The popularity of tea is increasing on the global aspect because of its role as a significant source of phenolic compounds in human diet. The purpose of this study was to determine and compare the phenolic and methylxanthine composition as well as the antioxidant capacity of white, green, Oolong and black teas, and chamomile and linden infusions depending on the extraction conditions (water temperature and multiple extractions). The content of total phenols and total flavonoids in teas and herbal infusions was determined by using UV/vis spectrophotometric methods, whilst individual polyphenols (phenolic acids and flavan-3-ols) and methylxanthines were identified and quantified by using high performance liquid chromatography coupled with photodiode array detection. In order to determine the antioxidant capacity of teas the 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS) radical scavenging assays were applied. The highest content of phenolic compounds was determined in green tea, which also demonstrated the highest antioxidant capacity, whilst herbal infusions were characterised with the lowest content of phenolic compounds, as well as the lowest antioxidant capacity. The highest content of caffeine, as the most abundant methylxanthine, was determined in black tea. Extraction at 100 °C is the most effective to extract the highest content of polyphenols and methylxanthines in all studied teas.  相似文献

Herbal teas have become popular as alternatives to caffeinated beverages during past two decades. However, toxicological studies of herbal teas have been limited and the safety of herbal teas thus remains unknown. We focused on the estrogenic activities of herbal teas since some of their ingredients are similar to those used in herbal remedies for menopause relief and therefore contain phytoestrogens. To investigate the potential estrogenic activity of extracts prepared from herbal tea mixtures commercially available and to provide useful information for the safety assessment of those products, we initially screened the estrogenic activity in extracts of 15 different herbal teas by an assay using recombinant yeast cells expressing the human estrogen receptor (YES). A distinct estrogenic activity was thus detected in the ethanolic extracts from four herbal tea mixtures. Licorice root was specified as a ingredient responsible for the estrogenic activity in those extracts. In contrast, the aqueous extracts of all herbal tea mixtures we tested exhibited distinct estrogenic activity in YES, thus suggesting the existence of various ingredients that contain estrogenic constituents extractable with water. Among them, the extract of peppermint tea exhibited the highest estrogenic activity. The estrogenic activity in extracts of herbal tea mixtures and specified ingredients were thereafter confirmed by a reporter assay system using transiently transfected HEK293 cells.  相似文献

The changes in the stability of antioxidant capacity with time and its relation to the phenolic content were evaluated in eight Indian herbal teas. These herbal teas are claimed to be antistress, immunomodulator, anti-aging, anti-inflammatory, appetizer, stimulant, blood purifier, energizer, antidepressant, antidiabetic, rejuvenative, analgesic, antiviral, nervine, diuretic, antihypertensive and memory enhancer. Antioxidant capacity was determined over a period of 15 months from the date of their procurement using assays for SOD mimetic activity, LPO inhibitory capacity and total thiol content, which decreased positively with time. Total phenolic content was determined spectrometrically according to the Folin-Ciocalteu method and calculated as gallic acid equivalents (GAE). Herbal teas with higher phenolic content showed a comparatively less decline in antioxidant capacity. The SOD mimetic activity values in control samples (at the time of procurement) were seen to be in the range of 54.63–93.64 units/min/mg of extract which after 15 months of storage decreased upto 7.4-folds in some samples. LPO inhibitory capacity was observed upto 96.75% in herbal tea E at the time of procurement which dropped to 63.85% inhibition of MDA formation/5μl of extract after 15 months. In case of total thiol, the values were seen in the range of 0.55–1.71 mg/g and after 15 months it was from 0.12 to 0.21 mg/g. In all these cases high antioxidant activity was seen in the samples with higher phenolic content which also showed comparatively less decline in antioxidant capacity after considerable storage time. The results have significance, as most of the herbal teas available in the local markets in India do not carry any information regarding the period of use without decline in its beneficial effects.  相似文献

