The activities of antioxidant enzymes—copper, zinc- and manganese-superoxide dismutase (CuZnSOD and MnSOD), catalase (CAT), glutathione peroxidase (GSH-Px), glutathione S-transferase (GST) and glutathione reductase (GR)—were examined in the liver, heart, small intestine and brain, after supplementation with chelated forms of Cu and Zn. In the supplemented animals increased activity of CuZnSOD were found in the liver and heart. Activity of MnSOD and GSH-Px in the heart and GSH-Px in small intestine was decreased. After 43 days of Cu and Zn supplementation no changes in enzymes activity in the rats brain were found. The increased CuZnSOD activity in liver and heart after supplementation may be due to increased levels of the accumulation of excess Cu and Zn in these tissues. Decreased activity of other antioxidant enzymes could be the consequence of establishing a new antioxidant homeostasis, as Zn and Cu may act as antioxidants. 相似文献

We examined the effects of exogenous myoglobin, a bivalent chelator, and nitrite on Zn protoporphyrin IX (ZPP) formation by using model systems. ZPP was formed in a model solution without addition of exogenous myoglobin. After incubation, the amount of ZPP in a model solution was increased but that of heme was not decreased compared with the amounts before incubation. Protoporphyrin IX (PPIX) instead of ZPP also accumulated in a model solution with addition of EDTA, but the amount of heme was not reduced. These results suggested that ZPP was not formed by the Fe–Zn substitution in heme but was formed by the insertion of Zn into PPIX, which was formed independently. The fact that the effects of various factors in model systems with/without addition of a bivalent chelator were similar suggested that ZPP formation was strongly affected by PPIX formation. Inhibition of PPIX formation by nitrite might be the reason for the low levels of ZPP in cured meats. 相似文献

为了利用天然植物活性成分的抗氧化性,对抗氧化剂葡萄多酚(PT)、苹果多酚(PG)、茶多酚(CY)进行了筛选,采取直接添加、依托载体添加及制备成颗粒复合添加等多种添加工艺,并通过对抗氧化剂改性提高其在卷烟中的添加量,制备了新型选择性减害滤棒并卷制成样品烟支,对滤棒的各项常规物理指标和卷烟烟气的常规化学指标及自由基含量的变化进行测试。同时,采用加速氧化法对该种减害滤棒的抗氧化性能的稳定性进行了检测和评价。结果表明:采用直接添加和复合添加相结合的加工工艺,当有效成分含量为90%的改性抗氧化剂CY1在滤棒中的添加量达到3.0mg/支后,能够实现选择性显著降低烟气自由基近30%,同时不影响烟支外观和烟气常规技术指标,卷烟吸味也未因此有明显改变。 相似文献

食品中有毒有害物质是存在于食品或食品原料中对人体有毒的或者具有潜在危害性的物质。食品中有毒有害物质严重危害食品安全,可引起人体代谢紊乱,进而导致疾病的产生。近年来由食品中有毒有害物质导致的食物中毒事件层出不穷,引起各国政府、国际组织、学术机构和消费者的高度重视。本文对食品中有毒有害物质的种类、危害及污染现状及检测方法进行了综述,并对食品中有毒有害物质的未来工作进行展望。尽管我国食品中有毒有害物质仍然影响我国食品安全,但是随着我国检测水平、加工技术及监管力度的迅速提升,食品中有毒有害物质将得到有效控制,极大地提高我国食品安全水平。 相似文献
