As, Cd, Pb and Hg were analysed in commonly consumed spices and herbs in Malaysia. The range of As, Cd, Pb and Hg content was 0.24–2.54, 0.23–8.07, 1.54–8.94 and 0.06–0.52?µg?g–1, respectively. The highest concentration of Cd, Pb and Hg in spices and herbs exceeded the maximum permitted proportion, which are 1, 2 and 0.05?µg?g?1, respectively. This study suggests further monitoring of Cd, Pb and Hg on daily consumption of spices and herbs and its toxicological implication for consumers since only the amount of As was lower than the permitted concentration.  相似文献

Two essential amino acids (methionine and tryptophan); anti‐nutritional factors (tannin and trypsin inhibitor) and toxic elements (Pb, Cd, Ni, As, Hg and Cr) were determined spectrophotometrically from five edible wild mushrooms. The tryptophan content was between 1.00 and 1.82 g (100 g)?1 but methionine was low at 0.26–1.38 g (100 g)?1. Tannin content was high (30.3–40.0 mg g?1) but trypsin inhibitor was low (22.0–39.5 TIU g?1). Trace elements analysis reviled Pb (0.34–5.06 mg kg?1) to be the highest of all the trace elements. Cd was (0.06–1.70 mg kg?1), Ni (0.26–2.08 mg kg?1), As (0.17–0.92 mg kg?1), Hg (0.01–0.05 mg kg?1) and Cr (0.04–0.22 mg kg?1). These mushrooms are nutritious but must be well processed to eliminate or at least reduce the levels of tannin and Pb to improve their nutritional values.  相似文献

Accumulation of toxic metals in liver, a rich natural source of essential elements, can present health risks to regular consumers of liver. A total of 35 fresh liver samples of cow, sheep, goat, pig, grass-cutter (Thryonomys swinderianus), gaint rat (Cricetomys gambianus), red deer (Cervus elaphus), chicken and antelope (Antilocapra americana) were obtained from three different markets in Accra and Kumasi, Ghana. Samples were analyzed using atomic absorption spectrometry and an automatic mercury analyzer. Levels of iron in the grass-cutter and pig of 500.5–645.4 mg kg?1 were the highest in the animal livers examined. Mn concentrations were highest in grass-cutter and rat liver, ranging 16.5–30.2 mg kg?1. The safe Cu and Zn permissible limits of 20 and 50 mg kg?1 were exceeded in 70 and 75% of the liver samples, respectively. Generally, for each animal group studied, at least 50% of the sample livers exceeded the Cd permissible limit of 0.5 mg kg?1. The levels of Pb, which ranged 1.3–13.8 mg kg?1, exceeded the proposed European Commission (EC) limit of 0.5 mg kg?1. Care must be taken by regular consumers of the iron-rich animal livers of grass-cutter, pig and rat because they also had the highest levels of Pb (in grass-cutter and pig) and Cd (in grass-cutter, rat and pig). Heavy metals (As, Cd, Co, Cr, Cu, Mn, Ni, Pb and Zn) in various vegetables (cabbage, green onion, lettuce, parsley, rocket, spinach, carrot, onion, potato and cauliflower) from the market in Jordan were measured using inductively coupled plasma-mass spectrometry. As, Cd, Co, Cr, Cu, Mn, Ni, Pb and Zn ranged from 0.009–0.275 mg kg?1 wet weight, 0.004–0.060 mg kg?1, 0.003–0.401 mg kg?1, 0.105–3.51 mg kg?1, 0.15–1.15 mg kg?1, 0.93–14.39 mg kg?1, 0.044–0.702 mg kg?1, 0.072–0.289 mg kg?1 and 2.23–6.65 mg kg?1, respectively. Parsley, followed by spinach, contained the highest concentration of heavy metals. Onion contained high levels of toxic heavy metals. The content of Cu in parsley and spinach and Pb in onion exceeded the Codex limits. However, the daily intake of heavy metals from the tested vegetables was lower than the maximum limits for allowable intake.  相似文献