Experimental evidence has shown that the polyphenols in black tea exhibit strong antioxidant potential in vitro and in vivo. The objective of the present study was to analyse and compare the total antioxidant capacity (TAC) of five brands of tea and to evaluate whether the addition of different varieties of soya milk decreased the TAC compared to semi-skimmed bovine milk. Each of the teas analysed was a significant source of antioxidants (7796–10,434 μmol/l FRAP). The addition of milk lowered the TAC of each of the teas analysed. When compared to tea with semi-skimmed bovine milk, each of the five teas analysed had either significantly higher antioxidant values or no change after the addition of soya milk. The addition of soya milk to black tea may be a useful alternative to semi-skimmed bovine milk if wishing to maintain the overall antioxidant potential of the tea infusion.  相似文献

Ovotransferrin-derived peptides showed synergistic effects with vitamin C, epigallocatechin gallate (EGCG), and caffeic acid, but not quercetin in our previous report. In this study, we further investigated the interactions between ovotransferrin-derived peptides and teas, based on the oxygen radical absorbance capacity (ORAC) assay. Our results showed that there was no significant difference in ORAC values among green, oolong, and black teas. For all the samples, 80% methanol extracts possessed better antioxidant capacity than hot water extracts. The antioxidant capacity of teas were improved by adding either ovotransferrin hydrolysate or its purified peptide IRW; however, adding hydrolysate did not improve antioxidant stability of teas. ORAC values of both teas and hydrolysate added teas were decreased during 22weeks of storage, while samples stored at 4°C exhibited higher antioxidant capacity than those stored at room temperature. This suggested that ovotransferrin hydrolysate could be used as functional food ingredients in enhancing antioxidant capacities of foods, which would benefit human nutrition and health.  相似文献

A new popular way of making tea, especially in Taiwan, is to steep leaves in cold water. Here we investigate whether antioxidant activity of teas may be affected by hot or cold water steeping and if this correlates with their polyphenol content and metal-chelating activity. A set of five loose tea samples, consisting of unblended and blended teas, was analysed following their infusion in either hot water (90 °C, 7 min) or cold water (room temperature, 2 h). Antioxidant activity, measured as hydrogen-donating ability, using the ABTS· and DMPD assays, showed no significant differences among hot or cold teas, except in the case of white tea, where significantly higher values were obtained after cold water steeping, a recurrent finding in this study. The antioxidant activity of the teas correlates well with their total phenolic content and metal-chelating activity. Cold teas were, however, generally better inhibitors of in vitro LDL conjugated diene formation and of loss in tryptophan fluorescence. The results of this study contribute to gaining further knowledge on how the potential health benefits of this popular beverage may be maximised by the different methods of preparation.  相似文献

Herbal teas, i.e., extracts of herbs, are popular because of their fragrance and antioxidative activity. Since the antioxidative activity comes mainly from polyphenols, total polyphenol concentrations and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging activities in herbal teas were measured and compared. Levels of H2O2 in the teas were also examined, since the production of H2O2 in beverages such as coffee and green tea, has been reported. Only a small amount of H2O2 was detected in the herbal teas just after their preparation with hot water. However, H2O2 was gradually produced during incubation at 25 °C after extraction with hot water, especially when the teas were incubated in phosphate buffer at pH 7.4. To examine the anti-H2O2 activity of herbal teas, various teas were added to a catechin-enriched green tea, which produce much H2O2, and they were incubated at 25 °C for one day. Addition of hibiscus and thorn apple tea decreased the production of H2O2 in the catechin-enriched green tea, possibly because of a lowering of the pH of the mixture.  相似文献

