试验以红薯叶为主要原料,以白砂糖、玉米糖浆为碳源,以活性白酒干酵母为发酵液,采用液体发酵法酿造红薯叶滋补酒,并通过对比试验找出最优糖化条件:浸提温度80℃,浸提时间2h,加水比1:40.实现了红薯叶的进一步利用,便于工业化的推广.  相似文献

通过对红薯叶和苋菜原料配比、浸提条件、护色、调配等的研究,选择出最佳实验配比方案;红薯叶:苋菜为4:3,红薯叶浸提时间为3h,苋菜浸提时间为2h,柠檬酸为0.01%,蔗糖为7.0%,抗异坏血酸钠为0.2%。最终生产出了色、香、味俱佳的具有保健功能的天然红薯叶苋菜复合饮料。  相似文献

研究了麻栎叶β-胡萝卜素的提取工艺。麻栎叶的最适干燥温度为80℃,宜避光保存,可选用体积比为6∶4的石油醚乙醇混合溶液为浸提剂;原料粒度、料液比、浸提时间对提取存在极显著的影响,影响大小次序为粒度>料液比>浸提时间;在最佳提取工艺条件下,即原料粒度为80~60目、料液比为1∶50(m∶V)、浸提温度为55℃、浸提时间为1.5h,浸提2次,可以达到很好的浸提效果,β-胡萝卜素抽出率为93.3%。  相似文献

产品以蓝莓叶、绿茶为主要原料,通过添加白砂糖、柠檬酸等,研制出一种具有一定保健价值的复合茶饮料,针对其关键技术进行了探讨。结果表明,蓝莓叶的最佳浸提条件为:料液比1∶60、浸提温度60℃、浸提时间30min;绿茶的最佳浸提条件为:料液比1∶100、浸提温度90℃、浸提时间15min;蓝莓叶汁与绿茶汁的最佳混合配比为5∶4、最佳柠檬酸添加量为0.15%、白砂糖用量为5%、复合稳定剂为CMC和黄原胶,CMC和黄原胶的添加量分别0.15%和0.03%,D-异抗坏血酸钠添加量为0.015%,蜂蜜添加量为0.2%,本产品酸甜适中,香味淡雅,清凉可口。  相似文献

以红薯叶为原料,采用超声辅助硫酸钠-聚乙二醇双水相法提取红薯叶中多糖。以多糖萃取率为考核指标,在单因素试验的基础上,通过正交试验优化提取工艺。结果表明:最佳工艺条件为料液比1∶20(g/mL)、pH 5、超声时间30 min、超声温度60℃,该条件下红薯叶多糖的平均萃取率为94.2%,得率为62.6 mg/g。  相似文献

该法生产黄酒时,除用传统的糯米外,还添加了营养价值高的红薯叶为原料,用α-淀粉酶液化;黑曲霉,根霉培养液糖化;通过正交试验得出:糯米∶红薯叶为8∶2、根霉15%、黑曲霉5%、酵母接种0.2%;酒精发酵时,前期30℃通风培养,后期28℃静止培养可有效地提高发酵速度;密闭状态下高温低温间隔陈酿可缩短陈酿时间。此黄酒具有保健作用。  相似文献

以黑木耳、决明子、辣木叶为原料,研制一种复合饮料。首先采用单因素试验探讨黑木耳浸提液(1∶60水提物,g/mL)、决明子浸提液(1∶20水提物,g/mL)、辣木叶浸提液(1∶80水提物,g/mL)的复合用量以及结晶果糖、甜菊糖苷和有机酸的用量对复合饮料品质的影响,然后采用正交试验确定该饮料的最佳配方,最后筛选出较为适宜的稳定剂,并对产品质量指标进行分析。研究结果表明,黑木耳复合饮料的原料浸提液复合比例为黑木耳浸提液∶决明子浸提∶液辣木叶浸提液=2∶2∶1(体积比),最佳配比为原料复合浸提液30 mL/100 mL、结晶果糖2.3 g/100 mL、甜菊糖苷0.05 g/100 mL、有机酸(柠檬酸∶苹果酸=2∶1,质量比)0.075 g/100 mL,稳定剂为黄原胶0.03 g/100 mL、CMC-Na0.1 g/100 mL;所得到的复合饮料感官与稳定性较好,口感细腻。  相似文献

以红薯叶和大米为主要原料,采用液态法制出红薯叶醋,将红薯叶醋进行科学的调配生产出一种新型的红薯叶保健醋饮料。通过对红薯叶不同处理条件的单因素试验,确定出液化和糖化时最佳料液比;通过正交试验得出了酒精发酵、醋酸发酵的最佳条件,并找出红薯叶醋饮料的最佳调配方案为:红薯叶醋用量为35%,蔗糖为10%,VC为0.02%,香精为0.6%。  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
