一起致病性大肠埃希菌污染田螺引致食物中毒的调查   总被引:1,自引:0,他引:1  
目的调查和确定食物中毒的原因。方法利用流行病学调查和实验室检测的方法,采集食物中毒病人和田螺加工销售人员的肛拭子、田螺加工销售环境拭子及吃剩田螺等样品35份,参照《食品卫生检验方法·理化部分》(GB/T5009-2003)、《食品卫生微生物学检验》(GB/T4789-2003)、《霍乱防治手册》(第5版)和《食物中毒诊断标准及技术处理总则》(GB14938-1994)进行检测。结果因田螺清洗不干净、加热烹炒不彻底而造成细菌的污染,其中2份肛拭子、1份吃剩田螺、1份田螺加工环境拭子栓出致病性大肠埃希菌(EPEC)。结论这是一起致病性大肠埃希菌(EPEC)污染了田螺而引致的细菌性食物中毒。  相似文献

目的:调查一起食物中毒事件原因,为食物中毒事件的处置和预防提供科学的依据。方法:根据《食品安全国家标准食品微生物学检验》中沙门氏菌检验、志贺氏菌检验、副溶血性弧菌检验、金黄色葡萄球菌检验的方法,对该起食物中毒事件中的可疑食物中毒食物和患者肛拭子样品进行细菌分离和鉴定。结果:一份剩余食物样品和两份患者肛拭子均检出沙门氏菌,但均未检出其余致病菌;市场监督管理局现场抽检的食物样品均未检出致病菌。结论:根据流行病学调查和实验室检测结果的综合分析,该起食物中毒事件由沙门氏菌污染引起,与其余致病菌无关。  相似文献

为掌握家庭食物中毒的规律,对福建省2000年~2003年家庭食物中毒的情况进行分析。2000年~2003年福建省共发生食物中毒180起,中毒人数共3267人,死亡31人。其中家庭发生食物中毒80起,中毒人数1071人,死亡19人,分别占全省食物中毒总数的44.4%、32.8%和61.3%,食物中毒原因查明率为87.5%。家庭食物中毒主要发生在农村,共73起,占91.3%,城市仅7起,占8.7%,城乡之间的家庭食物中毒差异有显著性(P=0.044)。每起食物中毒平均发病人数为13人。家庭食物中毒的主要致病因素依次为农药及化学物品(37.5%)、有毒动植物(27.5%)、微生物(22.5%)。其中最主要致病因素为有机磷,共发生20起,占家庭食物中毒的25%,中毒人数为175人,占16.3%,死亡人数2人,占8.3%。造成食物中毒死亡的最主要因素是河纯鱼,共死亡7人,占36.8%。有毒动植物食物中毒发生最多的是4~6月份,主要是由于河纯鱼、有毒贝类、毒蘑菇引起的食物中毒。微生物食物中毒集中发生在7~11月,主要致病因素是致病性大肠杆茵,其次为副溶血性弧茵,分别占微生物食物中毒的27.8%和22.2%。化学与农药食物中毒发生最多的是在7~9月份。较重大的食物中毒全部发生在农村。今后须加强农村食品卫生监督管理,大力开展预防食物中毒的宣传和培训。  相似文献

一、食物中毒的概念1、定义:国家标准(GB14938)中界定了食物中毒,指摄入了含有生物性、化学性有毒有害物质的食品或者把有毒有害物质当作食品摄入后出现的非传染性的急性、亚急性疾病。2、食物中毒的特点食物中毒常呈群体性爆发,其种类多,病因复杂,但一般具有以下共同特点:(1)潜伏期较短,一般为0.5-24小时。(2)中毒病人均有大致相同的临床症状。(3)发病和吃某种食品有关。(4)发病率高,人与人之间不传染。3、食物中毒的分类(1)细菌性食物中毒,指由于食入被病原菌或其它有毒代谢产物污染的食物后,所引起的以急性肠胃类为主要中毒症状的疾病。如:沙门氏菌中毒和金黄色葡萄球菌中毒等。  相似文献

目的:分析细菌性食物中毒的微生物学检验结果。方法:选取2020年1-12月发生细菌性食物中毒的93例患者作为观察对象,共送检标本93份,送检标本类型有剩余食物、肛拭子、呕吐物,检测细菌感染情况。结果:93份送检标本的微生物学检验结果显示,感染的细菌主要有金黄色葡萄球菌(35.48%)、变形杆菌(26.88%)、沙门菌(10.75%)等,单一感染占80.65%,二重感染占18.29%,三重感染占1.08%。在2020年1-12月,金黄色葡萄球菌在1-12月均有发生,变形杆菌除了11月以外,其他月份均有发生,2020年1-12月的细菌性食物中毒主要分布在5-9月,8月份达到高峰。金黄色葡萄球菌、变形杆菌、沙门菌、蜡样芽孢杆菌均可在剩余食物、肛拭子、呕吐物中检出。结论:相关部门应加强春末、夏季的细菌性食物中毒预防工作。  相似文献

本文研究了上海即食牛肉样品中微生物的污染情况。从上海的5个国际超市和5个街头摊贩随机抽取20份即食牛肉样品,采用培养法分析样本的菌落总数,并从每份样品中随机抽取10个菌落采用16S rRNA基因测序法对细菌进行分类鉴定。超市牛肉样本的菌落总数平均为(1.08±1.73)×108 CFU/g,街头摊贩样本菌落总数平均为(2.84±8.49)×108 CFU/g,二者在统计学上无显著性差异(p>0.05),但均高于国家标准(≤8×104 CFU/g)。所有样本均未检出能引起严重食物中毒的病原体,但检测到种类多样且与食物中毒、尿路感染、肺炎、乳腺炎以及菌血症等疾病相关的多种病原菌操作分类单元(OTU)。结果表明,即食食物是一个经常被忽视的致病微生物的储存库,我国应加强对即食食物的卫生管理,从而降低即食食品引起的食源性疾病传播几率。  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

An internet website (http://cpf.jrc.it/smt/) has been produced as a means of dissemination of methods of analysis and supporting spectroscopic information on monomers and additives used for food contact materials (principally packaging). The site which is aimed primarily at assisting food control laboratories in the European Union contains analytical information on monomers, starting substances and additives used in the manufacture of plastics materials. A searchable index is provided giving PM and CAS numbers for each of 255 substances. For each substance a data sheet gives regulatory information, chemical structures, physico-chemical information and background information on the use of the substance in particular plastics, and the food packaging applications. For monomers and starting substances (155 compounds) the infra-red and mass spectra are provided, and for additives (100 compounds); additionally proton NMR are available for about 50% of the entries. Where analytical methods have been developed for determining these substances as residual amounts in plastics or as trace amounts in food simulants these methods are also on the website. All information is provided in portable document file (PDF) format which means that high quality copies can be readily printed, using freely available Adobe Acrobat Reader software. The website will in future be maintained and up-dated by the European Commission's Joint Research Centre (JRC) as new substances are authorized for use by the European Commission (DG-ENTR formerly DGIII). Where analytical laboratories (food control or other) require reference substances these can be obtained free-ofcharge from a reference collection housed at the JRC and maintained in conjunction with this website compendium.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