Dehydro pyrrolizidine alkaloids (dehydro PAs) are carcinogenic phytotoxins prevalent in the Boraginaceae, Asteraceae and Fabaceae families. Dehydro PAs enter the food and feed chain by co-harvesting of crops intended for human and animal consumption as well as by carry-over into animal-based products such as milk, eggs and honey. Recently the occurrence of dehydro PAs in teas and herbal teas has gained increasing attention from the EU, due to the high levels of dehydro PAs found in commercially available teas and herbal teas in Germany and Switzerland. Furthermore, several tropane alkaloids (TAs, e.g. scopolamine and hyoscyamine) intoxications due to the consumption of contaminated herbal teas were reported in the literature. The aim of the present study was to determine the dehydro PAs and TAs levels in 70 pre-packed teabags of herbal and non-herbal tea types sold in supermarkets in Israel. Chamomile, peppermint and rooibos teas contained high dehydro PAs levels in almost all samples analysed. Lower amounts were detected in black and green teas, while no dehydro PAs were found in fennel and melissa herbal teas. Total dehydro PAs concentrations in chamomile, peppermint and rooibos teas ranged from 20 to 1729 μg/kg. Except for black tea containing only mono-ester retrorsine-type dehydro PAs, all other teas and herbal teas showed mixed patterns of dehydro PA ester types, indicating a contamination by various weed species during harvesting and/or production. The TA levels per teabag were below the recommended acute reference dose; however, the positive findings of TAs in all peppermint tea samples warrant a more extensive survey. The partially high levels of dehydro PAs found in teas and herbal teas present an urgent warning letter to the regulatory authorities to perform routine quality control analysis and implement maximum residual levels for dehydro PAs.  相似文献

Abstract: Recent investigations have associated white teas with anti-carcinogenic, immune-boosting, and antioxidative properties that may impact human health in a manner comparable to green teas. An in-depth chemical analysis of white tea types was conducted to quantify polyphenols and antioxidant potential of 8 commercially available white teas, and compare them to green tea. Extraction and HPLC protocols were optimized and validated for the quantification of 9 phenolic and 3 methylxanthine compounds to examine inter- and intra-variation in white and green tea types and subtypes. A sampling strategy was devised to assess various subtypes procured from different commercial sources. Variation in antioxidant activity and total phenolic content (TPC) of both tea types was further assessed by the 1-1-diphenyl-2-picrylhydrazyl (DPPH) and Folin–Ciocalteau (F–C) assays, respectively. Total catechin content (TCC) for white teas ranged widely from 14.40 to 369.60 mg/g of dry plant material for water extracts and 47.16 to 163.94 mg/g for methanol extracts. TCC for green teas also ranged more than 10-fold, from 21.38 to 228.20 mg/g of dry plant material for water extracts and 32.23 to 141.24 mg/g for methanol extracts. These findings indicate that statements suggesting a hierarchical order of catechin content among tea types are inconclusive and should be made with attention to a sampling strategy that specifies the tea subtype and its source. Certain white teas have comparable quantities of total catechins to some green teas, but lesser antioxidant capacity, suggesting that white teas have fewer non-catechin antioxidants present. Practical Application: In this investigation white and green teas were extracted in ways that mimic common tea preparation practices, and their chemical profiles were determined using validated analytical chemistry methods. The results suggest certain green and white tea types have comparable levels of catechins with potential health promoting qualities. Specifically, the polyphenolic content of green teas was found to be similar to certain white tea varieties, which makes the latter tea type a potential substitute for people interested in consuming polyphenols for health reasons. Moreover, this study is among the first to demonstrate the effect subtype sampling, source of procurement, cultivation, and processing practices have on the final white tea product, as such analysis has previously been mostly carried out on green teas.  相似文献

