found in the 1984/1985 duplicate diet study.  相似文献

ABSTRACT

In the period from 2007 to 2017 furan levels of foods were analysed by the Austrian Agency for Health and Food Safety. Based on these analytical data and the Austrian consumption data the dietary exposure of children and adults to furan was estimated by using a deterministic approach. For the adult population the mean and 95th percentile dietary exposures to furan were estimated at 0.31 µg/kg bodyweight per day and at 0.72 µg/kg bodyweight per day, respectively. The mean dietary exposure of children was estimated at 0.18 µg/kg bodyweight per day and is thus only about half as high as for Austrian adults. At the 95th percentile the dietary exposure of children was estimated at 0.49 µg/kg bodyweight per day. The main contributor to the total dietary exposure for adults is coffee followed by convenience products and for children the main contributors are grain products as well as convenience products, bread and snacks. Based on the BMDL10 of 0.064 mg/kg bodyweight per day for the development of cholangiofibrosis, the MOE-calculation revealed that the current levels of dietary exposure to furan are of concern for Austrian adult high consumers. The MOE-calculation, based on the BMDL10 of 1.31 mg/kg bodyweight per day for the development of hepatocellular adenomas, indicated a health concern for Austrian children and adults.  相似文献

The aim of this study was to estimate the dietary intake of arsenic (As) by children and adults from Jinhu area of China. A duplicate diet approach was used to collect diet samples in November and December 2007. The As content was measured by hydride generation atomic fluorescence spectrometry. The As intakes (median) for different group were: children: 0.6 µg kg?1 bw day?1 or 6.7 µg kg?1 bw week?1; adults: 0.5 µg kg ?1 bw day?1 or 3.8 µg kg ?1 bw week?1, none of which exceeded the provisional tolerable weekly intake (PTWI) of 15 µg kg ?1 bw week?1 for As proposed by the World Health Organization (WHO). The median and maximum of the children group amounted to 44.7% and 125.3% of the PTWI; the values for adults were 25.3% and 118.7%, respectively. There were 3.3% of children whose weekly As intake exceeded the PTWI, and there were 6.7% of adults whose weekly As intake exceeded the PTWI. It is concluded that dietary As intake was safe for most people in Jinhu area, but the high dietary As intake for a minority of people in this area deserves attention.  相似文献

A total of 290 individual food samples were collected in Hong Kong, China, for 3-monochloropropane-1,2-diol (3-MCPD) fatty acid esters analysis. Most samples were processed food and in ready-to-eat form. The results show that the levels of 3-MCPD fatty acid esters were high in biscuits, fats and oils, snacks and Chinese pastry with mean bound 3-MCPD levels of 440, 390, 270 and 270 μg kg?1, respectively. The dietary exposures to bound 3-MCPD of average and high adult consumers were estimated to be 0.20 and 0.53 μg kg bw?1 day?1, respectively. The primary toxicological concern of 3-MCPD fatty acid esters is its potential to release 3-MCPD in vivo during digestion in the gastrointestinal tract. 3-MCPD would affect the kidney, the central nervous system and the male reproductive system of rats. Assuming that 100% of the 3-MCPD was released from 3-MCPD fatty acid esters by hydrolysis in the digestive system, the dietary exposures to 3-MCPD for average and high adult consumers were only 10% and 26% of the provisional maximum tolerable daily intake (PMTDI) of 3-MCPD established by the Joint Food and Agriculture Organization/World Health Organization Expert Committee on Food Additives (JECFA) (2 μg kg bw?1 day?1), respectively. The results suggest that both average and high adult consumers are unlikely to experience major toxicological effects of 3-MCPD.  相似文献

Intake of chromium was estimated using a duplicate diet sampling method of 108 meals (36 breakfasts, 36 lunches and 36 dinners) from the restaurant of the Hospital of Motril (S.E. Spain), corresponding to 36 consecutive days. Total and dialyzable Cr levels were measured by a validated electro-thermal atomic absorption spectrometry (ETAAS) method. A mean Cr fraction of 26 ± 12 µg meal?1was found. The Cr uptake from meals was directly and significantly (p < 0.001) correlated with their macronutrient (carbohydrates, fibre and protein) content. Cereals and cereal by-products, legumes, dry fruits, meat, potatoes, dairy products and seafood are the primary sources of Cr. The mean Cr fraction dialyzed through dialysis tubing was 1.2 ± 1.1 µg meal–1(4.6 ± 3.8% as mean Cr dialysability). Cr intake for breakfasts was significantly lower (p < 0.001). A correlation between the logarithmic data of total and dialyzable fraction of Cr in meals (p = 0.020) was found and dialysis ratio enhancement and, therefore, bioavailability increased with total Cr. The dialysed element content present in meals was significantly correlated with fibre, protein, Fe, Na, I, F, sodium, ascorbic acid and vitamin A levels (p < 0.05). At Fe contents in meals higher than ?7.5 mg meal?1, the net absorption of Cr decreased significantly. The mean Cr daily dietary intake (DDI) was 77 ± 17 µg day?1, which indicates that no adverse effects in relation to Cr nutrition (deficiency or toxicity) should occur in individuals from the area.  相似文献