This study was conducted to investigate the toxic metal content (Pb, As, Cd and Hg) of 52 frequently prescribed herbal medicines and to identify herbal medicines that exceed the Korea Food and Drug Administration (KFDA) maximum limits. A total of 3534 samples, including 1966 domestic samples and 1568 imported samples, were analysed using an Inductively Coupled Plasma-Mass Spectrometer (ICP-MS). Total amounts of Pb, As, Cd and Hg were significantly different between domestic (0.63 mg kg?1) and imported (0.81 mg kg?1) medicines (< 0.05). Among the 52 kinds of samples, 4 kinds of herbs required quality control for Pb and 12 kinds of herbs required quality control for Cd. No sample contained As and Hg above the limits.  相似文献

Toxic and essential elements in 11 different sea cucumber species were determined and compared with daily intake recommendations and maximum allowed levels. The contents of macro-elements contents in dried sea cucumber samples were found to be 25,000–152,000?mg?kg–1 for Na, 4000–8600?mg?kg?1 for Mg, 1100–5200?mg?kg?1 for K, 15,000–68,000?mg?kg?1 and 36,300–251,000?mg?kg?1 for Cl. Trace element concentrations in dried sea cucumber samples were found to be 11–100?mg?kg?1 for Zn, 41–660?mg?kg?1 for Fe, 3–74?mg?kg?1 for Cu, 1.1–16?mg?kg?1 for Mn, 1.4–3.7?mg?kg?1 for Se, 1.1–9.6?mg?kg?1 for Cr, and 0.3–5.1?mg?kg?1 for Ni. All sea cucumber species were rich sources of Na, Cl, Mg, Ca, Fe, Cu, Se and Cr for human consumption. Regarding contaminants, As, Cd and Pb concentrations in dried sea cucumbers were in the ranges of 1.1–6.1, 0.03–0.06 and 0.11–0.69?mg?kg?1, respectively. A survey of the levels of cadmium, lead and arsenic in different types of rice available on the Swedish retail market was carried out in 2001–03. The types of rice included long and short grain, brown, white, and parboiled white rice. The mean levels found were as follows: total As: 0.20 mg kg?1, inorganic As: 0.11 mg kg?1; Cd: 0.024 mg kg?1; and Pb: 0.004 mg kg?1. ICP-MS was used for the determination of As (total and inorganic) after acid digestion. Lead and cadmium were determined using graphite furnace atomic absorption spectrometry (GFAAS) after dry ashing. In countries where rice is a staple food, it may represent a significant contribution in relation to the provisional tolerable weekly intake for Cd and inorganic As.  相似文献

BACKGROUND: Human exposure to heavy metals is attributed to consumption of vegetables raised in polluted soil environment. We examined the concentrations of As, Cd, Co, Cr, Cu, Ni, Pb and Zn in soils and lettuce (Latuca sativa) and amaranthus (Amaranthus caudatus) in 15 garden fields under long‐term wastewater irrigation. RESULTS: The concentrations of As (0.3–2.1 mg kg?1), Cd (0.07–0.3 mg kg?1), Co (4.6–9.1 mg kg?1) and Cr (21.6–36.2 mg kg?1) in the gardens were consistent with background concentrations in soils, but Ni (12.6–25.7 mg kg?1), Cu (12.5–24.6 mg kg?1), Pb (25.7–71.6 mg kg?1) and Zn (52.3–158 mg kg?1) concentrations were double the concentrations normally encountered in arable fields in the region. The concentrations of Cd and As in the vegetables were within safe limits, but Co (0.14–0.67 mg kg?1 fresh weight (fw)) and Ni (1.0–2.7 mg kg?1 fw) concentrations in lettuce were relatively high for leaf vegetables. The concentration of Pb (0.65–4.80 mg kg?1 fw) was above safe limit of 0.3 mg kg?1 fw, while the concentrations of Cu (1.3–2.7 mg kg?1 fw and Zn (10.2–23.6 mg kg?1 fw) were close to the unsafe limits for leaf vegetables. There were no strong linear correlations between soil metal concentrations and bio‐concentrations in the vegetable crops. CONCLUSION: We surmise that leaf vegetables can accumulate metals in their tissues to unsafe levels even when total metal concentrations in these soils are below the allowable concentrations in agricultural soils. Total concentrations of essential (Cu, Zn, Se and Cr) and non-essential (Hg, Cd, Pb and As) trace elements were measured in the flesh and hepatopancreas of Octopodidae (Eledone moschata, Eledone cirrhosa, Octopus salutii), Sepiidae (Sepia elegans, Sepia orbignyana) and Loliginidae (Illex coindeti, Loligo vulgaris) from the Mediterranean Sea. As expected, the hepatopancreas showed higher metal concentrations than flesh; the only exceptions were Hg and As, which were equally distributed in the two tissues. Regarding the edible portion, the highest toxic metal concentrations were in Octopodidae (Hg: 0.44, Cd: 0.49, Pb: 0.10 µg g?1 wet weight) and Sepiidae (Hg: 0.27, Cd: 0.50, Pb: 0.12 µg g?1 wet weight), while Loliginidae tended to accumulate less metal, especially Hg (Hg: 0.11, Cd: 0.30, Pb: 0.05 µg g?1 wet weight). The other elements showed a heterogeneous distribution among the different cephalopod families. Loliginidae showed the highest Se concentrations (1.18 µg g?1 wet weight), Octopodidae of Cu (37.37 µg g?1 wet weight) and Zn (42.00 µg g?1 wet weight) and Sepiidae of As (61.43 µg g?1 wet weight), while Cr was uniformly distributed among the various families (0.38–0.43 µg g?1 wet weight). In these seafoods, the concentrations of essential and non-essential elements were within the prescribed limits set by various authorities, except for Cu and As. Health risks posed by toxic elements to humans via dietary intake of these mollusks were assessed on the basis on Provisional Tolerable Weekly Intake (PTWI), while the estimated intakes of essential elements were compared to Dietary Reference Intakes (RDIs). A 70-g serving of these mollusks was shown to provide a large contribution to Cd intake (0.89 µg kg?1 body weight), corresponding to 35.6% of PTWI. Concerning the essential elements, the consumption of these mollusks made an important contribution to daily dietary intake of Se, Cu and Zn.  相似文献