Rose Petal Tea as an Antioxidant-rich Beverage: Cultivar Effects   总被引:2,自引:0,他引:2  
ABSTRACT Twelve rose cultivars were selected by field tasting as potential sources of edible flowers. Hot water infusions (teas) of air‐dried petals of these cultivars were assayed for antioxidant activity, total phenols, and total anthocyanins contents. Their composition was analyzed by high‐performance liquid chromatography (HPLC). Green tea was tested in parallel as a reference antioxidant‐rich beverage. Rose petal teas from different cultivars exhibited scavenging capacity toward 2,2′‐azino‐bis‐(3‐ethylbenzothiazoline)‐6‐sulfonate cation radical (ABTS+) ranging between 712.7 and 1770.7 μM Trolox equivalents (TE) per gram of dry petals, as compared with 1227.6 μM TE/g dry weight in the green tea. The range of total phenols content in rose teas was 50.7 to 119.5 mg gallic acid equivalents (GAE) per gram of dry matter, as compared with 62.1 mg GAE/g dry weight in the green tea. The rose teas were rich in free gallic acid. The highest values of antioxidant activity, total phenols, and gallic acid contents were found in the cultivars San Francisco, Katharina Zeimet, and Mercedes and in the essential‐oil‐bearing rose Rosa damascena. The correlation coefficients between antioxidant activity, on the 1 hand, and the contents of total phenols and of gallic acid in various rose cultivars, on the other hand, were 0.79 and 0.81, respectively. No clear relationship between anthocyanin level and radical‐scavenging activity was revealed. Teas from different rose cultivars significantly differed in their sensory properties. It was concluded that dried rose petals may be used for preparing antioxidant‐rich caffeine‐free beverages, either separately or in combination with other herbal materials.  相似文献

研究野菊花乙醚提取物的基本理化性质及其抗氧化特性。结果表明:野菊花乙醚提取物中类胡萝卜素含量为(165.51±1.42)mg/g,β-胡萝卜素含量为(2537.96±11.57)μg/g;抗氧化实验显示提取物均能够有效阻止花生油、大豆油、葵花籽油、玉米油的脂质快速氧化,且具有剂量效应关系。野菊花乙醚提取物是一种潜在的油脂氧化保护剂,具备一定的抗氧化能力。  相似文献

Tea is one of the most widely consumed non‐alcoholic beverages in the world next to water. It is classified as Camellia sinensis and non‐Camellia sinensis (herbal teas). The common bioactive compounds found mainly in green teas are flavan‐3‐ols (catechins) (also called flavanols), proanthocyanidins (tannins) and flavonols. Black tea contains theaflavins and thearubigins and white tea contains l ‐theanine and gamma‐aminobutyric acid (GABA), while herbal teas contain diverse polyphenols. Phytochemicals in tea exhibit antimicrobial, anti‐diabetic and anti‐cancer activities that are perceived to be helpful in managing chronic diseases linked to lifestyle. Many of these phytochemicals are reported to be biologically active when combined. Knowledge of the synergistic interactions of tea with other teas or herbs in terms of biological activities will be of benefit for therapeutic enhancement. There is evidence that various types of teas act synergistically in exhibiting health benefits to humans, improving consumer acceptance and economic value. Similar observations have been made when teas and herbs or medicinal drugs were combined. 本研究采用脂多糖(LPS)诱导的细胞炎症模型和H2O2诱导的细胞氧化应激模型,对山银花不同萃取部位进行抗炎、抗氧化活性评价,并通过超高压液相色谱串联四极杆飞行时间质谱(UPLC-Q-TOF-MS)分析具有显著活性的萃取部位的化学成分。结果表明,山银花甲醇提取物及其各萃取部位(50 μg/mL)均有不同程度的抗炎、抗氧化活性。其中水饱和正丁醇萃取部位的抗炎活性最强,对RAW264.7细胞内NO、TNF-α、IL-6等炎症因子的抑制率分别达66.40%、13.14%、79.66%,初步鉴定该部位中的17个有机酸类和皂苷类成分;乙酸乙酯萃取部位的抗氧化能力最强,可对RIN细胞中抗氧化酶SOD、GSH、CAT三种抗氧化因子的活性分别提高2.51、4.40、8.89倍,初步鉴定该部位中的12个有机酸类成分。因此,有机酸和皂苷类成分可能是山银花具抗炎、抗氧化活性的主要物质基础。本文为进一步阐明山银花具生物活性的物质基础及开发利用提供数据支撑。  相似文献

