研究了乳酸菌、葡萄球菌和酵母菌混合菌种制备发酵鱼肉香肠的加工工艺.筛选出具有良好发酵性能的混合菌种和配比(杆菌B265∶球菌C116∶酵母菌0408为1∶2∶2),并通过单因素实验、Plackett-Burman实验和正交实验对发酵鱼肉香肠的工艺参数进行了显著性分析和优化,得出发酵鱼肉香肠的最佳工艺条件为:盐含量2%、糖含量2%、玉米淀粉含量8%、发酵温度37℃.文章进一步研究了混合菌种联合发酵对鱼肉香肠产品质量的影响,与未发酵的鱼肉香肠相比,发酵鱼肉香肠的油脂氧化和腐败变质得到延缓,鱼肉中氨基酸等小分子物质的含量增加,表明本发酵工艺有助于提高鱼肉香肠的营养价值和保藏性能. 相似文献

对市售火腿肠、肉片、肉松、腊肠和鱼片5类19种熟食肉鱼制品的氧化产物丙二醛(MDA)和亚硝酸盐(NO2)这2种致癌物的含量进行了测定和分析。结果表明,只有1种鸡肉卷火腿肠的NO2残留量(36mg/kg)超标,其余熟食制品的NO2含量均在允许安全范围。猪肉和牛肉火腿肠的MDA值均低于05mg/kg,未出现任何异味,表现出很高的安全性,但是脂肪和蛋白质含量普遍偏低,影响了口感和应有的品质。鸡肉火腿肠的MDA值在05~10mg/kg范围内,出现氧化异味。肉片、鱼片、肉松及腊肠制品的MDA值在抽样时多数都超过10mg/kg,氧化安全期与标签保质期相差42~177d,对这类熟食肉鱼制品在标签保质期内所存在的氧化安全隐患,应引起足够的重视。 相似文献

The northern European dry-cured meat sausage technique was used to produce a fermented and dried product from fish with a high content of polyunsaturated (PUFA) omega-3 fatty acids. Different ratios of salmon (the fatty fish) and saithe (the lean fish) with or without milk protein-based ingredients were fermented with Lactobacillus sakei. Since marine oils are liquid, even at low temperatures, a sliceable and acceptable firm texture without oil leakage could only be obtained by the use of a protein content at least 2.4 times higher than the fat content of the recipe. The product made from only salmon and saithe with 7.5% fat gave fewer and larger oil particles compared to a product where also milk protein was added.Industrial relevanceFish is generally considered to contain many compounds that are beneficial to health; however, many people eat little or no fish. To increase the fish intake, the development of new, convenient fish products that are easy to use and eat, is desirable. By use of the northern European dry-cured meat sausages technology a new kind of fermented, smoked, and dried fish product resembling a firm and sliceable dry-cured meat sausage was produced. 相似文献

The first experiment evaluated the effect of solid carbon dioxide (dry ice) addition to hot-boned meat, in different proportions, upon the keeping quality of fresh pork sausage patties. Dry ice had some negative effects at levels of 20% to 40%, such as hardening and colour fading of samples, although it increased water-holding capacity of the sausage. In the second experiment three proportions of hot-boned meat and chilled meat were evaluated as a means to extend the retail storage time of fresh pork sausage links. Hot-boned pork was treated by three methods: freezing the meat before grinding, salting and freezing, and salting plus dry ice addition. The results favoured the use of 50% hot-boned meat and 50% chilled meat, for which the lowest hardness and oxidation values were obtained. Microbial counts and hue values showed no significant variation among the three treatments. Salting and freezing hot-boned meat before grinding was the method which produced the best overall quality. 相似文献

以白鲢鱼肉为主要原料,按一定比例添加蚬子肉、猪肉和绿茶等,应用双螺杆挤压技术研制了蚬子-白鲢鱼肉香肠。通过采用单因素和正交实验,以产品质量感官评定和质构特性(TPA)为评价指标,研究猪肉肥瘦比、绿茶添加量和蚬子添加量对香肠品质的影响。结果表明:蚬子添加量对香肠的品质影响最大,猪肉肥瘦比与绿茶添加量次之,最终获得的产品最优配比为猪肉肥瘦比为4∶6,绿茶的添加量为1%,蚬子的添加量为10%,以此最佳配方加工的蚬-鲢鱼肉香肠口感细腻、风味独特,各项理化指标均符合国家标准。 相似文献

The properties of sausage emulsions, containing up to 30% fish proteins in respect to total N × 6.25, were characterized by viscosity and water holding capacity and after heating by yield, quantity of expressible fluid, water holding capacity, yield limit, creep curve, and sensory quality. Substitution of 15% meat protein by fish protein does not decrease the sausage yield nor impair the rheological properties of the formulation or of the cooked product. 本文主要研究以冷却猪肉和冷冻猪肉加工乳化香肠后色差、蒸煮损失、质构等品质的差异,并采用低场核磁共振技术,分析冷却猪肉和冷冻猪肉香肠中水分分布和水分迁移的特征,得到冷却猪肉和冷冻猪肉两种原料来源对香肠保水性的影响。与冷冻猪肉香肠相比,冷却猪肉香肠有较高的L*值、硬度、弹性、内聚性和咀嚼性等,有较低的a*值、b*值和蒸煮损失。低场核磁共振结果表明:冷却猪肉香肠中T22弛豫时间较短,T21的峰比例增加,而T22的峰比例降低,说明可移动水的比例增加。综上,使用冷却猪肉加工乳化香肠能够提高保水性和产品品质。 相似文献