The concentrations of seven trace elements (As, Cd, Cr, Pb, Se, Cu and Zn) in 93 red mould rice (Monascus) food samples in Taipei, Taiwan, were determined by inductively coupled plasma-mass spectrometry (ICP-MS) after wet digestion. The results, calculated in mg?kg?1 (wet weight) for each sample, revealed the general scenario of food safety in Taiwan: As (0.005–12.04), Cd (<0.0005–2.22), Cr (0.014–6.95), Cu (0.012–8.70), Pb (0.001–0.64), Se (<0.001–1.29) and Zn (0.020–67.02). Three food samples were identified with As concentrations higher than regulatory limits: a dietary supplement sample and a seaweed sample with As concentrations that exceeded the limit of Taiwan's health food standard of 2?mg?kg?1, and a canned eel sample with an As concentration that exceeded the limit of Canada's fish standard of 3.5?mg?kg?1. This study suggests that the estimated intakes of these seven trace elements from the consumption of foods containing Monascus pose little risk, as the trace element contents in the majority of samples were lower than the permissible/tolerable intakes per week according to the guidelines recommended by the Food and Agricultural Organization/World Health Organization (FAO/WHO). Moreover, their concentrations in foods containing Monascus differ widely for different food varieties, suggesting that external contaminants and raw materials are the main sources of trace elements. This study shows that ICP-MS is a simple method proposed for the determination of As, Cd, Cr, Pb, Se, Cu, and Zn in foods containing Monascus.  相似文献

In this study, a total of 35 tree nut samples of walnut, pecan, pine seed, hickory nut and torreya were obtained from 5 farm product markets in Hangzhou, China, and investigated for essential (Cr, Mn, Fe, Mo, Cu, Zn, Se and Sr) and toxic (Al, As, Cd and Pb) elements by inductively coupled plasma–mass spectroscopy. Mean elemental concentrations of different tree nuts were in the following ranges: Cr 0.26–0.78 mg kg–1, Mn 42.1–174 mg kg–1, Fe 33.7–43.9 mg kg–1, Mo 0.11–0.48 mg kg–1, Cu 10.3–17.6 mg kg–1, Zn 21.6–56.1 mg kg–1, Se 0.015–0.051 mg kg–1, Al 1.44–37.6 mg kg–1, As 0.0062–0.047 mg kg–1, Cd 0.016–0.18 mg kg–1 and Pb 0.0069–0.029 mg kg–1. The estimated provisional tolerable daily intake of Al, As, Cd and Pb was much lower than the provisional tolerable daily intake.  相似文献

