该文以红酒和全脂牛乳为主要原料开发一种新型酸奶产品,通过单因素试验分别考察红酒添加量、白砂糖添加量、发酵剂接种量、发酵时间对红酒酸奶感官评分的影响,并利用响应面法对红酒酸奶的制作工艺进行优化。结果表明,红酒酸奶的最佳工艺参数为:红酒添加量7%,白砂糖添加量6%,发酵剂接种量4%,发酵时间7 h。在此工艺条件下发酵的红酒酸奶色泽均匀、组织细腻、酸甜适中,具有红酒和牛乳的营养及风味,产品的综合品质最佳。 相似文献

选用乌梅提取物为基础原料,通过单因素试验和响应面曲线法对配方进行分析优化,获得了乌梅泡腾片的最佳配方为乌梅提取物、泡腾剂和阿巴斯甜质量比为54.95︰40.29︰0.54,质量分数5%PVP的乙醇溶液和L-亮氨酸分别为乌梅提取物和泡腾剂质量和的2.5%和0.6%,酸源中柠檬酸和酒石酸质量比为4︰1,酸源和碳酸氢钠质量比为1.37︰1。在该配方下,采用湿法混合制粒,得到的乌梅泡腾片发泡量为6.7 mL,崩解时间为128 s,脆碎度为0.86%,所得饮料p H为5.3,具有乌梅饮品酸甜爽口的特征口感,用量仅为市售酸梅粉的34.8%,具有质量轻,携带方便的特点。 相似文献

以琯溪红肉蜜柚为原料研制果酱,对其中添加剂的配比进行优化。采用单因素试验研究白砂糖、柠檬酸、琼脂和β-环糊精的添加量对红肉蜜柚果酱感官评价和质构特性的影响,在此基础上通过Box-Behnken中心组合试验设计和响应面分析法,探究果酱中各项配料添加量及其交互作用对产品感官品质的影响。结果表明:红肉蜜柚果酱中各配料的最优配比为:以100 g鲜果浆为计算基准,白砂糖添加量60%、柠檬酸添加量0.2%、琼脂添加量0.3%、β-环糊精添加量0.7%,采用此配比制得的果酱,感官评分为89分,具有良好的胶凝性和涂抹性,口感细腻,酸甜适中,且具有红肉蜜柚特有的风味和色泽。 相似文献

优化果胶酶澄清酸枣汁的工艺。试验以酸枣汁中果胶含量为响应值,根据Box-Benhnken中心组合设计原理,选取酶解p H、酶解温度、果胶酶用量以及酶解时间进行四因素三水平响应面试验,优化果胶酶澄清酸枣汁工艺。试验建立了回归方程,即果胶含量Y=166.58-1.23A+0.11B+0.17C-0.63D+8.57AB-4.1AC-2.18AD+0.93BC-0.57BD+0.92CD+14.65A~2+39.16B~2+40.00C~2+42.06D~2。通过响应面分析得到了果胶酶的最佳酶解条件:酶解pH 4.5、酶解温度55℃、果胶酶用量0.31%、酶解时间1.5 h,在此条件下,酸枣汁中果胶含量降至170.273 mg/L,降解率为65.54%,与模型预测值之间具有较好的拟合性。果胶酶澄清酸枣汁效果明显,本研究所得为酸枣汁澄清工艺提供了良好的技术参数。 相似文献

以薏苡仁粉、绵白糖、玉米油、泡打粉4种原料的添加量为自变量,薏苡仁桃酥感官评价分数为因变量。在单因素试验基础上进行Box-Behnken试验设计-响应面优化分析,考察各因素交互作用对薏苡仁桃酥感官质量的影响,并优化薏苡仁桃酥配方。试验结果表明,该试验模型拟合程度较好,可以用于薏苡仁桃酥感官评分的预测。优化后的薏苡仁桃酥最佳配方为:薏苡仁粉30.18 g、低筋粉69.82g、绵白糖22.05 g、玉米油40.68 g、泡打粉0.66 g、全蛋液25.00 g、食盐1.00 g。 相似文献

Optimisation of fura production using response surface methodology was studied. The quadratic polynomial regression model was adequate and acceptable at 0.05% level for predicting shear stress (SHS), shear strength (SHT), and hardness of fura (HOF)). The importance of process variables (cooking time (CKT), flour hydration time (FHT) and water added (WAD)) on texture of fura is in the order; FHT (X2) > WAD (X3) > CKT (X1). The FHT and WAD were the most important factors affecting the textural properties of fura. The optimal SHS (6.1 kN/m2) was obtained with FHT (1.36 hr), CKT (34.3 min) and WAD (21 ml). The optimal SHT (4.6 kN/m2) was obtained with FHT (1.1 hr), CKT (18.9 min) and WAD (25 ml). The optimal HOF (57.7 kN) was obtained with FHT (53.4 min), CKT (17.4 min) and WAD (21.8 ml). The shape of the predicted responses was saddle, i.e., a maximum or minimum response was found at various combinations of the independent variables. 相似文献

以钙化海藻酸钠、亚麻籽胶、结冷胶、酪蛋白酸钠、大豆油为原料,通过单因素实验和Box-Behnken响应面法,优化一种热不可逆复合凝胶配方。以复合凝胶的硬度和弹性为响应值,按5种原料的不同添加量进行单因素实验并响应面优化。结果表明,热不可逆复合凝胶的最优配方为:钙化海藻酸钠浓度5%、亚麻籽胶浓度1.11%,结冷胶浓度1.12%,酪蛋白酸钠浓度1.32%,大豆油浓度15%。此条件下复合凝胶的硬度值为(1323.25±40.098) g,弹性值为(0.856±0.019) g,与预测值的误差均小于5%,说明该响应面模型准确度较高,所优化出的凝胶配方组合具有实际应用的意义。 相似文献

Optimum technology of spray-dried jujube powder was studied using a Box-Benhnken design. Effects of weight ratio of maltodextrin and the dry matter weight of jujube pulp (WR, 3–5), inlet air temperature (T, 140–160 °C), and shift of feed flow rate (FFR, 3–5) on the quality attributes (moisture content, lightness, the total color difference, vitamin C (VC) content and hygroscopicity) of jujube powder were systematically studied by response surface methodology and perturbation plot. Analysis of variance showed that a second-order polynomial equation could predict the experimental data well (R 2?>?0.92). Moisture content and the total color difference (?E) were significantly affected by WR, T, and FFR. The higher WR and lower FFR resulted in a decrease in moisture content and ?E. WR and FFR had extremely significant effects on VC content and hygroscopicity (P?<?0.01); with lower WR and FFR, higher values of VC content and hygroscopicity would be received. The effect of WR was the most significant variable among others. The optimum conditions that maximizing VC content and minimizing contents of moisture, ?E, and hygroscopicity of jujube powder were found as WR of 3, inlet air temperature of 140 °C, and FFR of 3 ( i.e., 11 ml/min). Under these conditions, the response values were moisture content of 3.36 %, lightness of 83.32, ?E of 9.92, VC content of 205.10 mg/100 g, and hygroscopicity of 18.59 %, respectively. 相似文献