ABSTRACT:  To elucidate the health benefit of herbal teas on the cytotoxicity induced by H2O2 in V79-4 cells, herbal extracts and its flavonoids were tested using lactate dehydrogenase release and determining intracellular reactive oxygen species generation and antioxidant activity with superoxide radical scavenging assay. Significant decrease in cell viability was observed on V79-4 cells treated with H2O2 (1 mM), while herbal extracts and its flavonoids including catechin and epigallocatechin gallate prevented the LDH release from H2O2 cytotoxicity. Total catechin contents of green tea (65.6 mg/g of dry matter) were significantly higher than other herbal teas (35.8 to 1.2 mg/g of DM). The relative concentration of the 4 major tea catechins ranked EGCG > EGC > EC > C. Green tea exhibited the lowest IC50 values (2 g fresh herb/100 mL) of superoxide radical scavenging activity among the tested herbal tea, which indicates powerful antioxidant activity in O2·− radicals scavenging, followed by black tea, dandelion, hawthorn, rose hip, chamomile.  相似文献

Oxidative stress caused by the production of excess nitric oxide (NO) during infection or inflammation has been implicated in the pathogenesis of several diseases, including cancer, diabetes and renal disease. Accordingly, the scavenging of NO radical or/and suppression of NO production by mitogen-activated cells may be promising indicators in screening healthy food. In this work, the NO-scavenging and NO-suppressing activities of different herbal teas were determined and compared with those of green tea. All of the tested herbal teas revealed NO-scavenging and NO-suppressing activities. The NO-scavenging activity of herbal teas can be ranked by the IC50, the concentration of the tested herbal tea required to quench 50% of NO radicals released by sodium nitroprusside. The activities follow the order: green tea > rosemary, sweet osmanthus, rose and lavender > jasmine, lemongrass and daisy. The NO-suppressing activity was evaluated, based on the suppressing effect of herbal teas on the production of NO by LPS-activated RAW 264.7 macrophages. Experimental results indicated that green tea and rosemary had IC50 values of less than 500 μg/ml, and were proven to be good NO-suppressors, whereas lavender, sweet osmanthus, lemongrass, rose, daisy and jasmine had IC50 values that exceeded 500 μg/ml, and were classified as rather poor NO-suppressors. In conclusion, consumption of herbal teas promotes the NO-scavenging and NO-suppressing activities of the diet, even though their activities are weaker than that of green tea.  相似文献

ABSTRACT:  Cronobacter  is a new genus containing 5 species previously known as  Enterobacter sakazakii . The popularity of "natural" substances and alternative medicine has extended the use of natural antimicrobials and herbs to foods, and some herbs are claimed to relieve gastric disturbances in infants. The present study investigated the antimicrobial activity of bovine lactoferrin (LF) and  Cronobacter  survival in commercial herbal infant teas (HITs) reconstituted with water at different temperatures.  Cronobacter  cells were able to grow in all reconstituted HITs at 37 or 21 °C after 6 h. A 4-log reduction in  Cronobacter  was achieved by reconstituting herbal infant tea at ≥ 60 °C. LF was able to reduce  Cronobacter  species viability in herbal infant tea. No viable cells were recovered after 4 h at 37 °C in the presence of ≥5mg LF/mL. The bactericidal activity of LF was reduced at lower concentrations and lower temperatures. This study demonstrates that if present in reconstituted herbal infant tea,  Cronobacter  can grow and this may compromise the safety of these products. Therefore, addition of LF to reconstituted HIT may be a promising approach for the effective control of this organism.
Practical Application:  Cronobacter  species can be isolated from herbal teas, and these products are claimed to relieve gastric disturbances in infants. This study demonstrates that  Cronobacter  cells present in reconstituted herbal infant teas (HITs) can grow if not held at acceptable temperatures. It was shown that reconstitution of these tea formulas with ≥ 60 °C water reduced the potential risk from  Cronobacter . Furthermore, use of lactoferrin (LF) may be a promising approach for effective control of these organisms in HIT held at nonrefrigeration temperatures (10 to 37 °C) for short periods.  相似文献

