果胶酶提高番茄出汁率的工艺研究   总被引:6,自引:1,他引:5  
通过单因素和正交试验确定果胶酶提高番茄出汁率的最佳工艺条件,结果表明,果胶酶的添加量为0.18%,酶解时间为90min,酶解温度为50℃时番茄的出汁率最高,为75.5%,与未经果胶酶处理的番茄相比,出汁率可以提高19.7%。  相似文献

以番茄为原料进行饮料的加工,针对提高番茄出汁率、饮料稳定性、饮料色泽的保持工艺研究实验,结果发现,对番茄预热后,再加果胶酶处理、加压过滤工艺可使番茄的出汁率达到81.5%,提高了番茄的利用率;番茄饮料中添加2‰,质量比5:2:3的羧甲基纤维素钠、黄原胶、琼脂复配增稠剂可使饮料在常温保存三个月仍具有良好的稳定性。通过实验研制出营养丰富、色泽鲜艳、风味自然、功能性强的番茄饮料。  相似文献

仙人掌多糖原汁提取工艺的研究   总被引:2,自引:1,他引:2  
比较了酶榨法、热榨法、鲜榨法和冷榨法四种方法对仙人掌多糖原汁的提取效果,结果表明:鲜榨法出汁率最低,冷榨法其次,而酶榨法(酶浓度为0.05%)和热榨法(100℃蒸汽热烫5min)出汁率较高。而仙人掌多糖原汁中多糖的含量又以热榨法的方式含量最高,达到0.487%。考虑出汁率和多糖两个因素,采用热榨法和酶法结合的方式作为适宜的仙人掌多糖原汁的提取方式。通过正交试验得出了仙人掌多糖原汁提取工艺的最佳参数组合为热烫温度100℃,热烫时间3min,酶用量0.01%。在此最佳参数组合条件下,仙人掌出汁率为58.875%,多糖含量为0.495%。  相似文献

主要研究果胶酶、纤维素酶、半纤维素酶在提高青椒出汁率中的应用。结果表明,在单一酶试验中,果胶酶提高青椒出汁率效果最好,明显优于纤维素酶和半纤维素酶,纤维素酶次之,半纤维素酶相对较差。在复合酶试验中,果胶酶与纤维素酶按6:1复配,提高青椒出汁率效果最好。其在较佳酶解工艺条件:总酶用量0.0075%、加水量40%、酶解温度55℃、时间50min、pH3.0下,青椒出汁率可达74.4%,比单一果胶酶处理高出13.8%,比未经酶处理(23.4%)高出51%。  相似文献

利用复合酶水解玉米蛋白粉制得的高F值寡肽(F值为21.7)进行酸乳饮料配方与功能特性研究。结果表明,饮料最佳工艺配方为:添加高F值寡肽3%,白砂糖8%,柠檬酸0.15%;试验组与对照组相比,高、中剂量组缺氧存活时间分别提高了48%(P〈0.01)和33%(P〈0.05);游泳时间分别提高了64%(P〈0.01)和38%(P〈0.05),肝糖原含量分别为对照组的2.75倍(P〈0.001)和1.88倍(P〈0.01);游泳前后小鼠血乳酸含量分别与对照组相比降低了63.5%(P〈0.01)和35.6%(P〈0.05),证明了玉米高F值寡肽酸乳饮料的抗缺氧和抗疲劳功能。  相似文献

以番茄为原料,采用多因素正交试验,优化番茄浓缩汁加工工艺条件。本文对番茄浓缩汁加工过程中,对影响番茄红素稳定性的浓缩终点可溶性固形物浓度、杀菌时间、防腐剂加量等因素进行了研究。结果表明,番茄榨汁时加入0.7%NaCl,出汁率最高(68%);番茄汁浓缩的真空度为87~93kPa、温度50℃、浓缩至可溶性固形物含量23%、杀菌时间10min、防腐剂加量0.0%,在保藏1星期后,番茄红素的含量为97.20μg/100g,维生素C的含量为5.85mg/100g。影响浓缩汁中番茄红素含量的主要因素是浓缩终点的可溶性固形物浓度,其次是杀菌时间。  相似文献

开发研制新疆地产番茄、胡萝卜混合汁乳酸菌发酵饮料。方法:以优质番茄酱和胡萝卜浓缩汁为原料,用保加利亚乳杆菌和嗜热链球菌为菌种,采用四因素三水平正交实验,确定中间种子扩大液、发酵液及发酵饮料口感稳定性的最佳工艺配方。结果:用保加利亚乳杆菌和嗜热链球菌按1:1比例作为菌种;种子扩大液的最佳配方:番茄、胡萝卜混合汁配比3:7,2%葡萄糖,2%脱脂乳,3%接种量;发酵液最佳配方:番茄、胡萝卜混合汁配比3:7,发酵温度41℃,发酵时间24h,接种量3%;发酵饮料调配最佳配方;发酵原液中添加蔗糖5%,柠檬酸0.02%,耐酸羧甲基纤维素钠(CMC-Na)0.2%,黄原胶0.03%。  相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