BACKGROUND: Among seafood products, crustaceans are an important group owing to their nutritional benefits and high market value. The aim of this study was to evaluate the proximate composition as well as essential and non‐essential elements in the edible muscle of Nephrops norvegicus (Norway lobster). RESULTS: The studied crustacean showed a high protein level of about 210 g kg?1 and a mineral level of about 24 g kg?1. The pattern for the elements studied was Cl > Na > K > P > S > Ca > Mg > Br > Fe > Sr ≈ Zn > Cu > Mn > Rb > Se > Ni > Cr. Regarding non‐essential elements, the average total Hg content was 0.40 mg kg?1, but two samples exceeded the legal limit set by the European Union (EU) for Hg in crustaceans (0.50 mg kg?1). The levels of Pb and Cd found in all samples were below the EU limits (0.50 mg kg?1 for both metals). CONCLUSION: Nephrops norvegicus is a good source of protein and contains most minerals at levels sufficient to satisfy the dietary reference intake. The amounts of Pb and Cd are not a concern. Hg levels indicate some contamination; however, taking into account the type of consumption of this species, it can be concluded that this does not represent a risk in terms of the human diet. Concentrations of mercury (Hg) in swordfish (Xiphias gladius) present a food safety problem for many countries. This study analyses total Hg (t-Hg) concentrations in 27 samples of swordfish marketed in Spain in 2005 and in their bioaccessible fractions (soluble concentration in gastrointestinal medium), obtained after applying an in vitro digestion method. Methylmercury (MeHg) was also determined in the bioaccessible fractions. t-Hg concentrations in the samples were 0.41–2.11 mg kg?1 wet weight, with a mean of 0.96 ± 0.47 mg kg?1 wet weight. A total of 37% of the samples exceeded the Hg limit set by Spanish legislation (1.0 mg kg?1 wet weight). Bioaccessible t-Hg concentrations were 0.17–1.72 mg kg?1 wet weight (0.63 ± 0.4 mg kg?1 wet weight), corresponding to 38–83% (64% ± 14%) of t-Hg. Bioaccessible MeHg concentrations, representing 94% of the bioaccessible t-Hg concentrations, were 0.16–1.53 mg kg?1 wet weight, with a mean of 0.49 ± 0.32 mg kg?1 wet weight. Children and adults who regularly consume this product in Spain have Hg and MeHg intakes that exceed the tolerable daily intake limits recommended by the Food and Agricultural Organization/World Health Organization (FAO/WHO) and US Environmental Protection Agency (USEPA). ABSTRACT

In this study, the levels of arsenic (As), cadmium (Cd) and lead (Pb) have been determined in the flesh of two species of fish, sardine (Sardina pilchardus) and swordfish (Xiphias gladius) fished in the Algerian coast. Quantification of As, Cd and Pb was carried out using an ICP-MS method and the results were compared with the thresholds set by national and international regulatory bodies. In a further step, the risk to consumers was assessed using estimated daily intake (EDI), target hazard quotient (THQ) and hazard index (HI).The average concentration of As and Pb was higher in sardine (1.82; 0.10 mg kg?1 w.w., respectively), than in swordfish (1.10 mg kg?1 w.w.; not determined), whereas the concentration recorded for Cd was the same for both species (0.01 mg kg?1 w.w.). These concentrations are below maximum limits set in regulations. The THQs and HI were widely below 1. The consumption of these fish does not pose risk to the consumers.  相似文献

Concentrations of eight heavy metals (As, Cd, Cr, Cu, Hg, Ni, Pb and Zn) were determined in economically important bivalve species: oyster (Ostrea edulis), wedge clam (Donax trunculus), manila clam (Ruditapes philippinarium) and warty clam (Venus verrucosa) from the Marmara and Aegean seas. Samples were collected seasonally between 2008 and 2009. Metal levels of bivalves were found in the following ranges: As 0.02–3.40, Cd 0.02–2.80, Cr 0.19–0.82, Cu 0.82–25.06, Hg?<?LOD–0.12, Ni 0.09–0.73, Pb 0.05–4.16 and Zn 6.85–899?mg?kg?1. The most abundant elements were Zn?>?Cu?>?As. In addition, the results showed that oysters had the highest concentrations of Zn in all seasons. The next abundant heavy metal detected was Cu in oyster and other clam species. It was concluded that in the future, these metals should be monitored regularly.  相似文献