Purpose: This study aims to better understand the individual characteristics and dietary factors that affect the relationship between estimated consumption of acrylamide and measured acrylamide hemoglobin adduct levels (HbAA) and glycidamide hemoglobin adduct levels (HbGA). Methods: Acrylamide levels in individual food items, estimated by the U.S. Food and Drug Administration, were linked to data collected in the 2003–2004 National Health and Nutrition Examination Survey. Multivariable linear regression was used to evaluate the relationship between estimated consumption of acrylamide and HbAA. Results: A significant association between acrylamide intake and HbAA was observed, after adjustment for gender, race/ethnicity, smoking status, age, and BMI (R2 = 0.34). Across quartiles of acrylamide consumption, HbAA and HbGA levels increased monotonically. Among nonsmokers, an evaluation of three heavily consumed, high AA concentration foods showed a positive trend between the consumed amount of fried potatoes and HbAA in children, adolescents, and adults. A significant positive trend between the consumed amount of potato chips or coffee was indicated in adolescents, adults, and seniors. Conclusions: Consumption of some individual foods affects HbAA concentrations more strongly and in an age-dependent manner. Our results suggest that effective dietary guidelines for controlling acrylamide intake should be subpopulation specific.  相似文献

目的 评估重庆市居民膳食中铬暴露水平及潜在的健康风险。方法 利用2018—2021年重庆市9类共2 780份食品中铬含量监测数据,结合中国健康与营养调查项目2018年重庆市膳食调查数据(3 d 24 h膳食回顾法),采用蒙特卡罗模拟估计重庆市居民膳食中铬暴露水平并评估其健康风险。结果 重庆市各类食物中铬平均含量范围为0.013 9~0.126 3 mg/kg,总体检出率为40.6%。铬平均含量以水产品及其制品最高,其次是特殊膳食用食品、叶菜类蔬菜和大米。重庆市居民膳食中铬每日平均暴露量范围为0.683~2.117 μg/kg·BW,高食物量消费人群的膳食暴露水平(P95)范围为1.165~3.597 μg/kg·BW。各年龄组人群的铬每日平均暴露量随年龄增加有降低的趋势,1~6岁人群的铬每日平均暴露量最高,60岁以上人群最低;男性铬平均暴露量高于女性;城市地区人群的铬平均暴露量高于农村地区。谷物及其制品对重庆市居民膳食中铬暴露的贡献率最高,达39.31%~49.13%,其次为蔬菜、肉及肉制品。各年龄、性别、地区组人群膳食中铬每日平均暴露量和P95暴露量占每日耐受摄入量(TDI)的比例均低于1。结论 重庆市居民膳食中铬暴露的健康风险较低,谷物及其制品、蔬菜、肉及肉制品是膳食中铬摄入的主要来源。  相似文献

Polybrominated diphenyl ethers (PBDEs) are a group of industrial chemicals that are persistent and can bioaccumulate. In the first Hong Kong Total Diet Study, the dietary exposure of Hong Kong adults to PBDEs was estimated to assess the associated health risks. Food samples, which represented the Hong Kong people’s diet, were collected and prepared in table-ready form for analysis. Concentrations of PBDEs were determined in 142 composite samples. The dietary exposures were estimated by combining the analytical results with the local food consumption data of the adults. The mean and 95th percentile of dietary PBDEs exposures of the Hong Kong people were 1.34 and 2.90 ng kg?1 body weight day?1, respectively. The main dietary source of PBDEs was “fish and seafood and their products”, which contributed 27.3% of the total exposure, followed by “meat, poultry and game and their products” (20.7%), “cereals and their products” (15.9%), and “fats and oils” (15.9%). The large margins of exposure (MOE) (>2.5) calculated following the European Food Safety Authority (EFSA) approach for four important congeners, BDE-47, BDE-99, BDE-153 and BDE-209, indicate that the estimated dietary exposures are unlikely to be a significant health concern.  相似文献

The aim of this study was to assess the dietary exposure of adults in Hong Kong to nitrate and nitrite from vegetables. If all vegetables consumed were raw, the dietary exposure to nitrate for average consumers was estimated to be 4.4?mg?kg?1 body weight (bw)?day?1 and, for high consumers, was estimated to be 13?mg?kg?1?bw?day?1, which is about 120 and 350% of acceptable daily intake (ADI), respectively. If all vegetables consumed were cooked, the dietary exposure to nitrate from vegetables for the average adult consumer was estimated to be 3.5?mg?kg?1?bw?day?1 and, for high consumer, was estimated to be 10?mg?kg?1?bw?day?1, which is about 95 and 270% of ADI, respectively. On the other hand, the dietary exposure to nitrite from vegetables for average and high consumers were well below the ADI.  相似文献

Dietary exposure to trace elements (aluminium, antimony, barium, cadmium, lead, nickel, vanadium, copper, manganese, molybdenum, germanium, lithium, strontium and tellurium) was assessed by the total diet study (TDS) method. Sixty-four pooled samples representing 96.5% of the diet in Yaoundé, Cameroon, were prepared “as consumed” before analysis. Consumption data were sourced from a households’ budget survey. Dietary exposures were compared with health-based guidance or nutritional values and to worldwide TDS results. The health-based guidance value was exceeded by ≤ 0.2% of the study population for aluminium, antimony, barium, cadmium, nickel and vanadium. For lead, the observed 95th percentile of exposure (3.05 µg kg?1 body weight day?1) equals the critical value considered by JECFA for cardiovascular effects; therefore, risk to health cannot be excluded for certain consumer groups. The population at risk of excess intake for manganese, copper, molybdenum and nickel was considered to be low (≤ 0.3%). The prevalence of inadequate intake was estimated at 5.9% for copper and was nil for molybdenum. Due to the lack of toxicological and/or nutritional consistent data to perform a risk assessment, dietary exposures to germanium, lithium, strontium and tellurium were provided as supplementary data. The food groups highest contributors to exposure were “tubers and starches” for aluminium (27%), lead (39%) and copper (26%), “cereals and cereal products” for cadmium (54%) and manganese (35%), “fruits, vegetables and oilseeds” for barium (34%), molybdenum (49%) and nickel (31%), “beverages” for antimony (27%) and “fish” for vanadium (43% – lower bound). Measures should be recommended to maintain low levels of exposure before the problem could become an important health or trade issue.  相似文献