The aim of this study is to clarify whether sennosides are contained in the leaf of Malva verticillata L., and then to clarify the source of sennosides in health teas including malva leaves. The identification and determination of sennosides were performed with thin layer chromatography and high performance liquid chromatography. The leaf of Malva verticillata L. did not contain sennosides A or B and could be easily distinguished from senna leaf. Our previous report showed that sennosides are contained in weight-reducing herbal teas including malva leaves, and that senna leaf is a herbal component in some teas. Furthermore, in 10 samples of health tea including malva leaves that were bought last year, the smallest amount of sennosides was 6.1 mg/bag, and all health teas including malva leaves contained the leaf and midrib of senna. We suggest that sennosides A and B are not contained in the leaf of Malva verticillata L., and that the sennosides in health teas including malva leaves are not derived from malva leaf but from senna leaf.  相似文献

目的:通过比较月季花不同采收期总黄酮含量与其抗氧化活性,确定月季花的最佳采收期,为月季花临床用药的有效性奠定理论基础。方法:采用回流提取法提取月季花提取物,紫外分光光度法测定月季花总黄酮含量,以清除1,1-二苯基-2-苦基肼自由基(DPPH·)及羟基自由基(OH·)的能力来评价不同采收期月季花抗氧化活性。结果:不同采收期总黄酮含量变化为:4月份>5月份>9月份>10月份>11月份>6月份>7月份>8月份。以4月份采收月季花总黄酮含量最高,含量达到(152.28±1.69) mg/g。不同采收期月季花提取物均有较好的抗氧化活性,其中7月份采收的月季花提取物体外抗氧化活性最强。结论:月季花提取物中总黄酮含量与其抗氧化活性正相关,但其抗氧化活性受采收期和提取物中的其他杂质的影响。  相似文献

After water, tea is considered to be one of the most consumed drinks worldwide. To get the maximum benefit from the whole‐leaf teas, the manufacturers provide instruction that these teas can be steeped 2–3 times over 6–8 h. In this study, the effect of consecutive steeping on radical‐scavenging ability of whole leaf green tea (unfermented), oolong tea (partially fermented) and black tea (fully fermented) was determined. Green tea showed the highest level of antioxidant activity, total phenolic and flavonoid content followed by oolong tea and black tea irrespective of the number of steeping done. The result also demonstrated that re‐steeping reduced the antioxidant potential of teas. Moreover, it was revealed that green tea is the best candidate for re‐steeping followed by oolong and then black tea.  相似文献

Teas represent a rich source of dietary antioxidants. This paper describes analysis of the antioxidant potential of individual tea phenolics using an on-line high-performance liquid chromatography (HPLC) method. Tea phenolics from Kenyan green and black teas were identified using liquid chromatography--mass spectrometry (LC-MS(n)) in conjunction with the analysis of their 2,2'-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid (ABTS+) radical scavenging ability. Antioxidant potential of flavan-3-ols, caffeoylquinic acids, flavonols, and theaflavins was assessed in comparison to the synthetic vitamin E analogue Trolox. (-)-Epigallocatechin gallate was identified as the most potent antioxidant with a Trolox equivalent antioxidant capacity (TEAC) value of 3.0, contributing approximately 30% of the total antioxidant capacity of green tea. Theaflavins retained antioxidant capacity similar to that of (-)-epicatechin monomers whilst conjugated flavonols did not contribute significantly to the antioxidant capacity of either green or black tea. After HPLC analysis of the antioxidant capacity of phenolics in black tea some 80% of antioxidant activity remained unaccounted for indicating the potential importance of thearubigens as antioxidants in black teas.  相似文献