A simple procedure for the sequential determination of Cd, Cu and Pb in tea leaves by slurry introduction to thermospray flame furnace atomic absorption spectrometry was developed. Concentration levels of As, Cd, Hg, Pb, Tl, Sn, Sb Co, Cu, Mn, Se, Zn, Cr, Ni and Mo in different types of rice cultivated in irrigated fields in Brazil were evaluated. Arsenic, Cd, Pb, Zn, Mn and Cu were found in higher concentrations in brown rice samples, suggesting the prevalence of these elements in the bran. Meanwhile, lower concentrations of Pb, Mo, Cr, Se and Co were found in parboiled rice. Organic rice did not differ of cultivated conventionally rice. Thallium, Hg and Sb were not detected in any rice sample whose limits of detection were 0.7 μg kg?1, 2.5 μg kg?1 and 8 μg kg?1, respectively. The concentrations of the investigated elements were compared with those reported for polished rice and brown rice from other countries, unveiling concentrations in general at the same level for rice produced at non-contaminated sites.  相似文献

Total mercury (THg) levels in 440 pairs of milled rice samples and brown rice samples from 15 major rice grain-producing provinces of China were measured and the associated health risk via rice consumption for different age categories of Chinese population was also assessed. THg contents were measured by a direct mercury analyser and the limit of detection (LOD) was 1.5 μg kg?1. The THg levels for milled rice samples and brown rice samples varied from non-detected to 17.8 μg kg?1 and 1.5 to 25.4 μg kg?1, respectively, with a mean level of 3.4 μg kg?1 and 4.9 μg kg?1, respectively. The THg levels in all milled and brown rice samples were generally low, except three brown rice samples having concentrations above the legally set value for cereals (20 μg kg?1 Hg). THg intakes for different age categories were estimated according to THg content and corresponding rice consumption and the associated health risk was evaluated by the corresponding provisional tolerable weekly intake (PTWI) for THg (5.0 μg kg?1 bw week?1), which was established by the Joint FAO/WHO Expert Committee on Food Additives (JECFA). The 50th percentile of the THg intakes via milled rice and brown rice consumption for different age categories was in the range 0.09–0.19 μg kg?1 bw week?1 and 0.14–0.27 μg kg?1 bw week?1, respectively, well below the PTWI, suggesting that the associated health risk is relatively low. However, the 99.9th percentile of the THg intakes for 2–4-year-old children amounted up to 20.6% of the PTWI (milled rice) and 29.5% of the PTWI (brown rice), which deserves attention.  相似文献

The aim of this study was to determine the levels of copper (Cu), manganese (Mn), zinc (Zn), iron (Fe), cadmium (Cd), lead (Pb), chromium (Cr), nickel (Ni) and selenium (Se) in sunflower honeys obtained from Thrace Region of Turkey. Trace and toxic element determination was performed by atomic absorption spectrometry after microwave digestion. The accuracy of the method was checked by the standard reference material, NIST‐SRM 1515 Apple leaves. The maximum contents of trace and toxic elements in honey samples from Kesan (polluted area) were found as 0.46, 0.82, 1.98, 14.0, 9.86 μg kg?1, 0.48 mg kg?1, 137, 115 and 290 μg kg?1 for Cu, Mn, Zn, Fe, Cd, Pb, Cr, Ni and Se, respectively.  相似文献

A survey of Iranian waters, sampled from 2010 to 2013, is presented. A total of 128 water samples from 42 different brands of bottled mineral and drinking water were collected and analysed for contamination levels of lead (Pb), cadmium (Cd), copper (Cu), arsenic (As) and mercury (Hg). Determinations were performed using a graphite furnace atomic absorption spectrophotometer for Pb, Cd and Cu, a hydride vapour generation as well as an Arsenator digital kit (Wagtech WTD, Tyne and Wear, UK) for As and a direct mercury analyser for Hg. Arsenic concentration in six bottled gaseous mineral samples was higher than the related limit. Regardless of these, mean concentrations of Pb, Cd, Cu, As and Hg in all types of water samples were 4.50 ± 0.49, 1.08 ± 0.09, 16.11 ± 2.77, 5.80 ± 1.63 and 0.52 ± 0.03 µg L?1, respectively. Values obtained for analysed heavy metals in all samples were permissible according to the limits of national and international standards.  相似文献
